In this study, the influence of glycerol and sonicated soybean expeller (SSE) on composite edible films supporting natamycin and nisin was investigated using Response Surface Methodology. Assessments were conducted on mechanical properties, moisture content, water solubility (SW), and color. Optimal results were achieved with 0.46% SSE and 1.4% glycerol, yielding a maximum tensile strength (TS) of 1.0 ± 0.1 MPa and a minimum SW of 19.0 ± 0.3%. SSE had no impact on Tg values (82-89 °C), while antimicrobials reduced Tg (70-73 °C) due to increased water retention. Water vapor permeability was (2.5 ± 0.2) × 10-9  -1 s-1 Pa-1. FTIR analysis revealed strong component interactions. The composite films demonstrated biodegradability in compost after seven days and effective action against Listeria innocua and Saccharomyces cerevisiae. These findings suggest that these materials hold promise as active films for food preservation. The byproduct of Salvia hispanica (chia) seed oil extraction by cold pressing, also known as expeller, possesses a high nutritional value. It is rich in proteins, fibers, minerals, and has a residual oil content of 7-11%, which is rich in omega 3 linolenic acid (ALA). However, this byproduct has been historically undervalued. Thus, the aim of current work was to study the effects of consuming of a rich in chia expeller diet on a rabbit model of metabolically unhealthy normal weight to validate their use as a functional food. Rabbits were fed different diets for a period of 6 weeks: a standard diet (CD), a high-fat diet (HFD), a rich in expeller CD (Exp-CD) and a rich in expeller HFD (Exp-HFD). The Exp-HFD attenuated the rise in basal glucose, TyG index, triglycerides, cholesterol and non-HDL cholesterol induced by the HFD. Both rich in expeller diets reduced mean arterial blood pressure (MAP) and increase liver and fat ALA levels compared to their respective controls. Furthermore, the angiotensin converting enzyme (ACE) activity was lower in the lungs of animals fed on rich in expeller diets compared to their respective controls. In vitro studies showed that ALA inhibited ACE activity. The evaluation of vascular reactivity revealed that rich in expeller diets improved angiotensin II affinity and reduced contractile response to noradrenaline. In conclusion, the consumption of rich in expeller diets showed beneficial effects in preventing cardiovascular risk factors such as insulin resistance, dyslipidemia and MAP. Therefore, its use as functional ingredient holds significant promise.

By-products from the industrialization of oilseeds, particularly chia, can be sustainably used for the development of new functional products. In this work, wheat breads supplemented with up to 10 mg of chia expeller hydrolysate/g of flour were prepared, obtaining fortified breads with acceptability for consumption, according to a preliminary consumer research study based on an affective test employing a five-point hedonic scale of global acceptance. In this context, protein hydrolysates of the chia expeller were produced using Alcalase, reaching a degree of hydrolysis of 54.3 ± 1.6% with an antioxidant activity of 55.8 ± 0.4% after 6 h incubation at 25 °C in the presence of the enzyme. These peptides showed appropriate techno-functional properties and chemical compositions suitable for the further development of bakery products. Taken together, our approach and the development of a fortified bread with plant-based bioactive peptides provide a novel and eco-friendly alternative for the recovery of nutrients from agro-industrial waste. More importantly, these enriched breads could exert beneficial effects on human health by exploiting the antioxidant properties of functional peptides derived from the chia expeller.

Soybean seeds (Glycine max) were dried under real scale conditions to different final moisture content (m.c.) (9.1, 9.7, 10.9 %, and control with 16.2 %) and processed through extruding-expelling. Results indicated that soybean seed m.c. affected the composition of the soybean expeller and, thus, the oil extraction efficiency (OEE), which increased as the seed m.c. decreased. A polynomic model was proposed for predicting OEE as a function of soybean m.c., indicating that drying soybean to 10 % resulted in an OEE of approximately 65 %. A thin layer drying experiment of soybean seeds indicated that the protein dispersibility index (PDI) was not affected as regards drying air temperatures up to approximately 69 °C, and a bi-linear model with a non-pre-established break point was fitted. The real scale drying treatment in a rack type dryer (mixed flow) did not show any effect (p > 0.05) on the PDI at 80 °C, while at 115 °C a reduction (p < 0.05) was observed (PDI reduction was 0.8 and 2.1 percentage points, respectively).(AU)

Chia expeller is a promising source of bioactive compounds suitable for the development of nutraceutical ingredients due to its functional, biological, and nutritional properties. In this work, chia expeller was hydrolysed with Alcalase-Flavourzyme sequential system and compared to the individual enzymes. A higher degree of hydrolysis (57.63 ± 6.08%) was obtained after 90 min-Alcalase and 90 min-Flavourzyme (H-A90-F90), with the development of low molecular weight peptides as observed by SDS-PAGE. H-A90-F90 exhibited antiradical activity with ABTS (TE = 4.87 ± 0.13 mmol L-1 mg-1), DPPH (TE = 1.55 ± 0.02 mmol L-1 mg-1), antihypertensive activity (45% ACE-I inhibition), and antithrombotic activity against both intrinsic and extrinsic coagulation pathways. These results represent the first report of antithrombotic peptides from Salvia hispanica, highlighting the relevant use of chia seed by-products to obtain potentially antioxidant, antihypertensive, and anticoagulant peptides by enzymatic hydrolysis with Alcalase and Flavourzyme, enhancing this agro-industrial by-product.

Extruded expeller soybean meal is a byproduct of the soybean oil extraction, which is frequently used in Argentina by animal feed millers. In this work, the soluble protein extraction stage is studied as the first step of a challenge project in order to obtain a soy protein product from this byproduct. Extruded expeller meals from 4 different Argentinian processing plants were used to obtain 41 experimental data sets, using 1 to 3 consecutive extraction cycles operating at temperatures from 55 to 65 °C. Firstly, 16 data sets were used to estimate the values of the distribution constant and the diffusivity of proteins within the particle, both as function of the extraction temperature. The remaining 25 data sets were used for validation purposes. Extraction yields were analyzed considering the impact of the operating conditions, while a good agreement between experimental and predicted extraction yields was achieved as the reported statistical parameters indicate.

Due to the heterogeneity and complexity of food systems, there is a need to increase the knowledge on environmental impacts of regional productions by performing studies in a transparent manner, so that researchers could compare and accurately adapt such data to assess mitigation strategies. With the exception of beef, chicken and pork are the most consumed meats in Argentina and their consumption is expected to continuing increasing. However, despite the growing importance of chicken and pork industry, no studies on environmental impact of these products have been conducted to date in this country. Performing a life cycle inventory with data derived from government statistical publications, academia and communications with industry, the present study aims to investigate the energy and carbon footprints per ton of live weight (LW) of chickens and pigs from intensive production systems at farm gate in Argentina. In addition, we discussed in detail the effects on energy and carbon footprints of two animal diets which comprise different soybean by-products commonly used in animal husbandry, namely expeller-extruded soybean meal and solvent-extracted soybean meal and oil. We found that the energy and carbon footprint at farm gate for chicken was 13.6-15.1 GJ/ton LW and 2.03-2.22 ton CO2-eq/ton LW, for pigs in hoop systems 23.2-24.0 GJ/ton LW and 5.14-5.17 ton CO2-eq/ton LW, and for pigs in confinement systems 23.6-24.2 GJ/ton LW and 6.06-6.45 ton CO2-eq/ton LW, respectively. The choice of expeller-extruded soybean meal or solvent-extracted soybean meal and oil as feed ingredients showed small differences on the energy and carbon footprints of chickens and pigs.
