RESUMO
We studied antimicrobial properties of lactic acid bacteria from sour milk products Narine, Karine, and Matsun. The whey of sour milk products included two major fractions of sugars and L-lactic acid and its sodium and calcium salts. Antimicrobial activity of Narine, Karine, and Matsun was related to the presence of L-lactic acid and its sodium and calcium salts.

L. acidophilus strain 317/402 "Nariné" shows high antimicrobial activity with respect to pathogenic microorganisms. The degree of the activity of lactobacilli depends on cultivation conditions and the composition of the culture medium and its acidity, age of the culture, conditions of technological process, etc. The antimicrobial inhibition concentration of the product "Nariné", ensuring in vitro activity against Yersinia enterocolitica, Y. pseudotuberculosis, Vibrio NAG, etc., has been established.

A cultured milk mixture "Narine" (strain 317/402 lactobacilli and relevant metabolic products) given to 58 patients with various functional disorders and inflammation of the colon associated with dysbacteriosis resulted in a pronounced positive effect as related to intestinal microflora in 96.6% of the patients. In 75.8% of cases dysbacteriosis discontinued within 10 days.

The mutagenic effect of dialkylaminoet hyl esters of 5,6-dihydro-7H-benz(c)carbazole-carboxylic acids on biochemical mutants (Escherichia coli P-678, Actinomyces rimosus 222) is found. Hydrochloride of diethylaminoethyl ester of 5,6-dihydro-7H-benz(c)carbazole-9-carboxylic acid, which induced reversible and direct mutations, proved to be the most active compound, its mutagenic activity exceeding considerably the activity of ethylene imine.

The mutagenic effect of 21 new hydroxylamine derivatives was studied on biochemical mutants of Escherichia coli P-678 and Actinomyces rimosus 222. The Iver--Szybalsky method was used for the preliminary selection of mutagens. Dose-effect curves were plotted for the most efficient mutagens. Among the compounds studied 4 hydroxylamine derivatives were observed to have a mutagenic effect. The most efficient among them proved to be 0-(4-metoxybenzyl)-hydroxylamine and 0-(gamma-chlorocrotyl) hydroxylamine that induced reversions in the threonine locus of E. coli P-678 and in the lysine locus of Act. rimosus 222, being more efficient than hydroxylamine, the generally known mutagen. The dependence of the mutagenic activity of the compounds studied on their chemical structure is investigated.
