RESUMO

High hydrostatic pressure (HHP) treatment is an effective technique for processing heat-sensitive fruits and causes changes in volatile compounds and their precursors while maintaining quality. We investigated the changes and correlations of volatile compounds, related enzyme activities and precursor amino acids, and fatty acids in Hami melon juice under 350-500 MPa pressure. The application of HHP treatment resulted in a considerable reduction of esters and a substantial increase in aldehydes and alcohols in C6 and C9. Activities of lipoxygenase (LOX), alcohol acyltransferase (AAT), and phospholipase A2 (PLA2) were lower than those of the untreated group, alcohol dehydrogenase (ADH) activity was reversed. When compared to fresh cantaloupe juice, there was an increase in both the types and contents of amino acids with lower total fatty acid contents than the control group. Positive correlations were observed among six ester-related substances and eight alcohol-related substances. Additionally, the correlations between volatile compounds and fatty acids were more substantial compared to those between volatile compounds and amino acids. HHP treatment increases Hami melon flavor precursors and is an effective way to maintain the aroma volatile compounds and flavor of Hami melon juice.

To evaluate the potential health-promoting benefits of Berberis nummularia and B. atrocarpa fruits, the biochemical properties (nutrition component, mineral substance, organic acids), total phenolic and flavonoid content and antioxidant (DPPH, FRAP, ABTS and ORAC) capacity of ethanol extracts of B. nummularia and B. atrocarpa fruits wild-grown in Xinjiang were analyzed. The results indicated that there were no meaningful differences (p > 0.05) between the ash (1 ± 0.1 and 1 ± 0.0 g/100 g), fiber (16 ± 1.0 and 18 ± 1.4) and carbohydrate (57 ± 1.8 and 56 ± 1.8 g/100 g) content, respectively, in the dry fruits of B. nummularia and B. atrocarpa. The total fat (7 ± 0.4 and 5 ± 0.1 mg/100 g), soluble sugar (23 ± 0.6 and 12 ± 1.4 g/100 g), titratable acidity (18 ± 2.5% and 14 ± 1.3%) content, and energy value (330.86 and 314.41 kcal/100 g) of B. nummularia was significantly higher than that of B. atrocarpa fruits. Both species contain malic acid, acetic acid, tartaric acid, citric acid and fumaric acid, in which, malic acid is the dominant organic acid. The organic acid and mineral components of B. nummularia fruits were significantly higher than that of B. atrocarpa (p < 0.05). The total phenolic and flavonoid content of B. nummularia were 2 ± 0.0 mg GA/g DW and 2 ± 0.0 mg RE/g DW, respectively, which were significantly lower than the total phenolic and flavonoid content of B. atrocarpa (12 ± 0.1 mg GA/g DW and 9 ± 0.0 mg RE/g DW). The antioxidant capacity of B. nummularia (4 ± 0.1 mg Ascorbic acid/g DW for DPPH, 32 ± 0.1 mg Trolox/g DW for FRAP, 80 ± 3.0 mg Trolox/g DW for ABTS and 60 ± 3.6 mg Trolox/g for ORAC was significantly lower than that of B. atrocarpa (12 ± 0.0 mg Ascorbic acid/g DW for DPPH, 645 ± 1.1 mg Trolox/g DW for FRAP, 304 ± 3.0 mg Trolox/g DW for ABTS and 155 ± 2.8 mg Trolox/g for ORAC). B. atrocarpa fruits showed significantly higher antioxidant capacity than that of B. nummularia. The fruits of the two species can be used in food coloring and nutritional supplements, and consumption of the fruits can aid in weight control and reduce blood glucose or cholesterol.

Tea (Camellia sinensis, Theaceae) is one of the most widely consumed beverages in the world. The three major types of tea, green tea, oolong tea, and black tea, differ in terms of the manufacture and chemical composition. Catechins, theaflavins, and thearubigins have been identified as the major components in tea. Other minor oligomers have also been found in tea. Different kinds of ring fission and formation elucidate the major transformed pathways of tea catechins to their dimers and polymers. The present review summarizes the data concerning the enzymatic oxidation of catechins, their dimers, and thearubigins in tea.

In the present work, the extraction process of total flavonoids (TFs) from X. sorbifolia flowers by ultrasound-assisted extraction was optimized under the response surface methodology (RSM) on the basis of single-factor experiments. The optimal extraction conditions were as follows: ethanol concentration of 80%, solid-liquid ratio of 1:37 (g/mL), temperature of 84 °C, and extraction time of 1 h. Under the optimized conditions, the extraction yield of the TFs was 3.956 ± 0.04%. The radical scavenging capacities of TFs against 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) were much greater than that of rutin. The results of antibacterial experiments indicated that the TFs displayed strong inhibitory activities on E. coli, S. aureus and Bacillus subtilis. Therefore, X. sorbifolia flowers can be used as a novel source of natural flavonoids, and the TFs have potential applications as natural antioxidants or antibacterial agents in the food and pharmaceutical industries.

Seasonal periodicity of seed germination and its relationship to seasonal changes in temperature and soil moisture have been well studied in seeds of species with physiological dormancy. However, relatively little information is available on the role of these environmental factors in controlling germination of seeds with physical dormancy (PY). Our primary aim was to determine if seeds of the cold desert sand dune semi-shrub Eremosparton songoricum exhibits seasonal periodicity of seed germination and the relationship between seed dormancy break and soil temperature and moisture. In the laboratory, seeds incubated on dry, wet, wet-dry and dry-wet sand were exposed to a 1-year sequence of temperature regimes simulating those in the field. In the field, seeds were buried at different depths on a sand dune, and germination of periodically exhumed seeds was tested at five temperature regimes during a 2-year period. In the one-year sequence of simulated natural temperature regimes, breaking of PY was more effective under constantly wet than under constantly dry conditions, and germination percentage was significantly higher under dry-wet than under wet-dry conditions. Seeds buried in the field exhibited a distinct peak of germination in spring and little or no germination in other seasons. The final (two-year) monthly cumulative germination percentage differed among burial depths and temperature, and it was highest (47%) in seeds buried at 3 cm and tested at 25/10 °C. A seed cohort of E. songoricum likely exhibits a long-term annual periodicity of spring germination in the field, and dormancy break appears to be driven by low (winter) temperatures and relatively high sand moisture content. To our knowledge this is the first study to document seasonal periodicity in seed germination in a cold desert species with PY and to identify the mechanism (at the whole-seed level) of its occurrence.

In this study, the soil moisture content was measured, and the quantitative characteristics of this sedge species were compared. The phenotypic plasticity of each parameter and the linear regression relationships were analyzed. The results showed that the soil moisture content was significantly affected by location, soil depth, and sampling date. The aboveground biomass, underground biomass, biomass density, and population density at the peak were significantly higher than elsewhere on the dune. However, the morphological plasticity index of the quantitative characteristics was higher at the base and middle of the dune. When the soil moisture content decreased, the underground biomass and ramet biomass density increased. The aboveground and underground biomasses were strongly negatively correlated, but the ramet height and aboveground biomass were strongly positively correlated. These results indicated that the soil water content significantly affected the clonal growth of C. physodes. The responsiveness of C. physodes may be adaptive when the soil resource supply is low. The strong morphological plasticity of the species appears to be ecologically important for the maintenance and dominance of this species in the dune habitat.
