During the ripening process of grapes, the grapevine leaves are the most active green organs that are important for photosynthesis, which is closely linked to the development and metabolism of the plant. The detection of plant pigments and phenolic compounds in grapevine leaves can be a good indicator of the ageing process, vine vigor and the plant's ability to respond to fungal attack. In a one-year study, the development of leaf chlorophylls, carotenoids and phenolic compounds during the ripening of six indigenous Croatian grape cultivars and the international cultivars Merlot and Chardonnay was investigated. The chlorophyll a/b ratio and total chlorophyll and total carotenoid concentrations were also investigated. PCA was used to highlight relevant information from the data with the aim of distinguishing individual compounds based on the cultivar and phenological stage. The leaf total hydroxycinnamic acid and flavan-3-ol concentrations decreased slowly during grape development, with the highest concentration immediately after flowering and the lowest during grape ripening. The concentrations of ß-carotene, lutein and xanthophylls tended to decrease during bunch closure or veraison, while the concentration of chlorophylls a and b peaked during veraison and then decreased during grape ripening. This research will provide an opportunity to select cultivars with the physiological adaptation to synthesize secondary metabolites that are important for managing stress conditions.

This study presents a spatial assessment of eight potentially toxic elements (PTE: Cd, Cr, Cu, Fe, Pb, Ni, Mn, and Zn) in white button (Agaricus bisporus J.E. Lange) mushroom samples collected from the local vegetable markets of Uttarakhand State, India. Fresh A. bisporus samples were collected from thirteen districts and fifteen sampling locations (M1-M15) and analyzed for the concentration of these PTE using atomic absorption spectroscopy (AAS). The results revealed that A. bisporus contained all eight selected PTE in all sampling locations. Based on the inverse distance weighted (IDW) interpolation, principal component (PC), and hierarchical cluster (HC) analyses, the areas with a plane geographical distribution showed the highest PTE concentrations in the A. bisporus samples as compared to those in hilly areas. Overall, the decreasing order of PTE concentration in A. bisporus was recognized as Fe > Zn > Mn > Cr > Cu > Ni > Cd > Pb. The Kruskal−Wallis ANOVA tests displayed a highly significant (p < 0.05) difference among the sampling locations. However, the concentration of PTE was below permissible limits, indicating no potential hazard in consuming the A. bisporus. Similarly, the health risk assessment studies using the target hazard quotient (THQ) also showed no significant health risk associated with the consumption of A. bisporus being sold in the local mushroom markets of Uttarakhand, India. This study is the first report on state-level monitoring of PTE in A. bisporus mushrooms, which provides crucial information regarding the monitoring and occurrence of potentially toxic metallic elements.

Research background: Coastal region of Croatia is rich in autochthonous grape varieties. Many of them have been almost abandoned, such as the autochthonous varieties of Kastav (Croatia), used for the production of the Kastavska Belica wine. Therefore, the rationale of the presented study is to characterize autochthonous grape varieties Verdic, Mejsko belo, Jarbola, Divjaka and Brajkovac. In addition, we performed a molecular characterization of the corresponding Belica wines. Experimental approach: Firstly, the genetic origin and ampelographic and economic characteristics of five autochthonous grape varieties were determined. Standard physicochemical profiles and phenolic components of 12 wines from different producers were determined by liquid chromatography coupled to triple quadrupole mass spectrometer (LC-QQQ-MS). Fourier-transform infrared spectroscopy (FTIR) was used for determination of standard physicochemical parameters. Results and conclusions: Ampelographic analysis, which includes the data on producing characteristics and cluster and berry composition of the varieties, revealed significant differences between the analysed grape varieties. Results of the physicochemical analysis of the Belica wine showed that all wines met the requirements needed for the production of quality and top quality wines labelled with protected designation of origin (PDO) in Croatian coastal region. The LC-QQQ-MS analysis confirmed the presence of different phenolic components in the Belica wines, where the most prominent phenols were flavonoids from the flavan-3-ol group. Overall, these results showed that autochthonous grapes from the Kastav region can be used for production of wines with added market value due to a growing demand for autochthonous products on the global market. Novelty and scientific contribution: The presented results give scientific insight and a basis for further determination of the optimal cultivation technology aimed to take advantage of the best characteristics of each variety for production of a wine with desirable features.

Grapes are rich in primary and secondary metabolites. Among the secondary metabolites, polyphenolic compounds are the most abundant in grape berries. Besides their important impacts on grape and wine quality, this class of compounds has beneficial effects on human health. Due to their antioxidant activity, polyphenols and phenolic acids can act as anti-inflammatory and anticancerogenic agents, and can modulate the immune system. In grape berries, polyphenols and phenolic acids can be located in the pericarp and seeds, but distribution differs considerably among these tissues. Although some classes of polyphenols and phenolic acids are under strict genetic control, the final content is highly influenced by environmental factors, such as climate, soil, vineyard, and management. This review aims to present the main classes of polyphenolic compounds and phenolic acids in different berry tissues and grape varieties and special emphasis on their beneficial effect on human health.
