Game meat contains bioactive compounds that directly influence the formation of a rich reservoir of flavor precursors that produce specific sensory properties. Quality is considered one of the most influential determinants of consumer behavior, but the interpretation of this concept differs between consumers. Although recognized for its quality, its unique sensory characteristics (smell, taste, aroma) may have a major impact on consumer perception. The aim of this review is to describe the consumer behavior regarding game meat through elements of neuroperception, using methods of analysis, observation, and interpretation of scientific information from the literature. Following the analysis of published papers on this topic, it was shown that external factors influencing the biological basis of behavior could provide explanations for the acceptance or rejection of this type of meat and solutions. Neuroperception can explain the mechanism behind consumer decision-making. The influence of extrinsic factors (environment, mood, emotions, stress) shapes the perception of the quality attributes of game meat, the unique sensory characteristics of game meat passing through a primary filter of sensory receptors (eyes, nose, tongue, etc). Game meat is darker and tougher (compared to meat from domestic animals), and the taste and smell have the power to trigger memories and change the mood, influencing consumer behavior. Understanding consumer attitudes towards game meat in relation to quality attributes and the physiology of sensory perception can provide important insights for food industry professionals, processors, sensory evaluators, and researchers.

This study aimed to evaluate the fatty acid profile and health lipid indices of sheep meat (from 52 Karakul sheep from NE Romania). The effect of age at slaughter and the influence of muscle region were studied for nutritional parameters, especially the fatty acids from lipid fractions. Based on the fatty acid profiles and lipid contents, the sanogenic indices were determined for two sheep muscle groups. Thus, two different muscle regions from lamb and adult sheep were analysed from both genders, the Longissimus dorsi and Triceps brachii, to argue the advantages of each category and the rationalization, in terms of meat consumption, regarding their impact on human health. Sheep meat has many components with beneficial effects on human health. Apart from the fact that it is an important source of nutrients due to its high content of proteins, lipids, and minerals, it is also a product that can provide fundamental bioactive compounds for maintaining metabolic functions. The qualitative indices assessment revealed that lambs have meat with high PUFA content on Longissimus dorsi muscles (approx. 25% of total fatty acids), 0.68 for PUFA/SFA, with highest values for n-3 (approx. 8%) and n-6 (approx. 14%). Appropriate values can also be observed in Triceps brachii muscles from adult sheep. The sanogenic indices also presented good values for Longissimus dorsi from lambs and Triceps brachii from adult sheep (polyunsaturation index = 7.2-10.2; atherogenic index = 0.56-0.67; thrombogenic index = 0.78-0.96; hypocholesterolemic/hypercholesterolemic index = 2.4-2.7 (for Longissimus dorsi)).

The present study evaluates the influence of gender and age-class on the carcass traits, meat chemical composition, and fatty acid profiles of randomly hunt-harvested wild boars from Romania's Frasin District hunting area, which is an important part of the stock density management strategy. Only 76 wild boars were chosen to participate in the experimental design from a total of 94 wild boars hunted over seven winter seasons, based on two main criteria: right carcass part intact and animal health status (suitable for human consumption) as determined by the veterinary health notice issued by the Food Safety Authority, with all wild boars being evaluated before slaughtering. After sanitary inspection and within the first 24 h postmortem, meat samples were taken in duplicate from the right side of wild boar carcasses (m. Biceps femoris). The aim of this study was to compare the carcass characteristics, chemical composition, and fatty acid profile of wild boar Biceps femoris muscle obtained from the right side of carcasses, as well as the effects of gender, age-class, and their interaction on these traits, in a context where venison is frequently regarded as organic food by consumers due to the natural habitat in which wild animals live. The age of the animals had an effect on the postmortem undressed warm and cold carcass weights (p ≤ 0.05). Considering the proximal chemical composition, only the intramuscular fat (IMF) content was higher in adult meat samples compared to young animals. C18:1 n-9 was the most abundant fatty acid in wild boar meat, followed by C16:0, C18:2 n-6, and C18:0. For IMF content, gender, age class, and their interaction influenced mainly MUFA fatty acids, in particular C16:1 n-9, C20:1 n-9 and C22:1 n-9, and also PUFA fatty acids C18:3 n-6, C20:3 n-3, C20:4 n-6, C20:5 n-3, C22:4 n-6, and C22:5 n-6. The appropriate amounts of individual fatty acids in the muscles of the wild boars translate into a ratio of P/S acids that promotes health as a bio-alternative resource of meat.

The inherent flexibility of redox-active organic polymers and carbon-based fillers, combined with flexible current collectors (CCs) is ideal for the fabrication of flexible batteries. Herein, a one-step electrophoretic deposition of polyviologen (PV)/graphene-oxide (GO) aqueous composites onto a flexible mesh of 60 µm thick wires, 100 µm apart, is described. Notably, during electrodeposition, GO is transformed into conductive reduced GO (rGO), and nanoscopic pores are formed by self-assembly allowing charge/discharge of the redox sites over dozens of micrometers. Typically, electrodeposition of PV alone on a flat CC (FCC) is limited by its electrically insulating structure to ≈0.15 mAh cm-2 , but the presence of rGO allows thicker active layers without loss in (dis-)charging kinetics and reaching areal capacities of ≈2 mAh cm-2 . Remarkably, when the FCC is replaced by a mesh, the deposition of significantly more anode materials (≈5 mAh cm-2 ) is possible, while the (dis-)charging kinetics is considerably improved. It exhibits high capacity retention at an ultrafast rate of 100 C (<3%) and excellent bending stabilities. This represents the first combination of a microscopic-CC (mesh wires) with a molecular-electronic and -ionic conductor (rGO with its pores), i.e., a hierarchical-CC system with maximized polymer thickness and minimized wire thickness. The stacking of such modified grids paves the road to further increase the areal capacity.

Fast switching 'transparent-to-black' electrochromic devices are currently under investigation as potential candidates in modern applications like e-papers or with additional functionality as ultracompact iris or switchable neutral filter in camera systems. However, recent electrochromic devices show either a lack of contrast or slow response times. To overcome these deficiencies we focus on a careful material composition of the colouring hybrid electrodes in our device. We have established a nanoporous Sb-doped SnO[Formula: see text] electrode as supporting electrode for chemisorbed electrochromic tetraphenylbenzidine molecules due to its good conductivity in the redox potential range of the molecule. This hybrid electrode was combined with a modified nanoporous TiO[Formula: see text] / viologen electrode to realize a high performance, complementary electrochromic device. Fast switching time constants of 0.5 s and concurrently high change in optical density [Formula: see text]OD = 2.04 at 605 nm confirm our successful concept. The achieved colouration efficiency of 440 cm[Formula: see text] C[Formula: see text] exceeds every high contrast device presented so far.

Chemokine receptors and their ligands play a central role in cancer metastasis, inflammatory disorders, and viral infections. Viologen dendrimers (VGD) emerged recently as a promising class of synthetic polycationic ligands for chemokine receptor CXCR4. The objective of this study was to evaluate the potential of VGD as novel dual-function polycations capable of simultaneous CXCR4 antagonism and gene delivery. As part of our systematic studies, we have synthesized a library of VGD with differences in molecular architecture, number of positive charges, and type of capping group. The ability of VGD to condense DNA was evaluated, and physicochemical and biological properties of the resulting polyplexes were studied. We have evaluated the effect of VGD surface charge, size, capping group, and molecular architecture on physicochemical properties of polyplexes, transfection efficiency, CXCR4 antagonism, and cytotoxicity in human epithelial osteosarcoma (U2OS) and in human liver hepatocellular carcinoma (HepG2) cells. We found that properties and behavior of the polyplexes are most dependent on the number of positive charges and molecular weight of VGD and to a lesser extent on the type of a capping group. Using TNFα plasmid, we have demonstrated that VGD prevents CXCR4-mediated cancer cell invasion and facilitates TNFα-mediated cancer cell killing. Such dual-function carriers have potential to enhance the overall therapeutic outcomes of cancer gene therapy.
