ABSTRACT

The coffee quality is affected by 40% pre-harvest, 40% post-harvest, and 20% export handling. Besides, future risks for the coffee industry are related with climate change and increased pathogens. Considering the importance of the aroma profile and unique flavor of Arabica coffee, most literature focuses on this variety because of the high market share; however, nowadays, Robusta coffee stands out for its increasing industrial value and resistance to drought. In this review, both species are emphasized, highlighting sensory aspects of possible new products mixed with a higher proportion of Robusta given market trends for bitter beverages. In the present work, a systematic search of peer-reviewed literature evaluates how the coffee cup quality and physicochemical characteristics of Robusta and Arabica are influenced by environmental, agronomic, and further processing factors.

ABSTRACT

ABSTRACT: The objective of this study was to evaluate different materials for field bagging with respect to the physicochemical changes caused in cantaloupe melon fruits. The study was conducted in a protected environment in the city of Goiânia, Goiás in Brazil. The experiment consisted of five treatments, with bagging of cantaloupe melon fruits with four materials (newspaper, Kraft paper, NWF, and polyethylene) and a control treatment without bagging, in a randomized block design with five replications of one plant with a fruit each. Fruits were evaluated for physicochemical characteristics. Number of days from bagging to harvest was also recorded and visual aspects of the fruit were observed. The materials as well as the time interval between the bagging and harvest affect physicochemical characteristics such as accumulation of soluble solids and thickness of the green pulp halo and visual aspects of the fruit. This study recommends bagging cantaloupe melons using white non-woven fabric or to not use the technique at all, under the conditions similar to those used in the study. In addition, using polyethylene for the bagging of fruit is not recommended, because this material has a deleterious effect on the characteristics essential for commercialization of melons.(AU)


RESUMO: Objetivou-se com este estudo avaliar diferentes materiais para ensacamento a campo quanto às alterações físico-químicas causadas em frutos de meloeiro Cantaloupe. O estudo foi conduzido em ambiente protegido localizado na cidade de Goiânia, Goiás. O experimento foi composto por cinco tratamentos, referentes ao ensacamento de frutos de meloeiro Cantaloupe com quatro materiais (papel jornal, papel Kraft, TNT e polietileno) e um tratamento controle, sem ensacamento, dispostos em blocos casualizados, com cinco repetições, representadas por uma planta com um fruto cada. Os frutos foram avaliados quanto às características físico-químicas. Também foi contabilizado o número de dias desde o ensacamento até a colheita e observados os aspectos visuais dos frutos. Verificou-se que os materiais influenciaram as características relativas ao acúmulo de sólidos solúveis e espessura do halo verde da polpa, o intervalo de tempo entre o ensacamento e a colheita e os aspectos visuais dos frutos. Recomenda-se o ensacamento de melões Cantaloupe com a utilização do TNT ou a não utilização da técnica, em condições semelhantes às do estudo. Em complemento, não é recomendada a utilização do polietileno para o ensacamento dos frutos, uma vez que esse material tem efeito deletério sobre as características essenciais à comercialização.(AU)

ABSTRACT

Production of good quality beer is dependent largely on the fermentation temperature and yeast strains employed during the brewing process, among others. In this study, effects of fermentation temperatures and yeast strain type on beer quality and spent yeast density produced after wort fermentation by two commercial yeast strains were investigated. Beer samples were assessed for colour, clarity and foam head stability using standard methods, whilst the compositions and concentration of Beer Volatile Compounds (BVCs) produced were assessed using GC-MS. The spent yeast density, measured as dry cell weight, ranged between 1.84 - 3.157 mg/ml for both yeast strains with the highest yield obtained at room temperature fermentation. A peak viable population of 2.56 x 10(7) cfu/ml was obtained for strain A, also during fermentation at room temperature. The foam head of the beers produced at 22.5ºC was most stable, with foam head ratings of 2.66 and 2.50 for yeast strain A and B, respectively. However, there was no significant (p = 0.242) difference in colour intensity between the beers produced at the different fermentation temperatures. Eight different BVCs were detected in all beer samples and were found to affect the organoleptic properties of the beer produced. Further optimizations are required to determine the effects of other parameters on beer quality.

ABSTRACT

Currently in Colombia, there are only records of morph-agronomic characterizations of Mangifera indica cvar. Hilacha; molecular studies on this mango variety have not been carried out. The aim of this work was to identify the genetic diversity of six populations of mango Hilacha by RAPDs markers, as a fundamental base for breeding programs, conservation and selection of promissory materials for the fruit industry at the national level. From 60 primers evaluated in the populations, five primers were selected and were launched in the six populations. Polymorphic bands of RAPDs were transformed into binary matrices, which were then processed with NTSYS-PC, POPGENE and TFPGA softwares. The overall genetic diversity, H T = 0.468 +/- 0.0016, is very similar to the average subpopulation genetic diversity, H S = 0.4431 +/- 0.0024, which revealed a small genetic differentiation among the mango Hilacha populations studied (G ST = 0.0532). This means that each population contained in average 95 percent of the total genetic diversity found in the global population analyzed. Considerable gene flow between populations (Nm = 9) was found. Finally, we recommend studying the genetic diversity of mango Hilacha populations with other molecular markers to complement the information obtained and to find similarities or differences with the results presented herein.
