ABSTRACT

Background: The tuna industry is one of the most essential sectors in global food production. Nevertheless, commercial meat known as "tuna loin" holds the utmost significance in producing and marketing its various products. Regrettably, fractions like tail and head meat have been overlooked and wasted due to their comparatively lower commercial value. Despite possessing notable technological value, this meat is typically reutilized into animal feed through flour production, missing the chance to create alternative high-value food products. Objective: This study aimed to develop and evaluate the sausages produced with the underutilized cuts of tuna (tail and head meat). Methods: The tuna utilized were Big-eye (Thunus obesus) and Skip-jack (Katsuwonus pelamis lineaus). Three (3) different types of sausages were formulated using 100% of Big-eye (BE), 100% of Skip-jack (SJ) tuna meat, and 100% of beef/pork meat (Control). The sausage pH changes during storage at 4 ± 1oC were analyzed and compared with the control. Proximal, microbiological, and sensory characteristics were evaluated. Results: The pH of sausages showed that the values tended to decrease in control, while this value increased in two types of tuna. The formulated tuna sausages yielded 72% moisture, 18% protein, 4.1% lipid, 0.4% ash, 0.4 % fiber, and 4.5% carbohydrates. Sensory attributes showed excellent acceptance regarding color, smell, flavor, and texture. Overall acceptability was qualified as "liked," and the acceptability index ranged from 76% to 86%. During the refrigeration storage, the microbiological analyses indicated that the total coliform count was < 3 CFU/g. Escherichia coli, Staphylococcus aureus, and mesophilic aerobic bacteria in tuna sausage showed absence during 24 days of storage. Conclusion: Using tuna tail and head meat enabled the development of gel-type emulsified products (sausages) that exhibited good nutritional, sensory, and microbiological quality


Antecedentes: La industria atunera se erige como uno de los sectores más importantes en la producción mundial de alimentos. Sin embargo, entre sus diversos productos, la carne comercial conocida como "lomo de atún" ostenta la mayor importancia tanto en su producción como en su comercialización. Lamentablemente, fracciones de carne provenientes de la cola y la cabeza se han desperdiciado debido a su reducido valor comercial. A pesar de poseer un notable valor tecnológico, esta carne normalmente es utilizada en la alimentación animal mediante la producción de harina, perdiendo la oportunidad de desarrollar productos alimenticios alternativos con alto valor nutricional. Objetivo: Este estudio tuvo como objetivo desarrollar y evaluar salchichas producidas con carne subutilizada de atún (carne de cola y cabeza). Métodos: Las especies de atún utilizadas fueron Big-eye (Thunus obesus) and Skip-jack (Katsuwonus pelamis lineaus). Se formularon tres (3) tipos diferentes de salchichas usando 100 % de carne de atún Big-eye (BE), 100 % de Skip-jack (SJ) y 100 % de carne de res/cerdo (Control). Se analizaron los cambios de pH en las salchichas durante el almacenamiento a 4 ± 1 oC y se compararon con el Control. También se evaluaron la composición proximal, calidad microbiológica y atributos sensoriales. Resultados: El pH mostró que los valores tendieron a disminuir en relación a la muestra Control, mientras que este valor aumentó en los dos tipos de salchicha con carne de atún. Las salchichas con carne de atún mostraron un 72 % de humedad, 18 % de proteína, 4,1 % de lípidos, 0,4 % de ceniza, 0,4 % de fibra, 4,5 % de carbohidratos. Los atributos sensoriales mostraron buena aceptabilidad de los parámetros de color, olor, sabor y textura. La aceptabilidad general se calificó como "me gusta" y el índice de aceptabilidad osciló entre el 76 % y el 86 %. Durante el periodo de almacenamiento en refrigeración, los análisis microbiológicos indicaron que el recuento de coliformes totales fue < 3 UFC/g. No se evidenció la presencia de Escherichia coli, Staphylococcus aureus y bacterias aerobias mesófilas durante 24 días de almacenamiento. Conclusión: El aprovechamiento de la carne de la cola y cabeza del atún permitió desarrollar productos emulsionados tipo gel (embutidos) que exhibieron buena calidad nutricional, sensorial y microbiológica.

Los alimentos expendidos en la vía pública constituyen una fuente de ingreso para familias en países en vías de desarrollo, sin embargo, pueden ser fuentes potenciales de enfermedades transmitidas por alimentos. En Riobamba-Ecuador entre los alimentos de mayor consumo en la vía pública está el plato típico "ceviche de chochos (Lupinus mutabilis)", nutritivo, sensorialmente agradable y con precio accesible. Este estudio evaluó la calidad microbiológica y condiciones sanitarias de 10 puestos de venta. Se realizó el análisis microbiológico a 100 muestras correspondientes a: ceviche e ingredientes por separado (jugo de tomate, chochos desamargados, piel cocida de cerdo y cebollas). Estas muestras se tomaron en dos días diferentes y se cuantificó aerobios mesófilos, enterobacterias y Staphyloccocus aureus. Las condiciones sanitarias de los puestos de venta fueron evaluadas mediante una lista de verificación que incluyó los siguientes parámetros: diseño, ubicación, manipulador, preparación, transporte, comercialización y saneamiento. Los resultados revelan que todas las muestras estaban contaminadas con enterobacterias y S. aureus, 80% presentaban aerobios mesófilos > 6 log10 UFC/g, siendo el ingrediente chocho desamargado, el que aportó mayor carga microbiana en 6 de los 10 puestos de venta. Los resultados de la lista de verificación muestran que las principales deficiencias son: la no utilización de agua potable circulante y la manipulación de manera conjunta de los alimentos y el dinero. En conclusión, existe gran fluctuación del cumplimiento de cada parámetro dentro de las Prácticas Correctas de Higiene por puesto de venta, creando focos o entradas de contaminantes, que se evidencia en los altos recuentos de microorganismos indicadores de calidad sanitaria en el producto final.


Street food constitutes a source of income for several families in the world, mainly in developing countries and emerging economies; however, it can be a potential source of foodborne diseases. In Riobamba-Ecuador, among the most consumed food streets is the typical dish "ceviche de chochos (Lupinus mutabilis) ", a nutritious and pleasant sensory dish at an affordable price. In this study, the microbiological load and sanitary conditions of 10 lupine ceviche stalls were evaluated. Samples of ceviche and its ingredients (tomato juice, debited lupins, pork skin, and onions). These samples (n= 100) were taken on two different days and analysed to quantify mesophilic aerobes, enterobacteria, and S. aureus. The sanitary conditions of the stalls were analysed using a check list consisting of sections focused on design, location, handler, preparation, transportation, marketing and sanitation. The results show that 100% of the samples were contaminated with enterobacteria and S. aureus, 80% of these had mesophilic aerobics > 6 log CFU / g, and the debittered lupin ingredient is the one that provides the highest microbial load in 6 of the 10 stalls evaluated. The results of the check list showed that the main deficiencies are the non-use of circulating drinking water and the joint manipulation of food and money. In conclusion, there is a great fluctuation in the compliance of the Good Hygiene Practises parameters in each street food stall. It causes multiple foci or entrances of contaminants, which is evidenced in the high counts of microorganisms that are indicators of sanitary quality in the final product.

As condições higiênico-sanitárias precárias que caracterizam os açougues de Moçambique contribuem para a contaminação de carnes, constituindo um atentado à saúde dos consumidores. Este estudo visou realizar uma análise microbiológica da carne bovina comercializada nos açougues da cidade de Nampula, Moçambique. Foram analisadas, sob padrões laboratoriais ISO, a carne bovina fresca e as zaragatoas de sete açougues licenciados. A análise revelou que 100% das amostras de todos os açougues foram contaminadas por bactérias aeróbias mesófilas, porém, no limite aceitável de contaminação. Cinco açougues apresentaram valores superiores a 1,5 × 106 UFC/g de contaminação. Para Staphylococcus aureus, todas as amostras apresentaram valores superiores a 100 UFC/g; para Escherichia coli, quatro amostras apresentaram valores acima dos limites aceitáveis; e 71% das amostras foram contaminadas por Salmonella spp. Quanto aos utensílios e equipamentos, houve contaminação em 14% das amostras. Assim, recomenda-se a implementação de boas práticas de manipulação de carne nos açougues da cidade de Nampula, de modo a promover a obtenção de carne de qualidade pelos consumidores.


The precarious hygienic-sanitary conditions that characterize the butcheries in Mozambique, contribute to the contamination of meat, which can jeopardize the health of consumers. This study aimed to perform a microbiological analysis of the bovine meat sold in the butcheries of Nampula city, Mozambique. We analyzed, under ISO laboratory standards, bovine meat and swabs from seven licensed butcheries. The analysis revealed that 100% of the samples were contaminated by mesophilic aerobic bacteria; however, the contamination remained within the acceptable range. Five butcheries presented values over 1.5 × 106 CFU/g of contamination. For Staphylococcus aureus, all samples presented values higher than 100 CFU/g; for Escherichia coli, four samples were showed values over the acceptable range; and 71% of the samples were contaminated by Salmonella spp. Regarding utensils and equipment, 14% of the samples were contaminated. Thus, we recommend implementing good meat handling practices in butcheries of Nampula city to promote the obtention of quality meat by consumers.


Las precarias condiciones higiénicas y sanitarias que caracterizan a las carnicerías en Mozambique contribuyen a la promoción de la contaminación de la carne, constituyendo un ataque a la salud de los consumidores. Este estudio tuvo el objetivo de realizar análisis microbiológico de carne vacuna vendida en carnicerías de la ciudad de Nampula, Mozambique. Se analizó, bajo patrones de laboratorio ISO, carne vacuna fresca e hisopos de siete carnicerías. El análisis reveló que el 100% de las muestras estaban contaminadas por bacterias aerobias mesófilas en todas las carnicerías, pero dentro del límite aceptable de contaminación. Cinco carnicerías presentaron valores superiores a 1,5 × 106 UFC/g de contaminación. Para Staphylococcus aureus, todas las muestras presentaron valores superiores a 100 UFC/g; para Escherichia coli, cuatro muestras presentaron valores por encima de los límites aceptables; mientras que el 71% de las muestras estaban contaminadas por Salmonella spp. En las muestras de utensilios y equipos hubo contaminación en un 14%. Por lo que se recomienda implementar buenas prácticas de manejo de carne en las carnicerías de la ciudad de Nampula, con el fin de promover la adquisición de carne de calidad para los consumidores.

Abstract We evaluated the microbial composition of water kefir grains and beverage overthe course of one year to determine whether the number and type of microorganisms changedover the time. Bacteria and yeast colonies with different morphologies were isolated fromwater kefir and their antimicrobial activity was evaluated against Paenibacillus larvae andAscosphaera apis. A chemical characterization of kefir was also carried out. Our results con-firmed that bacteria and yeasts were more numerous in kefir grains compared with those in thebeverage. The counts of microorganisms declined, although an important microbial community was still present in kefir after the long storage period. Eleven strains which inhibited bee pathogens were isolated from kefir. Genotypic results demonstrated that these isolates included Lentilactobacillus hilgardii, Lentilactobacillus buchneri and Saccharomyces cerevisiae. Thus, water kefir may be an innovative source of potential probiotic strains for bee nutrition in order to control honeybee diseases.


Resumen Evaluamos la composición microbiana del kéfir de agua durante un ano para determinar si la cantidad y el tipo de microorganismos cambiaban con el tiempo. Se aislaron colonias de bacterias y de levaduras con diferentes morfologías, y su actividad antimicrobiana se evaluó frente a Paenibacillus larvaey Ascosphaeraapis. También se realizó una caracterización química del kéfir. Nuestros resultados confirmaron que las bacterias y las levaduras eran más numerosas en los gránulos de kéfir en comparación con la parte líquida. Los recuentos de microorganismos disminuyeron, aunque una cantidad igualmente importante se encontró en el kéfir después de un año. Se aislaron del kéfir once cepas que inhibieron los mencionados patógenos de abejas. Los resultados genotípicos demostraron que estos aislamientos eran Lentilactobacillus hilgardii, Lentilactobacillus buchneri y Saccharomyces cerevisiae. Por lo tanto, el kéfir de agua podría ser una fuente innovadora de potenciales cepas probióticas para contribuir a la nutrición y sanidad de las abejas.

ABSTRACT

"Fast food" es un fenómeno económico que crece con ritmo acelerado en el mercado peruano, estos deben contar con alimentos seguros de ingesta y personal satisfecho que dé cumplimiento a las normativas higiénicas. Como objetivo, se propuso determinar la calidad microbiológica y satisfacción laboral en una empresa fast food, Arequipa, 2022, cuya muestra fue de 384 trabajadores distribuidos en 11 franquicia. Para la recolección de datos se realizaron tres actividades, 1) la aplicación de un cuestionario de 21 ítems la percepción de los trabajadores sobre las buenas prácticas y el cuidado de los alimentos, 3) la valoración microbiológica de las materias primas que ingresan a la empresa y 3) la valoración de la percepción de los trabajadores de la calidad y la satisfacción laboral. El análisis de datos se hizo mediante estadística descriptiva a través del paquete estadístico SPSS con aplicación de Kolmogorov-Smirnov y Rho de Spearman para la correlacion entre la calidad y la satisfacción laboral. Como resultado, 81,51% en el aseo personal, 79,69% aseo diario, 78,91% prohibición de hábitos nocivos, 77,34% uso del uniforme y EPP y 50,78% limpieza de las manos, catalogándose como "muy buenas", el análisis microbiológico se encontró 35 UFC/ml de coliformes fecales y 31 UFC/ml de coliformes totales con 4 UFC/ml exarcebado en el agua. La satisfacción laboral fue "bueno" en la totalidad de las variables, las pruebas de normalidad fueron menor a <0,05, con un Rho de Spearman de 0,611, aceptándose la hipótesis alterna y rechazando la nula(AU)


"Fast food" is an economic phenomenon that is growing rapidly in the Peruvian market, these must have safe food to eat and satisfied staff that comply with hygienic regulations. As an objective, it was proposed to determine the microbiological quality and job satisfaction in a fast food company, Arequipa, 2022, whose sample was 384 workers distributed in 11 franchises. For the data collection, three activities were carried out, 1) the application of a 21-item questionnaire, the perception of workers about good practices and food care, 3) the microbiological evaluation of the raw materials that enter the company. and 3) the assessment of workers' perception of quality and job satisfaction. Data analysis was done using descriptive statistics through the SPSS statistical package with the application of Kolmogorov-Smirnov and Spearman's Rho for the correlation between quality and job satisfaction. As a result, 81.51% in personal hygiene, 79.69% daily hygiene, 78.91% prohibition of harmful habits, 77.34% use of uniform and PPE and 50.78% hand cleaning, being classified as " very good", the microbiological analysis found 35 CFU/ml of fecal coliforms and 31 CFU/ml of total coliforms with 4 CFU/ml exacerbated in the water. Job satisfaction was "good" in all the variables, the normality tests were less than <0.05, with a Spearman's Rho of 0.611, accepting the alternate hypothesis and rejecting the null(AU)

ABSTRACT

O aprimoramento da tecnologia CAD/CAM permitiu a confecção de placas estabilizadoras digitais, no entanto, há lacunas acerca do comportamento desses dispositivos frente a variáveis mecânicas e biológicas ainda desconhecidas. Dessa forma, o objetivo desse trabalho foi verificar se as resinas utilizadas na tecnologia digital das placas fresadas e impressas são capazes de influenciar na resistência à fratura e na adesão de micro-organismos em detrimento das resinas empregadas na confecção das placas termopolimerizáveis convencionais e se as propriedades testadas se relacionam com a variação da espessura desses dispositivos. Para tanto, foi realizado um estudo in vitro que contou com as fases mecânica e microbiológica, sendo cada uma composta pelos grupos Convencional (GC) (n=30), Fresado (GF) (n=30) e Impresso (GI) (n=30), de acordo com o método de confecção, possuindo cada um três subgrupos (n=10) que variaram a espessura dos espécimes de 1 a 3 mm. Na fase mecânica, as amostras, com formato de barras de 65 mm, foram testadas quanto à resistência à fratura na máquina de ensaios universal, com célula de carga de 500 kgf e velocidade de 1 mm/min; na microbiológica, a forma foi de discos com 15 mm de diâmetro, submetidos à adesão de micro-organismos à superfície com a exposição a Streptococcus mutans e mantidos por 24h a 35 °C em estufa para sucessiva contagem de UFC, com controle positivo. Os testes foram feitos em triplicata e os dados foram armazenados no SPSS 22.0 e a análise estatística contou com a ANOVA e o pósteste de Tukey. Nos resultados da fase mecânica, o ANOVA identificou diferenças estatisticamente significativas entre os grupos (p≤0,005), mostrando que GC e GF apresentaram melhores resultados. O pós-teste de Tukey considerou diferença estatisticamente significativa entre GF e GI (p=0,031), elencando GF como superior. Para a fase microbiológica, não foram verificadas diferenças estatísticas entre os grupos (p>0,005) em nenhuma das análises. Observou-se que para a resistência a fraturas, as resinas do modo fresado descreveram resultados superiores e/ou próximos aos da técnica convencional; e que as resinas da técnica digital e convencional, quanto à adesão superficial de micro-organismos, não diferiram entre si (AU).


CAD/CAM technology allowed the stabilizing splints manufacture, however there are gaps about these devices' behavior in face of mechanical and biological variables that are still unknown. Thus, the objective of this project was to verify if the resins used in digital technology of milled and printed stabilizer splints can influence fracture resistance and microorganism adhesion, in detriment of the resin applied in manufacture of conventional thermopolymerizable splints and if the tested properties are related to thickness variation of these devices. The method included mechanical and microbiological steps, each one composed by Conventional (CG) (n=30), Milled (MG) (n=30) and Printed (PG) (n=30) groups, according to the method of preparation, each one having three subgroups (n=10) that varied the specimen thickness from 1 to 3 mm. In the mechanical step, the samples, in the form of 65 mm bars, were tested for fracture resistance in a universal testing machine, with load cell of 500 kgf and speed of 1 mm/min; in the microbiological step, the shape was in form of 15 mm diameter discs, subjected to microorganism adhesion to the surface with exposure to Streptococcus mutans and kept for 24 hours at 35 °C in oven for successive CFU counting, with positive control. The tests were performed in triplicate and data were stored in SPSS 22.0 and statistical analysis used ANOVA and Tukey's post hoc. In the results of mechanical step ANOVA had identified statistically significant differences between the groups (p≤0,005), showing CG and MG had presented better results. Tukey´s post hoc had considered statistically significant difference between MG and PG (p=0,031), listing MG as superior. For the microbiological step, they did not show statistical differences between the groups (p>0.005) in any analysis. It was observed milled resins described superior results and/or close to the conventional technique one, for fracture resistance; and resins of digital and conventional technique, regarding the microorganism adhesion to the surface, did not differ from each other (AU).

ABSTRACT A paste is a food of English origin adopted in Hidalgo, Mexico, over a hundred years ago. It is consumed as a convenience food and is very popular among students. The aim of this research was to determine the physicochemical, nutritional, and microbial quality of pastes as well as to obtain data on their consumption in a population of Mexican university students. The proximal composition, calories, sodium content, pH, water activity, and microbiological quality of 15 types of pastes were analyzed. Five hundred students from the largest public university in the State of Hidalgo in Mexico were surveyed to determine paste consumption. Pastes varied in their content of fat (12-25.7 g/100 g), protein (2.29-12.6 g/100 g) and carbohydrates (23.5-52.7 g/100 g). The caloric content varied from 356 to 545 kcal/paste. The salty samples contained more sodium (216-693 mg Na/100 g) compared to the sweet ones (54.9-74.1 mg Na/100 g). Samples presented large variability in microbial quality and only one sample had coliform growth. Almost all respondents (96.2%) reported consuming pastes, 49.7% consumed 1 to 2 pieces per week, while 32% consumed 3 to 4. Participants considered that pastes were fast, convenient, and cheap and mentioned consuming them for their taste and practicality. Pastes represent an important source of calories and sodium in the diet. Labeling these types of foods will provide nutritional information and could prevent excessive consumption.


RESUMEN El paste es un alimento de origen inglés adoptado en Hidalgo, México, desde hace más de cien años. Se consume como comida de conveniencia y es muy popular entre estudiantes. El objetivo fue determinar la calidad fisicoquímica, nutricional y microbiana de pastes, así como conocer datos sobre su consumo en una población de estudiantes universitarios mexicanos. Se analizó la composición proximal, las calorías, el contenido de sodio, el pH, la actividad acuosa y la calidad microbiológica de 15 tipos de pastes mediante técnicas oficiales. Se encuestaron 500 estudiantes de la universidad pública más grande del estado de Hidalgo (México) para determinar su consumo de pastes. Los pastes variaron en su contenido de grasas (12-25,7 g/100 g), proteínas (2,29-12,6 g/100 g) y carbohidratos (23,5-52,7 g/100 g). El contenido calórico fue de 356 a 545 kcal/paste. Las muestras saladas contenían más sodio (216-693 mg Na/100 g) en comparación con las dulces (54,9-74,1 mg Na/100 g). Las muestras presentaron alta variabilidad en la calidad microbiológica y solo una muestra presentó crecimiento de coliformes. El 96,2% de los encuestados consume pastes, el 49,7% consume de 1 a 2 piezas por semana mientras que el 32% consume de 3 a 4. Los participantes consideraron que los pastes son rápidos, convenientes y baratos y mencionaron consumirlos por su sabor y practicidad. Los pastes representan una fuente importante de calorías y sodio en la dieta. Etiquetar este tipo de alimentos aportará información nutricional y podría evitar su consumo excesivo.

ABSTRACT

The aim of this work was to evaluate the hygienic-sanitary conditions of butcher shops in Tandil, Buenos Aires Province, by estimating the risk based on good manufacturing and hygiene practices, through surveys of the establishments. The analysis was performed using a scale of 1-100, and classifying them as high risk (0-40), moderate risk (41-70) or low risk (71-100). The presence of Salmonella spp., Staphylococcus aureus and Shiga toxin-producing Escherichia coli (STEC) from both, ground beef and environmental samples such as countertop, cleaver, mincer and butcher's hands, taken at butcher shops was also evaluated. Sampling was performed only once and immediately refrigerated and transported to the laboratory for analysis. All butcher shops evaluated (100) were classified as "low risk" with good hygienic-sanitary conditions. However, 75% of the ground beef samples analyzed did not meet at least one of the microbiological criteria established in the Código Alimentario Argentino [Argentine Food Code], article 255. We propose to establish a strategy to identify deviations and implement a plan for continuous improvement in butcher shops of Tandil city.

El presente trabajo de investigación tiene como objetivo evaluar la calidad microbiológica del aire en seis áreas de la Microestación Biológica-Zoocriadero de la Universidad Nacional Agraria de la Selva-Tingo María-Perú; procediéndose de la siguiente manera: Se seleccionaron seis áreas de muestreo (A1: Boletería, A2: Caseta gallito de las rocas, A3: Zona de las tortugas, A4: Caseta del otorongo, A5: Caseta de los monos y A6: Cocina), de los cuales para la determinación de los parámetros físicos (PAS, temperatura, humedad relativa, precipitación y rosa de viento) se obtuvo información de la estación meteorológica de la UNAS y de lecturas directas en campo, para la determinación de las PAS se realizó por el método pasivo obteniéndose la mayor concentración de PAS en el área 1 "Boletería" (12.61 t/km2/mes, 11.08 t/km2/mes y 8.4 t/km2/mes) y la más baja en el área 5 "caseta de los monos" (2.80 t/km2/mes, 2.80 t/km2/mes y 3.2 t/km2/mes); para el análisis microbiológico se realizó por el método de borboteo en líquidos, identificándose 27 géneros entre bacterias y hongos, siendo las bacterias más frecuentes Bacillus sp., Staphylococcus sp., Enterobacter agglomerans, Klebsiella pneumoniae, Enterobacter hafniae y algunas bacterias patógenas para el hombre como Streptococcus sp., Clostridium perfringens, Bacillus anthracis. Los hongos de mayor frecuencia son Penicillium sp., Aspergillius sp., Geotrichum sp., algunos hongos patógenos identificados: Microsporum sp., Epirophyton sp. Por otro lado, para la percepción del público como trabajadores se aplicó encuestas, donde indicaron que la calidad microbiológica del aire en la Microestación Biológica-Zoocriadero es regular(AU)


The objective of this research paper is to assess the microbiological quality of the air in six areas of the Biologial Micro-station and animal breeding farm of the Peruvian Univeristy "Universidad Nacional Agraria de la Selva in Tingo María, Perú", proceeding as follows: Six sampling areas were selected (A1: Ticket Office, A2: Cock-of-the-Rock hut, A3: Turtle area, A4: Otorongo hut, A5: Monkey hut, A6: Kitchen), of wich for the determination of the phisical parameters (SBP, temperature, relative humidity, precipitation and wind rose) information was obtained from the UNAS meteorological station and direct readings in the field. For the determination of SBP was performed by the passive method obtaining the high concentration of SBP in area 1 "Ticket Office" (12.61 t/km2/month, 11.08 t/km2/month and 8.4 t/km2/month) and the lowest in area 5 "monkey house" (2.80 t/km2/month, 2.80 t/km2/month and 3.2 t/km2/month); microbiological analysis was performed by the liquid bubbling method, identifying 27 genera incluiding bacteria and fungi, with the most frequent bacteria being Bacillus sp., Staphylococcus sp., Enterobacter agglomerans, Klebsiella pneumoniae, Enterobacter hafniae and some bacteria pathogenic for humans such as Streptococcus sp., Clostridium perfringens and Bacillus anthracis. The most frequent fungi are Penicillium sp., Aspergillius sp. and Geotrichum sp.; some pathogenic fungi identified: Microsporum sp., Epirophyton sp. On the other hand,regarding the perception of the public and workers, surveys were applied, wich indicated that the microbiologial quality of the air in the Biological Micro-station and animal breeding farm is regular(AU)

ABSTRACT

This study aimed to evaluate the effectiveness of ultraviolet light in reducing bacterial load of eggshells and the impact of experimental disinfection on hatching, embryo mortality, and time-borne distribution using broiler breeder hens of different ages (38, 42, and 48 weeks old). Fertile eggs were subjected to different exposure periods (5, 7, and 9 minutes) of UV light (UV-C) with a 254 nm wavelength. For controls, eggs disinfected with paraformaldehyde (5.3 g/m3) and eggs not disinfected (NC). After subjection to disinfection protocols, the eggs were placed into sterile plastic bags containing 20 mL of peptone saline solution (0.1% m:v) and massaged for 1 minute to release the bacterial load. Aliquots of this solution were incubated in specific medium for bacterial growth for 48 hours at 37ºC for subsequent CFU counts. To evaluate the effects of disinfection on production, eggs previously disinfected by UV-C (9 min) and paraformaldehyde and NC eggs were candled between incubation days 10 and 13 and at the end of the incubation period to assess embryonic mortality. Hatchability distribution was performed every 8 hours. The 9 minutes 254nm UV-C light exposure was able to disinfect viable eggs and matched the effectiveness of the paraformaldehyde technique.(AU)


Objetivou-se avaliar a eficácia da luz ultravioleta na redução da carga bacteriana de cascas de ovos e o impacto na eclosão e na mortalidade embrionária observando-se a idade das matrizes (38, 42 e 48 semanas). Os ovos foram submetidos a diferentes períodos de exposição (cinco, sete e nove minutos) à luz UV (UV-C) com comprimento de onda de 254nm. Os controles foram ovos desinfetados com paraformaldeído (5,3g/m³) e ovos não desinfetados (NC). Após a desinfecção, os ovos foram colocados em sacos plásticos estéreis contendo 20mL de solução salina peptonada (0,1% m:v) e massageados por um (1) minuto para descolamento das bactérias. Alíquotas dessa solução foram incubadas em meio para crescimento bacteriano por 48 horas a 37ºC e contagem de UFC. Para avaliar os efeitos da desinfecção, ovos previamente desinfetados por UV-C (nove minutos) e ovos com paraformaldeído e NC foram submetidos à ovoscopia entre os dias 10 e 13 de incubação e ao final do período de incubação, para avaliação da mortalidade embrionária. A distribuição da eclodibilidade foi realizada a cada oito horas. A exposição à luz UV-C de 25nm de nove minutos desinfetou os ovos férteis e coincidiu com a eficácia do paraformaldeído.(AU)

RESUMEN Introducción: El agua minero-medicinal estudiada procede del Complejo Termal de Presidencia Roque Sáenz Peña, provincia del Chaco, ubicado en el nordeste de Argentina. Las aguas de los acuíferos terciarios del norte argentino presentan un marcado gradiente de salinidad desde el sector oeste (subgrupo Jujuy) hasta el sector este (formación Chaco). Los acuíferos son procesos dinámicos y, en consecuencia, la composición del agua subterránea natural debe contemplarse con la perspectiva de su posible variación espacio-temporal. Objetivos: Analizar y comparar la composición química y la calidad microbiológica del agua de las termas de la ciudad de Sáenz Peña en el período 2016-2018 y evaluar sus principales características fisicoquímicas que definen sus potenciales aplicaciones terapéuticas. Resultados: El agua termal por su temperatura se clasifica como agua hipotermal, con pH cercano a la neutralidad, conductividad elevada mostrando su relación directa con la alta salinidad. Por su porcentual equivalente se define como agua clorurada, con alto contenido del anión sulfato y los cationes sodio, potasio, calcio y magnesio. De acuerdo con la composición mayoritaria de cloruros, el uso terapéutico vía tópica sería recomendado para afecciones óseas y musculares, así como problemas dermatológicos y circulatorios.


SUMMARY Introduction: The mineral-medicinal water studied comes from the Presidencia Roque Sáenz Peña Thermal Complex, Chaco province, located in the northeast of Argentina. The waters of the tertiary aquifers of northern Argentina present a marked salinity gradient from the western sector (Jujuy subgroup) to the eastern sector (Chaco formation). Aquifers are dynamic processes and consequently, the composition of natural groundwater must be viewed from the perspective of its possible spatial-temporal variation. Aims: To analyse and to compare the chemical composition and microbiological quality of thermal water of the city of Sáenz Peña in the 2016-2018 period and to evaluate its main physicochemical characteristics that define its potential therapeutic applications. Results: Due to its temperature, the thermal water is classified as hypothermal water, with a pH close to neutrality, high conductivity, showing its direct relationship with high salinity. Its equivalent percentage defined as chlorinated water, with high content of the sulphate anion and the cations sodium, potassium, calcium and magnesium. According to the majority composition of chlorides, topical use is recommended for bone and muscle ailments, as well as dermatological and circulatory problems.


RESUMO Introdução: A água mineral-medicinal estudada provém do Complexo Térmico Presidencia Roque Sáenz Peña, província de Chaco, localizada no nordeste da Argentina. As águas dos aquíferos terciários do norte da Argentina apresentam um acentuado gradiente de salinidade do setor ocidental (subgrupo Jujuy) ao setor oriental (formação Chaco). Os aquíferos são processos dinâmicos e, consequentemente, a composição da água subterrânea natural deve ser vista sob a perspectiva de sua possível variação espaço-temporal. Objetivos: Analisar e comparar a composição química e qualidade microbiológica das águas termais da cidade de Sáenz Peña no período 2016-2018 e avaliar suas principais características físico-químicas que definem seus potenciais aplicações terapêuticas. Resultados: Devido à sua temperatura, a água termal é classificada como água hipotérmica, com pH próximo da neutralidade, alta condutividade, mostrando sua relação direta com a alta salinidade. Seu percentual equivalente definido como água clorada, com alto teor do ânion sulfato e dos cátions sódio, potássio, cálcio e magnésio. De acordo com a composição majoritária dos cloretos, o uso tópico é recomendado para doenças ósseas e musculares, bem como para problemas dermatológicos e circulatórios.

SUMMARY Introduction: Honey is a natural substance produced by bees mainly from flower nectar with high nutritional value. However, many commercialized samples are adulterated or falsified. Method: We bought twelve honey samples in markets in the city of Betim (Brazil) and analyzed their acidity, pH, electrical conductivity, insoluble matter, ashes, moisture content, presence of mesophile bacteria, molds, yeasts, total coliforms, Salmonella spp. and the presence of pollen grains. Results: Considering all honey samples, the average pH was 3.8 ± 0.5 and the average free acidity was 29.8 ± 6.6 mEq/kg. Considering acidity, we found the average of lactonic acidity 6.4 ± 2.4 mEq/kg and a total average acidity of 36.2 ± 6.9 mEq/kg. The average moisture content was 19.4 ± 1.0 %, the average electrical conductivity was 391.6 ± 168.6 μS/ cm, the average amount of ashes was 0.5 ± 0.8 % and the average insoluble matter was 0.08 ± 0.02 %. Only the moisture was significantly different between the two groups and ten honey samples had pollen grains. Conclusions: The quality parameters of the labeled and unlabeled samples were not significantly different, although two samples of unlabeled honey were fraudulent, mainly due to the absence of pollen grains. Identifying the presence or absence of pollen in the samples is a safe, economical, and reliable first step for verifying the authenticity of the honey.


RESUMEN Introducción: La miel es una sustancia natural producida por las abejas, principalmente, a partir del néctar de flores con alto valor nutricional. Sin embargo, muchas muestras comercializadas están adulteradas o falsificadas. Método: Compramos doce mieles en mercados de la ciudad de Betim (Brasil) y analizamos su acidez, pH, conductividad eléctrica, materia insoluble, cenizas, contenido de humedad, presencia de bacterias mesófilas, mohos, levaduras, coliformes totales, Salmonella spp. y la presencia de granos de polen. Resultados: Considerando todas las muestras de miel, el pH promedio fue de 3,8 ± 0,5 y la acidez libre promedio fue de 29,8 ± 6,6 mEq/kg. Considerando la acidez, encontramos el promedio de acidez lactónica 6,4 ± 2,4 mEq/kg y una acidez promedio total de 36,2 ± 6,9 mEq/kg. El contenido de humedad promedio fue 19,4 ± 1,0 %, la conductividad eléctrica promedio fue 391,6 ± 168,6 μS/crn, la cantidad promedio de cenizas fue 0,5 ± 0,8 % y la materia insoluble promedio fue 0,08 ± 0,02 %. Sólo la humedad fue significativamente diferente entre los dos grupos y diez de las muestras de miel tenían granos de polen. Conclusiones: Los parámetros de calidad de las muestras etiquetadas y no etiquetadas no fueron significativamente diferentes, aunque dos muestras de miel no etiquetadas fueron fraudulentas, debido a la ausencia de granos de polen. Identificar la presencia o ausencia de polen en las muestras es un primer paso seguro, económico y confiable para verificar la autenticidad de la miel.

Método: Compramos doze méis em mercados da cidade de Betim (Brasil) e analisamos sua acidez, pH, condutividade elétrica, sólidos insolúveis, cinzas, teor de umidade, presença de bactérias mesófilas, bolores, leveduras, coliformes totais, Salmonella spp. e a presença de grãos de pólen. Resultados: Considerando todas as amostras de mel, o pH médio foi de 3,8 ± 0,5 e a acidez livre média foi de 29,8 ± 6,6 mEq/kg. Considerando a acidez, encontramos a média de acidez lactô-nica de 6,4 ± 2,4 mEq/kg e uma acidez média total de 36,2 ± 6,9 mEq/kg. O teor de umidade médio foi de 19,4 ± 1,0 %, a condutividade elétrica média foi 391,6 ± 168,6 μS/cm, a quantidade média de cinzas foi 0,5 ± 0,8 % e a matéria insolúvel média foi 0,08 ± 0,02 %. Apenas a umidade foi significativamente diferente entre os dois grupos e dez das amostras de mel apresentaram grãos de pólen. Conclusões: Os parâmetros de qualidade das amostras rotuladas e não rotuladas não foram diferentes, embora duas amostras de mel não rotulado fossem fraudulentas, principalmente devido à ausência de grãos de pólen. Identificar a presença ou ausência de pólen nas amostras é um primeiro passo seguro, económico e confiável para verificar a autenticidade do mel.

ABSTRACT

O ambiente hospitalar é um dos locais com maiores chances de acontecer quadros de infecções, sendo um dos motivos a utilização irrestrita dos aparelhos celulares tanto por pacientes quanto por profissionais da saúde que não se preocupam com as boas práticas de higienização. O objetivo deste estudo foi determinar a prevalência de micro­organismos em aparelhos celulares da equipe de enfermagem da Unidade de Terapia Intensiva (UTI) de um hospital na região noroeste paranaense. Participaram da pesquisa 22 colaboradores da UTI, sendo colhidos swabs umedecidos em caldo Brain Heart Infusion (BHI) dos aparelhos celulares de cada um dos participantes e, posteriormente, as amostras foram incubadas e realizadas as análises microbiológicas. Além disso, aplicou-se um questionário para se conhecer sobre o manuseio do telefone celular por parte dos colaboradores. Na análise microbiológica, observou-se crescimento em todas as amostras de pelo menos um micro­organismo (100% nos meios Ágar Sal Manitol e Ágar Sangue, e 27,3% em Ágar MacConkey). Posteriormente, realizou-se comparação com as respostas do questionário e com o resultado da amostra, sendo que apenas 13,6% dos colaboradores relataram realizar sempre higienização dos aparelhos, porém também houve crescimento de micro­organismos nos aparelhos desses colaboradores. A partir dos dados obtidos, espera-se o envolvimento da Comissão de Controle de Infecção Hospitalar (CCIH) para desenvolver ações que reduzam a prevalência e a gravidade da contaminação no ambiente hospitalar.(AU)


Hospital environments are one of the most likely places for the development of infections, with one of the reasons being the unrestricted use of cell phones by both patients and health professionals, with disregard to good hygiene practices. The purpose of this study is to determine the prevalence of microorganisms on cell phones of the nursing staff at the Intensive Care Unit (ICU) of a hospital in the northwestern region of Paraná. A total of twenty-four ICU employees participated in the research. Swabs were collected from the cell phones of each participant and were then moistened in Brain Heart Infusion (BHI) broth. Subsequently, the samples were incubated, and a microbiological analysis was carried out. In addition, a questionnaire was applied to learn out about the employee's handling of the cell phone. From the microbiological analysis, growth of at least one microorganism (100% in the Agar Salt Mannitol and Blood Agar, and 27.3% in MacConkey Agar) could be observed in all samples. Subsequently, a comparison was made with the answers to the questionnaire and with the sample result, with only 13.6% of employees reporting that they always clean the devices. However, even the devices that were reported as being cleaned presented microorganisms. With the data obtained, the Hospital Infection Control Commission (HICC) is expected to be involved in order to develop actions to reduce prevalence, incidence, and the severity of contamination in hospital environments.(AU)

INTRODUCCIÓN: La calidad del aire en centros de salud es fundamental para resguardar la salud de las personas. En Chile, los Centros Comunitarios de Salud Familiar (CECOSF) son lugares de gran concurrencia de personas, favoreciendo la diseminación de microorganismos. OBJETIVO: Evaluar la calidad microbiológica del aire al interior del CECOSF-Centinela en Talcahuano, Región del Biobío. METODOLOGÍA: Se tomó muestras de aire en seis salas del CECOSF, quincenalmente, entre julio de 2018 y junio de 2019, con el equipo MAS-100 NT, empleando agar tripticasa y agar Sabouraud. Diferentes morfotipos de bacterias y hongos fueron identificados mediante RPC. RESULTADOS: Los recuentos de bacterias y hongos variaron entre 9,1 × 101 - 2,4 × 103 ufc/m3 y 10 - 1,5 × 102 ufc/m3, respectivamente. El aire de la sala de espera presentó los recuentos más altos, tanto para bacterias como hongos (P < 0,05). Se identificó Staphylococcus, Enterococcus, Pseudomonas, Acinetobacter, destacando las especies Staphylococcus aureus y Pseudomonas oryzihabitans, microrganismo este último, descrito actualmente como patógeno nosocomial. Entre los hongos se identificó Aspergillus, Meyerozyma y Rhodotorula. CONCLUSIÓN: Las muestras de aire del CECOSF-Centinela presentan microrganismos de importancia en salud humana. De ahí la necesidad de formular programas de monitoreo más regulares para controlar la calidad del aire al interior de estos establecimientos.


BACKGROUND: Indoor air quality in health centers is essential to protect the health of people. In Chile, the Community Family Health Centers (CECOSF) are places with large attendance of people, favoring the dissemination of microorganisms, and there are no reports of the microbial air loading these health centers. AIM: To evaluate the microbiological indoor air quality in CECOSF-Centinela in Talcahuano, Biobío Region. METHODS: Air samples were taken in 6 rooms of the CECOSF, every 15 days between July 2018 and June 2019, with the MAS-100 NT equipment using trypticase and Sabouraud agars. Different morphotypes of bacteria and fungi were identified by PCR. Results: The bacterial and fungal counts varied between 9.1 × 101 - 2.4 × 103 cfu/m3 and 10 - 1.5 × 102 cfu/m3, respectively. The air in the waiting room presented the highest counts, both for bacteria and fungi (P < 0.05). Staphylococcus, Enterococcus, Pseudomonas, Acinetobacter were identified, highlighting the species Staphylococcus aureus and Pseudomonas oryzihabitans, the latter described as a nosocomial pathogen. Among the fungi, Aspergillus, Meyerozyma and Rhodotorula were identified. CONCLUSION: The indoor air of the CECOSF-Centinela presents microorganisms of importance in human health. Therefore, it is necessary to formulate more regular monitoring programs for the control of air quality inside these health centers.

ABSTRACT

La problemática de la contaminación marina y su marcada influencia en la salud de los ecosistemas costeros, está estrechamente relacionada con el aumento creciente de las poblaciones que habitan estas zonas y, de igual manera, con el incremento de las actividades domésticas, agrícolas e industriales que, por el mal manejo e inadecuado control de los desechos sólidos y líquidos, afectan el medio marino con significativas implicaciones a nivel ecológico, socioeconómico y de salubridad (Marín et al., 2005). Cada vez más la contaminación en el planeta abarca un tema importante de tratar, esto se debe al agotamiento de los recursos naturales y al calentamiento global que afecta a toda la humanidad de diferentes maneras. Vargas (2016) aclara que la sostenibilidad juega un papel fundamental que busca no poner en peligro al medio ambiente ni los recursos naturales que existen en el lugar. Con el propósito de evaluar los efectos e impactos que ocasionan la contaminación, la susceptibilidad al deterioro de funciones ecológicas, servicicos ecosistemicos, y la capacidad de adaptación, se desarrollo un análisis integrado de amenazas y vulnerabilidad ante la contaminación orgánica y microbiológica en la población costera de Santa Elena-Ecuador, 2020. La presente investigación permitio evidenciar el estado de vulnerabilidad de la localidad situada en zona costera de Santa Elena, ante la contaminación orgánica y microbiológica. Asimismo puede ser utilizada como soporte en la generación de planes y programas que ofrezcan para el control y disminución de la contaminación en los hogares como en la zona marino-costera, en la medida en que se identifican puntos clave para el fortalecimiento de la comunidad tanto en términos de infraestructura como el caso de los servicios de acueducto y alcantarillado así como de capital social y dependencia del uso de agua en la comunidad en estudio(AU)


The problem of marine pollution and its marked influence on the health of coastal ecosystems, is closely related to the growing increase in the populations that inhabit these areas and, in the same way, with the increase in domestic, agricultural and industrial activities that, due to the mismanagement and inadequate control of solid and liquid waste, affect the marine environment with significant implications at an ecological, socioeconomic and health level (Marín et al., 2005). More and more pollution on the planet encompasses an important issue to deal with, this is due to the depletion of natural resources and global warming that affects all of humanity in different ways. Vargas (2016) clarifies that sustainability plays a fundamental role that seeks not to endanger the environment or the natural resources that exist in the place. In order to evaluate the effects and impacts caused by pollution, susceptibility to deterioration of ecological functions, ecosystem services, and adaptation capacity, an integrated analysis of threats and vulnerability to organic and microbiological contamination was developed in the coastal population of Santa Elena-Ecuador, 2020. The present investigation allowed showing the state of vulnerability of the locality located in the coastal zone of Santa Elena, in the face of organic and microbiological contamination. It can also be used as a support in the generation of plans and programs that offer for the control and reduction of pollution in homes and in the marine-coastal zone, to the extent that key points are identified for the strengthening of the community both in terms of infrastructure, such as the case of the aqueduct and sewerage services, as well as social capital and dependence on the use of water in the community under study(AU)

ABSTRACT

Existe no Brasil uma grande variedade de queijos que se enquadram no conceito de "queijo minas artesanal". Produtores consideram que a legislação que regula o setor, em níveis municipal, estadual e federal, é confusa e excessivamente rigorosa, dificulta a padronização dos produtos, interfere no crescimento do setor e facilita a comercialização de queijos em desacordo com os padrões de higiene e segurança estabelecidos. Este trabalho de pesquisa de mestrado pretendeu gerar dados sobre as condições higiênico-sanitárias e segurança microbiológica de queijos minas artesanal, produzidos em Minas Gerais e coletados no comércio da cidade de São Paulo, bem como contribuir com informações a respeito da diversidade bacteriana nos queijos estudados. Foram estudadas 100 amostras de queijo minas artesanal coletadas no comercio de São Paulo, que foram submetidas à enumeração de microrganismos indicadores de higiene (coliformes, Escherichia coli e estafilococos), Salmonella e Listeria monocytogenes, empregando técnicas convencionais de cultivo e também moleculares. Os estafilococos coagulase positivos foram estudados quanto à tolerância à biocidas de interesse para alimentos, determinando-se também a diversidade microbiana, utilizando-se Next Generation Sequencing em Illumina MiSeq. Os resultados indicaram baixa ocorrência dos patógenos estudados, e que 10% e 32% das amostras excederam os limites para Escherichia coli e estafilococos coagulase positiva estabelecidos pelas legislações vigentes, respectivamente. Entre os estafilococos coagulase positiva, 37,7% foram tolerantes a algum dos biocidas testados, com maior prevalencia dos tolerantes ao cloreto de benzalcônio (75%). Quanto à diversidade bacteriana, os gêneros predominantes foram Streptococcus (32,7%), Lactococcus (30,6%) e Corynebacterium (15,6%). A microbiota bacteriana detectada nos queijos Canastra estudados não apresentou dissimilaridade quando comparada à microbiota bacteriana de outros queijos Canastra coletados nos locais de produção em outro estudo. Observou-se que as regiões de coleta dos queijos na cidade de São Paulo e os pontos de comercialização em São Paulo apresentam maior influência sobre a microbiota detectada para o queijo minas artesanal do que as regiões de produção (p<0,05), sugerindo a interferência das práticas de manipulação após a produção na diversidade bacteriana detectada nos queijos


There is a wide variety of cheeses in Brazil that fit the concept of "artisanal minas cheese". Producers consider that the legislation that regulates the sector, at municipal, state and federal levels, is confusing and excessively strict, hinders the standardization of products, interferes with the growth of the sector and facilitates the marketing of cheeses in disagreement with the hygiene and safety standards. This master's research work aimed to generate data on the hygienic-sanitary conditions and microbiological safety of artisanal Minas cheeses, produced in Minas Gerais and collected in São Paulo's commerce, as well as to contribute with information about the bacterial diversity in the studied cheeses. One hundred samples of artisanal Minas cheese collected in the São Paulo market were subjected to the enumeration of hygiene indicator microorganisms (coliforms, Escherichia coli and staphylococci), Salmonella and Listeria monocytogenes, using conventional cultivation and also molecular techniques. Coagulase positive staphylococci were studied for tolerance to biocides of interest to food, and microbial diversity was also determined using Next Generation Sequencing in Illumina MiSeq. The results indicated a low occurrence of the studied pathogens, and that 10% and 32% of the samples exceeded the limits for Escherichia coli and coagulase positive staphylococci established by the current legislation, respectively. Among the coagulase positive staphylococci, 37.7% were tolerant to at least one of the tested biocides, with a greater prevalence of those tolerant to benzalkonium chloride (75%). As for microbial diversity, the predominant genera were Streptococcus (32.7%), Lactococcus (30.6%) and Corynebacterium (15.6%). The bacterial microbiota detected in the studied Canastra cheeses showed no dissimilarity when compared to the bacterial microbiota of other Canastra cheeses collected at the production sites in another study. It was observed that the cheese collection regions in the city of São Paulo and the marketing points in São Paulo had a greater influence on the detected bacterial microbiota than the production regions (p<0.05), suggesting the interference of the practices of manipulation after production in the bacterial diversity detected in the cheeses
