ABSTRACT

The study evaluated the chemical and amino acids (AA) composition of breast and thigh muscle in broilers fed sorghum and sorghum-pea diets, as partial substitute of corn and soybean meal (SBM). A total of 540 3-wk-old broilers (Cobb 500) randomly assigned to three groups were fed with corn-SBM control diet (C), corn-sorghum-SBM diet (S) and corn-sorghum-peas-SBM diet (SP) for finisher phase. At slaughter, muscle samples were collected for chemical analyses. The results showed that dietary sorghum or sorghum-pea inclusion did not affect (p>0.05) the chemical composition (dry matter, protein, fat and ash) of broilers muscle tissue. The total AA (TAA), essential AA (EAA) or flavour-related AA (FAA) concentrations from breast or thigh muscle did not differ (p>0.05) between treatments. A significant effect (p<0.05) was found for some individual EAA. The valine and phenylalanine concentrations were higher, and cysteine and methionine levels were lower in both muscles than the C group. The higher deposition (p<0.05) was found for most AA, except glycine and arginine, in the breast vs thigh, as an effect of muscle tissue. As results, the TAA, EAA, NEAA, FAA and EAA/NEAA ratio increased in the breast vs thigh muscle. Interactions between diets and muscle tissue were noticed for serine, threonine, methionine, isoleucine, phenylalanine, lysine, arginine, TAA and EAA. In conclusion, sorghum or sorghum-peas can partially substitute the corn and SBM in broiler diets, with no adverse effects on chemical composition and beneficial nutrients, such as EAA and FAA that are important for the nutritional quality of meat.(AU)

ABSTRACT

The aim was to evaluate the proximate food composition, cholesterol content, coloring and economic aspects of the main nutrients present in by-products from the slaughter of cattle. The samples were collected from 14 organs, with four repetitions each, of which we conducted the analyses of moisture, crude protein, mineral matter, cholesterol and fat content. The color was measured through the coordinates L*, a*, b*. The differences between the groups of red and white viscera were evaluated by contrasts analysis. Subsequently, the data were subjected to multivariate analysis of variance, which was complemented by the principal component technique. In the analysis of contrast between red and white viscera, the results showed that the components with the highest content of total fat does not necessarily have the highest content of cholesterol and vice-versa. For minerals, the red viscera presented higher content than white viscera and, in order to analyze the protein composition, there was less variability for red viscera in relation to white viscera. In the color analysis, the values for the color readings indicated uniformity between the external and internal readings, except for the tongue. On mean, the proximate composition values for the offals are similar to the values for beef, especially regarding the red viscera.

ABSTRACT

The aim of this research was to investigate the physicochemical and functional properties of fresh and pasteurized chicken and duck egg albumens. The results showed that pasteurization of both chicken and duck albumens significantly decreased (p0.05) viscosity, but had no impact (p>0.05) on pH or free sulfhydryl groups. Chicken albumen was shown to have higher (p0.05) foam expansion, but lower (p0.05) foam stability than duck albumen. Pasteurization decreased (p0.05) the foam expansion of both albumens while decreasing (p0.05) the foam stability only of duck albumen. Investigation of the gel properties showed that duck albumen has greater hardness and lower expressible water (p0.05) than chicken albumen. Pasteurization increased the hardness and decreased the expressible water of both the chicken and duck albumen gels. This study suggests that the superior gel properties of duck albumen offer potential approaches to improving the quality of gel food products.(AU)

ABSTRACT

This study aimed at evaluating the effects of the physicochemical and nutritional characteristics of a biological silage meal made of tambaqui waste on dietary nutrient apparent digestibility and energy metabolism of commercial layer diets. Seventy-two 61-week-old Hisex White hens were assigned according to a completely randomized experimental design in two treatments: control diet and diet with 5% tambaqui waste biological silage meal (TWBSM), with six replicates of six birds each. The ensiled biomass presented grey brown color, acid aroma, viscous texture, 5.27±0.016pH, 96.28% dry matter (DM), 33.29% crude protein (CP), 33.65% ether extract (EE), 14.37% ashes, 13.63% non-nitrogen extract (NNE), 65.16 g.kg-1 calcium (Ca), 22.90 g.kg-1 phosphorus (P), and 5,666.07 kcal.kg-1 gross energy (GE). Higher (p>0.05) coefficients of apparent digestibility of DM, crude fiber, EE, and ash, and higher coefficient of GE metabolizability were obtained in the diet with 5% TWBSM. Due to its high CP content (33.29% on DM basis), TWBSM may be considered a protein feedstuff. Although no differences in CP digestibility (p>0.05) were detected, TWBSM presented high CP digestibility than the control diet due to proteins hydrolysis as a result of lactic fermentation by microorganisms during the ensilage process, yielding autolysed proteins of high biological value. Our results indicate that the biological silage meal produced from the residual biomass of tambaqui can be included up to 5% in commercial layer diets as it has good nutrient digestibility, and therefore, may potentially be used as a dietary energy and protein source.(AU)

ABSTRACT

Under the hypothesis that modifying nitrogen sources and doses could increase nitrogen fertilization efficiency and productivity and improve forage quality, this study aimed to evaluate the morphological composition, structural characteristics and chemical composition of Panicum maximum cv. Massai forage cultivated under different urea sources (common and coated with Policote®) and nitrogen doses (200, 400 and 600 kg ha-1 year-1) during the autumn, winter and spring of 2014 and the summer and autumn of 2015. The experiment was carried out in Seropédica, RJ, under a randomized complete block design in a factorial arrangement (3x2) + 1 with four replications. High nitrogen rates promoted higher percentages of leaf blade dry mass and lower percentages of dead material dry mass in the forage mass and provided higher tiller population density and forage accumulation rate of Massai grass during the studied seasons. The use of coated urea promoted higher levels of crude protein in the forage than did the use of common urea in all seasons. The intensification of nitrogen fertilization reduced the nitrogen use efficiency but benefitted the structural characteristics, forage accumulation and chemical composition of Massai grass forage. The use of coated urea promoted greater of nitrogen use efficiency during all seasons of the year.(AU)

ABSTRACT

Ulva lactuca (Chlorophyceae) has biotechnologically-important sulfated-polysaccharides (Ul-SPs), but their potentials on thrombin generation (TG) are unknown. This study analyzed the structural and physicalchemical features of the Ul-SPs as modulators of TG. Proteolytic digestion yielded (13.13%) extract containing sulfate (20.43%) and total sugars (65.72%), besides ulvan consisting of rhamnose, xylose, glucose, glucuronic acid and α-/β-types glycosidic linkages as characterized by one-/two-dimensions nuclear magnetic resonance (NMR) experiments. Fractionation of the Ul-SPs by DEAE-cellulose chromatography yielded Ul-SP1 and Ul-SP2 (0.50 and 0.75 M NaCl, respectively) showing sulfation (15.72-18.04%) and total sugars (59.73-60.58%) consistent with the charge density pattern by combination of agarose/polyacrylamide gel eletrophoresis using sequential staining with toluidine blue and stains-all, although with slight differences in their sizes (40 and >100 kDa, respectively). By both activated partial thromboplastin time (APTT) and prothrombin time (PT) tests, anticoagulation of the fractions was virtually detected by APTT (0.39 and 0.43 IU, respectively) against heparin (193 IU). Fractions acted differently on both intrinsic/extrinsic pathways in TG using 60-fold diluted human plasma, with 50% efficacies up to 8.3 μg, whereas at high concentrations suggested intrinsic hypercoagulability since heparin abolished both systems at low amounts. Ul-SPs block TG, but predicting thrombosis in increasing doses.

ABSTRACT

The Brazilian male beauty market occupies the second place in world consumption of cosmetics. Among the numerous products consumed by such audience is the capillary fixation mask, which is mainly composed by fixatives. These additives act on stabilizing the cosmetic emulsion, protecting the hair against moisture and also increasing the intensity of hair fixation. In this work, three formulations for modelling creams were prepared by different concentrations of the fixatives StylezeTM W20 and PVP K90 and their properties characterized by physicochemical, rheological and sensory analysis. The capillary masks produced were stable oil-in-water (O/W) emulsions with uniform droplets of 2.05-2.82 µm sizes and pseudoplastic thixotropic behavior (0.19 < n < 0.26). It was possible to correlate the increased concentration of PVP K90 to a greater thixotropy and an improved yarn fixation, despite the worsening in the spreadability of the formulations. These results suggest properly conducted rheological measurements can contribute to the prediction of the emulsion's sensory properties, which can save time and funds on the development of new cosmetics

ABSTRACT

The objective of this study was to determine the proximal composition, the physical and chemical characteristics and the in vitro antioxidant capacity (DPPH, ABTS and FRAP) of the pulp of the wild passion fruit (Passiflora glandulosa Cav.) from Cariri region, Ceara, Brazil. The results showed that the proximal composition and the caloric value of this passion fruit are similar to other species, but with a high ascorbic acid content. The fruit pulp showed low level of antioxidant activity and low level of polyphenolic compounds followed by three methodologies used. Due to high levels of titratable acidity (3.52) and total soluble solids (17.80 Brix), this fruit can be considered as a high value fruit for commerce. However, it is a species of passion fruit with few studies described in the literature, and more research is needed to assess its nutritional and functional potential.(AU)

ABSTRACT

This study aimed to evaluate the effect of diets containing increasing levels of citrus pulp on the physicochemical and microbiological characteristics of horses feces. Five mares, at an average age of 3.5 years old and body weight of 492 ± 44.5 kg were arranged in a 5 x 5 Latin Square. The experimental diet consisted of 60% coast-cross hay and 40 % of concentrate with increasing levels of citrus pulp (0, 7, 14, 21, and 28 %). To determine the fecal pH, samples were collected directly from the floor, immediately after defecation, in the first feces of the day at 07:00 a.m., and color and fecal consistency were evaluated. For microbiological analysis, an aliquot was reserved in plastic bags, frozen, and sent to the microbiological laboratory for further analysis. Lactic acid bacteria were counted for Lactobacillus spp. and Streptococcus spp. from fecal samples under anaerobic conditions. The diet produced differences (P 0.05) in feces consistency: 98% of the animals had normal and firm stools, while 2% were loose ruminant-type feces. We observed no difference (P 0.05) for color, verifying 100% of the animals of greenish feces, normal for equines. There was no effect (P>0.05) on pH and on the number of Lactobacillus spp. and Streptococcus spp. The inclusion of up to 28% citruspulp concentrates for horses did not promote change in the physicochemical characteristics and on the population of lactic acid-producing bacteria in feces.

The inclusion of up to 28% citruspulp concentrates for horses did not promote change in the physicochemical characteristics and on the population of lactic acid-producing bacteria in feces.(AU)

ABSTRACT

In order to evaluate the chemical composition and pH of chicken meat subjected to heat stress during the pre-slaughter rest time, an experiment was conducted in a slaughterhouse. Twenty-five birds were randomly selected and housed in rooms without air conditioning for a 3-hour period, with an average temperature of 33C and relative humidity of 83%. After slaughter, the carcasses were deboned and prime cuts were chilled (between 0 and 4 C) for 24 hours for analysis of moisture levels, protein, fat, ash, and pH. The humidity values were 72.80, 71.47, and 70.30%, protein values were 16.81, 14.90, and 15.10%, lipid values were 0.78, 3.30, and 5.80%, ash values were 0.81, 0.88, and 0.89%, and pH values were 5.30, 6.10, and 6.54 for breast, thigh, and drumstick, respectively. Heat stress for 3 hours before slaughter led to changes in the chemical composition and pH of the chicken, which establishes an anomaly in the flesh of the PSE type (pale, soft, and exudative). It is evident that pre-slaughter management is important to ensure animal welfare and consequently high meat quality.(AU)
