BACGROUND: Morphologic measurements such as body lenght, wither height, heart girth, chest width, body leght, cannon-bone circumference is used to predict carcass weight. For this purpose, estimating carcass weight with measurements of key bones such as ankle bones, which play a significant role in the balance distribution of body weight, seems possible. OBJECTIVES: The aim of this study is to create new regression models for effective carcass weight estimation by using the morphometric data of the talus and calcaneus bones of hair goats. METHODS: Study materials consisted of talus and calcaneus bones obtained from abattoir products of hair goat kids (12-18 months old, 20 female and 20 male) and adult hair goats (36-48 months old, 20 female and 20 male). Morphometric measurements of the talus and calcaneus of each animal were taken by a digital caliper. Using the morphometric measurements, an index and a factor were calculated for each bone. Regression analysis and correlations were examined in IBM SPSS 21 programme. RESULTS: As a result, statistical analysis of GLc, GLt, Bd, Calfactor and Talfactor were statistically significant on predicting carcass weight. CONCLUSION: Specific anatomical structures, such as certain bone measurements, such as talus and calnaneus could serve as indicators of growth performance and also carcass weight performance. In addition new anatomical factors and indices may be produced and new regression methods may be applied with these new parameters to predict carcass weight.

Crossbred steers (n = 114, initial BW = 334 kg; SEM = 5 kg) were serially harvested to evaluate the change in carcass composition by feeding cattle 21 or 42 d longer than the 2014 industry average subjective measure of finish, 1.27 cm of 12th rib fat thickness. Carcass ultrasound measurements were collected on 76 steers at 1, 78, and 134 days on feed (DOF) to project appropriate harvest date. Steers were sorted into three harvest groups, and serially harvested at 142, 163, or 185 DOF, with the first harvest date selected based on an estimated 12th rib fat thickness of 1.27 cm via ultrasound measurement. Steers were fed using an individual animal feeding system, to determine individual performance metrics. Steer DMI did not differ (P ≥ 0.31) between harvest groups, while carcass-adjusted ADG and G:F decreased linearly (P ≤ 0.04) as DOF increased. Carcass weight increased linearly (P < 0.01) as DOF increased from 142 to 185 DOF, with steers gaining an additional 36 kg of HCW when fed an additional 42 DOF. Carcass LM area quadratically increased (P = 0.04) to 163 DOF and remained constant to 185 DOF. Marbling score was not different (P = 0.14) between harvest groups; however, the opportunity to grade USDA Premium Choice was improved for steers fed to 185 DOF. Calculated YG and 12th rib fat thickness increased linearly (P < 0.01) as DOF increased, with distributions across YG 1 through 5 differing between harvest groups (P < 0.01), and 185-d carcasses having the greatest frequency of YG 4 carcasses. As cattle are fed for additional DOF, live ADG and G:F decline, while HCW and LM area increase.

The dynamics of cattle body chemical composition during growth and fattening periods determine animal performance and beef carcass quality. The aim of this study was to estimate the empty body (EB) and carcass chemical composition of growing beef-on-dairy crossbred bulls (Brown Swiss breed as dam with Angus, Limousin or Simmental as sire) using three-dimensional (3D) imaging. The 3D images of the cattle's external body shape were recorded in vivo on 48 bulls along growth trajectory (75-520 kg BW and 34-306 kg hot carcass weight [HCW]; set 1) and on 70 bulls at target market slaughter weight, including 18 animals from set 1 (average 517 ± 10 kg BW and 289 ± 10 kg HCW; set 2). The linear, circumference, curve, surface and volume measurements on the 3D body shape were determined. Those predictive variables were used in partial least square regressions, together with the effect of the sire breed whenever significant (P < 0.05), with leave-one-out cross-validation to estimate water, lipid, protein, mineral and energy mass or proportions in the EB and carcass. Mass and proportions were determined directly from postmortem grinding and chemical analyses (set 1) or indirectly using the 11th rib dissection method (set 2). In set 1, bulls' BW and HCW were estimated via 3D imaging, with root mean square error of prediction (RMSEP) of 12 kg and 6 kg, respectively. The EB and carcass chemical component proportions were estimated with RMSEP from 0.2% for EB minerals (observed mean 3.7 ± 0.2%) to 1.8% for EB lipid (11.6 ± 4.2%), close to the RMSEP found for the carcass. In set 2, the RMSEP for estimation via 3D imaging was 9 kg for BW and 6 kg for HCW. The EB energy and protein proportions were estimated, with RMSEP of 0.5 MJ/kg fresh matter (10.1 ± 0.8 MJ/DM) and 0.2% (18.7 ± 0.7%), respectively. Overall, the estimations of chemical component proportions from 3D imaging were slightly less precise for both sets than the mass estimations. The morphological traits from the 3D images appeared to be precise estimators of BW, HCW as well as EB and carcass chemical component masses and proportions.

The objective of this research was to investigate the influence of beef hot carcass weight (HCW) on consumer sensory attributes. Beef carcasses (n = 116) were selected based on the USDA quality grade and HCW. Lightweight (LW; 296-341 kg), middleweight (MW; 386-432 kg), or heavyweight (HW; 466-524 kg) carcasses with USDA Choice (LC) or USDA Select (SEL) quality grades were used in this study. Carcasses were tracked through fabrication and the semitendinosus, chuck roll, and strip loin were collected and fabricated into eye of round, Denver cut, and strip loin steaks, respectively, for consumer sensory evaluation. USDA Select MW Denver cut steaks had increased overall liking and texture liking scores and were more tender and juicier than the SEL LW steaks (p ≤ 0.02). USDA Select MW strip loin steaks had increased overall and flavor liking scores and were more tender than the SEL LW steaks (p ≤ 0.02). USDA Choice MW eye of round steaks had increased overall, flavor, and texture liking scores and were juicier than the LW eye of round steaks (p ≤ 0.04). The steaks evaluated in this study were differentially impacted by HCW and little to no clear pattern of effects could be determined across cut or quality grade. Additional research is needed to determine the most acceptable HCW from a consumer perspective.

Waterfowl is an important animal-protein source, which has the potential to get a bigger share in the animal production sector. However, waterfowl farming practices and welfare standards are not well established yet. Stocking rate is one of the farming standards that can enhance the productivity, behavior, and well-being of birds; however, rare studies are available in this area. Thus, this article (1) gives an overview of the recent global waterfowls' meat and egg production and their population distribution, (2) reviews the effects of stocking rate on social, feeding, and sexual behaviors, (3) shows the effects of stocking rate on growth performance, carcass weight, and meat quality of ducks and geese, and (4) declares the relationship between the stocking rate and egg production. Conclusively, an optimal stocking rate standard can improve behaviors, productivity (meat-egg), and meat quality. Moreover, using weight (kg)/m2 will help in affording the required space allowance for different ducks and geese under various housing systems. The fish-waterfowl production system could be a promising and sustainable solution for increasing waterfowl production, maintaining the welfare of birds, saving energy, and reducing the water footprint of waterfowl meat. Based on prior research findings, we recommended adopting the stocking rate (SR) standard for specific duck and goose breeds to achieve an optimal production-welfare balance.

Is it possible to reduce feeding costs in rabbit meat production without compromising rabbit health and productive yield? The study tested four feeding strategies: Control group (CC) fed exclusively with concentrate feed; group CT supplemented with whole carrot; group OH supplemented with oat hay; and Group CO supplemented with oat hay and whole carrot. Each feeding strategy was tested in 20 rabbits, randomly allocated in five cages with four rabbits each. The average daily weight gain (ADG), feed conversion ratio (FCR), and the amount of concentrated feed consumed daily were estimated in all experimental groups. Group CC displayed the best ADG (37.1 g/rabbit/day), carrot had no significant influence on ADG (34.2 g/rabbit/day), but oat hay had a negative impact (p < 0.05), either used alone or in combination with carrot (33.0 and 32.6 g/rabbit/day, respectively). Supplementation with carrot, oat hay, or both increased the FCR (p < 0.001). Nevertheless, there were no significant differences in final live weight or carcass weight between the rabbits in the different experimental groups. In conclusion, supplementation with oat hay, carrot, or both can be a valid approach to reducing production costs by decreasing concentrate feed without affecting rabbit's health and meat yield. The combined supplementation with oat hay and carrot proved to be the best option in reducing the amount of concentrate feed ingested by rabbits (less than 1107 g/animal), but at current market values, supplementation exclusively with oat hay was the less expensive feeding strategy (less 14% than fed exclusively with concentrate feeding).

Our objective was to evaluate the productive parameters of ewes and their lambs in relation to ewe age and to develop models for predicting lamb weight at birth and weaning in a tropical warm-climate pasture. Individual data were collected from 273 ewes and 273 lambs, between 2013 and 2021. During this period all animals were kept on pastures of Brachiaria brizantha cv. Marandu All lambs in the experiments were supplemented in creep-feeding. A descriptive statistical analysis was performed using the PROC SUMMARY procedure in SAS (SAS University Edition, SAS Institute Inc. Cary, CA, USA). Pearson correlation coefficients between variables were estimated using the PROC CORR procedure in SAS (SAS University Edition, SAS Institute Inc. Cary, CA, USA). Model adjustments and variable selection were performed using PROC REG in SAS (SAS University Edition, SAS Institute Inc. Cary, CA, USA). The STEPWISE option and Mallow's C(p) were used to select the variables included in the equations. Outliers were identified by evaluating the studentized residuals based on the predicted values from the equations. Residual analysis was predicted by regression minus observed values and those that fell outside the range of -2.5 to 2.5 were removed. Several statistics were used to assess the predictability of the equations, including the coefficients of determination (r2) and mean standard error (RMSE). The average ewe age at lambing was 3.4 ± 1.7 years, with an average weight of 56.9 ± 8,9 kg and average body condition score (BCS) of 2,4 ± 0.8 points. The average ewe age at weaning was 51.1 ± 7.9, with average BCS of 1.8 ± 0.8 points. The average lamb at birthing was 3.9 ± 0.9 kg. The average lamb at weaning was 21.0 ± 4.9, with daily gain of 0.2 ± 0.1 kg/day and total gain of 17.1 ± 4.7 kg birth to weaning. The lamb produced by ewe at lambing was 5.3 ± 1.7 kg/ewe. The lamb weaned by ewe at weaning was 28.7 ± 10.8 kg/ewe. The ratios of lamb produced per ewe at birth and at weaning were 0.1 ± 0.03 and 0.6 ± 0.2, respectively. The lamb's birth weight showed a positive linear relationship with the age of the ewe, increasing by 115 g per year of age. The regression equations adjusted for ewe age had maximum points ranging from 4.2 to 5.2, occurring at average age of 4,7 years. The other characteristics showed a quadratic tendency. The results suggest the culling of ewes at five years of age to generate lambs with ideal weight at birth and at weaning raised in warm tropical pastures.

Many producers reseed old pasture (OP) with the objective of improving lamb performance. Old pasture was reseeded with perennial ryegrass plus white clover (RGC), RGC plus chicory (CG), RGC plus tyfon (TG), chicory (C), or tyfon (T) to generate five treatments. In addition, a contiguous block of OP was included in the study for comparative purposes. Lambs (n = 286) were assigned to one of the five treatments plus the section of OP from just after weaning until slaughter. Grazing commenced 45 days after the desiccation of OP for reseeding. All lambs were managed by rotational grazing and drafted for slaughter at a specified target BW. No concentrate supplement was offered during the study. For the RGC, CG, TG, C and T treatments and the OP section, the average herbage NDF concentrations were 524, 473, 402, 352, 256 and 565 (SE 15.4) g/kg DM; total grazing days were 5 213, 4 005, 4 466, 2 262, 3 496 and 3 677 (SE 629.3); BW gain to slaughter was 211, 175, 205, 211, 199 and 203 (SE 9.5) g/day; days to slaughter were 91, 100, 84, 86, 78 and 88 (SE 4.8). Compared to RGC, the C, T, CG and TG treatments had lower herbage NDF concentrations (P < 0.05), and there was no difference (P > 0.05) for BW gain or days to slaughter. Chicory yielded significantly fewer (P < 0.05) grazing days, but tended to give a higher (P < 0.06) carcass weight than RGC. It is concluded that neither reseeding OP with RGC, including either C or T with RGC as a multispecies sward, nor growing pure stands of C or T increased (P < 0.05) lamb BW gain from weaning to slaughter or reduced days to slaughter.

Gaining insights into the utilization of farm-level data for decision-making within the beef industry is vital for improving production and profitability. In this study, we present a statistical model to predict the carcass weight (CW) of grass-fed beef cattle at different stages before slaughter using historical cattle data. Models were developed using two approaches: boosted regression trees and multiple linear regression. A sample of 2995 grass-fed beef cattle from 3 major properties in Northern Australia was used in the modeling. Four timespans prior to the slaughter, i.e., 1 month, 3 months, 9-10 months, and at weaning, were considered in the predictive modelling. Seven predictors, i.e., weaning weight, weight gain since weaning to each stage before slaughter, time since weaning to each stage before slaughter, breed, sex, weaning season (wet and dry), and property, were used as the potential predictors of the CW. To assess the predictive performance in each scenario, a test set which was not used to train the models was utilized. The results showed that the CW of the cattle was strongly associated with the animal's body weight at each stage before slaughter. The results showed that the CW can be predicted with a mean absolute percentage error (MAPE) of 4% (~12-16 kg) at three months before slaughter. The predictive error increased gradually when moving away from the slaughter date, e.g., the prediction error at weaning was ~8% (~20-25 kg). The overall predictive performances of the two statistical approaches was approximately similar, and neither of the models substantially outperformed each other. Predicting the CW in advance of slaughter may allow farmers to adequately prepare for forthcoming needs at the farm level, such as changing husbandry practices, control inventory, and estimate price return, thus allowing them to maximize the profitability of the industry.

Introduction: Genome-wide association studies (GWAS) have identified genetic markers for cattle production and reproduction traits. Several publications have reported Single Nucleotide Polymorphisms (SNPs) for carcass-related traits in cattle, but these studies were rarely conducted in pasture-finished beef cattle. Hawai'i, however, has a diverse climate, and 100% of its beef cattle are pasture-fed. Methods: Blood samples were collected from 400 cattle raised in Hawai'i islands at the commercial harvest facility. Genomic DNA was isolated, and 352 high-quality samples were genotyped using the Neogen GGP Bovine 100 K BeadChip. SNPs that did not meet the quality control standards were removed using PLINK 1.9, and 85 k high-quality SNPs from 351 cattle were used for association mapping with carcass weight using GAPIT (Version 3.0) in R 4.2. Four models were used for the GWAS analysis: General Linear Model (GLM), the Mixed Linear Model (MLM), the Fixed and Random Model Circulating Probability Unification (FarmCPU), the Bayesian-Information and Linkage-Disequilibrium Iteratively Nested Keyway (BLINK). Results and Discussion: Our results indicated that the two multi-locus models, FarmCPU and BLINK, outperformed single-locus models, GLM and MLM, in beef herds in this study. Specifically, five significant SNPs were identified using FarmCPU, while BLINK and GLM each identified the other three. Also, three of these eleven SNPs ("BTA-40510-no-rs", "BovineHD1400006853", and "BovineHD2100020346") were shared by multiple models. The significant SNPs were mapped to genes such as EIF5, RGS20, TCEA1, LYPLA1, and MRPL15, which were previously reported to be associated with carcass-related traits, growth, and feed intake in several tropical cattle breeds. This confirms that the genes identified in this study could be candidate genes for carcass weight in pasture-fed beef cattle and can be selected for further breeding programs to improve the carcass yield and productivity of pasture-finished beef cattle in Hawai'i and beyond.

The aim of this study was to evaluate quality and sensory variation in wild boar meat in comparison to pork. Meat quality in wild boar is expected to vary more compared to pork due to different feeding environment, age and gender. In order to be able to promote wild boar meat as a sustainable high-quality product, there is a need to evaluate the variation in meat quality attributes, including technological, compositional and sensory/texture aspects. We evaluated carcass characteristics, pH, colour, lipid profile and sensory aspects of wild boar meat of different age and gender and compared them with pork. Wild boars had lower carcass weight (p = <0.0001) and higher ultimate pH (p = 0.0063) compared to domestic pigs. Intramuscular fat content had a tendency to be higher in wild boar meat (p = 0.1010), as well as the proportion of nutritional valuable n-3 FA (p = 0.0029). The colour of pork was more pink (p = 0.0276) and pale (p = <0.0001) compared to meat from wild boar. Meat from wild boar gilts received the highest sensory scores. Based on these findings, we suggest that meat from younger animals could be sold in different cuts directly while meat from older animals might be more suitable for the production of sausage.

The objective of this study was to understand and predict the intake and performance of Nellore cattle finished in the feedlot. Individual data from 144 non-castrated male Nellore steers finished in the feedlot between the years 2016 and 2020 were used. Descriptive statistical analyses and Pearson's correlation were performed. The outliers were tested by evaluating the studentized residuals in relation to the values predicted by the equations. Residues that were outside the range of - 2.5 to 2.5 were removed. The goodness of fit of the developed equations was evaluated by the coefficients of determination (r2) and root mean square error (RMSE). The mean dry matter intake (DMI) was 10.2 kg/day, neutral detergent fiber intake (NDFI) was 3.4 kg/day, corresponding to 33.3% of DMI, crude protein intake (CPI) was 1.6 kg/day, and total digestible nutrient intake (TDNI) was 7.1 kg/day. The CPI to ADG ratio was 1.3 kg CPI/kg ADG and the TDNI to CPI ratio was 4.5 kg TDNI/kg CPI. The averages of productive performance were 1.3 kg/day for average daily gain (ADG), 152.6 kg for total weight gain (TWG), and 497.8 kg for final body weight (FBW) in average days in the confinement of 115.7 days. The intake measures correlated significantly with the performance measures, except for carcass yield and days in the feedlot. TWG had a high positive correlation with ADG (r = 0.84), while FBW had a positive correlation (r = 0.86) with hot carcass weight (HCW). Measures of intake, performance, and days in the feedlot can be used as predictors of DMI, FBW, HCW, TWG, and ADG. The prediction equations had satisfactory precision and accuracy for non-castrated Nellore cattle finished in feedlot systems under tropical conditions.

This study aimed to identify the growth performance and blood factors associated with carcass weight in Japanese Black calves based on 675 performance tests and field carcass records. We measured the body weight, withers height, and chest girth at the start of fattening age (approximately 8-10 months) and analyzed eight blood factors, including vitamins and metabolites. Single- and two-trait animal models were used to estimate the heritability and genetic correlations. The heritability estimates for growth performance were moderate to high (ranging from 0.48 to 0.74), and those for blood metabolites were low to moderate (ranging from 0.19 to 0.51). Estimates for genetic correlations of carcass or body weight with body weight, withers height, and chest girth were high (ranging from 0.42 to 0.80). The body weight and withers height at 8 months of age are possibly closely related to the final carcass weight. The blood metabolites associated with body weight were vitamin E in steers (castrated males) and ß-carotene in heifers. Our findings indicate that body measurements and blood metabolites measured during the growing period could be used to determine the nutritional and physiological status of cattle as well as predict carcass weight.

Cull dairy cows account for around 27 percent of total head EU beef and veal production. For the Netherlands specific, even 42 percent (European Commission, 2022). As they are primarily kept to produce milk, red meat production is an additional source of revenue for dairy farmers. Insights in postmortem health observations that are not always visible on the living animal such as heart or liver issues, bruises, adhesions and injuries on the locomotor system, may contain valuable information for farmers to increase revenue and reduce losses in red meat production from cull dairy cows. Our goal was to obtain insights in the association of postmortem health observations with carcass weight and trimming losses. Data of 592,268 slaughter cows were available for analysis and models were built to explain carcass and trimming loss by the postmortem health observations. Carcass weight is lower for younger cows (-3.2 to -84.9 kg), cows with multiple health observations (-7.4 to -34.3 kg) and specific observations for the locomotor system (-16.7 to -22.7 kg), back (-17.9 kg), hindquarter (-21.6 kg) and chest and ribs (-15.5 to -27.6 kg). Total number of health observations (+2.0 to +6.5 kg), observations on the locomotor system (+3.3 to +5.4 kg) and on the chest and ribs (+2.2 to +9.8 kg) were the main predictors for trimming loss. Carcass weight is more affected by systemic health issues and diseases prior to slaughter leading to a negative energy balance and consequently reduced carcass weight. Trimming loss is more a consequence of the focus on meat quality and food safety in the slaughter process. Better understanding of the effect of on-farm management, on health, carcass weight and trimming loss will provide new insights for farmers and veterinarians but will also give them more action perspective to improve dairy farm preventive management and reduce losses at slaughter.

The carcasses produced in Greece from Greek Buffalo, indigenous and local crossbred cattle were evaluated using the European Union (EU) bovine classification system and compared with carcasses of continental breeds reared in the country. The main carcass production (67.8%) came from animals born in Greece with a relatively low percentage from local breeds (17%). The lightest carcass weight was found in Greek Brachyceros [145.2 ± 2.3 kg (males); 146.0 ± 3.1 kg (females)], while among locals the Greek Blonde rendered the heaviest carcass weights [303.2 ± 2.9 kg (males); 265.3 ± 3.5 kg (females)]. Muscle conformation scoring was the lowest in Buffalo [4.1 ± 0.1 (males); 4.9 ± 0.0 (females)] and the highest for males of Charolais and Blonde d'Aquitaine (11.2 ± 0.0 and 10.7 ± 0.0, respectively). The meat-purposed breeds produced carcasses of higher quality than dual-purposed, local breeds and dairy Holstein-Friesian. With the discriminant analysis, the correct classification of carcasses varied from 53.4% (males) to 47.8% (females) with high assignment percentage of Greek Buffalo males (81.6%), Simmental males (80.7%) and Holstein-Friesian females (98.5%).

An increase in the number of vertebrae can significantly affect the meat production performance of livestock, thus increasing carcass weight, which is of great importance for livestock production. The homeobox gene C8 (HOXC8) has been identified as an essential candidate gene for regulating vertebral development. However, it has not been researched on the Dezhou donkey. This study aimed to verify the Dezhou donkey HOXC8 gene's polymorphisms and assess their effects on multiple vertebral numbers and carcass weight. In this study, the entire HOXC8 gene of the Dezhou donkey was sequenced, SNPs at the whole gene level were identified, and typing was accomplished utilizing a targeted sequencing genotype detection technique (GBTS). Then, a general linear model was used to perform an association study of HOXC8 gene polymorphism loci, multiple vertebral numbers, and carcass weight for screening candidate markers that can be used for molecular breeding of Dezhou donkeys. These findings revealed that HOXC8 included 12 SNPs, all unique mutant loci. The HOXC8 g.15179224C>T was significantly negatively associated with carcass weight (CW) and lumbar vertebrae length (LL) (p < 0.05). The g.15179674G>A locus was shown to be significantly positively associated with the number of lumbar vertebrae (LN) (p < 0.05). The phylogenetic tree constructed for the Dezhou donkey HOXC8 gene and seven other species revealed that the HOXC8 gene was highly conserved during animal evolution but differed markedly among distantly related animals. The results suggest that HOXC8 is a vital gene affecting multiple vertebral numbers and carcass weight in Dezhou donkeys, and the two loci g.15179224C>T and g.15179674G>A may be potential genetic markers for screening and breeding of new strains of high-quality and high-yielding Dezhou donkeys.

This research was conducted to evaluate the replacement potential of Acacia nilotica dried leaf meal for Noug Seed Cake (NSC) to supplement low quality grass hay in the diet of crossbred sheep (25% Dorper). In doing so, four treatments were set up in such a way that 0%, 33%, 67%, and 100% NSC is replaced with dried leaf of Acacia nilotica from a conventional supplement while the treatments were kept isonitrogenous. The experiment was set up in a Randomized Complete Block Design, with initials weight used as the blocking factor. Twenty animals were allocated to the four treatments. The experiment consisted of hundred days of feeding trial followed by evaluation of carcass components at the end. In addition, the experimental feed ingredient was studied in vitro for gas production, methane (CH4) production, fractional rate of degradation (Kd), and in vitro dry matter digestibility (IVDMD). In view of chemical composition, grass hay contained lower crude protein (CP = 3.2% DM) and high cell wall contents that makes it lower quality feed. On the other hand, Acacia nilotica leaf meal was moderate in quality (CP = 14.3% DM) that can support moderate level of ruminant production. In an in vitro study, Acacia nilotica was found to have lower (P < 0.01) levels of CH4, total gas, kd, and IVDMD compared to the other feed ingredients. This indicates that tannin have an effect on Acacia nilotica feed. Partial and complete replacement of NSC with Acacia nilotica leaf meal significantly increased total dry matter intake (TDMI) (P < 0.001). Average daily gain (ADG) and dressing percentage was also higher for leaf meal supplemented groups. Hot carcass weight was in the range of 14.8-17.8 kg, which is higher than the national average carcass weight for Ethiopian sheep, and it was also found to be higher when NSC was partially (33%) as well as completely replaced by the leaf meal. In general, NSC can be replaced either partially or completely with Acacia nilotica leaf meal in the diet of 25% Dorper crosses while weight gain as well as carcass yield is promoted. The maximum inclusion level of Acacia nilotica was 61.3% or 319.2 g per day for 25% Dorper cross sheep fed natural pasture hay as a basal diet.

In recent years, the scientific community, institutions, and public opinion have shown a growing awareness towards the problem of antimicrobial resistance. Guidelines from the European Union aim at significantly reducing (even avoiding) the antimicrobial use for prophylactic and metaphylactic purposes in veterinary medicine and this represents an important issue for several intensive farming systems, such as the veal industry. This retrospective observational cohort study analyzed net carcass weight data at the slaughter of 618 veal calves belonging to 6 batches of animals fattened in an Italian commercial farm according to the number of individual antimicrobial treatments administered during the fattening cycle. Sixty-eight percent (419 animals) of the overall sample of calves received at least one individual antimicrobial treatment due to a disease event during the fattening, and 280 of these (45 % of the overall sample) had more than one treatment. On average, the net carcass weight of calves individually treated more than once was about 10 kg lower than that of untreated calves or treated only once. Moreover, the carcasses of calves that received more than one treatment were 16 times more at risk of being severely penalized in payment at the slaughterhouse due to a net weight below 110 kg than those of untreated calves. Serum analysis data of a subsample of 105 calves belonging to 3 out of the 6 batches collected within 5 days after their arrival to the veal farm identified 3 persistently infected animals by bovine viral diarrhea (BVD) virus and a prevalence of calves with serum immunoglobulin concentration below 7.5 g/L of 37 %. The presence of specific antibodies against infectious bovine rhinotracheitis (IBR) and bovine respiratory syncytial virus (BRSV) and a serum immunoglobulin level above 7.5 g/L at the onset of the fattening were the most important factors associated with a decreased risk of multiple individual antimicrobial treatments (and thus, disease development) or with a delay in disease onset during the fattening, thus leading to better performances at the slaughter. The outcomes of this study suggested that a relationship could exist between calf serostatus upon arrival to the veal farm and the possibility to avoid multiple individual antimicrobial treatments during fattening. Further research is needed to deeply study this association, as such knowledge would allow for planning effective preventing strategies to reduce the antimicrobial use in veal calves.

We attempted to estimate the additive genetic variance explained by each autosome, using genotype data of 33,657 single nucleotide polymorphism (SNP) markers in 2271 Japanese Black fattened steers. Traits were cold carcass weight, ribeye area, rib thickness, subcutaneous fat thickness, estimated yield percentage, and marbling score. Two mixed linear models were used: One is that (model 1) incorporating a genomic relationship matrix (G matrix) constructed by using all available SNPs, and another (model 2), incorporating two G matrices constructed by using the SNPs on one autosome and using those on the remaining autosomes. Genomic heritabilities estimated using model 1 were moderate to high. The sums of the proportions of the additive genetic variance explained by each autosome to the total genetic variance estimated by using model 2 were >90%. For carcass weight, the proportions explained by Bos taurus autosomes 6, 8, and 14 were higher than those explained by the remaining autosomes. In some cases, the estimated proportion was close to 0. The results obtained from model 2 could provide a novel insight into the genetic architecture, such as heritability per chromosome, of carcass traits in Japanese Black cattle, although further careful investigation would be required.

Twenty-four weaned male Barbari kids (age 144.67 days; weight 11.99 ± 0.49 kg) were divided equally into three groups (T1, T2, and T3) in order to investigate the effect of supplementation of phytogenic feed additives (herbal mixture) in the complete pelleted feed on growth performance, in vitro rumen fermentation and carcass quality in kids reared under stall-fed condition. Treatment groups were as follows: T1, concentrate mixture (40%) plus arhar (Cajanus cajan) straw (60%) in total mixed ration (TMR) form fed ad libitum; T2, T1 diet in complete feed pellets form fed ad libitum; and T3, T1 diet in complete feed pellets form supplemented with herbal mixture (Tulsi/Haldi/Amla/Arni; ratio 1:1:1:1 on DM basis) at 0.5% in complete feed fed ad libitum. The experimental kids in each group were allowed for feeding for 8 months by following the respective feeding schedule. Rumen fermentation pattern under in vitro system was also studied using the same three diets as substrates. After 240 days of feeding, all goats were slaughtered following standard protocol. Total body weight gain (kg) and average daily gain (ADG, g/day/kid) were 18.57, 22.26, and 23.06 kg, and 79.91, 101.49, and 100.18 g in T1, T2, and T3 treatments, respectively. Pelleting of TMR (T2) and supplementation of herbal mixture in pelleted feed (T3) increased (P < 0.001) average daily weight gain in Barbari kids compared to T1 (TMR). Average dry matter intake (DMI, g/day/kid) during growth trial was greater (P < 0.05) in T3 (1079.17) than T1 (849.76) and T2 (968.76). Feed conversion efficiency was 8.92, 9.48, and 8.68% in T1, T2, and T3, respectively. The difference was statistically non-significant among the treatments. Supplementation of herbal mixture in the complete pelleted substrate had adjunct effect on improvement of TCA-precipitable-N and total VFAs in the incubation medium under in vitro system. Carcass weight (kg) tended to increase in finisher kids under T2 (16.58) and T3 (16.70) than T1 (14.61), but the variation was non-significant. The dressing percentage was similar among three treatments. Similarly, the muscle protein, fat, and cholesterol contents remained unaffected by different dietary treatments. Therefore, it may be concluded that densification of feeds in the form of complete pelleted feed and further supplementation with potential phytogenic feed additives increased total DMI and ADG and tended to enhance meat production potential in finisher Barbari kids without changing the meat chemical composition.
