Decades of work have focused on reducing fear, stress, and discomfort in cattle during the preslaughter phase by improving and promoting animal handling, transportation, and management processes. Even still, there is limited information about the effects of preslaughter factors on animal welfare and meat quality outcomes in finished cattle in the United States. This study aimed to track individual animals through the slaughter process to identify preslaughter factors associated with key welfare and quality outcomes. A total of 454 cattle from one commercial slaughter facility were studied. Preslaughter factors assessed included distance traveled, truck waiting time, lairage density, lairage duration, and season. Animal characteristics, i.e., body weight, breed, and sex, were also recorded. One trained observer scored the mobility of all cattle using the North American Meat Institute's 1-4 scale (i.e., normal to extremely reluctant to move). Exsanguination blood was collected and analyzed for cortisol, creatine kinase, and lactate. Carcass bruising was scored using a modified version of the National Beef Quality Audit's bruise-scoring methodology (i.e., no bruise, one bruise ≤ the size of a deck of cards, one bruise > than the size of a deck of cards, and multiple bruises). Ultimate muscle pH was measured 32 to 36 h postmortem. Multi-predictor models were selected for each outcome variable using Akaike Information Criterion. Continuous outcome variables were analyzed using linear mixed-effect models and categorical outcome variables with mixed-effect logistic regression models. Longer truck waiting times were associated with increased cortisol (P = 0.04) and lactate (P = 0.02) concentrations. Similarly, increased lairage duration was associated with increased creatine kinase concentrations (P = 0.05) and the odds of cattle being bruised (P = 0.03). Less space allowance per animal in lairage was associated with increased odds of cattle having impaired mobility (P = 0.01). There was a seasonal effect for many of the measured outcomes; the summer season was associated with greater lactate concentrations (P < 0.0001), increased odds of impaired mobility (P < 0.0001), and increased odds of carcass bruising (P = 0.003). The findings of this study indicate that many of the preslaughter factors assessed influence critical welfare and meat quality outcomes of finished beef cattle, warranting future research and consideration.

The objectives of this study were 1) to understand stakeholder perceptions regarding the bison industry, 2) to benchmark live animal characteristics and production parameters of the bison industry, and 3) to identify live animal factors related to animal welfare and their effect on specific quality characteristics of bison meat. A survey was conducted both online and in-person at the National Bison Association Winter Conference (2022). Descriptive statistics were performed on a total of 110 surveys. Most stakeholders (94%, n = 104) agreed that the industry should continue to grow, and the majority (99%, 108) agreed that animal welfare impacts meat quality. Facility design (80%, n = 88), animal handling (78%, 86), employee training (56%, 62), and transportation duration (56%, 62) were selected as the factors that affect animal welfare. More than half of the stakeholders selected flavor (67%, n = 74) as the most important quality attribute of bison meat. For the in-plant antemortem and postmortem parameters data was collected from three plants in the United States over the course of a year. A total of 2,284 bison (bulls: n = 1,101; cows: n = 199; heifers: n = 984) were included in the study. Antemortem measurements such as distance traveled, vocalization, prod use, mobility, and head bumps were measured, followed by postmortem measurements that included bruise score, live weight, dressing percentage, ribeye area, and instrumental color. Approximately 97% of bison (n = 2,213) had at least one bruise. The average distance traveled from producer to slaughter plant was (mean ±â€…SD; 823 ±â€…583 km) and the average dressing percentage was (mean ±â€…SD; 60.5 ±â€…3.3%). Average (mean ±â€…SD) fat thickness and ribeye area were 1.4 ±â€…1.1 cm and 62.6 ±â€…9.8 cm2, respectively. Approximately 30% (n = 676) of the bison in this study head bumped between 1 and 5 times in the restraining chute or the single-file gate before being stunned. Linear regression indicated that differences in lean a* were associated with plant, number of head bumps in the chute, ribeye area, fat thickness, live weight, and sex class (P < 0.05). Logistic regression indicated that season, sex class, live weight, plant, and season were associated with differences (P < 0.05) in bruising. These results can be used as a baseline for current production parameters and serve as the foundation for future research to monitor improvement.


This project evaluated bison industry stakeholder perceptions on management, animal welfare, and meat quality with in-person and online surveys. Additionally, multiple live animal factors were measured to benchmark their influence on specific meat quality attributes. From the stakeholder surveys, animal handling, bison behavior, employee training, facility design, and transportation duration were identified as the most critical factors that could impact animal welfare in the bison production system. Moreover, the stakeholders understood that animal welfare is a critical component for bison production and that it directly affects meat quality. Live animal production parameters such as distance traveled, season, number of head bumps in the chute, sex class, and live weight were associated with differences in fat thickness, ribeye area, blood splash presence, and instrumental color of bison meat. The results from this study can be used as a baseline for industry improvements and future research.

Preslaughter management factors and their impacts on cattle welfare and meat quality are well documented in current literature. However, certain management factors related to transportation and lairage are underrepresented. Benchmarking preslaughter management factors that can impact welfare and meat quality outcomes will allow the industry to identify areas for improvement. The objective of the current study was to benchmark preslaughter management factors for a nationwide sample of commercial fed cattle processing facilities. Five processing facilities in the West, Midwest, and Southwest regions of the United States were sampled from March 2021 to July 2022. Data were collected on a total of n = 637 slaughter lots representing n = 87,220 head of cattle. Variables of interest included general cattle characteristics, distance traveled to the plant, truck wait times to unload, environmental conditions, lairage density, and lairage duration. Additionally, mobility was scored using a four-point locomotion scale (one being normal, not lame, and four being extremely reluctant to move). Carcasses were also observed for bruising using the following scale: no bruises, bruises smaller or larger than a deck of cards, and having multiple bruises. Descriptive statistics were performed on the data at the lot and individual animal level. On average, cattle traveled 155.8 ±â€…209.6 km (mean ±â€…SD) from the feedlot to the processing facility and waited 30.3 ±â€…39.7 min to unload. Once in lairage pens, cattle were held for 200.7 ±â€…195.0 min. The mean lairage stocking density was 3.1 ±â€…2.0 m2 per head. A majority of the cattle scored a mobility score of 1 (n = 77,645, 91.8%), 7.8% (n = 6,125) were scored as a two and the remaining less than one percent of cattle were scored as either a 3 or 4 (n = 265). Carcasses with bruises less than or equal to the size of a deck of cards (n = 22,672, 27.1%) were less frequent than bruises measuring greater than the size of a deck of cards (n = 34,427, 42.6%). Of carcasses that were bruised, 65.2% (n = 39,856) had multiple bruises of varying size. This baseline data on preslaughter management factors identifies opportunities for improvement in wait times, lairage densities, and factors that cause bruising. Future studies should explore the relationships between these factors and their impacts on welfare and meat quality, report the economic value of these outcomes, and explore industry acceptability and adoptability of optimal preslaughter management practices.

Objective: To assess the efficacy of a single dose of oral meloxicam as an ancillary therapy to an antibiotic given at the time of respiratory disease identification on average daily gain (ADG), behavioral attitude, clinical respiratory, and lung ultrasound scores in preweaned dairy calves. Animals: 215 male and female Holstein, Jersey, and crossbred preweaned calves enrolled between 1 and 14 days of age at study enrollment on a single commercial dairy in the western US. Methods: The study took place from March 4, 2021, to November 21, 2021. In this double-blind placebo-controlled study, calves were given an antibiotic (1.1 mL of tulathromycin/kg, SC, once) and either a placebo (1 mg of lactose monohydrate/kg, in a gelatin capsule) or oral meloxicam (1 mg/kg) at the time of respiratory disease identification. Behavioral attitude, clinical respiratory, and lung ultrasound scores and ADG were assessed in preweaned dairy calves at different time points including the next health examination, 1 week later, or at weaning. Results: There was no association between treatment (placebo vs meloxicam) on ADG or respiratory disease status at weaning (P > .05). There was no effect of treatment on behavioral attitude, clinical respiratory, or lung ultrasound scores at the next health examination or 1 week later (P > .05). Clinical Relevance: The present study did not provide evidence that oral meloxicam given once is beneficial for growth, behavioral attitude, or clinical or lung ultrasound scores.

Trace minerals and vitamins are essential for optimizing feedlot cattle growth, health, and carcass characteristics. Understanding factors that influence trace mineral and vitamin absorption and metabolism is important when formulating feedlot cattle diets. Current feedlot industry supplementation practices typically exceed published trace mineral requirements by a factor of 2 to 4. Therefore, the intent of this review is to briefly discuss the functions of trace minerals and vitamins that are typically supplemented in feedlot diets and to examine the impact of dose of trace mineral or vitamin on growth performance, health, and carcass characteristics of feedlot cattle.

Failure to adequately manage pain in cattle causes suffering and is thus a welfare concern for the livestock industry. The objectives of this study were to summarize caregiver perceptions of the painfulness of various procedures and disease conditions in cattle. This survey also assessed factors that impact the perception of painfulness and determined relationships between pain perception and mitigation in producers and veterinarians in the United States beef and dairy cattle industries. An online survey was distributed via organization listservs and social media groups representing beef and dairy veterinarians and producers. The survey included questions about respondent demographics and pain perception and frequency of pain mitigation use for a variety of common husbandry procedures and disease conditions in cattle less than 2 months, 2-12 months, and greater than 12 months of age. Descriptive statistics were generated, and ordinal logistic regressions were used to assess the relationship between perceived pain level, frequency of pain mitigation use, and respondent demographic factors (e.g., gender, age, and role). There was a relatively low percentage of respondents that identified there was "no pain" associated with the listed procedures and conditions. Across the majority of procedures and conditions and cattle age categories, men perceived procedures to be less painful than women (P < 0.05). Veterinarians and producer-veterinarians perceived procedures to be more painful than producers (P < 0.05) for the majority of procedures and conditions. There were some differences identified between respondent age groups in pain perception but the trends were not consistent across procedures and conditions. There was a significant positive linear trend, with greater perceived pain associated with greater likelihood of providing local and systemic analgesia for all procedures and conditions across all cattle age categories (P ≤ 0.02). Perception of pain is complex and multifactorial, and it influences the likelihood to treat pain in cattle. This research highlighted the importance of understanding how these factors may play a role in increasing the use of pain mitigation within the beef and dairy industries.

The assessment of animal handling is commonly included in cattle care programs. The guidelines set in the National Cattlemen's Beef Association Beef Checkoff funded Beef Quality Assurance (BQA) program are often used for assessing handling on feedlot, stocker, and cow-calf operations. There is limited information about animal handling on cow-calf operations. Thus, the objectives of this study were to: (1) quantify handling outcomes on cow-calf operations and compare them to national BQA program thresholds, and (2) investigate factors associated with handling outcomes. Researchers visited 76 operations across the United States to observe the following outcomes, adapted from the BQA program, during the processing of cows or yearling heifers: Prod Use, Miscatch, Vocalization, Jump, Slip/Stumble, Fall and Run. One hundred cows or less (depending on herd size) were observed moving through a restraint system at each operation. Other information specific to the animal type, facilities, and management were also gathered to be explored as potential predictors of handling outcomes. Data were summarized using descriptive statistics on an operation basis and analyzed with multi-predictor ANOVA or Kruskal-Wallis tests to assess the relationship between outcomes and possible explanatory factors. Predictors included in the final analyses were: BQA certification (BQA), animal temperament (TEMP), region (REGION), chute style (CHUTE), and visual contact with humans (VISUAL). The 76 operations were sampled in 24 states (Central, n = 17; East, 30; West, 29), with herd sizes ranging from 10 animals to more than 5,000 animals. A total of 4,804 animals were observed. There were a substantial number of operations exceeding BQA thresholds for Prod Use (34.0%, 26), Miscatch (46.0%, 35), and Fall (31.6%, 24); the averages of these outcomes also exceeded the BQA thresholds (< 10%, 0%, and 2%, respectively). There was an association between Prod Use and several explanatory factors, including SIZE (P = 0.072), TEMP (P = 0.001), VISUAL (P = 0.027), and BQA (P = 0.104). Miscatch, Vocalization, and Fall all had single associated factors (REGION, P = 0.019; REGION, P = 0.002; VISUAL, P = 0.002, respectively). The VISUAL and TEMP factors had an association with the majority of outcomes. The findings suggest an opportunity for improving handling outcomes, which could be achieved through education and training support regarding the importance of animal handling on-farm. Future work should consider additional aspects of facilities and management that could impact cattle handling outcomes.

Hot-iron branding uses thermal injury to permanently identify cattle causing painful tissue damage. The primary objective was to examine the physiological and behavioral effects of oral meloxicam (MEL), compared to a control, administered at the time of hot-iron branding in Angus and Hereford steers and heifers. The secondary objectives were to investigate breed and sex effects on pain biomarkers. A total of 70 yearlings, consisting of 35 heifers and 35 steers (Angus, Hereford, or Angus × Hereford), were enrolled in the study. Animals were blocked by sex, randomized across weight, and assigned to receive MEL (1 mg/kg) or a placebo (CON). Biomarkers were assessed for 48 h after branding and included infrared thermography (IRT), mechanical nociceptive threshold (MNT), accelerometry and a visual analog scale (VAS), and serum cortisol and prostaglandin E2 metabolites (PGEM). Wound healing was assessed for 12 wk. Hair samples to quantify cortisol levels were taken prior to and 30 d post-branding. Responses were analyzed using repeated measures with calf nested in treatment as a random effect, and treatment, time, treatment by time interaction, breed, and sex as fixed effects. There was a treatment by time interaction for PGEM (P < 0.01) with MEL having lower values than CON at 6, 24, and 48 h (MEL: 18.34 ± 3.52, 19.61 ± 3.48, and 22.24 ± 3.48 pg/mL, respectively; CON: 32.57 ± 3.58, 37.00 ± 3.52, and 33.07 ± 3.48 pg/mL; P < 0.01). MEL showed less of a difference in maximum IRT values between the branded (2.27 ± 0.29 °C) and control site (3.15 ± 0.29 °C; P < 0.01). MEL took fewer lying bouts at 0-12 h (4.91 bouts ± 0.56) compared with CON (6.87 bouts ± 0.55; P < 0.01). Compared with Hereford calves, Angus calves exhibited greater serum but lower hair cortisol, greater PGEM, more lying bouts, and less healed wound scores at 3, 4, and 5 wk. Compared with heifers, steers exhibited lower PGEM, lower branding site and ocular IRT, higher MNT, and lower plasma meloxicam levels. Steers spent more time lying, took more lying bouts and had greater VAS pain, and more healed wound scores at 5 wk than heifers. Meloxicam administration at branding reduced branding and control site temperature differences and reduced lying bouts for the first 12 h. Breed and sex effects were observed across many biomarkers. Changes from baseline values for IRT, MNT, lying time, step count, VAS pain, and wound scoring all support that branding cattle is painful.

Breed and sex effects were observed across a wide range of biomarkers and should be considered in future pain studies. The practicality of administering a nonsteroidal anti-inflammatory drug once at the time of branding is attractive. However, a multimodal approach using a combination of analgesics or longer acting analgesic option warrants further investigation to alleviate pain and discomfort caused by hot-iron branding.

During lairage at slaughter plants, cattle can be exposed to extreme heat conditions from pen densities and holding pen microclimates. While research outlining heat mitigation strategies used in other sectors of the beef supply chain is available, there is no published data on the use of heat mitigation strategies at slaughter plants. The objective of this study was to characterize short-term heat mitigation strategies used by commercial beef slaughter plants in the United States. Twenty-one beef slaughter plants, representing an estimated 60% of beef slaughter in the United States, were included in the study. All plants indicated use of at least one heat mitigation strategy, and five of them used more than one type. Sprinklers/misters were the most commonly used heat mitigation type (n = 17, 81%), and fans were the least common type (n = 4, 19%). Shade usage was present in several plants (n = 7, 33%), ranging from barn style roofs to shade cloths. Respondents indicated that they believed heat mitigation strategies provide benefits both to cattle well-being and meat quality outcomes. Future research should focus on the effectiveness of these techniques in improving animal well-being and quality outcomes in the slaughter plant environment and protocols for optimum implementation.

The objective was to characterize physiological responses to unmitigated surgical castration in calves of varying ages. Thirty male Holstein calves of three ages [<6 w (6W); 3 m (3M); 6 m (6M); n = 10] underwent a simulated castration treatment (SHAM) followed 24 h later by castration (CAST). For both treatments, heart rate variability, eye temperature, and cortisol were measured over time from treatment to specified end points to capture the acute response period. Interactions between treatment and age (p = 0.035) and time and age (p < 0.001) were noted for cortisol. The 6W calves had lower cortisol compared to 6M calves at SHAM and CAST. Cortisol of 6W calves decreased from peak to pre-treatment levels faster than 6M calves. An interaction between time and age was reported in squared differences of inter-beat-intervals (RMSSD; p = 0.02) and high-frequency power (HFP; p = 0.05), whereby both responses decreased in 6W calves during the sampling period which was not seen in 3M and 6M calves. Average eye temperature (AET) differed by age (p = 0.0018) whereby 6W calves had lower AET than 6M calves (p = 0.0013) regardless of treatment and time. The findings suggest that responses to unmitigated surgical castration seem to be mediated by the autonomic nervous system in an age-related manner.

The COVID-19 pandemic had significant consequences on cattle slaughter capacity in the United States. Although industry stakeholders implemented strategies to minimize cattle welfare impacts of increased weights, days on feed (DOF), and increasing temperatures, there were concerns that mobility challenges would be observed at slaughter facilities. The objectives of this study were to characterize mobility in fed cattle during this recovery period and to identify factors impacting mobility. A total of 158 groups of cattle (15,388 animals) from one slaughter facility were included in the study. A 4-point mobility scoring system was used to assess cattle mobility. Cattle at the facility with normal mobility scores were reduced from the historical average of 96.19% to 74.55%. No increase in highly elevated mobility scores was observed. Mobility was impacted by weight, temperature humidity index (THI), distance hauled, sex, and DOF, with results differing by mobility category. Weather was a key contributor to mobility challenges; the relative risk of observing an elevated mobility score was 45.76% greater when the THI changed from No Stress to Mild Stress. Despite the challenges that the industry faced during this period, efforts to minimize negative effects on cattle welfare by enhanced focus on low-stress handling were effective.

Castration is a common management procedure employed in North American cattle production and is known to cause a pain response. The present study was designed to investigate the effect of unmitigated surgical castration on the electroencephalography (EEG) responses and plasma substance P (SP) concentrations in calves of different ages under the same experimental conditions. Thirty male Holstein calves in three age categories [<6 weeks (6W); 3 months (3M); 6 months (6M); 10 calves per age group] were used in the study. Calves were subjected to a simulated castration session (SHAM) followed 24 h later by surgical castration (CAST) without analgesia. An EEG analysis was performed before the procedure (i.e., baseline), at treatment, and 0-5, 5-10, and 10-20 min post-treatment for both SHAM and CAST, respectively. Blood samples were collected immediately prior to both treatments (time 0) and again at 1, 2, 4, 8, and 12 h after both treatments. The EEG results showed a three-way interaction between treatment, age, and time for delta and beta absolute power, beta relative power, total power, and median frequency (p = 0.004, p = 0.04, p = 0.04, p = 0.03, and p = 0.008, respectively). Following CAST, EEG total power decreased, and median frequency increased relative to SHAM in 6W and 3M calves only following treatment. For 6W and 3M calves, delta and beta absolute power increased at CAST and at later time points relative to SHAM. Marginal evidence for two-way interactions was noted between time and treatment and between age and treatment on the concentration of SP (p = 0.068 and p = 0.066, respectively). Substance P concentrations decreased in CAST treatment compared to SHAM at the later times (8 h: p = 0.007; 12 h: p = 0.048); 6W calves showed lower SP concentration at CAST relative to SHAM (p = 0.017). These findings indicate variation in EEG responses and in SP concentrations following unmitigated surgical castration in calves and that these responses may be age specific. These EEG findings have implications for supporting the perception of the pain associated with surgical castration in young calves and emphasize the urgency of pain mitigation strategies during routine husbandry practices such as castration, as typically implemented in North American cattle management.

The objectives of this study were to identify caretakers' perceptions and stressors related to performing on-farm euthanasia as well as potential ideas for intervention strategies to alleviate negative effects of performing euthanasia on caretaker well-being. Additionally, we aimed to determine how euthanasia methods, procedures, and training correlate with dairy caretakers' attitudes toward performing on-farm euthanasia and their job satisfaction and sense of well-being. Thirty-eight dairy caretakers (19 workers, 15 supervisors, 3 owners, 1 veterinarian) participated in focus groups or interviews conducted and recorded on five Northern Colorado dairies. Thematic analysis of focus group and interview transcripts revealed seven recurring themes. Variation in available training and euthanasia protocols among dairy farms was evident. There was a lack of awareness regarding available mental health resources and little communication between farm personnel about euthanasia-related stress. Training was correlated with caretaker knowledge about euthanasia procedures and the language used to refer to euthanasia. Human-animal bonds and empathy toward animals were evident in participants regardless of training, job position, or dairy experience. Interventions such as training programs, mental health resources, and other support systems should be tested for effectiveness in addressing euthanasia-related stressors, improving euthanasia decision-making and practice, and increasing animal wellbeing on dairy farms.

Shade is a mechanism to reduce heat load providing cattle with an environment supportive of their welfare needs. Although heat stress has been extensively reviewed, researched, and addressed in dairy production systems, it has not been investigated in the same manner in the beef cattle supply chain. Like all animals, beef cattle are susceptible to heat stress if they are unable to dissipate heat during times of elevated ambient temperatures. There are many factors that impact heat stress susceptibility in beef cattle throughout the different supply chain sectors, many of which relate to the production system, that is, availability of shade, microclimate of environment, and nutrition management. The results from studies evaluating the effects of shade on production and welfare are difficult to compare due to variation in structural design, construction materials used, height, shape, and area of shade provided. Additionally, depending on operation location, shade may or may not be beneficial during all times of the year, which can influence the decision to make shade a permanent part of management systems. Shade has been shown to lessen the physiologic response of cattle to heat stress. Shaded cattle exhibit lower respiration rates, body temperatures, and panting scores compared with unshaded cattle in weather that increases the risk of heat stress. Results from studies investigating the provision of shade indicate that cattle seek shade in hot weather. The impact of shade on behavioral patterns is inconsistent in the current body of research, with some studies indicating that shade provision impacts behavior and other studies reporting no difference between shaded and unshaded groups. Analysis of performance and carcass characteristics across feedlot studies demonstrated that shaded cattle had increased ADG, improved feed efficiency, HCW, and dressing percentage when compared with cattle without shade. Despite the documented benefits of shade, current industry statistics, although severely limited in scope, indicate low shade implementation rates in feedlots and data in other supply chain sectors do not exist. Industry guidelines and third-party on-farm certification programs articulate the critical need for protection from extreme weather but are not consistent in providing specific recommendations and requirements. Future efforts should include: updated economic analyses of cost vs. benefit of shade implementation, exploration of producer perspectives and needs relative to shade, consideration of shade impacts in the cow-calf and slaughter plant segments of the supply chain, and integration of indicators of affective (mental) state and preference in research studies to enhance the holistic assessment of cattle welfare.

The purpose of this study was to gain a better understanding of euthanasia training, caretaker perceptions of euthanasia, and available resources for individuals who perform euthanasia as part of their job on swine operations in the United States. An online survey was distributed via an e-newsletter and in-person recruitment at swine industry events. Survey questions were related to training, attitudes towards performing euthanasia, work environment, and communication. Forty-five responses (17 workers, 21 managers, 7 owners) were recorded and summarized. The majority of workers (n = 14, 82%) agreed that they had "received enough training to euthanize pigs correctly" and that training had made them "confident about performing euthanasia", yet 35% (6) also indicated they would like more euthanasia training. Less than one-third of workers indicated that strategies for dealing with "personal stress" (4, 24%) and "emotional wellness" 29% (5) were included in training programs but the majority (14, 82%) agreed that "trainings included human safety while performing euthanasia". Most caretakers (37, 82%) agreed that they felt they could "communicate with my supervisors" if they felt uncomfortable performing euthanasia. Opportunities for the future include enhancing euthanasia training opportunities and content to include more awareness of strategies to deal with stress related to euthanasia.

Livestock bruising is both an animal welfare concern and a detriment to the economic value of carcasses. Understanding the causes of bruising is challenging due to the numerous factors that have been shown to be related to bruise prevalence. While most cattle bruising studies collect and analyze data on truckload lots of cattle, this study followed a large number (n = 585) of individual animals from unloading through postmortem processing at five different slaughter plants. Both visual bruise presence and location was recorded postmortem prior to carcass trimming. By linking postmortem data to animal sex, breed, trailer compartment, and traumatic events at unloading, a rich analysis of a number of factors related to bruise prevalence was developed. Results showed varying levels of agreement with other published bruising studies, underscoring the complexity of assessing the factors that affect bruising. Bruising prevalence varied across different sex class types (P < 0.001); 36.5% of steers [95% confidence interval (CI): 31.7, 41.6; n = 378], 52.8% of cows (45.6, 60.0; 193), and 64.3% of bulls (no CI calculated due to sample size; 14) were bruised. There was a difference in bruise prevalence by trailer compartment (P = 0.035) in potbelly trailers, indicating that cattle transported in the top deck were less likely to be bruised (95% CI: 26.6, 40.4; n = 63) compared to cattle that were transported in the bottom deck (95% CI: 39.6, 54.2; n = 89). Results indicated that visual assessment of bruising underestimated carcass bruise trimming. While 42.6% of the carcasses were visibly bruised, 57.9% of carcasses were trimmed due to bruising, suggesting that visual assessment is not able to capture all of the carcass loss associated with bruising. Furthermore, bruises that appeared small visually were often indicators of larger, subsurface bruising, creating an "iceberg effect" of trim loss due to bruising.

Euthanasia is a critical component in swine production and veterinarians play an important role in euthanasia protocol development and training. This study aimed to understand veterinarian involvement in and perspectives on euthanasia on pig farms. An online survey was disseminated both at a pig welfare conference and online via a veterinarian e-newsletter. Twenty-five veterinarians participated in the survey. The majority of respondents indicated that caretakers are the individuals making euthanasia decisions and performing the task (n = 17, 68% and 22, 88%, respectively). The majority (22, 88%) of respondents indicated that most of the facilities with which they work have a written euthanasia protocol, and 72% (18) indicated that they assisted in protocol development. Only half of respondents (13, 52%) agreed that "all employees performing euthanasia have been trained adequately", and 80% (20) identified an interest in delivering more training. Less than half the respondents indicated that strategies for coping with "personal stress" and "emotional wellness" (12, 48%) were included in euthanasia training. While the moral stress of performing euthanasia is recognized, there is opportunity for addressing mental well-being in euthanasia resources. Although preliminary, this study supports the need for further euthanasia training on-farm, involving veterinarians in the process.

OBJECTIVE: To evaluate IM injection of oxytetracycline as an experimental model to induce pain and assess the analgesic efficacy of flunixin meglumine (FM) in dairy cows. ANIMALS: 15 healthy nonlactating Jersey (n = 10) and Holstein (5) cows. PROCEDURES: In the first of 2 experiments, 5 Jerseys were administered oxytetracycline (10 mg/kg, IM), divided between the right side of the neck and left hind limb. The left side of the neck and right hind limb received sham injections. Cows were also randomly assigned to receive FM (2.2 mg/kg, IV; n = 3) or an equal volume of saline (0.9% NaCl) solution (0.044 mL/kg, IV; control; 2) once daily for 5 days. The mechanical nociceptive threshold (MNT) was measured before oxytetracycline administration and at predetermined times after each injection of the assigned treatment. Experiment 2 was similar to experiment 1 except it involved 5 Jerseys and 5 Holsteins, oxytetracycline was injected only in a hind limb, and the assigned treatment was administered for 10 days. RESULTS: For both experiments, mean MNT for the oxytetracycline injection site was consistently less than that for the sham injection site in the hind limbs, and mean MNT at the hind limb oxytetracycline injection site for FM-treated cows was greater than that for control cows beginning on day 3. CONCLUSIONS AND CLINICAL RELEVANCE: IM injection of oxytetracycline in a hind limb reliably induced signs of pain in dairy cows and, with validation, might be useful as an experimental model for assessing pain mitigation strategies in cattle.

Animal welfare within the U.S. slaughter industry continues to prevail as one of the top priorities for livestock producers, businesses, and consumers alike. There are federal regulations that enforce the humane transport, handling, and slaughter of cattle. The journey that cattle must make to the slaughter facility is comprised of many environmental and human factors that can positively or negatively affect animal welfare. Cattle may be exposed to multiple stressors, such as noise, unfamiliar animals and humans, temperature extremes, temporary food/water deprivation, variable transport distances and experiences, and new pen conditions. The animal caretakers involved in these processes attempt to minimize stress and discomfort for the animals, but research is needed to focus on the gaps in knowledge and to support the implementation of strategies known to enhance the human-animal interactions that occur from farm to slaughter. This literature review will provide a summary of fed cattle welfare topics, research, and industry tools that span across the beef animal's journey from the farm/feedlot through the slaughter process. In addition, areas that have had little research focus are identified to highlight the need for future work and development of industry tools. Some of these topics include examining trailer design, the use of trailer slats during weather extremes, the welfare aspects of cattle destined for salvage slaughter, multiple preslaughter factors and interactions, abnormal mobility and nonambulatory cattle, lairage environmental conditions, new stunning methods, and the impact of a well-trained, motivated, and stable workforce on cattle and people welfare. The authors conducted a survey at the 2019 North American Meat Institute Animal Care and Handling Conference, which comprised of stakeholders within the meat packing industry, packing plant employees, and food company employees, educators, and auditors. The survey responses identified training/education and communication as areas of need in animal welfare, whereas the majority of survey responses focused on the aspects of the human-animal interaction as the top challenges for the industry. By continuously identifying, measuring, monitoring, and managing animal welfare challenges within the beef cattle slaughter industry, prioritization and execution of programs and training that improve the welfare of cattle can be achieved as animals move through this final stage of the meat production system.

Hind limb post stunning kicking in properly stunned unconscious cattle is a safety hazard for employees. Three different captive bolt lengths of 15.2 cm (STRD), 16.5 cm (MED), and 17.8 cm (LON) were evaluated for amount of tissue damage and hind limb kicking in a Jarvis USSS-1 pneumatic stunner. The air pressure setting was 1378.95 to 1447.90 pKa for all captive bolts. All 45 test cattle were rendered unconscious with a single shot. There was a trend (P = .06) for less kicking to occur when the 16.5 cm length bolt was used in the stunner. Visual appraisal of the brains on the split heads indicated that the shortest bolt caused the least amount of brain damage. The brainstems were intact for all cattle regardless of captive bolt treatment. Young fed English, Continental European, and Holstein steers and heifers can be effectively stunned without visible brainstem disruption.
