RESUMO

Lentil (Lens culinaris) is a protein-rich legume consumed worldwide and it also has the potential to become an alternative source of protein ingredient for human nutrition. The aim of this study was to determine the best processing parameters for the whole grain protein wet extraction, as well as to analyze the techno-functional properties, and physical characteristics of the protein concentrate and its flour. It was also evaluated the application of the concentrate into a fish-like croquette. The processing route was carried out by alkaline extraction and acid precipitation of the proteins where the pH, stirring time and solute:solvent ratio were evaluated. The final dried protein concentrate presented 85% protein on dry basis and a mass yield of 14%. The results were reproducible when tested on a first scaling up test. For the techno-functional properties, solubility, water and oil retention capacities, emulsification and foaming capacities and stability, and gelling capacity were tested. As for the food application into fish-like croquettes, the lentil protein showed similar scores for sensory acceptance, flavor and texture when compared to a commercial clean-taste concentrate. The results observed in this study were compatible to other alternative pulse-protein ingredients on the market, positioning lentil protein as a promising alternative protein source to produce ingredients for the plant-based market.

Grape skin is a wine by-product with a high fiber and phenolic compound content, with potential application as an ingredient in food products. This work aimed to study the hedonic and sensory perception of the consumer using the Check-all-that-apply about cereal bars made with grape skin flour (GSF) obtained from wine residue. Grape skin flour with different granulometric ranges (coarse and fine) was added to the cereal bars in different proportions (10, 15, and 20%) to replace the oat flakes present in the formulation. Sensory acceptance results showed that all bars had good acceptance scores (>6.42) and presented different sensory profiles. The cereal bar containing 15% of coarse GSF had good sensory acceptance with attributes "few dark spots," "light color," and "softer," with desirable sensory characteristics and from the nutritional point of view with high fiber content and bioactive compounds and it was considered the best formulation. Therefore, the incorporation of wine by-products in cereal bars showed excellent acceptability and the possibility of insertion in the market.

A lycopene-rich watermelon (Citrullus lanatus) concentrate was incorporated into snack cracker, fusilli pasta, and extruded snacks for coloring purposes. Changes in the L* and a* color coordinates and in the lycopene content were evaluated before and after thermal processes and monitored through 90 days of storage at ambient temperature. The products with the maximum lycopene degradation during processing were snack cracker and extruded snack (between 30 and 45%) whereas no degradation was observed in the fusilli pasta, except during cooking into boiling water (reduction up to 41%). The change in color during processing varied substantially depending on the product, but, in general, thermal treatments applied reduced the a* values (less reddish). The degradation kinetics of the lycopene and the color during storage followed first-order kinetics, with a half-life time of 25 to 315 days for lycopene content and 65 to 210 days for a* coordinate. Snack cracker was the most stable and had more than a 4-month period before losing half of the pigment content.

Pequi fruit (Caryocar brasiliense Camb) is considered important since its pulp has a high content of oil and carotenoids. The oil's triacylglycerols (TAGs) contain mainly oleic (~57%) and palmitic (~36%) fatty acids, distributed primarily among POO, POP/PPO, and OOO TAGs. It displays a tendency to fractionate upon storage and has a relatively low melting temperature (SFC of 4% at 25°C). Pequi oil was modified through chemical interesterification, which increased the PPP content to ~6%. This caused a flattening in the SFC-temperature profile, raising the end of melt temperature significantly (SFC of 4% at 39°C). The interesterified oil does not fractionate and is thermally stable up to 40°C, with an SFC-temperature profile resembling that of roll-in shortening (SFC of 31% at 16°C) despite containing high amounts of oleic acid. Crystallization and melting behavior changed. Crystal packing became more disorganized as evidenced by a significant decrease in crystalline domain size in the [001] direction from 42.3 nm to 32.1 nm. Polymorphism remained of the triclinic (ß) subcell type but polytypism changed from the 3L to the 2L type. Polarized light microscopy demonstrated that interesterification dramatically decreased crystal size, consistent with a higher rate of nucleation in the material. Moreover, the dramatic improvement in physical stability and functionality was not accompanied by a significant decrease in total carotenoid content (~390 mg/kg).

The sensory acceptance and the content of bioactive compounds of whole-sorghum and whole-wheat breakfast cereals were compared. Sensory acceptance was assessed using the Food Action RatingScale. 3-Deoxyanthocyanidins, flavones and flavanones were determined by high-performance liquid chromatography (HPLC) with diode array detection, and vitamin E by HPLC with fluorescence detection. Total phenolics and antioxidant activity were determined by spectrophotometry. The sorghum breakfast cereal had better sensory acceptance (70.6%) than wheat breakfast cereal (41.18%). Sorghum had higher 3-deoxyanthocyanidin content (100% higher), total phenolic compounds (98.2% higher) and antioxidant activity (87.9% higher) than wheat breakfast cereal. Flavones and flavanones were not detected in both breakfast cereals. Total vitamin E content was 78.6% higher in wheat than in sorghum breakfast cereal. Thus, consumption of whole sorghum breakfast cereal should be encouraged, since it had good sensory acceptance and is a source of bioactive compounds that can promote benefits to human health.

The aim of this study was to investigate the effect of thickness (between 80 and 120 µm) on apparent opacity, water vapor permeability and mechanical properties (tensile and puncture) of oat starch films plasticized with glycerol, sorbitol, glycerol:sorbitol mixture, urea and sucrose. Films were stored under 11, 57, 76 and 90% relative humidity (RH) to study the mechanical properties. It was observed that the higher the thickness, the higher was the opacity values. Films without the plasticizer were more opaque in comparison with the plasticized ones. Glycerol:sorbitol films presented increased elongation with increasing thickness at all RH. Puncture force showed a strong dependence on the film thickness, except for the films plasticized with sucrose. In general, thickness did not affect the water permeability.

A produção do maracujá amarelo cresce no Brasil e o descarte inadequado das cascas representa tanto umproblema para o meio ambiente, como a perda de ingrediente rico em fibras. O seu uso é fonte de rendapara o produtor rural. Esta revisão traz os estudos que têm sido realizados sobre o aproveitamento da cascado maracujá, considerando-se os aspectos nutricionais e, também, uma alternativa segura, em termostoxicológicos, para o aproveitamento desse resíduo. Muitos autores avaliaram a casca do maracujá edetectaram teores de fibra alimentar de 35 a 90 %; e os benefícios do seu consumo foram identificados pormeio de testes in vivo em ratos e em humanos. Em função de interesse, incentivou-se o desenvolvimentode produtos enriquecidos em fibra alimentar utilizando esse resíduo como componente da formulação. Hámuito tempo foram identificados glicosídeos cianogênicos no maracujá, exceto nas sementes. Os efeitostóxicos de alimentos com cianogênicos são observados em países africanos, onde é comum o consumoda mandioca brava sem o tratamento adequado. O processo de extrusão termoplástica tem sido estudadocomo ferramenta útil na redução de substâncias tóxicas e sua utilização será importante para processar ascascas e reduzir cianogênicos aos níveis aceitáveis pela legislação.

Um delineamento fatorial incompleto 33 foi utilizado para estudar o efeito do tratamento com peróxido de hidrogênio alcalino associado à extrusão sobre algumas propriedades funcionais da fibra da casca de aveia. As variáveis do tratamento avaliadas incluíram teor de peróxido de hidrogênio (%), umidade da amostra (%) e temperatura de extrusão (ºC). A análise de variância (ANOVA) mostrou que a temperatura foi a variável mais importante para as propriedades de hidratação. Os maiores valores de capacidade de retenção de água (CRA) e volume de intumescimento foram obtidos na condição de 7% de peróxido de hidrogênio, 32% de umidade e 90ºC de temperatura, obtendo um incremento de 70% na CRA e 55% no volume de intumescimento. A medida instrumental de cor foi usada para analisar as modificações ocorridas neste parâmetro. O mais alto valor de luminosidade foi alcançado com maior nível de peróxido de hidrogênio (7%), obtendo-se, nessa condição, produtos mais claros. Ensaios realizados para controle mostraram que tanto a extrusão quanto o tratamento químico tiveram efeito nas propriedades avaliadas, e que o efeito conjunto foi superior ao de cada um isoladamente. As modificações ocorridas nas fibras foram acompanhadas indiretamente, através das propriedades de hidratação.
