ABSTRACT

During domestication, the selection of cultivated plants often reduces microbiota diversity compared with their wild ancestors. Microbiota in compartments such as the phyllosphere or rhizosphere can promote fruit tree health, growth, and development. Cordia dodecandra is a deciduous tree used by Maya people for its fruit and wood, growing, to date, in remnant forest fragments and homegardens (traditional agroforestry systems) in Yucatán. In this work, we evaluated the microbiota's alpha and beta diversity per compartment (phyllosphere and rhizosphere) and per population (forest and homegarden) in the Northeast and Southwest Yucatán regions. Eight composite DNA samples (per compartment/population/region combination) were amplified for 16S-RNA (bacteria) and ITS1-2 (fungi) and sequenced by Illumina MiSeq. Bioinformatic analyses were performed with QIIME and phyloseq. For bacteria and fungi, from 107,947 and 128,786 assembled sequences, 618 and 1092 operating taxonomic units (OTUs) were assigned, respectively. The alpha diversity of bacteria and fungi was highly variable among samples and was similar among compartments and populations. A significant species turnover among populations and regions was observed in the rhizosphere. The core microbiota from the phyllosphere was similar among populations and regions. Forests and homegarden populations are reservoirs of the C. dodecandra phyllosphere core microbiome and significant rhizosphere biodiversity.

ABSTRACT

La presente investigación tuvo como objetivo: interpretar el significado atribuido al consumo de frutas y hortalizas en un grupo de familias de Turbo. El enfoque metodológico fue cualitativo, el cual permitió comprender las realidades alimentarias de los sujetos que vivencian la situación y en los escenarios y contextos donde ocurrieron los hechos. El método utilizado fue la etnografía; las técnicas para recabar la información fueron la entrevista cualitativa, el grupo de discusión y la observación. Hallazgos: en las familias participantes quienes más consumen frutas y hortalizas son las madres y los niños menores de nueve años, éstas son también quienes enseñan a los menores a consumir dichos alimentos. A las frutas y hortalizas les atribuyen propiedades en la prevención y curación de enfermedades, principalmente respiratorias y del tracto gastrointestinal.


The present study aimed at interpreting the meaning of fruits and vegetables consumption for a group of families of Turbo. The methodological approach was qualitative, which allowed the understanding of food realities through the subjects who experience the situations, scenarios and contexts where the studied facts occurred. The method used was ethnography; the techniques for gathering information were qualitative interviewing, group discussion, and observations. Findings: Mothers and children under nine are the ones who eat more fruits and vegetables among families; mothers are also those who teach the children to consume such foods. Fruits and vegetables are regarded as helps to prevent and cure diseases, especially respiratory and gastrointestinal ones.

Two experiments were conducted, the first being the digestibility of feed and the second performance in an attempt to evaluate the residue of pineapple bran in diets for Nile tilapia. Eighty animals weighing 63.9 ± 0.79 g in a completely randomized design were used to test the digestibility in order to evaluate the apparent digestibility of dry matter, crude protein, gross energy, digestible energy and digestible protein. In the performance of 240 juveniles were distributed in three ranges of weights: 34.9 ± 0.06, 44.4 ± 0.27 and 55.5 ± 0.10 g, in order to evaluate performance, yield Housing and somatic indices of Nile tilapia. The design was a randomized block with three blocks, with four treatments and five repetitions, rations in both experiments contained four levels of inclusion of pineapple bran residue (0, 5, 10 and 15%). The digestibility of the diets were: dry matter (76.17, 75.42, 75.31 and 75.77%), crude protein (87.90, 90.24, 89.51 and 89.03%) gross energy (79.12, 79.33, 79.07 and 77.48%), digestible energy (3649, 3559, 3560 and 3190 kcal kg-1) and digestible protein (29.28, 30.35, 29.82 and 29.79%), respectively. It was observed the significant effect on the carcass without head, so we recommend the inclusion of up to 10.39% for the inclusion of pineapple bran residue in diets of Nile tilapia.


Foram realizados dois experimentos, sendo o primeiro de digestibilidade das rações e o segundo de desempenho na tentativa de avaliar o farelo do resíduo de abacaxi nas dietas para tilápia do Nilo. Foram utilizados para o ensaio de digestibilidade 80 animais com peso de 63,9 ± 0,79g, em um delineamento experimental inteiramente casualizado, com o objetivo de avaliar o coeficiente de digestibilidade aparente da matéria seca, proteína bruta, energia bruta, energia digestível e proteína digestível. No experimento de desempenho foram utilizados 240 juvenis, distribuídos em três faixas de pesos: 34,9 ± 0,06; 44,4 ± 0,27 e 55,5 ± 0,10 g, com o objetivo de avaliar desempenho produtivo, rendimento de carcaça e índices somáticos da tilápia do Nilo. O delineamento utilizado foi em blocos casualizados com três blocos, com quatro tratamentos e cinco repetições, As rações em ambos os experimentos continham quatro níveis de inclusão do farelo de resíduo de abacaxi (0, 5, 10 e 15%). Os coeficientes de digestibilidade das rações foram: matéria seca (76,17; 75,42; 75,31 e 75,77%), proteína bruta (87,90; 90,24; 89,51 e 89,03%), energia bruta (79,12; 79,33; 79,07 e 77,48%), energia digestível (3649, 3559, 3560 e 3190 kcal kg-1) e proteína digestível (29,28; 30,35; 29,82 e 29,79%), respectivamente. Foi observado o efeito significativo sobre o rendimento de carcaça sem cabeça, recomenda-se, então, a inclusão de até 10,39% de inclusão do farelo de resíduo de abacaxi nas rações de tilápia do Nilo.

ABSTRACT

El bajo consumo frutas y verduras se encuentra entre los factores de riesgo para desarrollar enfermedades cardiovasculares y algunos tipos de cáncer. Los países han implementado políticas alimentarias para promover su consumo. El identificar las barreras que percibe la población para consumirlas ayuda a reconocer los recursos que estarían dispuestos a intercambiar para recibir beneficios. Los objetivos de este estudio son: determinar cuáles son los facilitadores y las barreras para aumentar el consumo de frutas y verduras en seis países de Latinoamérica y establecer si existe relación entre las guías alimentarias y el programa 5 al día. Este estudio es de campo y cualitativo. Se usaron las técnicas de entrevistas grupales a profesionales de salud y de los medios de comunicación, y entrevistas a expertos en políticas alimentarias. Los facilitadores destacados fueron la publicidad televisiva de las campañas que promueven su consumo, y la existencia de ferias libres en los barrios. Los obstaculizadores resaltados fueron la falta de políticas públicas de regulación sobre la publicidad y ganchos comerciales de los alimentos, de autosustentabilidad, de financiamiento de los programas relacionados, y de investigación sociológica del tema. La principal barrera para el consumo de frutas y verduras en estos países fue la falta de apoyo normativo y de políticas públicas relacionadas, siendo vital una buena campaña publicitaria en el éxito de los programas que fomentan su consumo. La principal relación existente entre las Guías Alimentarias y el Programa 5 al día es que ambos promueven el consumo de verduras y frutas.


Low intake of fruits and vegetables is among the risk factors for cardiovascular disease and some cancers. The countries have implemented policies to promote food consumption. Identifying the barriers perceived by people to consume it helps to recognize the resources that would be willing to exchange for benefits. The objectives of this study are to determine what factors are facilitators and barriers to increasing consumption of fruits and vegetables in six countries in Latin America, and a possible relationship between the 5 a day program and the food based dietary guidelines. This is a qualitative and field study. Techniques used were group interviews with health professionals and the media, and interviews with experts in food policy. The outstanding facilitators were television advertising campaigns promoting their use, and the existence of fruits and vegetables markets in the neighborhoods. Highlighted those obstacles were lack of public policies of advertising regulations and trade hooks of food, of self-sustainability, of funding for related programs, and of sociological research of the topic. The main barrier to the consumption of fruits and vegetables in these countries was the lack of policy support and related public policy, being a good advertising campaign vital to the success of programs that encourage consumption. The main relationship between the Dietary Guidelines and the 5 A Day Program is to both promote the consumption of vegetables and fruits.

ABSTRACT

Neste trabalho, avaliou-se o rendimento em suco, arilo e sementes do maracujá-amarelo, para identificar o potencial de agregação de valor às sementes usadas na extração do óleo. Foram feitas medidas de massa, coloração da casca, tamanho e formato do fruto, rendimento em suco, sementes, arilo, número de sementes por fruto e umidade das sementes. Os dados foram interpretados por intervalo de confiança a P≤0,05 para amostras de uma população infinita de frutos. Verificou-se que o rendimento em suco aumentou com o amadurecimento, mas não foi influenciado pelo formato e tamanho. A proporção do resíduo total foi maior nos frutos maduros com o menor tamanho. O rendimento de sementes foi menor nos frutos grandes, mas não foi alterado pelo formato, apresentando média de 4,23 por cento de semente. O conteúdo de óleo estimado nas sementes com 25,7 por centobs indica um potencial de produção de 64,84t de óleo por ano no estado do Rio de Janeiro.

ABSTRACT

Conduziu-se este trabalho, com o objetivo de realizar o processamento e avaliar a estabilidade da polpa de bacuri (Platonia insignis Mart.) submetida ao congelamento durante 12 meses. Durante o período de armazenamento não ocorreram alterações significativas nas características físico-químicas da polpa quanto aos teores de sólidos solúveis, pH, atividade de água, açúcares totais e redutores, vitamina C, compostos fenólicos poliméricos e oligoméricos, pectina total e solúvel e cor L, a* , b*, enquanto que a acidez total e relação SST/AT variaram com o tempo de armazenamento. Os compostos fenólicos dímeros apresentaram aumento em função do tempo. Pelos resultados obtidos, a polpa de bacuri não pode ser considerada uma boa fonte de vitamina C. Por outro lado, apresenta baixos teores de compostos fenólicos caracterizando a polpa como, potencialmente pouco adstringente e com potencial para o processamento. A qualidade microbiológica não foi alterada durante o período de armazenamento. Os resultados apontam a eficiência do congelamento na manutenção das características físico-químicas e microbiológicas da polpa de bacuri.


The objective of this work was to process and evaluate the stability of the bacuri (Platonia insignis Mart.) pulp submitted to freezing for 12 months. During the storage period there were significant changes in the physiochemical characteristics of the pulp as for the content of total soluble solids, pH, water activity, total and reducing sugars, vitamin C, polimer and oligomeric phenolic compounds , total and soluble pectin and color L, the a*, b *,while total acidity and soluble solids varied with the storange period. The dimers phenolic compounds incresead with the time. According to the results, the bacuri pulp cannot be considered a good source of vitamin C, but it presents low contents of phenolic compounds characterizing the pulp as little astringent, thus showing potential for the processing. The microbiological quality was not altered during the storage period indicating the efficiency of freezing for maintaining the physiochemical and microbiological characteristics of the bacuri pulp.

ABSTRACT

The goal of this work was to select strains of fermentation yeasts and test them in a small-scale production of " umbu" fruit wine. The fruits were collected in N. Sra da Glória city in Sergipe, Brazil. The fruit pulp was diluted and aliquots were inoculated on YMA plates. The yeasts strains were submitted to fermentation using "umbu" fruit juice as substrate, exception with to those strains of species related to pathological processes. The yeasts tested produced a beverage characterized between dry to light due to its alcoholic content with very nice taste, translucent appearance, of green to light yellow color.


As leveduras são essenciais na fabricação de bebidas alcoólicas devido a sua alta capacidade de fermentação. Dessa forma, o objetivo deste trabalho foi selecionar linhagens de leveduras fermentadoras e testá-las na produção de vinho semi-artesanal. Os frutos foram coletados em Nossa Senhora da Glória - SE, Brasil. A polpa foi diluída e alíquotas foram inoculadas em placas contendo YMA. Após essa etapa foi realizadas a seleção, purificação e identificação dos morfotipos. As leveduras foram posteriormente submetidas ao teste de fermentação, excetuando-se aquelas relacionadas a processos patológicos, As leveduras testadas produziram vinhos com teor alcoólico que os caracterizaram entre seco e suave, sabor e aparência agradáveis, translúcidos, e cor intermediária entre o verde e o amarelo claro.

ABSTRACT

The work had the objective to elaborate apple jellies by using brown sugar. The jellies were elaborated with apple pulp, water, lemon juice, pectin and 20, 35, 50 and 65% of brown sugar. It was verified the yield, cost and the consumer's preference of the jelly formulations. The most favorite jellies, were reprocessed, and it was determined the physical, chemical and microbiological characteristics, soon after the processing, after 30, 60 and 90 days of storage. It was observed that the jellies elaborated with 35, 50 and 65% of brown sugar were equally acceptable by the consumers, overcoming that ones with 20%; the jelly with 65% of brown sugar presented advantages over the others, when considering the cost and yield; the products stability was superior to three months and there were a physical and chemical significative difference among the formulations.


O trabalho objetivou elaborar geleiadas de maçã utilizando açúcar mascavo. As geleiadas foram elaboradas com polpa de maçã, água, suco de limão, pectina e 20, 35, 50 e 65% de açúcar mascavo em relação à quantidade de polpa. Verificou-se o rendimento, custo, e a preferência do consumidor pelas diferentes formulações. As geleiadas mais preferidas foram reelaboradas e determinaram-se as características físicas, químicas e microbiológicas, logo após o processamento, aos 30, 60 e 90 dias de estocagem. Os resultados permitiram concluir que as geleiadas elaboradas com 35, 50 e 65% de açúcar mascavo foram igualmente preferidas pelos consumidores, superando aquela com 20%; considerando o custo e o rendimento, verificou-se que a geleiada com 65% de açúcar mascavo apresentou vantagem sobre as demais; a estabilidade desses produtos foi superior a três meses; e existiram diferenças físicas e químicas significativas entre as formulações.

ABSTRACT

The work had the objective to elaborate apple jellies by using brown sugar. The jellies were elaborated with apple pulp, water, lemon juice, pectin and 20, 35, 50 and 65% of brown sugar. It was verified the yield, cost and the consumer's preference of the jelly formulations. The most favorite jellies, were reprocessed, and it was determined the physical, chemical and microbiological characteristics, soon after the processing, after 30, 60 and 90 days of storage. It was observed that the jellies elaborated with 35, 50 and 65% of brown sugar were equally acceptable by the consumers, overcoming that ones with 20%; the jelly with 65% of brown sugar presented advantages over the others, when considering the cost and yield; the products stability was superior to three months and there were a physical and chemical significative difference among the formulations.


O trabalho objetivou elaborar geleiadas de maçã utilizando açúcar mascavo. As geleiadas foram elaboradas com polpa de maçã, água, suco de limão, pectina e 20, 35, 50 e 65% de açúcar mascavo em relação à quantidade de polpa. Verificou-se o rendimento, custo, e a preferência do consumidor pelas diferentes formulações. As geleiadas mais preferidas foram reelaboradas e determinaram-se as características físicas, químicas e microbiológicas, logo após o processamento, aos 30, 60 e 90 dias de estocagem. Os resultados permitiram concluir que as geleiadas elaboradas com 35, 50 e 65% de açúcar mascavo foram igualmente preferidas pelos consumidores, superando aquela com 20%; considerando o custo e o rendimento, verificou-se que a geleiada com 65% de açúcar mascavo apresentou vantagem sobre as demais; a estabilidade desses produtos foi superior a três meses; e existiram diferenças físicas e químicas significativas entre as formulações.

This research was carried out in Porto Lucena, RS, Brazil, at 1992 harvest, aimed to evaluate some physical characteristics of fruits of four guava (Psidium guajava L.) cultivars (IAC-4, Brune Vermelha, Riverside Vermelha and Pirassununga Vermelha) and two selections (RBS-1 and RBS-2). RBS-1 and RBS-2 selections showed the highest fruit average weight and the RBS-2 selection showed the highest longitudinal diameter (LD), transversal diameter (TD), LD/LT relation and flesh weight (FW). Riverside Vermelha cultivar presented the highest endocarp thickness (ET) and endocarp weight (EW). IAC-4 cultivar and RBS-1 selection had the best FW/EW relation. On the other hand, firmness, flesh thickness (FT) and FT/ET relation did not show differences among cultivars and selections.

A firmeza, espessura da polpa (EP) e relação EP/EE foram semelhantes entre as cultivares e seleções.
