This study examined the effects of spread formulation and the structural/lubricant properties of six different commercial hazelnut and cocoa spreads on sensory perception. Rheology, tribology, and quantitative descriptive analysis (QDA) was assessed by also evaluating the correlation coefficients between the quality descriptor and the rheological and textural parameters. The viscosity was evaluated at different temperatures to better simulate conditions before and after ingestion. Tribological analysis was executed at 37°C to mimic the human oral cavity. The effect of saliva presence and the number of runs on tribological behaviors was investigated. Moreover, textural, calorimetric, and particle size distribution measurements were performed to reinforce the correlation between structural/thermal parameters (e.g., firmness, stickiness, sugar melting point) and sensory aspects. "Visual viscosity," defined as a sensory attribute evaluated prior to consumption, negatively correlated with apparent viscosity measured at 20°C and 10 s-1, whereas "body," defined during oral processing and related to creaminess, positively correlated with apparent viscosity measured at 37°C and 50 s-1. These attributes were mainly influenced by particulate microstructure and solid volume fraction within the formulation. Textural stickiness positively correlated with sensory "adhesiveness" and was related to fat composition and milk powder addition, while "sweetness" was related to sucrose content and sugar melting enthalpy. Tribological data provided meaningful information related to particle-derived attributes, as well as after-coating perception (fattiness/oiliness), thus better predicting food evolution during oral consumption.

The quest for sustainable and functional food packaging materials has led researchers to explore biopolymers such as pullulan, which has emerged as a notable candidate for its excellent film-forming and anti-fogging properties. This study introduces an innovative anti-fog coating by combining pullulan with poly (acrylic acid sodium salt) to enhance the display of packaged food in high humidity environments without impairing the sealing performance of the packaging material-two critical factors in preserving food quality and consumers' acceptance. The research focused on varying the ratios of pullulan to poly (acrylic acid sodium salt) and investigating the performance of this formulation as an anti-fog coating on bioriented polypropylene (BOPP). Contact angle analysis showed a significant improvement in BOPP wettability after coating deposition, with water contact angle values ranging from ~60° to ~17° for formulations consisting only of poly (acrylic acid sodium salt) (P0) or pullulan (P100), respectively. Furthermore, seal strength evaluations demonstrated acceptable performance, with the optimal formulation (P50) achieving the highest sealing force (~2.7 N/2.5 cm) at higher temperatures (130 °C). These results highlight the exceptional potential of a pullulan-based coating as an alternative to conventional packaging materials, significantly enhancing anti-fogging performance.

Commercial cocoa and hazelnut-based sweet spreads typically present a poor nutribiochemical level due to their ingredients and recipes, while nowadays, there is the need of developing sustainable food products addressing both an improved nutritional and environmental profile. The aim of this work was then to develop an innovative hazelnut/carob-based spread with potential high sustainability and nutritional profile, including the exploitation of grape-processing residues (grape skin flour and grapeseed oil) and carob pulp as cocoa surrogate. Rheological (rotational/oscillatory), oxidative, and thermal features of the spread were assessed and compared with two commercial nut-cocoa-based products. Tribology was used to mimic and evaluate the spreads' behavior during oral consumption, and sensory profile (by quantitative descriptive analysis) was also assessed. All products exhibited a pseudoplastic behavior, with the elastic component prevailing over the viscous one. The innovative product showed the highest lubricity from both rheological and sensory analysis, thus well correlating to the obtained lowest viscosity and friction factor trends. Grapeseed oil provided a better nutritional profile, but the largest amount of unsaturated fatty acids promoted oxidation, despite the higher total phenolic content and antioxidant capacity coming from the use of carob and grape skin powders. The sensory perception investigation revealed a characteristic mouthfeel/flavor for the new spread identified having a more fluid consistency and a bitter/sour taste, together with a greater stickiness and a poorer smoothness due to a higher fiber content and solid fat absence.

Developing simple, cost-effective, easy-to-use, and reliable analytical devices if of utmost importance for the food industry for rapid in-line checks of their products that must comply with the provisions set by the current legislation. The purpose of this study was to develop a new electrochemical sensor for the food packaging sector. More specifically, we propose a screen-printed electrode (SPE) modified with cellulose nanocrystals (CNCs) and gold nanoparticles (AuNPs) for the quantification of 4,4'-methylene diphenyl diamine (MDA), which is one of the most important PAAs that can transfer from food packaging materials into food stuffs. The electrochemical performance of the proposed sensor (AuNPs/CNCs/SPE) in the presence of 4,4'-MDA was evaluated using cyclic voltammetry (CV). The modified AuNPs/CNCs/SPE showed the highest sensitivity for 4,4'-MDA detection, with a peak current of 9.81 µA compared with 7.08 µA for the bare SPE. The highest sensitivity for 4,4'-MDA oxidation was observed at pH = 7, whereas the detection limit was found at 57 nM and the current response of 4,4'-MDA rose linearly as its concentration increased from 0.12 µM to 100 µM. Experiments using real packaging materials revealed that employing nanoparticles dramatically improved both the sensitivity and the selectivity of the sensor, which can be thus considered as a new analytical tool for quick, simple, and accurate measurement of 4,4'-MDA during converting operations.

This work assessed the antimicrobial potential of natural essential oils (EOs) from cinnamon (CEO), zataria (ZEO), and satureja (SEO), applied natively or as coatings against Penicillium expansum and Botrytis cinerea during both in vitro and in vivo (on apple fruits) experiments. The induced inhibitory effect towards fungal growth, as a function of both EO type and concentration (75-1200 µL/L), was preliminarily investigated to select the most suitable EO for producing bacterial cellulose nanocrystals (BCNCs)/fish gelatin (GelA)-based emulsions. CEO and ZEO exhibited the best performances against P. expansum and B. cinerea, respectively. None of the pristine EOs completely inhibited the fungal growth and "disease severity", properly quantified via size measurements of lesions formed on fruit surfaces. As compared to pristine CEO, coating emulsions with variable CEO concentration (75-2400 µL/L) curbed lesion spreading on apples, owing to the controlled CEO release during a 21-day temporal window. The strongest effect was displayed by BCNCs/GelA-CEO emulsions at the highest CEO concentration, upon which lesions on fruit skins were barely detectable. This work demonstrated the capability of EOs embedded in BCNCs/GelA-based nanocapsules to efficiently slow down microbial spoilage on postharvest fruits, thus offering viable opportunities for developing innovative antimicrobial packaging systems.

In this study, a cascaded cell disintegration process, based on pulsed electric fields (PEF - 20 kV/cm, 100 kJ/kgSUSP.) and high-pressure homogenization (HPH - 150 MPa, 5 passes) was designed for the efficient and selective release of intracellular compounds (water-soluble proteins, carbohydrates, and lipids) from C. vulgaris suspensions during extraction in water (25 °C, 1 h) and ethyl acetate (25 °C, 3 h). Recovery yields of target compounds from cascaded treatments (PEF + HPH) were compared with those observed when applying PEF and HPH treatments individually. Particle size distribution and scanning electron microscopy analyses showed that PEF treatment alone did not induce any measurable effect on cell shape/structure, whereas HPH caused complete cell fragmentation and debris formation, with an undifferentiated release of intracellular matter. Spectra measurements demonstrated that, in comparison with HPH alone, cascaded treatments increased the selectivity of extraction and improved the yields of carbohydrates and lipids, while higher yields of water-soluble proteins were measured for HPH alone. This work, therefore, demonstrates the feasibility of sequentially applying PEF and HPH treatments in the biorefinery of microalgae, projecting a beneficial impact in terms of process economics due to the potential reduction of the energy requirements for separation/purification stages.

Five commercial hazelnut/cocoa spreads with different compositions were tested by rheology/tribology. The impact of each formulation on the structural/lubricant performances was investigated. Rotational/oscillatory rheology was chosen to assess material behavior during flow. Viscosity variation as a function of temperature and chamber geometry was evaluated. Oscillatory mode tests were carried out to obtain information on product viscoelasticity. Tribological analysis was performed at different temperatures aiming at simulating the chewing/swallowing process. All samples were categorized as pseudo-plastic and viscoelastic materials, with the elastic component prevailing over the viscous one. Major differences were detected in terms of consistency index, depending on the total lipid content. Temperature increase enhanced spread fluidity with a decreasing viscosity according to the Arrhenius model (R2 > 0.942) and greater values of activation energy reflecting higher sensitivity to microstructural changes. An inverse relationship between Casson viscosity ηc and sugar/fat ratio highlighted additional correlations between structural parameters and spread formulation. Tribological measurements at 25°C highlighted that, at the initial eating stage, the friction factor (0.112-0.262 at sliding velocity of 8 × 10-6  m/s) was strongly affected by either the amounts of solid fat or hazelnut percentage. Tribological data corroborated the theory for which tribology and rheology cover different domains.

A new molecularly imprinted electrochemical sensor was proposed to determine 4,4'-methylene diphenyl diamine (MDA) using molecularly imprinted polymer-multiwalled carbon nanotubes modified glassy carbon electrode (MIP/MWCNTs/GCE). GCE was coated by MWCNTs (MWCNTs/GCE) because of their antifouling qualities and in order to improve the sensor sensitivity. To make the whole sensor, a polymeric film made up of chitosan nanoparticles was electrodeposited by the cyclic voltammetry method on the surface of MWCNTs/GCE in the presence of MDA as a template. Different parameters such as scan cycles, elution time, incubation time, molar ratio of template molecules to functional monomers, and pH were optimized to increase the performance of the MIP sensor. With a detection limit of 15 nM, a linear response to MDA was seen in the concentration range of 0.5-100 µM. The imprinting factor (IF) of the proposed sensor was also calculated at around 3.66, demonstrating the extremely high recognition performance of a MIP/MWCNT-modified electrode. Moreover, the sensor exhibited good reproducibility and selectivity. Finally, the proposed sensor was efficiently used to determine MDA in real samples with satisfactory recoveries ranging from 94.10% to 106.76%.

In this work, extra-virgin olive oil (EVO)- and sunflower oil (SFO)-based oleogels were structured using rice bran wax (RBW) at 10% by weight (w/w). Bamboo fiber milled with 40 (BF40), 90 (BF90) and 150 (BF150) µm of average size was added as a structuring agent. The effect of fiber addition and cooling temperature (0, 4, and 25 °C) on thermal and structural parameters of achieved gels was assessed by rheological (both in rotational and oscillatory mode), texture, and differential scanning calorimetry tests. Oleogelation modified the rheological behavior of EVO and SFO, thus shifting from a Newtonian trend typical of oils to a pseudoplastic non-Newtonian behavior in gels. Moreover, oleogels behaved as solid-like systems with G' > G″, regardless of the applied condition. All samples exhibit a thermal-reversible behavior, even though the presence of hysteresis suggests a partial reduction in structural properties under stress. Decreasing in cooling temperature negatively contributed to network formation, despite being partially recovered by low-granulometry fiber addition. The latter dramatically improved either textural, rheological, or stability parameters of gels, as compared with only edible oil-based systems. Finally, wax/gel compatibility affected the crystallization enthalpy and final product stability (gel strength) due to different gelator-gelator and gelator-solvent interactions.

The present study aimed to investigate the effect of the main pulsed electric field (PEF) process parameters on the cell damages of A. platensis microalgae and the extractability of valuable compounds [water-soluble proteins (WSP), C-phycocyanin (C-PC), and carbohydrates (CH)]. Aqueous microalgae suspensions (2%, w/w) were PEF-treated at variable field strength (E = 10, 20, 30 kV/cm), total specific energy (W T = 20, 60, 100 kJ/kgsusp), and inlet temperature (25, 35, 45°C), with either monopolar or bipolar square wave pulses (5 µs of width, delay time between pulses of opposite polarities = 1, 5, 10, 20 µs), prior to extraction with water at room temperature (25°C) for up to 3 h. High-pressure homogenization (HPH) treatment (P = 150 MPa, 3 passes) was used to achieve complete cell disruption to quantify the total extractable content of target intracellular compounds. Scanning electron microscopy (SEM) and optical microscopy analyses clearly showed that PEF merely electroporated the membranes of algae cell, without damaging the cell structure and forming cell debris. The application of PEF treatment (monopolar pulses, 20 kV/cm and 100 kJ/kgsusp) at room temperature significantly enhanced the extraction yield of WSP [17.4% dry weight (DW)], CH (10.1% DW), and C-PC (2.1% DW), in comparison with the untreated samples. Bipolar pulses appeared less effective than monopolar pulses and led to extraction yields dependent on the delay time. Additionally, regardless of pulse polarity, a clear synergistic effect of the combined PEF (20 kV/cm and 100 kJ/kgsusp)-temperature (35°C) treatment was detected, which enabled the extraction of up to 37.4% (w/w) of total WSP, 73.8% of total CH, and 73.7% of total C-PC. Remarkably, the PEF treatment enabled to obtain C-phycocyanin extract with higher purity than that obtained using HPH treatment. The results obtained in this work suggest that the application of PEF combined with mild heating could represent a suitable approach for the efficient recovery of water-soluble compounds microalgal biomass.

The objective of this study was to evaluate the potential of green solvents for extractions of bioactive compounds (BACs) and essential oils from wild thyme (Thymus serpyllum L.) using theoretical and experimental procedures. Theoretical prediction was assessed by Hansen solubility parameters (HSPs) and conductor-like screening model for realistic solvents (COSMO-RS), to predict the most suitable solvents for extraction of BACs. An experimental procedure was performed by nonthermal technology high voltage electrical discharge (HVED) and it was compared with modified conventional extraction (CE). Obtained extracts were analyzed for chemical and physical changes during the treatment. Theoretical results for solution of BACs in ethanol and water, as green solvents, were confirmed by experimental results, while more accurate data was given by COSMO-RS assessment than HSPs. Results confirmed high potential of HVED for extraction of BACs and volatile compounds from wild thyme, in average, 2.03 times higher yield of extraction in terms of total phenolic content was found compared to CE. The main phenolic compound found in wild thyme extracts was rosmarinic acid, while the predominant volatile compound was carvacrol. Obtained extracts are considered safe and high-quality source reach in BACs that could be further used in functional food production.
