ABSTRACT

The present study assessed whether factual nutritional information on portion sizes helps consumers to select healthier meals. 124 people were invited to serve themselves lunch from a 'fake food buffet' containing 55 replica food items. Participants in the control group were instructed to serve themselves a meal, as they would normally eat from the given selections (control). Participants in the second condition were asked to select a healthy, balanced meal (instruction). People in the third group were also instructed to select a healthy meal, but in addition, they received nutrition information (instruction+information). The results suggest that participants in the instruction and instruction+information condition chose fewer sweets and desserts (F((2,121))=6.91, P<.05) but more fruits (F((2,121))=5.16, P<.05). This led to overall healthier meals than in the control group. All other food categories, including vegetables, were not altered. No difference was found between the two experimental groups. The results indicate that factual nutrition information does not help consumers compose healthier meals.

ABSTRACT

Experimental research in behavioural nutrition is often limited by practical applicability. In the present study, we assess the reproducibility and validity of a new experimental method using food replicas. A total of fifty-seven people were invited on two separate occasions with an interval of 2 weeks to serve themselves a meal from a fake food buffet (FFB) containing replica carrots, beans, pasta and chicken. The external validity of the FFB was assessed in a second study by comparing meals served from replica foods (beans, pasta, chicken) with meals served from a corresponding real food buffet (RFB). For the second study, forty-eight participants were invited on two separate occasions; first to serve themselves a meal from the FFB or an RFB and 2 weeks later from the other buffet. The amounts of food items served and (theoretical) energy content were compared. Correlation coefficients between the amounts of fake foods served were 0·77 (95 % CI 0·68, 0·86) for chicken, 0·79 (95 % CI 0·68, 0·87) for carrots, 0·81 (95 % CI 0·69, 0·89) for beans and 0·89 (95 % CI 0·82, 0·93) for pasta. For the FFB meal and the RFB meal, the correlations ranged between 0·76 (95 % CI 0·73, 0·91) for chicken and 0·87 (95 % CI 0·77, 0·92) for beans. The theoretical energy of the fake meal was 132 kJ (32 kcal) lower compared to the energy of the real meal. Results suggest that the FFB can be a valuable tool for the experimental assessment of relative effects of environmental influences on portion sizes and food choice under well-controlled conditions.

ABSTRACT

BACKGROUND: One of the most prominent characteristics of fast food and take-away food is that it is convenient, meaning that it saves time, it reduces the required effort for food provisioning and culinary skills are transferred. Studies that investigate the unique effect of these factors on dietary behaviours are lacking. Therefore, the present study aimed to examine the associations of time, effort, time spent cooking and cooking skills with fast food and take-away food consumption. METHODS: Between May and June 2009, a random postal survey was sent out to 2323 Swiss households. The response rate was 44% (n = 1017). Spearman rank correlations and logistic regression analysis were used to determine the multiple relationships of fast food and take-away food intake with gender, age, educational level, income, mental effort, physical effort, working status, cooking skills and time spent cooking. RESULTS: Fast food consumption was found to be associated with gender (males) [odds ratio (OR) = 1.61, P < 0.05], age (40-59 years) (OR = 0.41, P < 0.001), age (≥60 years) (OR = 0.13, P < 0.001), time spent cooking (OR = 0.99; P < 0.01) and cooking skills (OR = 0.81, P < 0.05). Take-away food consumption was found to be associated with gender (males) (OR = 1.86, P < 0.01), age (40-59 years) (OR = 0.58, P < 0.01), age (≥60 years) (OR = 0.28, P < 0.001), income (OR = 1.11, P <0.01), education (middle) (OR = 0.65, P < 0.05) and mental effort (OR = 1.25, P < 0.05). CONCLUSIONS: Take-away and fast food consumption are behaviours that share the same demographic determinants of age and gender, although they are influenced by different life style determinants. It is very likely that motivations related to time, effort and cooking are of increasing importance for food decisions in our society.

ABSTRACT

Soft-drink consumption is one of the important target behaviours for the prevention of excessive weight gain among adolescents. To be able to modify these behaviours in obesity prevention interventions, further understanding of the underlying factors and mediational pathways is required. The present study aimed to explore associations between home environment variables and adolescent soft drink consumption and potential mediation of these associations by individual cognitions derived from the Theory of Planned Behaviour and habit strength. The ENDORSE study (N=1005) provided data on soft drink consumption and on home environment variables related to soft drink consumption (availability, accessibility, parental modelling, and parental rules), cognitive variables (intention, attitude, perceived behaviour control, and parental norm) and habit strength. Multiple mediation analyses were conducted using regression analyses according to the steps described by MacKinnon to assess the association between home environment variables and soft drink consumption and mediation of these associations by cognitive variables and habit strength. The bootstrapping method was used to calculate the confidence intervals. There were significant associations between the home environment variables and soft drink consumption. After inclusion of the mediators the strength of these associations was reduced. In the multiple mediator models, habit strength (39.4-62.6%) and intention (19.1-36.6%) were the strongest mediators. Intention and habit strength partly mediate the associations between home environment factors and soft drink consumption, suggesting that home environment variables influence soft drink consumption both indirectly and directly.

ABSTRACT

Obesogenic environments are thought to underlie the increased obesity prevalence observed in youth during the past decades. Understanding the environmental factors that are associated with physical activity (PA) in youth is needed to better inform the development of effective intervention strategies attempting to halt the obesity epidemic. We conducted a systematic semi-quantitative review of 150 studies on environmental correlates of youth PA published in the past 25 years. The ANalysis Grid for Environments Linked to Obesity (ANGELO) framework was used to classify the environmental correlates studied. Most studies retrieved used cross-sectional designs and subjective measures of environmental factors and PA. Variables of the home and school environments were especially associated with children's PA. Most consistent positive correlates of PA were father's PA, time spent outdoors and school PA-related policies (in children), and support from significant others, mother's education level, family income, and non-vocational school attendance (in adolescents). Low crime incidence (in adolescents) was characteristic of the neighbourhood environment associated with higher PA. Convincing evidence of an important role for many other environmental factors was, however, not found. Further research should aim at longitudinal and intervention studies, and use more objective measures of PA and its potential (environmental) determinants.
