RESUMO

Considerado patrimônio natural, o litoral piauiense é referência nacional e internacional para o Kitesurf, esporte na natureza pouco estudado, embora conste em pesquisas sobre desenvolvimento turístico na região. Este artigo analisa implicações da prática do Kitesurf nesse litoral e identifica ações que podem contribuir para sua conservação. Realizou-se pesquisa qualitativa, exploratória, mediante pesquisa bibliográfica e documental. Em certas praias há conflitos entre kitesurfista, pescador e/ou banhista; além da prática oferecer riscos para animais silvestres. Todavia, há kitesurfista que recolhe lixo no mar e promove discussões sobre efeitos do esporte na região. Abordar a educação ambiental em clínicas de certificação de kitesurfistas e regulamentar o Kitesurf pode colaborar com a resolução de conflitos e perspectivar um turismo mais sustentável, almejando conservar esse patrimônio e suas potencialidades.


The coast of Piauí, considered a natural heritage, is a national and international reference for kitesurfing, sport in naturelittle studied, although it is part of research on the regional tourism development. This article analyzes the implications of the practice of kitesurfing on this coast and identifies actions that can contribute to its conservation. Qualitative, exploratory research was carried out through bibliographical and documentary research. On certain beaches there are conflicts between kitesurfers, fishermen and/ or bathers; in addition, its practice offers risks to wild animals. However, there are kitesurfers who collects garbage at sea and promotes discussions about the effects of the sport in the region. Addressing environmental education of kitesurfers in certification clinics and regulating kitesurfing can collaborate with conflict resolution and envisage a more sustainable tourism, aiming to conserve this heritage and its potential.

Resumo A mordida cruzada anterior é uma má oclusão frequentemente observada nas dentições decídua e mista, pode ser classificada em dentária, esquelética ou funcional. Esta última, quando interceptada de forma precoce, pode apresentar um prognóstico satisfatório. Nesse contexto, a confecção de pistas diretas Planas têm se mostrado uma alternativa eficiente, quando poucos elementos dentários são envolvidos. Este trabalho apresenta o caso clínico de um paciente de 6 anos de idade, portador de mordida cruzada anterior unilateral do tipo funcional, cujo diagnóstico diferencial e intervenção precoce permitiram a resolução do caso. Ao manipular a mandíbula, levando os côndilos em relação cêntrica (RC), notou-se a presença de interferência oclusal entre os caninos decíduos superior e inferior do lado direito, que são as causas da anteriorização da mandíbula, com oclusão em MIH. Para correção, utilizou-se terapia de pista direta Planas confeccionada sob canino superior direito em resina composta e leve desgaste no canino inferior do lado direito. Os contatos prematuros foram removidos, criando um plano inclinado de aproximadamente 45 graus na face palatina do canino superior e um leve ajuste oclusal na face incisal do canino inferior do lado direito. O uso dessa técnica permitiu a correção da mordida cruzada anterior funcional imediatamente após a remoção da interferência oclusal. O caso relatado demonstra que o tratamento precoce de mordidas cruzadas propicia maiores chances de sucesso na reabilitação do sistema estomatognático. A utilização de pistas diretas Planas demonstrou ser uma alternativa eficaz, de baixo custo e de fácil execução para tratamento de mordidas cruzadas funcionais. (AU)


Abstract Anterior crossbite is a malocclusion frequently found in deciduous and mixed dentitions, it can be classified as dental, skeletal or functional. This last one has a favorable prognosis when the treatment occurs in early stages. Considering this, Planas direct tracks have been showing to be an effective and less invasive alternative when few dental elements are involved. This paper presents a clinical case of a 6-year-old patient with functional unilateral anterior crossbite whose differentiated diagnosis and early intervention allowed a successful treatment. By manipulating the jaw and positioning the condyles in centric relation (CR), the presence of occlusal interference between the upper and lower deciduous canines on the right side was noticed, which are the causes of mandible anterior displacement with occlusion in MIH. For correction, Planas direct track therapy was used on the upper right canine with composite resin followed by slight wear on the lower right canine. The premature contacts were eliminated, creating an inclined plane of approximately 45 degrees on the palatal face of the upper canine and a slight occlusal adjustment on the incisal surface of the lower right canine. The use of this technique allowed the correction of the functional anterior crossbite immediately after the removal of the occlusal interference. This case shows that the early treatment of crossbites increases the chances of a successful rehabilitation of stomatognathic system. The use of Planas direct tracks proved to be an effective, low-cost, and easy to implement alternative for functional crossbites correction. (AU)

This study was performed to evaluate the interplay between dental caries, nutritional status, and genetic polymorphisms in TAS1R1 and TAS1R2 (taste receptor, type 1, member 1 and 2) in preschool children and pre-adolescents. We included 525 subjects (306 preschool children and 219 pre-adolescents). Parents/caregivers answered a self-administered questionnaire about their children's systemic health, characteristics, oral hygiene habits, and diet. Clinical examination was performed to evaluate dental caries and nutritional status. Saliva samples were collected for DNA extraction. The genotyping of rs17492553 ( TAS1R1 ), rs3935570, and rs4920566 ( TAS1R2 ) polymorphisms was performed using real-time PCR with Taqman Genotyping Master Mix and SNP assay. Both univariate and multivariate Poisson regression analyses with robust variance were used for the data analysis. In preschool children, consumption of sweets between meals increased the prevalence of dental caries by 85% (PR c = 1.85; 95%CI 1.39-2.46; p < 0.001), whereas in pre-adolescents, this prevalence increased by 34% (PR a = 1.34; 95%CI 1.11-1.62; p = 0.002), regardless of genetic polymorphisms . Moreover, individuals carrying at least one allele C in rs17492553 presented 23% more prevalence of dental caries (PR a = 1.23; 95%CI 1.02-1.49 p = 0.030). Nutritional status was not associated with dental caries, neither with genetic polymorphisms . Consumption of sweets between meals increased the prevalence of dental caries. In pre-adolescents, rs17492553 genetic polymorphism in TAS1R1 was associated with dental caries.

Pediatric mandibular tumors present an aggressive biological behavior and difficult diagnosis. A wide range of odontogenic and nonodontogenic tumors comprise the spectrum of these lesions. We report a case of a 1-year-old male child patient showing facial asymmetry symptomatic of an expansive lesion extending throughout the body and ramus of the left hemimandible with a diameter of 8 cm. The histopathological report suggested a high-grade mucoepidermoid carcinoma (MEC), recommending further immunohistochemical investigation of the ectomesenchymal or neuroectodermal origin of the tumor cells. The patient evolved with extensive bilateral pleural effusion followed by metastasis in the middle third of the right humerus, and died 2 months after the first biopsy procedure by acute renal failure with tubular necrosis, before a final inconclusive immunohistochemical report was reached. The lack of resources for less-favored regions of Brazil impairs rapid biomolecular examinations such as immunohistochemical resulting in delay of appropriate therapeutic procedures.

AIM: To evaluate the association between dental caries and nutritional status in a group of Brazilian schoolchildren, from Manaus. The studied population consisted of 197 students (10-12-year-olds) from public schools at Manaus, Amazonas, Brazil. MATERIALS AND METHODS: A clinical examination was carried out and the decay-missing-filled-teeth index for primary and permanent teeth (dmft and DMFT) was used to evaluate dental caries. Body mass index Z-score was calculated using variables such as individual height, weight, age, and gender. The nutritional status was classified as underweight, eutrophic, overweight, and obese. One-way ANOVA and Tukey's posttests were used for means' comparison between groups. The established alpha was 5%. RESULTS: Eighty-one (41.1%) children were caries-free. Five (2.5%) children were underweight; 127 (64.5%) were eutrophic; 49 (24.9%) were overweight; and 16 (8.1%) were obese. The mean dmft/DMFT index was 1.67 (2.05). Obese children had more caries experience than eutrophic and overweight children (p < 0.05). The aim of this study was to investigate the association between genetic polymorphisms in MMP8, MMP13, and MMP20 with caries experience and developmental defects of enamel (DDE) in children from the Amazon region of Brazil. Den tal caries and DDE data were collected through clinical examination from 216 children. Genomic DNA was extracted from saliva, and genotyping of selected polymorphisms in MMP8 (rs17099443 and rs3765620), MMP13 (rs478927 and rs2252070), and MMP20 (rs1784418) was performed using TaqMan chemistry and endpoint analysis. χ2 or Fisher's exact tests were used to compare allele and genotype distributions between children with caries experience and caries-free children and between DDE-affected and -unaffected children with an established alpha of 5%. The polymorphism rs478927 in MMP13 was associated with caries experience and DDE (p < 0.05). The analysis performed comparing children with both conditions (caries experience plus DDE) and children with neither of the conditions (caries-free chil dren without DDE) demonstrated that children carrying the MMP13 rs478927 TT genotype were more likely to have concomitant occurrence of these two conditions (OR = 5.8, 95% CI 2.1-15.8; p = 0.0003). In conclusion, the genetic polymorphism rs478927 in MMP13 was associated with caries experience and DDE.

BACKGROUND: Sleep bruxism (SB) is a masticatory muscle activity that affects children. Parents' knowledge is important for its identification and report to dentists. AIM: To investigate parents' knowledge about SB among their children. DESIGN: A cross-sectional study included 1325 parents of children from dental clinics of seven institutions from all regions of Brazil. Parents answered questions about child's sleep, knowledge about SB and its occurrence among children and parents. SB definition given by parents was dichotomized as "correct"/"incorrect", based on the American Academy of Sleep Medicine definition. Descriptive, bivariate and multivariate analyses were performed (P < 0.05). RESULTS: Most parents (57.3%) did not know what SB is and 88.9% would like to receive more information. SB prevalence among parents was 15.4% and 24.0% among children. Between parents who correctly defined SB, its prevalence increased to 27.5% among parents and 40.6% among children. Parents whose children had/have SB, who would like to receive more information about SB and were from the North, Central-West, Southeast, and South regions were more likely to define SB correctly (P > 0.05). CONCLUSION: There is a lack of knowledge of parents about SB. SB among children, parents' interest in receiving more information and their location were factors associated to their knowledge.

BACKGROUND: Oestrogen (ES) and growth hormone (GH) are hormones that may have a role in caries aetiology and developmental defects of enamel (DDE) since their receptors (ERs and GHR) are expressed during amelogenesis. AIM: To evaluate whether genetic polymorphisms in the genes that codify the ERα (ESR1) and GHR are associated with caries experience and DDE in children. DESIGN: Two hundred and sixteen children of both genders, aged 9-12 years, were examined and classified according to caries and DDE phenotype. Genomic DNA was extracted from buccal cells in saliva. Genetic polymorphisms in ERS1 (rs1884051 and rs12154178) and GHR (rs297305, rs2940913, rs2910875, and rs1509460) were genotyped using TaqMan chemistry. Data were analysed by PLINK, while the chi-square test was used to compare allele and genotype distributions (alpha of 5%). RESULTS: A total of 131 children (60.7%) had caries experience, and 43 (19.9%) presented DDE. Genotype and allele distributions were not associated with caries experience (P > 0.05). Genotype and allele distributions between DDE, affected and unaffected, were associated with the polymorphism rs12154178 in ESR1 (P = 0.01 and P = 0.001, respectively) and with the polymorphism rs1509460 in GHR (P = 0.05 and P = 0.02, respectively). CONCLUSIONS: Genetic polymorphisms in ERS1 (rs12154178) and GHR (rs1509460) are associated with DDE.

OBJECTIVES: This study investigated the physical and mechanical properties, antibacterial effect and biocompatibility of novel elastomeric temporary resin-based filling materials (TFMs) containing zinc methacrylate (ZM). MATERIAL AND METHODS: Experimental TFMs were prepared by mixing the zinc methacrylate with monomer, co-monomer, photoinitiator and fillers. A ZM concentration of 0 (control), 0.5% (Z0.5); 1% (Z1), 2% (Z2), or 5% (ZM5) wt% was added to the TFMs. Fermit-N (F) was used for comparison with the experimental material. Microleakage, water sorption/solubility, degree of conversion, depth of cure, ultimate tensile strength, and hardness were determined and compared. A modified direct contact test (DCT) with Enterococcus faecalis and a Streptococcus mutans' biofilm accumulation assay was carried out to evaluate the antimicrobial effect and cytotoxicity of the assay. Statistical comparisons were performed (α=5%). RESULTS: The results showed that the physical and mechanical properties of the experimental TFMs with ZM are comparable with the properties of the commercial reference and some properties were improved, such as lower microleakage and water sorption, and higher ultimate tensile strength values. TFMs with ZM killed E. faecalis only after 1 h. Biofilm development of S. mutans was not affected by the inclusion of ZM in the experimental TFMs. CONCLUSIONS: The present findings suggest that the physical, mechanical and biological properties of the experimental TFMs with ZM are comparable with the properties of the commercial reference. However, some properties were improved, such as lower microleakage and water sorption, and higher ultimate tensile strength values.

The aim of this study was to evaluate the association between timing of permanent tooth emergence with overweight and obesity in children from Brazilian Amazon region. The studied population consisted of 192 children, 09 to 12 year-old, from public schools at Manaus, Amazonas-Brazil. Clinical examination was performed and the tooth emergence was evaluated according to the number of permanent erupted teeth. Body mass index z-score was calculated. For the statistical analysis 'Overweight/obese' group was compared with 'Normal weight' group in a case to control ratio 1:2. The t-test based on age was used for means comparison between the groups. A linear regression analysis using age and gender as co-variants was used. The established alpha was 5%. One hundred twenty-seven children were classified as normal weight and 65 were classified as overweight/obese (49 were overweight and 16 were obese). Overweight/obesity condition was associated with the gender, in which boys had a higher chance to present higher weight conditions (OR=1.84; CI 95% 1.06-3.37; p=0.04). The mean number of permanent teeth was higher in the overweight/obesity group (p<0.001). Linear regression analysis demonstrated that nutritional status, gender and age were strongly associated with number of permanent erupted teeth (p<0.05). In conclusion, our study demonstrated that timing of permanent tooth emergence is associated with overweigh/obesity in children from Manaus, Brazil.

Resumo O objetivo deste estudo foi avaliar se a erupção dentária está associada com sobrepeso/obesidade em crianças da região Amazônica brasileira. A população estudada foi composta por 192 crianças, de 9 a 12 anos, de escolas públicas de Manaus, Amazonas-Brasil. O exame clínico foi realizado e a erupção dentária foi avaliada de acordo com o número de dentes permanentes irrompidos. O índice de massa corporal escore-z foi calculado. Para a análise estatística, comparou-se o grupo "sobrepeso / obesidade" com o grupo "peso normal" em uma proporção de controle 1: 2. O teste t baseado na idade foi utilizado para comparação das médias entre os grupos. Uma análise de regressão linear usando idade e sexo como co-variáveis foi utilizada. O alfa estabelecido foi de 5%. Cento e vinte e sete crianças foram classificadas com peso normal e 65 foram classificados com sobrepeso / obesidade (49 com sobrepeso e 16 com obesidade). A condição de sobrepeso / obesidade associou-se ao gênero, no qual os meninos tiveram maior chance de apresentar condições de maior peso (OR = 1,84; IC 95% 1,06-3,37; p = 0,04). O número médio de dentes permanentes irrompidos foi maior no grupo sobrepeso / obesidade (p <0,001). A análise de regressão linear demonstrou que o estado nutricional, sexo e idade foram fortemente associados ao número de dentes permanentes irrompidos (p <0,05). Concluindo, nosso estudo demonstrou que o momento da erupção dos dentes permanentes é associado com sobrepeso / obesidade em crianças de Manaus, Brasil.

The objective of this study was to compare selective physical-mechanical properties, antibacterial effects and cytotoxicity of seven temporary restorative materials (TRM): five resin-based materials [Bioplic (B), Fill Magic Tempo (FM), Fermit inlay (F), Luxatemp LC (L) and Revotek LC (R)], and zinc oxide-eugenol cement (IRM) and glass ionomer cement (GIC) as the controls. Material and methods The physical-mechanical properties were evaluated by determining microleakage (ML), ultimate tensile strength (UTS) and Shore D hardness (SDH). In addition, the polymerization rate (Pr-1), depth of cure (DC), water sorption and solubility (WS/SL) were evaluated. The antimicrobial effects of the materials were assessed by biofilm accumulation of Streptococcus mutans (BT) and the direct contact test (DCT) by exposure to Enterococcus faecalis for 1 and 24 h, and cytotoxicity by MTT assay. The data were analyzed by ANOVA or Kruskall-Wallis tests, and a complementary post-hoc method (p<0.05). Results Group B, followed by FM and GIC had significantly lower percentages of microleakage in comparison with the other groups; Groups FM and L showed the highest WS, while Groups R and FM showed the significantly lowest SL values (p<0.05). Group R showed the statistically highest UTS mean and the lowest DC mean among all groups. Group F showed the lowest S. mutans biofilm accumulation (p=0.023). Only the Group L showed continued effect against E. faecalis after 1 h and 24 h in DCT. The L showed statistically lower viability cell when compared to the other groups. Conclusions These findings suggest the antibacterial effect of the temporary materials Fill Magic and Bioplic against S. mutans, while Luxatemp showed in vitro inhibition of S. mutans biofilm accumulation and E. faecalis growth. Regarding the cell viability test, Luxatemp was the most cytotoxic and Fill Magic was shown to be the least cytotoxic.

Objetivo: O objetivo deste artigo é apresentar o relato de um caso clínico de luxação extrusiva de dente permanente com rizogênese incompleta, onde não foi necessária a realização de intervenção endodôntica. Relato de caso: Paciente de 6 anos de idade compareceu ao serviço de urgência da Policlínica Odontológica da Universidade do Estado do Amazonas (UEA) para atendimento após queda durante atividade de lazer, apresentando traumatismo direto na boca. Foi informado durante a consulta inicial que o incidente havia ocorrido há cerca de três dias, e que o atendimento imediato logo após o trauma foi realizado em um Serviço de Pronto Atendimento, porém, nenhum tipo de procedimento na cavidade oral foi realizado. Após exames clínico e radiográfico observou-se que o dente 21 apresentava deslocamento parcial para fora do alvéolo dentário no sentido axial, com alteração da oclusão, dor local à palpação e mobilidade dentária. Foi realizada profilaxia da área afetada, e anestesia do dente luxado e tecidos adjacentes. O reposicionamento do dente foi realizado em seguida, pressionando-o e tracionando-o de forma suave e contínua até a sua correta posição dentro do alvéolo. A área afetada foi limpa com gaze estéril embebida em soro fisiológico, e foi instalada uma contenção rígida confeccionada com fio ortodôntico e resina composta. Conclusão: O reposicionamento da maneira adequada do dente traumatizado dentro do alvéolo dentário, num período de tempo hábil, seguido de sua proservação, permitiram a manutenção da vitalidade do tecido pulpar, e consequentemente, o desenvolvimento do segmento radicular.


Objective: The objective of this article is to present a clinical case of extrusive luxation of an immature permanent tooth, with no endodontic management. Case report: A 6-year-old patient was provided to emergency treatment at the State University of Amazonas, as a result of a fall, with a direct trauma to the mouth. It was informed during the initial consultation that the incidente has occurred three days after. Emergency examination had been carried out by an Emergency Service; however, any type of procedure in the oral cavity was performed in ths occasion. After clinical and radiographic examinations, it was observed that tooth 21 presented partial displacement from the alveolar socket in the axial direction, with occlusion alteration, local pain to palpation and dental mobility. Cleaning of the affected area and anesthesia of the dislocated tooth and adjacent tissues were performed. Then, tooth repositioning was performed by pressing and tracing it smoothly and continuously until its correct position within the alveolar socket. The affected area was cleaned with sterile gauze soaked in saline solution, and a rigid containment made of orthodontic wire and composite resin was installed. Conclusion: A proper repositioning of the traumatized tooth within the alveolar socket, followed by its clinical followup, allowed the pulp tissue to remain vital, and consequently, the complete development of the root portion

Os alimentos oferecidos pelo cardápio da culinária japonesa podem oferecer riscos à saúde da população em função de falhas no armazenamento a frio das matérias-primas utilizadas como peixes crus e nos processos de preparação e/ou elaboração. Neste estudo foram avaliados 12 restaurantes especializados na culinária japonesa, presentes nas zonas Central, Oeste, Norte e Sul do Município do Rio de Janeiro no período de maio a dezembro de 2016. A avaliação foi realizada por meio de uma lista de verificação contendo quatro pontos críticos de controle importantes para a produção e comercialização de um alimento inócuo para a população. O objetivo desde trabalho foi apresentar uma sugestão de roteiro de verificação das Boas Práticas (BP) para este segmento, baseado em diretrizes técnicas para a cadeia de produção, inclusive para os manipuladores. Constatou-se que os restaurantes da Zona Sul apresentaram um maior score de "conformidades" (66,7%), seguidos da Zona Norte (50%), Centro (25%) e Zona Oeste (16,7%). Conclui-se que o roteiro utilizado foi uma ferramenta útil de avaliação aos estabelecimentos visitados. Desta forma, a sua utilização auxiliará os profissionais deste segmento, enquanto nenhuma legislação específica e mais detalhada seja publicada.


The food offered by the Japanese cuisine menu poses many health risks to the population due to failures in the cold storage of raw materials consumed, raw fish, and in the preparation and or elaboration processes. In this study 12 restaurants specialized in Japanese cuisine were evaluated in the Central, West, North and South zones of the Municipality of Rio de Janeiro from May to December 2016. The evaluation was carried out through a checklist containing 04 critical points in importance for the production and marketing of an innocuous food for the population. The objective of this work was to present a suggestion of a GP verification guideline for this segment based on legal technical requirements for the production chain, including for the manipulators. It was found that the restaurants of the South Zone had the highest scores of "conformities" (66.7%), followed by the North Zone (50%), the Center (25%) and the West Zone (16.7%). It was concluded that the guide was a useful evaluation tool for the visited establishments. In this way, its use will help the professionals of this segment, as long as no specific and more detailed legislation is published.

OBJECTIVE: This replication study aimed to evaluate an association between caries experience and polymorphisms in DEFB1 and miRNA202 in two different Brazilian groups. DESIGN: The population consisted in 312 Brazilian children. Genomic DNA for was extracted from buccal cells isolated from saliva. The genotyping analysis of the polymorphisms in DEFB1 and miRNA202 was performed by real-time polymerase chain reactions. The associations between caries experience, genotype and allele distribution was performed, with an alpha of 0.05. RESULTS: A statistical significant difference was observed between allele distribution and the polymorphism rs12355840 in the miRNA202 for permanent dentition in the Manaus group, in which individuals that carry the allele C had almost three times more chance to have caries (p = .021; OR = 2.7, 95% CI = 1.1-6.7). In the Ribeirão Preto group there was a statistical significant difference for the polymorphism rs11362 in the DEFB1 for both dentition in alleles (p = .043) and genotype (p = .020) distributions. The T allele increased in two times the chance to have caries (OR = 2.03; 95% CI = 1.05-4.07). CONCLUSION: In conclusion, the allelic distribution of the polymorphism rs12355840 in miRNA202 was associated with caries experience in the Manaus group. In the Ribeirão Preto group, the allelic and genotypic distributions in the polymorphism rs11362 in DEFB1 were associated with caries experience.

Abstract The objective of this study was to compare selective physical-mechanical properties, antibacterial effects and cytotoxicity of seven temporary restorative materials (TRM): five resin-based materials [Bioplic (B), Fill Magic Tempo (FM), Fermit inlay (F), Luxatemp LC (L) and Revotek LC (R)], and zinc oxide-eugenol cement (IRM) and glass ionomer cement (GIC) as the controls. Material and methods The physical-mechanical properties were evaluated by determining microleakage (ML), ultimate tensile strength (UTS) and Shore D hardness (SDH). In addition, the polymerization rate (Pr-1), depth of cure (DC), water sorption and solubility (WS/SL) were evaluated. The antimicrobial effects of the materials were assessed by biofilm accumulation of Streptococcus mutans (BT) and the direct contact test (DCT) by exposure to Enterococcus faecalis for 1 and 24 h, and cytotoxicity by MTT assay. The data were analyzed by ANOVA or Kruskall-Wallis tests, and a complementary post-hoc method (p<0.05). Results Group B, followed by FM and GIC had significantly lower percentages of microleakage in comparison with the other groups; Groups FM and L showed the highest WS, while Groups R and FM showed the significantly lowest SL values (p<0.05). No presente estudo objetivou-se avaliar a oferta de alimentos seguros em um restaurante comercial do tipo self service através da verificação das condições microbiológicas de amostras de alimentos, refrescos, água, swab de mãos de manipuladores de alimentos e de utensílios, e da verificação da temperatura dos alimentos durante a distribuição. Encontrou-se adequação microbiológica inferior a 50% para as saladas cruas e cozidas, acima de 90% para as preparações quentes, carnes e utensílios, 54,5% para os refrescos e de 100% para swab de mãos e água. Em relação à temperatura, 8,8% das preparações quentes apresentaram temperatura abaixo de 60ºC, assim como 8,7% das amostras de carnes. Das saladas cruas, 42,1% estavam entre 10 e 21ºC e 52,6% acima de 21ºC. Para as saladas cozidas, 52,2% estavam entre 10 e 21ºC e 26,1% acima de 21ºC. Concluiu-se que a oferta de alimentos seguros em restaurantes comerciais do tipo self service requer o envolvimento das lideranças para a implantação e manutenção das Boas Práticas, com ênfase na importância do treinamento periódico dos manipuladores de alimentos.

A carne bovina é um importante segmento do agronegócio brasileiro, com significativa participação no valor das exportações do País. Visando manter-se competitivo frente às exigências do mercado externo, principalmente europeu, o Brasil implementou o Sistema de Identificação e Certificação de Bovinos e Bubalinos (SISBOV). Este sistema tem como objetivo monitorar toda cadeia produtiva brasileira, certificando que o Brasil exporta um produto livre de contaminação. Este trabalho teve como objetivo analisar as adequações que o Brasil realizou no seu sistema agroindustrial com a finalidade de atender ao mercado internacional. Utilizou-se uma metodologia exploratória, por meio de revisão bibliográfica no período de 2007 a 2015. A implantação de um sistema de rastreabilidade na indústria provocou uma série de modificações em toda a cadeia produtiva brasileira, porém, o alto custo deste sistema para o pecuarista, conjugado a pontos falhos na legislação brasileira, vem limitando o desempenho brasileiro. A necessidade de mais investimentos na cadeia produtiva torna-se inquestionável.


The brazilian feed has undergone great changes due to the need of fast and practical foods. Thus there is a great demand for ready meals, represented by the street food, increasing street food trade. Besides the ease in acquiring food ready for consumption, the quality verification necessary that the food reaches the consumer, from raw materials to finished product. The aimed of this work evaluate the implementation of good manufacturing practices in the handling of meat products from street vendors barbecue spit and establishments in fair of the Porto in Cuiabá, Mato Grosso. It was evaluated through of observation in locu using checklist based on the current brazilian law, in ten different points of barbecue spit sales in the central region due to the large number of people daily circulate and eight meat marketing outlets in the fair of the Porto, much frequented by the region locals. The results of the item regarding human resources among street vendors showed 84% of noncompliance, regarding the general aspects of environmental conditions, 95% had non-compliance and for the general aspects of plant and equipment was obtained 58% of non-compliance, for the ten points of sales observed. Between the outlets of meat was observed 73,7% non-compliance to management the item raw material and 84% for evaluation of buildings and facilities. According to the checklist applied for verification of Good Manufacturing PracticeGMP in both data collection points, it is concluded that in general all points of sales are outside the standards set by legislation, not allowing the guarantee of food quality insurance to consumer health.

O objetivo deste estudo foi conhecer os projetos desenvolvidos na área de educação em saúde nas escolas públicas, bem como aceitação de pais, educadores e alunos. Foi feito um estudo epidemiológico quantitativo. A população estudada foi constituída de crianças do sexto ao nono ano do ensino fundamental, seus respectivos responsáveis e professores. A maioria dos participantes aceitaram o projeto de educar em saúde. Os professores afirmaram que 70% dos alunos demonstram interesse pelo tema de educação em saúde bucal. Os entrevistados se puseram dispostos a participar de um programa em conjunto envolvendo pais, professores e alunos. Todos os professores participantes consideraram essa integração importante, podendo ocorrer, principalmente, através de projetos pedagógicos. O grupo estudado, além de obter mais conhecimento em saúde bucal, também destacou a importância da presença dos alunos de Odontologia da UEA na escola...


The objective of this study was to get to know health education projects developed in public schools, as well as to assess acceptance of parents, educators, and students. The study samples was composed by students from sixth to ninth grade; their guardians and teachers. Most participants accepted well the health education project. Teachers stated that 70% of students were interested in oral health education. Respondents stood ready to participate in a joint program between parents, teachers and students. All teachers considered this integration important, and pointed out the possibility of it occurrence mainly through educational projects.
