RESUMO

Consumers are increasingly showing in maintaining a healthy dietary regimen, while food manufacturers are striving to develop products that possess an extended shelf-life to meet the demands of the market. Numerous studies have been conducted to identify natural sources that contribute to the preservation of perishable food derived from animals and plants, thereby prolonging its shelf life. Hence, the present study focuses on the identification of both natural sources of antioxidants and their applications in the development of novel food products, as well as their potential for enhancing product shelf-life. The origins of antioxidants in nature encompass a diverse range of products, including propolis, beebread, and extracts derived through various physical-chemical processes. Currently, there is a growing body of research being conducted to evaluate the effectiveness of natural antioxidants in the processing and preservation of various food products, including meat and meat products, milk and dairy products, bakery products, and bee products. The prioritization of discovering novel sources of natural antioxidants is a crucial concern for the meat, milk, and other food industries. Additionally, the development of effective methods for applying these natural antioxidants is a significant objective in the food industry.

The perceived level of risk associated with a food product can influence purchase and consumption decisions. Thus, current trends in food safety address an issue of general interest-the identification of healthy and economical alternatives to synthetic antioxidants that may have harmful effects on human health. Still, the processors' target is to increase the shelf life of food products using preserving substances. Natural antioxidants can be extracted and used in the food industry from different plants, such as blueberry, broccoli, chokeberry, cinnamon, ginger, olives, oregano, etc. The identification of the main natural antioxidant types that have been used in the food industry is very important in order to provide a comprehensive analysis of the researched topic. In this regard, the aim of this paper was to illustrate the positive aspects of using natural antioxidants with preservative roles in meat products, while, at the same time, highlighting the potential risks induced by these compounds. All of those aspects are correlated with the impact of sensorial attributes and the improvement of the nutritional value of meat products.

Despite an increase in awareness of their essential needs, many stallions continue to be kept in conditions limiting their social interactions and movement. To supplement the studies which highlight the effects of these practices on selected aspects of equine mental and physical wellbeing, we aimed to monitor a group of 32 adult intact stallions during their transition from tethered housing with limited outdoor access to free group housing through the lens of their overall welfare, perceived emotional status, and docility toward humans. Over three visits (before the management change, two weeks, and three months after, respectively), their welfare, qualitative behavior, and docility were assessed. Analysis of the data collected showed an improvement in the stallions' overall welfare and no decrease in their docility after their group-release, with a constant correlation between these two aspects. The evaluation of their emotional states was less relevant, lacking consistency between the assessments for most of the descriptors used, warranting further research in similar conditions. Although our study covered a relatively short period of time, our results provide encouraging support for stallion owners in deciding on a similar management change for the welfare of their animals.

RESUMO

The non-steroidal anti-inflammatory drugs (NSAIDs) are the most used drugs in knee OA (osteoarthritis) treatment. Despite their efficiency in pain and inflammation alleviation, NSAIDs accumulate in the environment as chemical pollutants and have numerous genetic, morphologic, and functional negative effects on plants and animals. Ultrasound (US) therapy can improve pain, inflammation, and function in knee OA, without impact on environment, and with supplementary metabolic beneficial effects on cartilage compared to NSAIDs. These features recommend US therapy as alternative for NSAIDs use in knee OA treatment.

This paper investigates the effect of different housing conditions on the welfare quality of breeding horses. Using a welfare protocol that included health and behavioral parameters, 330 stallions (kept in tie-stall housing) and 365 broodmares (kept in extensive, mostly free housing) were assessed. The horses were categorized into four welfare categories ("not classified", "acceptable", "enhanced" and "excellent"), according to an individual welfare score calculated for each horse. The prevalence of stallions with dyspnea, tendon and joint swellings, abnormal gait and abnormal hoof horn quality was significantly (p < 0.05) higher than that of the broodmares. No significant difference (p > 0.05) was found in the human-related behavioral response of the two categories of breeding horses. The median individual welfare scores were significantly higher (p < 0.05) in the broodmares than in the breeding stallions. The mares had "enhanced" and "excellent" welfare, while the stallions had "acceptable" and "enhanced" welfare. The results revealed differences in the horses' welfare quality for the different housing conditions. Accordingly, it can be concluded that positive changes in housing management, such as free housing with the use of boxes, could improve the welfare quality of breeding stallions.

BACKGROUND: Tie-stall housing of dairy cows is used extensively worldwide, despite of the welfare concerns regarding the restriction of voluntary movement and limitation of expression of the cows' natural behaviour. The aim of this study was to compare the welfare quality of dairy cows kept in two types of tie-stall housing systems: with regular outdoor exercise and without access to exercise. In addition, the study investigated the relationship between different welfare measures of dairy cows kept in tie-stalls. METHODS: 3,192 lactating cows were assessed using the Welfare Quality® assessment protocol for cattle in 80 commercial dairy farms, half of the farms providing outdoor access for the animals to exercise. The descriptive statistical indicators were determined for the assessed measures and for the welfare criteria and principle scores. The data obtained in the two housing types were compared and the correlation coefficients were calculated between the different welfare measures. RESULTS: The significant differences found between the two housing systems for the majority of the animal based measures indicate the positive effect of exercise on the welfare of tethered cows. Many of the animal welfare parameters correlated with each other. For the farms allowing the cows' turnout in a paddock, pasture or both, the mean scores for the welfare criteria and principles were higher than for the farms with permanent tethering of the cows, except the criteria absence of prolonged hunger and expression of social behaviours. The lowest scores were obtained for the criterion positive emotional state, in both housing systems. With regard to the overall classification, none of the farms were considered excellent. In the not classified category were only farms with all-year-round tethering of the animals and in the enhanced category only farms where the cows had outdoor access. CONCLUSIONS: The welfare quality of the investigated dairy cows was significantly better in the tie-stall farms which allow exercise for cows (paddocks, pasture or both) than in those which do not. In the light of our results we consider that dairy cattle welfare is not necessarily poor in tie-stall housing systems, its quality depending on the management practices.
