RESUMO

Organogels are semi-solid systems where the liquid phase is immobilized for three-dimensional network self-sustained formed by structuring agents capable to hold a larger quantity of liquid oil. The use of these structuring agents or crystallization modifiers, as specific triacylglycerols, emulsifiers and high molecular weight - high melting point lipids, have been recognized as the main alternative for obtaining low saturated fats for food formulation. The aim of this work was to evaluate the crystallization, microstructure and polymorphism properties of hybrid soybean oil (SO) organogels, formulated with 6% (w:w) of structuring agents through a centroid simplex system added singly, in binary or ternary association of candelilla wax (CW), sorbitan monostearate (SMS) and fully hydrogenated palm oil (FHPO). The thermal behavior, crystallization kinetics, physical stability by temperature cyclization, microstructure and polymorphism were evaluated. FHPO and CW increased the stability and ability to form crystalline networks in organogels, while SMS accelerated the crystallization process. The structuring agents increased the initial and final crystallization temperatures, even as the melting temperatures and the enthalpy values of organogels. Time-temperature cyclization (cyclization 1: 5 °C/48 h + 35 °C/24 h + 5 °C/24 h; cyclization 2: 35 °C/48 h + 5 °C/72 h) showed that all the systems resulted in firm and stable organogels, except when SMS or FHPO were used singly. CW promoted formation of denser crystalline networks with higher solids content, quick crystallization onset and higher melting points that indicates adequate thermal resistance; while FHPO increased the solid content although it was effective to obtain organogels only at the cooling temperature (5 °C). The binary interaction of FHPO + CW increased the thermal resistance of organogels; and the interactions among SMS + CW and SMS + CW + FHPO although it was effective to obtain organogels. Regardless of the presence and proportions of structuring agents, organogels were characterized by beta polymorphism.

Spray cooling or spray chilling is a technique for obtaining solid lipid microparticles (SLMs) within the diameter range in micrometers using low temperatures and no organic solvents. It is a low-cost technique and is easy to scale-up. The production of SLMs into ß-form represents a technological challenge due to the fast crystallization given by the spray cooling system, which generally results in SLMs crystallized into the metastable polymorphic form α. This study focuses on the production and characterization of SLMs by spray cooling using hard fat soybean oil (HS) added of D-limonene or canola oil, aiming to their application as ß-seed crystals into lipid systems. The ß-seed crystals could turn into an alternative lipid material to be used in fat-based products that present the preferential ß' crystallization, like palm oil, increasing its compatibility with cocoa butter (CB) and allowing for the development of substitutes. The obtained SLMs showed spherical geometry and no agglomeration during storage at 25 °C for up to 30 days, verified by scanning electron microscopy (SEM). The mean diameters (D50) were between 150 and 200 µm and the ß' and ß-form, determined by X-ray diffraction (XRD), appeared immediately after the crystallization process by spray cooling using HS added of 5% D-limonene (the HS control sample presented only the α-form). The SLMs of this study demonstrated their potential use as ß-seed crystals into lipid systems.

As an alternative to the strategies currently used to deliver unsaturated fatty acids, especially, the essentials omega-6 and 3- fatty acids, the aim of this work was to investigate the effect of the incorporation of 25 e 50% (w/w) of olive, corn and linseed oil into the crystal structure of anhydrous milk fat (AMF). Fatty acid composition, atherogenicity (AI), and thrombogenicity (TI) index, crystallization kinetics, polymorphism by Rietveld method (RM), microstructure, thermal behavior, solid fat content, and lipid compatibility was evaluated. The addition of vegetable oils reduced the saturated fatty acids, and the AI and TI indices of AMF, and increased the concentration of unsaturated, specifically omega-6 and -3 fatty acids. Although vegetable oils caused changes in nucleation and crystallization kinetics, the spherulitic and crystalline morphology and the ß' polymorphism of AMF were maintained. The study demonstrated the possibility of using the crystal structure of AMF as a vehicle for unsaturated fatty acids in food formulations, as an alternative to nutritional supplementation. In addition, studies on the use of RM in blends made with AMF and vegetable oil have not been found in literature, thus demonstrating the relevance of the present study.

The objective of this study was to develop nanostructured lipid carriers (NLCs) with free phytosterols (FP) using conventional fats and oils. Lipid matrices (LMs) and NLCs were produced with high oleic sunflower oil, fully hydrogenated canola (CA) and crambe (CR) oils by high-pressure homogenization (HPH). The NLCs were evaluated for hydrodynamic diameter (Z-ave), polydispersity index (PDI), and zeta potential (ZP). The melting behavior and polymorphism were investigated for both, the LMs and NLCs. The NLCs presented particle sizes ranging from 148.23 to 342.10 nm, PDI from 0.275 to 0.481, and ZP between -22.27 and -29.70 mV. The NLCs presented higher thermal resistance than that of the LMs. The use of CA and CR separately in the NLC formulations favored the incorporation of FP. The LMs and NLCs presented crystals in ß-form and in mixtures of ß' and ß forms. The developed NLCs can be used for food enrichment, such as spreads, margarine, and beverages.

Two formulations of dark chocolate were developed by adding cocoa butter stearin (CBSt) or sorbitan monostearate (SMS) and compared to a standard formulation in order to investigate fat bloom formation over time. Fat bloom was monitored by Whiteness Index (WI), melting behavior and polymorphism determinations, in bars stored during 90 days at 20 °C and under oscillating temperature between 20 and 32 °C. All samples stored at 20 °C did not develop fat bloom and the required ß(V) form was maintained. Under oscillating storage condition, samples with CBSt (6.0%, w/w) and SMS (0.15%, w/w) delayed the surface fat bloom formation by at least 45 and 15 days, respectively, compared to standard chocolate, observed visually and through WI increments. The ß(V) to ß(VI) polymorphic transition correlated well with the WI, and also with changes in DSC thermograms, confirming the higher effectiveness of specific triacylglycerol (mainly StOSt) in delaying bloom formation.

Several scientific investigations have focused on providing new strategies for supporting the development of low saturated and zero trans lipid materials, as healthier fat alternatives for food application. This work evaluated the consistency, crystallization behavior, microstructure and polymorphism of six blends composed of palm and canola oils at different concentrations (100:0, 80:20, 60:40, 40:60, 20:80 and 0:100, in w/w%) added with 5.0% of fully hydrogenated palm oil (FHPO) or with a mixture of 2.5% of FHPO and 2.5% of sorbitan monostearate (SMS). The results were compared with the non-structured blends (standard samples). Through microstructure images, the formation of a more homogeneous and denser packed crystal network was observed for samples added with both crystallization modifiers (FHPO/SMS) compared to the corresponding standard samples, after stabilization at 25 °C during 3 h. In particular, enhanced crystallization modifications were observed for the 40:60 blend, in which the crystal form ß' emerged after the addition of FHPO/SMS. Moreover, the 40:60 blend structured with FHPO/SMS showed increased consistency (from 30 to 658 gF/cm2) and induced onset crystallization in a higher temperature (from 13.1 to 23.9 °C) compared with the non-structured one, due to the specific crystallization effects provided by both added structurants.

Several studies have shown that excessive intake of trans and saturated fatty acids is associated with an increased risk of cardiovascular disease. In this context, the food industry has sought alternatives for the development of healthy lipid bases, with higher levels of unsaturated fatty acids, adapting to current legislation. The incorporation of structuring agents into liquid oils has proven to be a potential alternative for obtaining semi-plastic lipid bases with reduced levels of saturated fatty acids. Thus, the objective of this study was to produce zero trans fat bases with lower saturated fatty acids levels. Palm oil (PO) was used as a zero trans-lipid base reference because of its technological functionality. Blends containing different proportions of high oleic sunflower oil (HOSO) and PO were prepared as follows: control 100: 0; 80:20; 60:40; 40:60; 20:80; and 100: 0 PO: HOSO (w/w%), respectively. Then, 3% of fully hydrogenated crambe oil (FHCO) and 3% sorbitan monostearate (SMS) were added to the blends as structuring agents, forming the structured (S) blends. The addition of HOSO to the PO decreased the saturated fatty acids by up to 30.6%, with consequent increase of unsaturated fatty acids, especially oleic acid. The joint action of the SMS and the FCHO allowed for obtaining structured blends with plastic and spreadability characteristics, as well as modifications throughout the crystallization process of the original blends.

This work sought to obtain and evaluate zero trans-fat reduced in saturated fatty acids, with higher content of unsaturated fatty acids. Palm oil (PO) was used as the reference of zero trans lipid base. Different amounts of linseed oil (LO) were added to PO, obtaining the following blends: 100:0; 80:20; 60:40; 40:60; 20:80 and 0:100 of PO:LO (w/w%), respectively. These blends were added to fully hydrogenated soybean oil (FHSO) as the crystallization modifying agent, and to sorbitan monostearate (SMS) as the structuring element, both at a proportion of 3% to build the structured fractions. The control and the structured blends were evaluated for fatty acid composition, solid fat content, consistency, crystallization kinetics, thermal behavior, microstructure and polymorphism. With the addition of LO to the PO, an increase of up to 80% was observed in the content of alpha-linolenic acid and a reduction of saturated fatty acids to 47% in the blends. FHSO and SMS offered thermal resistance to the blends, with relevant changes in the crystallization kinetics and microstructure, affecting macroscopic characteristics with the increase in consistence. It was possible to obtain a lipid formulation with features of plasticity and enhanced nutritional quality, compatible with several food applications.

Cocoa butter (CB) provides unique crystallization characteristics to chocolates and confectionary products; hence, it is an important value-add product. However, other alternative fats that minimally affect the crystallization behaviour of chocolates and confectionary products are now being increasingly used. This study analyzed the crystallization behaviour of CB, cocoa butter substitutes (CBSs), and their blends. Blends were prepared using CBS concentrations: 5, 10, 15, 20 and 37.5%. CB, CBS, and their blends were evaluated by following analysis: solid fat content, isothermal analysis, polarized light microscopic, thermal behaviour, X-ray diffraction and consistency. Crystallization analysis showed an incompatibility between the 2 fats, with a reduction in the crystallinity and increase in liquid content in all the blends. Eutectic crystallization at 20 °C was only observed for the blend containing 20% CBSs. This was considered as a positive result because previous studies have indicated that CBS concentration in CB blends should not be more than 5%.

Solid lipid microparticles were tested as microencapsulation systems for protecting β-carotene from degradation. Blends of long-chain (C18) solid lipids (70% stearic acid) and sunflower oil (30%) were used to produce lipid microparticles encapsulating the carotenoid. Polysorbate 80 (4%) was employed to stabilize the stearic acid microparticles. The concentration of β-carotene was monitored using spectrophotometry, the particle size distribution was measured by laser diffraction, the crystal structure was determined by wide angle X-ray diffraction (WAXD), and the thermal behaviour was characterized by differential scanning calorimetry (DSC) over a period of seven months. All of the systems had an average particle size smaller than 5 µm. To avoid β-carotene oxidation, α-tocopherol was added to the formulations and its action as an oxygen trap was crucial for the antioxidant effect. For stearic-acid microparticles with a-tocopherol, more than 90% of the initial amount of β-carotene was preserved after seven months under refrigerated storage (7-10°C) in the dark. Significant microstructural alterations were detected using WAXD and DSC only in the stearic acid microparticles without alpha-tocopherol. These results seemed promising and suggested that the blends of long-chain solid lipids and liquid lipids were suitable for the production of stable solid lipid microparticles.

The effect of monoglyceride on microstructural, barrier and mechanical properties of casted yam starch films were investigated in different relative humidities (RH) and compared with glycerol-starch films. A single screw extruder was used to produce the starch - monoglyceride complex before film production and this process was effective to inhibit the phase separation in films. The addition of the hydrophobic compound reduced hydrophobicity, transparency and water vapor permeability of films. This later value for starch-glycerol film (1.7 x 10-10 g Pa-1 s-1 m-1) was higher than starch (1.2 x 10-10 g Pa-1 s-1 m-1) and monoglyceride-starch films (1.0 x 10-10 g Pa-1 s-1 m-1). Films containing glycerol had higher relative crystallinity (B and V H) with a slight increase at higher RH values, while for monoglyceride films, the crystallinity was constant. Monoglyceride-starch films presented poor mechanical properties when compared to glycerol- starch ones but they presented a stable behavior under different relative humidities.


Estudou-se o efeito da adição de monoglicerídeo nas propriedades microestruturais, mecânicas e de barreira de filmes de amido de inhame, em diferentes umidades relativas (UR), comparando-as com as de filmes de amido- glicerol. Uma extrusora mono-rosca foi usado para produzir o complexo amido-monoglicerídeo, antes de produzir o filme, e o processo foi efetivo para inibir a separação de fases que geralmente ocorre nesse tipo de filmes. A adição de monoglicerídeo, que é um composto hidrofóbico, reduziu a hidrofilicidade, a transparência e a permeabilidade ao vapor de água dos filmes. O valor desta, para os filmes de amido-glicerol (1,7 x 10-10 g Pa-1 s-1 m-1) foi maior que para os de amido (1,2 x 10-10 g Pa-1 s-1 m-1) e para os de amido-monoglicerídeo (1,0 x 10-10 g Pa-1 s-1 m-1). Os filmes com glicerol tiveram maior cristalinidade relativa (B e V H), com um ligeiro aumento em altas UR, enquanto que nos filmes com monoglicerídeo a cristalinidade foi constante. Os filmes de amido-monoglicerídeo apresentaram piores propriedades mecânicas que os filmes de amido-glicerol, mas foram mais estáveis sob diferentes umidades relativas.
