ABSTRACT

Background: Nutritional knowledge is one of the factors that can lead to adopting healthy eating habits and, consequently, favoring sports performance. Aim: The study aimed to assess the nutritional knowledge and its subsections general and sports nutritional knowledge of recreational athletes. Methods: A validated, translated, and adapted 35-item questionnaire was used to assess total (TNK), general-GNK (11 questions), and sports-SNK (24 questions) nutritional knowledge. The Abridged Nutrition for Sport Knowledge Questionnaire (ANSKQ) was provided online using Google Forms. Four hundred and nine recreational athletes (male: 173, female: 236, age = 32.4 ± 9.6 years) completed the questionnaire. Results: The mean TNK (50.7%) and GNK (62.7%) scores were classified as "average" and higher than SNK (45.2%), which was classified as "poor." Male participants had SNK and TNK scores higher than females, but not for GNK. The youngest participants (18-24 years) had TNK, SNK, and GNK scores higher than other age groups (p < 0.05). Participants who reported previous nutritional appointments with a nutritionist had higher TNK, SNK, and GNK scores than those without it (p < 0.05). Those with "advanced" formal nutrition education (university students, graduate, or postgraduate in Nutrition) scored higher than those of groups "none" and "intermediate," for TNK (advanced = 69.9%, intermediate = 52.9%, and none = 45.0%, p < 0.0001), GNK (advanced = 74.7%, intermediate = 63.8%, and none = 59.2%, p < 0.0001), and SNK, (advanced = 67.5%, intermediate = 48.0%, and none = 38.5%, p < 0.0001). Conclusion: Results suggest a lack of nutritional knowledge in recreational athletes, mainly those without an appointment with a registered nutritionist and formal nutritional education.

ABSTRACT

The composition and content of amino acids in foodstuffs have a vital impact on the nutritional value and taste. With the aim of understanding the nutrition and flavor of Guangyuan grey chicken, the composition and content of amino acids in the pectoralis and thigh muscle of chickens at the age of 90 d, 120 d and 150 d were determine using liquid chromatography-tandem mass spectrometry (LC-MS/MS) and an amino acid analyzer. A total of 17 amino acids were detected both in pectoralis and thigh muscle via the amino acid analyzer, of which the content of glutamate was the highest. Additionally, 21 deproteinized free amino acids were detected via LC-MS/MS. Among all samples, the content of glutamine in thigh muscle was the highest. The content of histidine in the pectoralis was the highest. In terms of the flavor amino acids (FAAs), the umami-taste and sweet-taste amino acids were higher in the thigh muscle of 120 d male chicken. From the perspective of protein nutrition, the essential amino acid was higher in pectoral muscle, and the composition was better. The results of the amino acid score showed that the content of leucine and valine were inadequate in Guangyuan grey chicken. Collectively, the content of amino acid in Guangyuan grey chicken was affected by age, gender and meat cut. This study confirms that meat of chicken in different ages, genders, and cuts presents different nutritional values and flavors owing to the variation of amino acids content.

ABSTRACT

OBJECTIVE: To select the nutrient-rich food(NRF) index applicable to the food characteristics of Chinese residents through population-based dietary quality validation. METHODS: Sixteen NRF indices were constructed based on the Chinese Food Composition Table and the Chinese Food Labelling Nutrient Reference Values, using 100 g as the base amount of food for calculation. The NRF indices were validated by the China Prime Diet Quality Score(CPDQS), a dietary quality assessment index, using food intake data collected from 14 068 adult residents in 15 provinces in 2018 under the China Health and Nutrition Survey. The CPDQS was used as the dependent variable and the dietary NRF index score was used as the independent variable. The multiple linear regression models were performed after adjusting the covariates and the NRF index with the largest coefficient of determination R~2 was used as the most appropriate index. RESULTS: Regression analysis showed that the R~2 of NRF8.2 index was the largest, which was 0.16. Dried legumes, fungi and algae, nuts, vegetables, eggs and aquatic products scored higher on the NRF8.2 index. The high scoring subgroups had higher average daily intakes of cereals and potatoes, vegetables, fruits, soybeans and nuts, dairy, eggs and aquatic products, as well as lower consumption of livestock and poultry meat, beverages, salt and cooking oil, compared to the low scoring subgroup on the Dietary NRF8.2 Index. In terms of nutrient intake, the medium and high NRF8.2 subgroups had relatively high intakes of energy, protein, vitamins and minerals and relatively low intakes of fat and sodium. CONCLUSION: The NRF8.2 index explains the maximum variation in CPDQS and is a relatively suitable NRF index for the Chinese population.

ABSTRACT

Background & Aims: The prevalence and aetiology of liver fibrosis vary over time and impact racial/ethnic groups unevenly. This study measured time trends and identified factors associated with advanced liver fibrosis in the United States. Methods: Standardised methods were used to analyse data on 47,422 participants (≥20 years old) in the National Health and Nutrition Examination Survey (1999-2018). Advanced liver fibrosis was defined as Fibrosis-4 ≥2.67 and/or Forns index ≥6.9 and elevated alanine aminotransferase. Results: The estimated number of people with advanced liver fibrosis increased from 1.3 million (95% CI 0.8-1.9) to 3.5 million (95% CI 2.8-4.2), a nearly threefold increase. Prevalence was higher in non-Hispanic Black and Mexican American persons than in non-Hispanic White persons. In multivariable logistic regression analysis, cadmium was an independent risk factor in all racial/ethnic groups. Smoking and current excessive alcohol use were risk factors in most. Importantly, compared with non-Hispanic White persons, non-Hispanic Black persons had a distinctive set of risk factors that included poverty (odds ratio [OR] 2.09; 95% CI 1.44-3.03) and susceptibility to lead exposure (OR 3.25; 95% CI 1.95-5.43) but did not include diabetes (OR 0.88; 95% CI 0.61-1.27; p =0.52). Non-Hispanic Black persons were more likely to have high exposure to lead, cadmium, polychlorinated biphenyls, and poverty than non-Hispanic White persons. Conclusions: The number of people with advanced liver fibrosis has increased, creating a need to expand the liver care workforce. The risk factors for advanced fibrosis vary by race/ethnicity. These differences provide useful information for designing screening programmes. Poverty and toxic exposures were associated with the high prevalence of advanced liver fibrosis in non-Hispanic Black persons and need to be addressed. Impact and Implications: Because liver disease often produces few warning signs, simple and inexpensive screening tests that can be performed by non-specialists are needed to allow timely diagnosis and linkage to care. This study shows that non-Hispanic Black persons have a distinctive set of risk factors that need to be taken into account when designing liver disease screening programs. Exposure to exogenous toxins may be especially important risk factors for advanced liver fibrosis in non-Hispanic Black persons.

ABSTRACT

Objective To explore the nutritional efficacy of compound protein powder formulations from different sources. Methods Three groups of compound protein powder formulations were obtained through scientific blending using soy protein, whey protein and yeast protein as raw materials. The effects of the compound protein powders on nitrogen metabolism, serum biochemical indicators, and pathological changes of liver tissue and epididymal fat in rats were evaluated. Results Compared with the control (casein), the net protein utilization, biological evaluation, and protein efficacy ratio of the compound protein powders in rats were significantly improved, and the changes in these indicators in the formula with the highest whey protein content were most significant among all three formulas. The compound protein powders effectively increased the levels of albumin and globulin, while decreased the content of total cholesterol, indicating beneficial effects on improving immunity and controlling lipid metabolism, with the formula group 2 being the most effective among all three groups. The pathological examination showed that the three groups of protein powder did not have adverse effects on liver tissue and epididymal fat. Conclusion The present study demonstrates that the compound protein powder formulation has nutritional value, which suggests a potential of the application of the compound protein powder formulation in the elderly, and people with special nutritional needs, such as sports people.

ABSTRACT

Objective: To explore the value of phase angle (PA) in constructing a predictive model of nutrition evaluation for tumor patients. Methods: A retrospective analysis was performed on 1 129 patients with malignant tumors hospitalized in the Cancer Center of Changzhi People's Hospital from June 2020 to February 2021. PA values of six parts of the body were measured by the body composition analyzer, including: left arm (LA), right arm (RA), left leg (LL), right leg (RL), the trunk (TR), and the whole body (WB). Patients' body mass index (BMI) was calculated and patient-generated subjective global assessment (PG-SGA) was assessed. The differences of PA values of six parts were compared and their correlations with BMI and PG-SGA in combination with age, gender and tumor disease types were analyzed, binary classification regression on BMI and PG-SGA was performed, and the functions of the best prediction model was fitted. Decision tree, random forest, Akaike information criterion in a Stepwise Algorithm (stepAIC) and generalized likelihood ratio test were used to select appropriate variables, and the logit logistic regression model was used to fit the data. Results: Comparing the PA values of six parts in pairs, it was found that the PA values of LA and RA, LL and RL, and TR and WB were linearly correlated and the coefficient was close to 1 (P<0.001). Binary classification regression was performed for BMI and PG-SGA, respectively. In order to make the data have clinical significance, 18.5 kg/m(2) was used as the classification point for BMI, 4 and 9 were used as the classification points for PG-SGA score, and the models of A, B and C were obtained. Suitable variables including PA-LA, PA-TR and tumor disease types were used as variables to fit BMI classification; BMI, PA-LA and age were used as variables to fit the PG-SGA model with 9 as the classification point. PA-LA, PA-TR, BMI, age and tumor disease types were used as variables to fit the PG-SGA model with 4 as the classification point. In this study, the predicted values of models A, B and C obtained by R-studio were imported into SPSS 26.0 software, and the cut-off values of classification were obtained by the receiver operating characteristic (ROC) curve. The ROC analytic results showed that the best cut-off values of Model A, B and C were 0.155, 0.793 and 0.295. Model A recommended when the probability is >0.155, a patient's nutritiond tatus should be classified as BMI < 18.5 kg/m(2) group. Model B recommended that PG-SGA<9 group be classified as the probability is >0.793. Model C recommended that PG-SGA < 4 group should be classified when probability is >0.295. Conclusions: The PG-SGA classification prediction model is simple to operate, and the nutritional status of patients can be roughly divided into three groups: normal or suspected malnutrition group (PG-SGA<4), moderate malnutrition group (4≤PG-SGA<9), and severe malnutrition group (PG-SGA≥9). This model can more efficiently predict the nutritional status of cancer patients, greatly simplify the nutritional assessment process, and better guide the standardized treatment of clinical malnutrition.

ABSTRACT

Food non-destructive detection technology (NDDT) is a powerful impetus to the development of food safety and quality. One of the essential tasks of food quality regulation is the non-destructive detection of the food's nutrient content. However, existing food nutrient NDDT performs poorly in terms of efficiency and accuracy, which hinders their widespread application in daily meals. Therefore, this paper proposed an end-to-end food nutrition non-destructive detection method, named Swin-Nutrition, which combined deep learning and NDDT to evaluate the nutrient content of food. The method aimed to fully capture the feature information from the food images and thus accurately estimate the nutrient content. Swin-Nutrition resorted to Swin Transformer, the feature fusion module (FFM), and the nutrient prediction module to evaluate nutrient content. In particular, Swin Transformer acted as the backbone network for feature extraction of food images, and FFM was used to obtain the discriminative feature representation to improve the accuracy of prediction. The experimental results on the Nutrition5k dataset demonstrated the effectiveness and efficiency of our proposed method. Specifically, the mean value of the percentage mean absolute error (PMAE) for calories, mass, fat, carbohydrate, and protein were only 15.3%, 12.5%, 22.1%, 20.8%, and 15.4%, respectively. We hope that our simple and effective method will provide a solid foundation for the research of food NDDT.

ABSTRACT

There are many methods or indicators used for evaluating the nutritional value of foods; however, it is difficult to accurately reflect the comprehensive nutritional value of a food with a single indicator, and a systematic evaluation system is lacking. In this article, we systematically summarize the common evaluation methods and indicators of the nutritional value of foods. The purpose of this review was to establish an evaluation procedure for nutritional properties of foodstuffs and to help scientists choose more direct and economical evaluation methods according to food types or relevant indicators. The procedure involves the selection of a three-level evaluation method that covers the whole spectrum of a food's nutritional characteristics. It is applicable to scientific research in the fields of agricultural science, food science, nutrition, and so on.

ABSTRACT

Background: In research on the subject, the predictive importance of personal resources is indicated for diet quality. Objective: The aim of the study was quantitative assessment of diet depending on the level of generalised self- efficacy among elite Polish basketball players. Material and Methods: Food diaries (2 training days and 1 no training day) of 48 basketball players were analysed. Further assessed were 144 food rations based on the Diet 6.0 program, and the results were compared to the current Polish nutritional standards. The Generalised Self-Efficacy Scale (GSES) was also used. Statistical analyses were performed by estimating Spearman's rank correlation coefficients (p<0.05). Results: The share of energy from proteins, fats and carbohydrates was 18.2%, 29.4% and 52.4%, respectively. Of the mineral salts, the average diet contained: 2,107.6 mg sodium, 2,918.3 mg potassium, 736.3 mg calcium, 1,372.2 mg phosphorus, 380.1 mg magnesium, and 11.6 mg iron. Of the vitamins, the average diet contained: 1,100.3 µg of vitamin A, 5.3 µg of vitamin D, vitamin E in the amount of 8.2 mg, 78.1 mg of vitamin C, 1.1 mg vitamin B1, 1.3 mg vitamin B2, 1.9 mg of vitamin B6, 271.7 µg of vitamin B9 and 4.7 µg of vitamin B12. It was also shown that as the sense of self-efficacy developed, the supply of energy, water, protein, digestible carbohydrates, energy from carbohydrates, sucrose and PUFAs also increased in the players' diets. At the same time, along with the increase in self-efficacy, the supply of: Na, K, Ca, Mg, P, Fe, Cu and iodine as well as vitamins: A, E, B1, B3, B6 and C, also increased in the players' diets. Conclusions: Incomplete diet balance has been demonstrated, as well as significant relationships between the level of self-efficacy and the supply of certain nutrients in the diet of elite Polish basketball players. The obtained results indicate the legitimacy of diet monitoring and nutritional education as well as considering personality traits in activities promoting maintaining a proper diet among athletes.

BACKGROUND: School is an important setting to promote healthy eating habits for children. We compared the effects of 4 conditions on the nutritional quality of snacks brought to school. We also investigated teachers' opinions regarding the process, barriers, and facilitators in regulation implementation. METHODS: We compared the nutritional quality of morning snacks based on 1958 photographs from schools divided into 4 conditions: regulation based on a list of permitted foods and beverages; regulation banning sweets, chips, and sugary drinks; information without regulation; or no intervention. Based on 5 focus groups (N = 18 participants), we investigated factors influencing regulation implementation. RESULTS: In schools with a list of permitted foods and beverages, 76% of the children had a healthy snack, compared to 52% to 54% in the 3 other conditions (p < .01). They also brought less sweet foods compared to those in the other conditions (41% vs. 68% to 71%, p < .01). In focus groups, most teachers supported regulation but also expressed ambivalence about their legitimacy. CONCLUSIONS: In this study, a regulation based on a list of permitted foods and beverages showed the best results. All actors should be involved in a progressive implementation process to increase acceptance of such regulation.

This review aims to provide research update and progress on applications of advanced molecular spectroscopy to current research on canola related bio-processing technology, molecular structure, and nutrient utilization and availability. The studies focused on how inherent molecular structure changes affect nutritional quality of canola and its co-products from bio-processing. The molecular spectroscopic techniques (SR-IMS, DRIFT, ATR-FTIR) used for molecular structure and nutrition association were reviewed, including the synchrotron radiation with infrared microspectroscopy, the synchrotron radiation with soft x-ray microspectroscopy, the diffuse reflectance infrared Fourier transform spectroscopy, the grading near infrared reflectance spectroscopy, and the Fourier transform infrared vibrational spectroscopy. Nutritional evaluation with other techniques in association with molecular structure was also reviewed. This study provides updated research progress on application of molecular spectroscopy in combination with various nutrition evaluation techniques to current research in the canola-related bio-oil/bio-energy processing and nutrition sciences.

ABSTRACT

Bariatric surgery (BS) has proven to be highly efficacious in the treatment of obesity and its comorbidities. However, careful patient selection is critical for its success. Thus, patients should undergo medical, behavioral, and nutritional assessment by a multidisciplinary team. From the nutritional point of view, BS candidates should undergo nutritional assessment, preparation, and education by a registered dietitian in the preoperative period. Currently, detailed specified and comprehensive information on these topics is lacking. The present narrative review aimed to summarize the available literature concerning both the preoperative nutritional assessment components and the preoperative nutritional preparation and education components of patients planning to undergo BS. Current literature indicates that proper management before BS should include a comprehensive nutritional assessment, in which it is advisable to perform a clinical interview to assess patients' medical background, weight management history, eating patterns and pathologies, oral health, physical activity habits, nutritional status, supplementation usage, BS knowledge, surgery expectations and anthropometric measurements. Nutritional preparation and educational strategies should include an individualized preoperative weight-loss nutrition program, improvement of glycemic control, micronutrients deficiencies correction, eating and lifestyle habits adaptation, physical activity initiation, and strengthening knowledge on obesity and BS. At this stage, more well-designed intervention and long-term cohort studies are needed in order to formulate uniform evidence-based nutritional guidelines for patients who plan to undergo BS, including populations at higher nutritional risk. Moreover, postoperative outcomes of presurgical nutritional intervention programs should be studied.

ABSTRACT

The Nutrition Embedding Evaluation Programme (NEEP) was a global 4-year program (2013-2017) funded by the United Kingdom Department for International Development created to respond to gaps in the nutrition evidence base. The NEEP implementing agency-PATH-provided grants and evaluation technical assistance (ETA) to civil society organizations (CSOs) from 12 countries to conduct robust nutrition-related impact evaluations. The programmatic approach of having an intermediary agent to manage the funding and ETA mechanisms for nutrition impact evaluations is rare and therefore provides a unique opportunity to understand its effectiveness. Over the program duration, NEEP collected lessons learned that were analyzed and disaggregated into key themes considered critical for the completion of high-quality impact evaluations. From these lessons learned, NEEP provides an ETA program model that can be replicated or adapted to other international development sectors. This model highlights the key role of the three tiers (donor, ETA manager, and CSOs) in ensuring the best value for money and effective technical support for conducting impact evaluations and fostering the importance of knowledge uptake and evaluative culture for maximum knowledge diffusion. In this way, global research can be targeted to approaches that provide options to collaborate with the program implementers and contribute to a holistic evidence base to inform policy and programmatic decisions.

Introducción: la dieta es considerada un factor determinante en la carcinogénesis mamaria. Comparado con un análisis epidemiológico tradicional de alimentos y nutrientes aislados, el análisis factorial genera patrones de elementos asociados, útiles también para las comparaciones internacionales. Material y método: realizamos un estudio caso-control en donde 442 casos de CM y 442 controles fueron pareados por edad, residencia y estatus urbano/rural. Todas las pacientes presentaban un estatus socioeconómico bajo (bajo promedio de años de educación e ingresos). Los controles no presentaban afecciones relacionadas con tabaquismo o alcoholismo, ni habían modificado recientemente su dieta. Un análisis factorial (componentes principales) fue realizado entre controles para alimentos y nutrientes individuales sobre datos de un cuestionario alimentario de 64 ítems, ya utilizado en numerosos estudios caso-control previos. Resultados: el análisis factorial hecho con alimentos retuvo los factores occidental, tradicional, frutas totales, prudente y carnes procesadas. Este análisis usando nutrientes retuvo los factores base animal, almidón/lácteos, base frutal y carotenoides. Mientras que el patrón occidental mostró un riesgo significativo aumentado de CM (OR = 2,15), el patrón prudente se asoció inversa y significativamente (OR = 0,67). En patrones de nutrientes el factor base animal se asoció directamente con CM, mientras que el factor carotenoides se asoció inversamente. Hubo diferencias de asociación según estatus menopáusico. Conclusiones: el análisis factorial mostró el rol potencial de elementos dietarios a partir de alimentos y nutrientes, tanto de riesgo como protectores, en la etiología de CM.


Abstract Objective: to explore the dietary risk factors of breast cancer by means of a simultaneous factor analysis in food and nutrient intakes. Introduction: diet is considered a determining factor in breast carcinogenesis. If compared to a traditional epidemiological analysis of isolated food and nutrient intakes, the factor analysis creates patterns of associated elements, what is also useful for international comparisons. Method: we conducted a case control study where 442 cases of breast cancer and 442 controls were matched by age, residence and urban/rural status. All patients belonged to the lower socioeconomic status (low average of education and income). Controls did not evidence conditions associated to smoking or the consumption of alcohol, and they had not modified their diets either. A factor analysis (main components) was conducted among controls for individual food and nutrients on the basis of a food questionnaire of 64 items, which had already been used in several previous control case studies. Results: the factor analysis made with food kept the following factors: western, traditional, total fruits, cautious and processed meats. This analysis using nutrients kept the animal base, starch/dairy products, fruit base and carotenoids. While the western pattern showed an increased significant risk of breast cancer (OR= 2.15), the prudent pattern was inversely and significantly associated (OR= 0.67). In nutrient patterns the animal base factor was directly associated to breast cancer, whereas the carotenoid factor was inversely associated to it. There were association differences depending on the menopausal status. Conclusions: factor analysis showed the potential role of dietary elements in foods and nutrients, both as risk and protective factors, in the etiology of breast cancer.


Resumo Objetivo: explorar os fatores de risco dietético no câncer de mama (CM) utilizando análise fatorial simultânea em alimentos e nutrientes. Introdução: a dieta é considerada um fator determinante na carcinogénese mamaria. Comparada com uma análise epidemiológica tradicional de alimentos e nutrientes isolados, a análise fatorial gera padrões de elementos associados, úteis também para as comparações internacionais. Material e método: realizamos um estudo caso-controle com 442 casos deCMe 442 controles pareados por idade, residência e local de residência urbano/rural. Todas as pacientes apresentavam condições socioeconômicas baixas (baixas escolarização e renda). Os controles não apresentavam afecções relacionadas com tabaquismo ou alcoolismo, nem haviam modificado recentemente sua dieta. Uma análise fatorial (componentes principais) foi realizada entre controles para alimentos e nutrientes individuais utilizando os dados de um questionário alimentar de 64 itens, utilizado em vários estudos caso-controle anteriores. Resultados: a análise fatorial realizada com alimentos indicou os fatores ocidental, tradicional, frutas totais, prudente e carnes processadas. Esta análise usando nutrientes indicou os fatores base animal, amido/lácteos, frutas e carotenoides. O padrão ocidental mostrou um risco significativo aumentado de CM (OR = 2,15), enquanto o padrão prudente estava associado inversa e significativamente(OR = 0,67). Nos padrões de nutrientes o fator base animal estava associado diretamente com CM, enquanto o fator carotenoides estava inversamente associado. Foram observadas diferenças nas associações segundo condições menopausáticas. Conclusões: a análise fatorial mostrou o potencial de elementos dietéticos a partir de alimentos e nutrientes, tanto de risco como protetores, na etiologia do CM.

ABSTRACT

Fifteen jujube cultivars late in their maturation were analysed in the red stage for bioactive compounds; including total phenolics (bound/free), total flavonoids, total polysaccharides, ascorbic acid, total triterpenes, proanthocyanidins and cyclic adenosine monophosphate (cAMP). The antioxidant activity was evaluated using the 2,2-diphenyl-1-picrylhydracyl (DPPH) and 2,2'-azinobis (3-ethylbenzothiazoline-6-sulfonicacid) (ABTS(+)) scavenging methods and the ferric reducing antioxidant power (FRAP) assay. The Order Performance by Similarity to Ideal Solution method (TOPSIS) was employed to evaluate the nutrition of different jujube cultivars based on their bioactive compounds. The results indicated that the contents of bioactive compounds and antioxidant capacities vary between different jujube cultivars. Correlation analysis revealed that ascorbic acid, polyphenols and proanthocyanidins were the 3 main components responsible for the antioxidant activity of jujubes. TOPSIS analysis indicated that Zyzyphus jujube cv. Nanjingyazao ranks the highest of the 15 jujube fruits with regards to nutritional value.

ABSTRACT

The prevalence of metabolic syndrome (MetS) in people with chronic obstructive pulmonary disease (COPD) varies in European and Asian countries and does not always mirror the prevalence of the general population in a given country. We compared the prevalence of MetS in people with COPD with a comparison group in the United States. The National Health and Nutrition Evaluation Survey data set (2007-2010) was used to identify 94 people with COPD (mean age = 62). Data for demographic and clinical characteristics were obtained by interview and physical examination. Descriptive and inferential statistics were used to analyze the data. The prevalence of MetS was 57.5% in the COPD group and 53.6% in the comparison group. In people with COPD, the factors most significantly associated with MetS were age, income level, marital status, and respiratory symptoms. People with COPD should be screened for MetS.

ABSTRACT

In this study the nutritive value of 4 kinds of weaning foods containing soyflour were measured by chemical and animals experiments. The 4 experimental weaning foods were:1.This formula was developed by the Institute of Health collaborating the First Food Factory of Beijing. It was produced by the Factory and the trade name is "Baobao Le" The soybean was processed by the infra-red light.2.This formula was recommended by UNICEF (Formula No. 5). Soybean flour was treatded with the extruded method.3.This formula was the same as No. 2 (UNICEF Formula No. 5). In which the soybean was wet-heat treated. No. 2 and 3 samples were produced by Wu Xi Light Industry College.4.This formula was developed by the Institute of Shanghai Food Industry as formula D. Puffed soybean flour was used.The 2 control foods were:5.This formula was based on formula "5410". The sample was made by the First Food Factory of Beijing (trade name, "Nutritive Baby Powder").6.Infant Milk Powder, produced by the Child Milk Factory of Shuang Cheng Xian, Hei Long Jiang Province, cow's milk powder was used as the main source of protein. The protein content of the products were:No. 1 and 4, 19.0%, equal to the protein requirement for weaning foods; No.2 and 3, 15.8%, lower than No.1 and 4; Infant Milk Powder, 15.1%; Nutritive Baby Powder, 17.0%.From the results of the animal experiment on weaning rats with respect to growth, after 9 weeks of feeding, the average body weight of control group 5 and 6 increased by 185.8 and 180.5g respectively, which were significantly higher than 146.7 and 150.4g of the experimental groups No. 1 and 4. While the increased body weight of No. 1 and 4 were higher than group 2 and 3 (79.8g and 113.1g respectively). The increase of body lengths were of the same order of the 6 groups as that in body weight.Blood hemoglobin values were all normal (control groups 13.4 and 13.9g per 100 ml; experimental groups 13.9, 14.2, 13.0 and 13.0g).The weight of pancreas in the 4 experimental groups were all normal. It showed that the activity of trypsin inhibitor had been destroyed. Weights of thyroid of the rats were all within the normal range except group 1,2,3, which were a little bit heavier. Potassium iodide was.added into formula 1,2 and 3, to prevent hyperthyroidism but since potassium iodide is easily to evaporate, so it would be perferable to use potassium iodate instead.The above results indicated that the growth promoting effect of the 4 weaning foods is lower than the two baby powder, but they are good weaning foods for baby after six months. "Baobao Le" and formula No 6 are much better.
