RESUMEN

A consumer study was performed in four EU countries to further clarify the acceptability of meat with boar taint. In Denmark, France, Italy and Poland, a total of 476 female consumers evaluated 8 meat patties from boars with varying levels of skatole (0.10-0.40µg/g fat tissue) and androstenone (0.47-2.00 µg/g fat tissue), in a pair-wise comparison with patties from castrates. Boar meat patties were always less preferred than the castrate meat patties, regardless of the level of androstenone and skatole. Acceptability of the boar meat patties decreased with increasing skatole level. In samples with low skatole levels, higher levels of androstenone also reduced acceptability among androstenone sensitive consumers. No clear threshold levels for androstenone and skatole could be identified. Maps presenting the reduction in preference due to increasing levels of skatole and androstenone, and corrected for the general acceptance of the meat product were developed, taking into account androstenone sensitivity. Further work is needed, covering the whole range of androstenone and skatole levels found in entire male pigs and for a wider set of meat products.

Even when individuals are aware of long-term health effects of their diet, and form healthy intentions, they often engage in relatively unhealthy snacking habits. Some individuals fall back on unhealthy habits more easily than others. We aim to explore whether time perspective can explain why some individuals are more prone to rely on habits and others on intentions. Study 1 (N = 1503) provides a first exploration of the role of time perspective by exploring individual differences in perception of long-term and short-term consequences. In accordance with our hypotheses, Study 1 shows that habits are associated with short-term consequences and intentions with long-term consequences. Study 2 (N = 1497) shows that the effects of habits on snacking behaviour are strengthened by a present time perspective, whereas the effects of intentions on snacking behaviour are strengthened by a future time perspective. These findings imply that there is a fundamental difference in the guiding function of intentions and habits which might explain individual differences in following intentions versus habits. Individuals with a long-term perspective are more inclined to follow intentions and individuals with a short-term perspective are more inclined to follow habits.

Pig farms in the Netherlands producing boars have different levels of boar taint prevalence, as assessed by sensory evaluation with the human nose at the slaughter line. With a questionnaire to 152 Dutch pig producers (response rate 59%), farm and management characteristics were identified that are potentially associated with farm-level boar taint prevalence. Lower farm-level boar taint prevalence was associated with a smaller group size, a smaller pen surface per boar, newer housing equipment, not practicing restricted feeding in the last period before delivery, a longer fasting period before slaughter, a higher stocking weight and a lower fraction of boars from purebred dam line sows or from Pietrain terminal boars. These characteristics can be used to develop farm-level intervention strategies to control boar taint. More research effort is needed to establish causal relationships.
