ABSTRACT

Fundamentos: En este trabajo se exponen los resultados obtenidos del estudio anSAFACHILDREN-1 realizado durante el curso 20022003 en un centro docente de la localidad de Andújar, Jaén. En dicho centro, Escuelas Profesionales de la Sagrada Familia, se impartió el curso de Técnico en Dietética y Nutrición, de Formación Profesional Ocupacional que organizó la Consejería de Empleo y Desarrollo Tecnológico de la Junta de Andalucía. Con el objetivo de familiarizar a los alumnos del curso con técnicas epidemiológicas, y evaluar los hábitos de alimentación en el desayuno. Métodos: El estudio anSAFACHILDREN-1 es un estudio poblacional diseñado con el objeto de evaluar los hábitos de alimentación en el desayuno y estado nutricional en la población estudiante (3-11 años) del centro antes citado. Tras realizar el trabajo de campo y el procesamiento de los datos, se realizó la comparación de los datos obtenidos. Resultados y conclusión: Los resultados confirmaron que cada vez más niños y adolescentes no desayunan o lo hacen de forma inadecuada. Se obtuvo que el 75 por ciento de los escolares encuestados desayunaban, pero que de estos tan sólo el 27 por ciento incluían lácteos en su primera comida. Además, se observó que numerosos escolares consumían dulces-bollería para comenzar el día en detrimento del consumo de otros alimentos. En el estudio también se determinó las medidas antropométricas más usuales de los sujetos del estudio, observando las diferencias entre ambos sexos por rangos de edad y comparándolas con los percentiles de referencia (AU)

Este estudo corresponde a uma tentativa de configurar as (os) nutricionistas que exercem sua profissäo nos Centros Municipais de Saúde do Rio de Janeiro. Trata-se de uma pesquisa de caráter exploratório, que enfatisa as representaçoes sociais que trazem sobre sua vida profissional, tomando por referência o processo de trabalho em que se inscrevem. Partindo de seus projetos de vida, desde a escolha da carreira profissional, passando pelas experiências vividas até a entrada nos Centros de Saúde, o cotidiano dessas(es) nutricionistas é apresentado através das atividades ai desenvolvidas, do espaço físico ocupado, das relaçoes com a populaçäo usuária, das condiçoes salariais e de carga horária de trabalho e de suas perspectivas para o futuro. A busca por autonomia, através do atendimento nutricional em consultório à pacientes, é destacada enquanto realizaçäo profissional, enquanto busca de liberdade. Mas deve ser relartvizada quando se apresenta como isolamento frente à equipe de saúde. Nesse sentido a encontramos, majoritariamente, tentadora e reificada

ABSTRACT

The work that is performed by auxiliary public health nutrition workers helps broaden the sphere of action of nutrition specialists, and such personnel are needed to take over simple manual tasks that they can readily learn through practice. Among workers who assist the nutritionist are the food surveyors and distributors, and among those who assist the dietician are aides employed in the food services and in similar occupations


The author reviews the duties of such auxiliary personnel and the current possibilities for their training, and discusses the questions of prior selection for training, educational requirements, and the specific subjects to be imparted, proposing the theory and practice content of the curriculum. Reference is made to the relative advantages of centralized, semicentralized, and decentralized training, as affected by the relationship between the school of dietetics and the other agencies that might possibly participate in the training


The author proposes the following definition of an assistant engaged in public health dietetics and nutrition:


"A person who, after having received specific training for the purpose, works at certain tasks under a specific work plan for public health nutrition and dietetics, under the immediate and continued supervision of the nutritionist and/or dietician."


It is also suggested that the generic name "health auxiliary" or "public health ...(AU)
