ABSTRACT

Accurate protein solubility prediction is crucial in screening suitable candidates for food application. Existing models often rely only on sequences, overlooking important structural details. In this study, a regression model for protein solubility was developed using both the sequences and predicted structures of 2983 E. coli proteins. The sequence and structural level properties of the proteins were bioinformatically extracted and subjected to multilayer perceptron (MLP). Moreover, residue level features and contact maps were utilized to construct a graph convolutional network (GCN). The out-of-fold predictions of the two models were combined and fed into multiple meta-regressors to create a stacking model. The stacking model with support vector regressor (SVR) achieved R2 of 0.502 and 0.468 on test and external validation datasets, respectively, displaying higher performance compared to existing regression models. Based on the improved performance compared to its based models, the stacking model effectively captured the strength of its base models as well as the significance of the different features used. Furthermore, the model's transferability was indirectly validated on a dataset of seed storage proteins using Osborne definition as well as on a case study using molecular dynamic simulation, showing potential for application beyond microbial proteins to food and agriculture-related ones.

ABSTRACT

This study assesses the nutritional composition and safety of lab-produced snail flour derived from Helix aspersa aspersa, an herbivorous pulmonated gastropod mollusc that occupies various trophic levels in food chains. Our analysis focused on key nutritional aspects, including moisture, ash, protein, and fat contents. Contaminant analysis on the powder showed levels below detectable limits for PAHs, PCBs, PBDEs. The heavy metal concentration was found to be either on par with or lower than values reported in existing literature, indicating the safety of these snail powders for human consumption. Our results revealed a notable presence of polyunsaturated fatty acids and essential amino acids and strongly support the idea that snail powders can serve as sustainable protein sources in both human and animal diets.

ABSTRACT

Phytoseius plumifer (Canestrini and Fanzago) and Euseius scutalis (Athias-Henriot) (Phytoseiidae) are generalist predatory mites important in controlling phytophagous mites on some agricultural crops. The biology of both species as potential biological control agents of the grape erineum mite, Colomerus vitis (Pagenstecher) (Eriophyidae) on grape leaf disks was studied in the laboratory at 33 ± 1 °C, 60%RH, 12:12 h L:D. The developmental time, survival, and reproductive parameters of P. plumifer and E. scutalis on C. vitis, date palm pollen as well as C. vitis plus date palm pollen were investigated. Both predators, P. plumifer and E. scutalis, thrived on the mixed diet of C. vitis and date palm pollen resulting in a shorter developmental time (6.16 and 6.69 days, respectively), higher oviposition rate (2.11 and 1.96 eggs/female/day, respectively), and higher intrinsic rate of increase (0.251 and 0.229 per female/day, respectively) than on any other diet. Date palm pollen was an adequate alternative food source for P. plumifer and E. scutalis. The results suggest that both predators have good potential to suppress C. vitis populations and that date palm pollen can support the population establishment of both predators in the absence or scarcity of the main prey in the environment. We discuss the relevance of our results for the biocontrol of C. vitis.

ABSTRACT

Experiences of distress and challenging emotions in response to the climate crisis are increasingly common, particularly among young adults. These experiences can include challenging emotions caused by the harmful environmental impacts of conventional food systems, as their contributions to greenhouse gas emissions have become more widely known. While recent studies have examined various experiences of climate distress, the interaction between climate distress and food practice remains poorly understood. In this research, we turn to this intersection by examining the experiences of climate distress of young adults who have alternative food practices, and the interaction between their climate distress and their alternative food practices. Guided by an exploratory, single case study research approach, this research draws from 20 semi-structured interviews conducted with young adults located in urban centres in the Southeastern Prairie Region of Canada. Thematic analysis of the findings reveals that participants experience a variety of climate emotions and a personal responsibility to act in response to the climate crisis. The findings suggest that because of their ability to facilitate a meaningful and practical environmental impact, alternative food practices represent significant climate actions and may be pathways to facilitate coping or managing climate distress among young adults. Results demonstrate the psychological impacts of the climate crisis on young adults, highlighting the need for action on climate change and climate distress. Increasing the accessibility of alternative food practices may support young adults in coping with challenging climate emotions.

ABSTRACT

Objective: To characterize 12-month trends in the use of food donations and other food-related community-based social assistance programs (CB-SAPs) during the first year following the enrollment of new food bank (FB) users in Quebec, Canada. Methods: A cohort of 1,001 newly registered FB-users in Quebec from the Pathways Study were followed-up during 12-month following baseline assessment. Outcomes were monthly use of food donations and other food-related CB-SAPs. Main predictors were alternative food source utilization (AFSU) profiles: 1) exclusive-FB-users; 2) FB+fruit/vegetable-market-users; and 3) Multiple/diverse-AFS-users. Covariates included sociodemographic characteristics, health status, and major life events. We fit Bayesian hierarchical mixed-effect models, accounting for spatial clustering, temporal correlation, and censoring. Results: We observed an overall downward trend of food donation use among study completers (n = 745). Each AFSU profile had a distinctive monthly trend of food donation use, but probabilities of use across the three profiles overlapped, between 44% and 55%. The use of other food-related CB-SAPs was low and not correlated with AFSU profiles. Conclusion: De novo FB-users use food donations in different ways over time according to specific contextual AFSU profiles.

ABSTRACT

Introduction: The Covid-19 pandemic affected food systems in many countries and emphasized a lot of already existing social, economic and environmental agri-food problems. Alternative food networks (AFNs), praised for their ability to improve the food systems, were under stress, however, at the same time, the changed conditions may have opened new possibilities. In this paper we address the importance of AFNs during the pandemic and investigate how households have changed their participation in AFNs. Our research is novel by simultaneously focusing on both market and non-market AFNs which are often studied separately. Methods: A representative questionnaire study of Czech households was carried out in Autumn 2021 to provide a case study of food and consumption behavior of the European country after several waves of Covid-19. Results and discussion: Based on the responses of 515 participants, the results show that 68% of Czech households participate in some form of AFNs, be it shopping or food self-provisioning, i.e., non-market food procurement in the form of gardening. Focusing on the market AFNs, farmers' markets and farm gate sales are the most popular. Covid-19 and 2021 emerging economic pressures led to a decrease of consumption of organic food (22% of respondents) as well as fresh fruit and vegetables in general (10% of respondents) and a noticeable occurrence of food insecurity (18% of households). Based on these findings, the paper discusses the ability of AFNs to support food and nutritional resilience. Problems which may endanger market-oriented AFNs are discussed as well. Conclusion: By addressing both market and non-market AFNs, the paper brings new knowledge into the food environment and agri-food policies research.

ABSTRACT

Plant-based hamburger patties (PHPs) with reduced fat content made using fat replacers will meet the consumption goals of individuals who consume meat alternative products for health. In this study, we developed a dual-alternative food model by analysing the applicability of bacterial cellulose paste (BCP) as a fat replacer and supplementing it in PHPs. BCPs were prepared with solid contents of (w/w; 1.0%, 1.5%, 2.0%, 2.5%, and 3.0%) and compared and analyzed with three types of conventional vegetable [coconut oil, margarine, and shortening (SH)] and animal fats (beef tallow, butter, and lard) for various characteristics (appearance, dimensional stability, hardness level, and rheological properties). According to the results, BCP with a solid content of 3.0% (w/w) had the most similar characteristics to SH. Therefore, using SH as a control fat, PHPs in which 0%, 25%, 50%, 75%, and 100% (w/w) SH were replaced by 3.0% (w/w) BCP were prepared. Analysis of the appearance, instrumental color, diameter reduction, thickness, cooking loss, and texture profile of the PHPs, confirmed that replacement of 25%-50% (w/w) SH with 3.0% (w/w) BCP in the preparation of PHP resulted in i) redder color, ii) better dimensional stability, iii) lower cooking loss, and iv) higher chewiness of the final products. The results of the sensory evaluation showed that the PHPs, with 25%-50% (w/w) SH replaced with 3.0% (w/w) BCP, exhibited no significant differences (p < 0.05) in overall preference scores compared to the full-SH sample. In conclusion, this study demonstrated the potential of BCP as a fat substitute for the production of PHPs.

ABSTRACT

This paper examines the resilience of farmers markets in Michigan to the system shock of the global COVID-19 pandemic, questioning how the response fits into market goals of food sovereignty. Adapting to shifting public health recommendations and uncertainty, managers implemented new policies to create a safe shopping experience and expand food access. As consumers directed their shopping to farmers markets looking for safer outdoor shopping, local products, and foods in short supply at grocery stores, market sales skyrocketed with vendors reporting selling more than ever before, but the longevity of this change remains unclear. Our data collected via semi-structured interviews with market managers and vendors, and survey data from customers from 2020 to 21, suggest that despite the widespread impact of COVID-19, there is not sufficient evidence consumers will continue to shop at farmers markets at the rates they did in 2020-21. Furthermore, reasons consumers flocked to farmers markets do not align with market priorities for increased food sovereignty, as increased sales alone are not a sufficient driver for this goal. We question how markets can contribute to broader sustainability goals or serve as alternatives to capitalist and industrial modes of agricultural production, problematizing the role of markets in the food sovereignty movement.

ABSTRACT

Alternative food networks (AFN) are argued to provide platforms to re-socialize and re-spacealize food, establish and contribute to democratic participation in local food chains, and foster producer-consumer relations and trust. As one of the most recent examples of AFN, Participatory Guarantee Systems (PGS) have gained notable traction in attempting to redefine consumer-producer relations in the organic value chain. The participation of stakeholders, such as consumers, has been a key element theoretically differentiating PGS from other organic verification systems. While research on farmer participation in PGS is attracting interest, consumer participation is still widely overlooked. Using a mixed methods approach, this paper describes five PGS markets in Mexico, Chile and Bolivia. A survey was conducted with consumers in the PGS markets to explore their awareness of the PGS, how consumers participate in the PGS, and their level of trust in the respective PGS and its certified products. Results showed a low level of awareness of PGS among market consumers, few participation possibilities, and minimal consumer participation overall. Nevertheless, trust in organic quality was generally high. Consumers primarily relied on the direct relationship with producers and the PGS market itself as sources of trust. These results provide novel insight into PGS consumer-market interactions, and contribute to discussions concerning social embeddedness, awareness and participation within AFN.

ABSTRACT

Since the occurrence of COVID-19 and food price inflation, alternative forms of food procurement increased in popularity. The present study is dedicated to urban foraging and aims to explore key factors driving food foraging behavior in the U.S. Two specific foraging behaviors, namely "leaving food behind" or "taking it all", have been investigated in a gardening and non-gardening location. Leaving food behind is crucial to sustainable foraging practices, as it allows plants and ecosystems to recover and promotes fairness in foraging communities. Data was procured from an online consumer survey and analyzed using SmartPLS 4, which allowed the use of partial least square structural equation modeling (PLS-SEM). PLS-SEM is particularly suitable for complex exploratory studies as it does not require distributional assumptions. Results indicate that nature and food attitudes predict attitudes toward urban foraging. Foraging attitudes, such as food foraging is challenging and food foraging benefits people and the planet, which are the most important drivers for taking or leaving behaviors in both types of locations. These findings are of relevance to managers in municipalities, landscape designers, horticultural businesses, and other stakeholders who create, shape, and govern landscapes used for food foraging.

ABSTRACT

Trata-se de um relato de experiência que objetivou descrever a vivência de acadêmicos de enfermagem na utilização de uma tecnologia educativa para abordagem da alimentação de hipertensos e diabéticos paraenses. Utilizou-se um painel interativo com figuras de alimentos presentes no cotidiano da população, algumas relacionadas a alimentos capazes de contribuir para o descontrole das doenças e outras com alimentos substitutivos, mais saudáveis e capazes de exercer papel positivo e efeito protetor. Observou-se que a ação centrada na adaptação e nas sugestões de substituições mais saudáveis com diminuição da quantidade ou substituições por alimentos regionais mostrou-se positiva, uma vez que estimulou o senso de pertencimento cultural e a autonomia do participante e que a elaboração de planos de cuidado devem ser personalizados em respeito às diferenças regionais e culturais.


This is an experience report that aimed to describe the experience of nursing students in the use of educational technology to approach the feeding of hypertensive and diabetic patients from Pará. An interactive panel was used with pictures of foods present in the population's daily life, some related to foods capable of contributing to the lack of control of diseases, and others with substitute foods, healthier and capable of exerting a positive role and protective effect. It was observed that the action centered on adaptation and suggestions for healthier replacements, with a reduction in the quantity or substitutions for regional foods, proved to be positive, as it stimulated the participant's sense of cultural belonging and autonomy and the development of care plans must be personalized with respect for regional and cultural differences.

ABSTRACT

Little is known about how farms and markets are connected. Identifying critical gaps and central hubs in food systems is of importance in addressing a variety of concerns, such as navigating rapid shifts in marketing practices as seen during the COVID-19 pandemic and related food shortages. The constellation of growers and markets can also reinforce opportunities to shift growing and eating policies and practices with attention to addressing racial and income inequities in food system ownership and access. With this research, we compare network methods for measuring centrality and sociospatial orientations in food systems using two of America's most high-producing agricultural counties. Though the counties are adjacent, we demonstrate that their community food systems have little overlap in contributing farms and markets. Our findings show that the community food system for Yolo County is tightly interwoven with Bay Area restaurants and farmers' markets. The adjacent county, Sacramento, branded itself as America's Farm-to-Fork capital in 2012 and possesses network hubs focused more on grocery stores and restaurants. In both counties, the most central actors differ and have been involved with the community food system for decades. Such findings have implications beyond the case studies, and we conclude with considerations for how our methods could be standardized in the national agricultural census.

ABSTRACT

Opaque value chains as well as environmental, ethical and health issues and food scandals are decreasing consumer trust in conventional agriculture and the dominant food system. As a result, critical consumers are increasingly turning to community-supported agriculture (CSA) to reconnect with producers and food. CSA is often perceived as a more sustainable, localized mode of food production, providing transparent production or social interaction between consumers and producers. This enables consumers to observe where their food is coming from, which means CSA is considered suitable for building trust in food (production). However, it remains unclear how exactly members' trust in 'their' farmers is built. To determine the factors that predict members' trust in CSA and its farmers, and the importance of these factors when compared to each other, we conducted a quantitative study among CSA members in Germany and applied a multiple regression model (n = 790). The analysis revealed that trust in CSA and its farmers is influenced by "reputation", "supply of information", "direct social interaction" and the "duration of CSA membership". Other factors such as the "certification status of the CSA farm" and "attitudes toward organic certification" did not significantly predict trust. We conclude that producers' willingness to be transparent already signals trustworthiness to CSA members and is more important to members than formal signals. Other actors within the food system could learn from CSA principles and foster a transition toward a more regionalized value-based food system to help restore agriculture's integrity. Advocates for structural change in the food system see opportunity in alternative food systems (AFS) to bolster sustainability and equity. Indeed, any alternative to industrial labor practices is assumed to be better. However, little is known about what types of jobs are building AFS or job quality. Failing to understand job quality in AFS risks building a sustainable but exploitative industry. Using a unique and large data set on job openings in AFS, this paper narrows this gap by providing an assessment of labor demand and job quality for AFS in the United States between 2010 and 2019. Job advertisements are matched to 2018 Standard Occupation Codes to characterize work. Wages are compared to living wage standards and median incomes by occupation and local labor market. Considering living wage tests and local labor market competitiveness together, the potential for high job quality in AFS is mixed. Optimistically, higher prices in occupation that are close to consumers and experiencing significant labor demand, like food service and sales, saw more competitive wages. However, these roles frequently failed to offer living wages. Farm work occupations underperformed compared to local labor markets. In addition, uncompetitive senior-level jobs may indicate low-quality career pathways for leadership roles charting paths forward in AFS. These results suggest more institutional action are necessary to enhance labor quality within these spaces and more broadly across the food system. These results also raise questions about who is able to participate in AFS development and whether barriers to participate may replicate equity blind spots.

Indoor co-cultivation systems can answer to the need for sustainable and resilient food production systems. Rearing organisms under light-emitting diodes (LEDs) irradiation provides the possibility to control and shape the emitted light spectra. UV-B-irradiation (280-315 nm) can positively affect the nutritional composition of different plants and other organisms, whereas information on edible insects is scarce. To evaluate the potential effect of the photosynthetically active radiation (PAR) and LED-emitting LEDs on the rearing and nutritional quality of edible insects, house crickets (Acheta domesticus) were reared from the age of 21 days under controlled LED spectra, with an additional UV-B (0.08 W/m2) dose of 1.15 KJm2 d-1 (illuminated over a period for 4 h per day) for 34 days. UV-B exposure showed no harm to the weight of the crickets and significantly increased their survival by ca. 10% under narrowband UV-B treatment. The nutritional composition including proteins, fat and chitin contents of the insects was not affected by the UV-B light and reached values of 60.03 ± 10.41, 22.38 ± 2.12 and 9.33 ± 1.21%, respectively, under the LED irradiation. Therefore, house crickets can grow under LED irradiation with a positive effect of narrowband UV-B application on their survival.

As social innovations that help to transition towards a more sustainable food system, alternative food networks (AFNs) in China have attracted much scholarly attention in recent years. However, studies of the community building behavior of AFNs at the micro-level in the Chinese social context are scant. Through in-depth case studies conducted between 2017 and 2021 and social network analysis, our study examines how founders of AFNs successfully facilitate community building among their customers. We find that in China, the traditional social-cultural construct, guanxi, plays a critical role in AFNs' community formation and expansion. The study identifies a three-stage framework for understanding the community building process of AFNs. First, a group of guanxi of the same kind would form a guanxi-circle. Second, the initial guanxi-circle is enhanced and expanded to multiple secondary guanxi-circles. Third, these multiple guanxi-circles together and the interactions among them constitute the community of AFNs. We argue that to strengthen the community, AFNs operators should inspire key members to form secondary guanxi-circles by enhancing their cognitive trust and emotional trust.

ABSTRACT

This article explores the labour behind local food in the Canadian Atlantic province of Nova Scotia. Based on surveys and interviews with farmers, migrant farmworkers, and farmers' market consumers in the province, we suggest that the celebration of local food by government and industry is a form of "local washing." Local washing hides key aspects of the social relations of production: in this case, it hides insufficient financial and policy supports for Nova Scotian farms and the increased reliance on migrant farmworkers via the Seasonal Agricultural Worker Program and the Temporary Foreign Worker Program. Our research found that a growing reliance on migrant farmworkers was not just the case for larger, industrial farms, but also for smaller farms participating in local and alternative food initiatives, like farmers' markets and fresh produce subscription boxes. Additionally, our surveys show that while farmers' market shoppers expressed an interest in supporting local foods, they reported knowing little about farm workers or working conditions. Our paper contributes to the literature on local and alternative food initiatives by connecting the relations of production to consumption. Rather than focusing solely on the nature of the relationships between farmers and consumers and the values embodied in direct agricultural markets, this research explores the central role of permanently temporary migrant workers in local agriculture.

Demand for local and organic food has increased rapidly in Finland in the past two decades, as also have the wide variety of alternative food networks and food cooperatives (e.g. food-buying groups or food circles). However, the operating environment of traditional food-buying groups, aka food circles (ruokapiiri), has been experiencing changes as well. The supply of local and organic food in grocery stores has improved and new types of social media-based buying groups (REKO rings) have formed. This paper examines and evaluates the characteristics and stability of food circles in the Northern Ostrobothnia region in Finland by studying their structure and changes in their status over a 5-year period and reviewing their similarities and differences to REKO rings. An electronic survey and seven semi-structured interviews were implemented during the years 2013 and 2014. In addition, the status of the food circles was investigated in 2019 via email or phone, and REKO rings were studied through the literature. Food circles were usually seen as a functional way to purchase local and organic foodstuffs. Some members valued the high degree of traceability of shipments and face-to-face encounters with producers; for others, the primary motivation was overcoming issues of access and affordability. However, only two of the seven food circles interviewed were still operating in 2019. In addition, their level of activity had slowed down or transformed. Although most of the food circles were established by active consumers with more than just the intention to make local and organic food more available, it seemed that later on in operation most of the side activities faded and the groups failed to engage suitable people in the activity. Probably the most important difference between traditional food circles and modern REKO rings is the need to volunteer. In addition, social media-based REKO rings are better known on a mainstream level. On the other hand, our findings may indicate that while food-buying groups, as a form of alternative food networks, are a relatively new phenomenon in Finland, they might just be still applying their format.

ABSTRACT

A large body of research suggests that neighborhood disparities in food access persist. Emerging evidence suggests that the global COVID-19 pandemic likely exacerbated disparities in food access. Given the potential role that alternative food networks (AFNs) and local food sources may play during times of extreme scarcity, this study examines urban agriculture (e.g., community farms and gardens) as a sustainable strategy to address food insecurity. In-depth qualitative interviews with fifteen community stakeholders revealed several major themes including food insecurity as a feature of systemic racism, food affordability and distance to food as major barriers to food security, and the role of AFNs in creating community empowerment. Our findings indicate that urban agricultural practices help build social capital, inform and educate community members about healthy eating behaviors, and facilitate the distribution of affordable food. Implications for future research and policy targeting sustainable food distribution in marginalized communities of color are discussed.

This research was carried out to evaluate the effect of replacing dietary soybean meal with peanut meal, on intake and digestibility, microbial protein synthesis, and nitrogen balance in lactating cows. Twelve crossbred Holstein × Gyr cows at 84 days in milk (DIM) were distributed in a triple 4 × 4 Latin square. The treatments consisted of increasing peanut meal levels (0, 330, 670, and 1000 g/kg dry matter basis) in replacement of soybean meal in the diet. Replacing soybean meal with peanut meal had no effect on the intake and digestibility of dry matter and nutrients. Nitrogen balance and percentage of retained were similar among treatments. Microbial nitrogen synthesis and microbial protein synthesis efficiency were similar among treatments. Thus, in regions where its cost is lower, peanut meal can totally replace soybean meal in dairy cow diets without affecting nitrogen balance and microbial protein synthesis.
