RESUMO

The aim of this study was to identify the influence of different catching practices during manual upright handling on broiler welfare and behavior. Catching was examined in a total of 4,595 Cobb broilers with average live weight of 3.2 kg and 42 days old. Six catching practices were evaluated: shed curtain position, loading time, catching method, catching team, height of the crates from the floor, and placement of the bird in the crate. Behavioral welfare indicators were defined as follows: 1) broiler agitation in the catcher's hands, measured when the birds flapped their wings, kicked, or wriggled in the hands; 2) broiler striking the crate entrance as it was being placed in the crate, measured when the birds get the head, wings, or legs, hit at the crate entrance; and 3) broiler agitation in the crate, measured when birds flapped the wings or jumped inside the crate for 3 s or more after placement in the crate. A logistic regression model was used to calculate the chance of occurrence of each behavioral welfare indicator due to the handling factors. All catching practices evaluated in the present study influenced the birds' welfare and behavior. Thus, some procedures during broiler catching potentially improved their behavior, making them less prone to accidents, and consequently improved their welfare. The catching process should be performed with the curtains in the closed position, carrying one broiler per catcher in an upright position while containing its wings, carefully placing the birds inside the crates, and with the crates being positioned at a height of at least 21 cm from the ground. Additionally, it was concluded that more attention should be given to the broiler catchers, since the position of the curtain, loading time, and position of the crate during handling can influence the work done by them, affecting the welfare and behavior of both humans and birds.

This study examined the effect of neck cut position on the time to physical collapse in upright restrained halal slaughtered cattle (n = 644). Time to collapse was used as an indirect indicator of the early stages of onset of unconsciousness. Cattle were slaughtered with either a conventional low (LNC) (n=561) or a high neck cut (HNC) (n = 83). Mean time to final collapse was higher in the LNC compared to HNC group (18.9 ± 1.1s and 13.5 ± 1.3s respectively (P < 0.01)). The mean false aneurysm scores were higher in the LNC cattle (0.8 ± 0.0) compared to the HNC (0.6 ± 0.1) (P < 0.01). Animals that took > 20s to final collapse had larger false aneurysms. In summary, the HNC reduced the mean time to final collapse and the frequency of animals that took longer than 20s to collapse.

Captive bolt stunning is used for rendering livestock insensible at slaughter. The mechanical factors relating to performance of 6 penetrating captive bolt gun (CBG) models were examined. The Matador Super Sécurit 3000 and the .25 Cash Euro Stunner had the highest kinetic energy values (443 J and 412 J, respectively) of the CBGs tested. Ninety percent (27/30) of CBGs held at a government gun repository (United Kingdom) were found to have performed at a normal standard for the model, while 53% (10/19) of commercial contractor CBGs tested were found to underperform for the gun model. When the .22 Cash Special was fired 500 times at 4 shots per min, the gun reached a peak temperature of 88.8°C after 2.05 hr. Repeat firing during extended periods significantly reduced the performance of the CBG. When deciding on the appropriate CBG/cartridge combination, the kinetic energy delivered to the head of the nonhuman animal, bolt penetration depth, and species/animal type must be considered. It is recommended that CBGs are routinely checked for wear to the bolt and barrel if they are repeatedly fired in a session.

RESUMO

In 2012, the World Organisation for Animal Health adopted 10 'General Principles for the Welfare of Animals in Livestock Production Systems' to guide the development of animal welfare standards. The General Principles draw on half a century of scientific research relevant to animal welfare: (1) how genetic selection affects animal health, behaviour and temperament; (2) how the environment influences injuries and the transmission of diseases and parasites; (3) how the environment affects resting, movement and the performance of natural behaviour; (4) the management of groups to minimize conflict and allow positive social contact; (5) the effects of air quality, temperature and humidity on animal health and comfort; (6) ensuring access to feed and water suited to the animals' needs and adaptations; (7) prevention and control of diseases and parasites, with humane euthanasia if treatment is not feasible or recovery is unlikely; (8) prevention and management of pain; (9) creation of positive human-animal relationships; and (10) ensuring adequate skill and knowledge among animal handlers. Research directed at animal welfare, drawing on animal behaviour, stress physiology, veterinary epidemiology and other fields, complements more established fields of animal and veterinary science and helps to create a more comprehensive scientific basis for animal care and management.

Slaughter by puntilla followed by neck sticking was examined in 309 cattle, to assess the humaneness of this method. After the neck stab, brain and spinal function as well as presence of selected cognitive responses were measured. In addition breed, sex, live weight, body condition score, number of stabs given and level of experience of the slaughterman were recorded. Repeat stabbing was needed to penetrate the foramen ovale in 24% of the animals, and was significantly less frequent in slaughtermen who were experienced, and more frequent in heavy weight animals (>380 kg). Prevalence of brain and spinal function was 91%. When animals attempted to stand after the neck stab they were more likely to have rhythmic breathing, positive palpebral response and responsiveness to threat, noise and short air stimulus. These findings indicate that nerve pathways are often functional after neck stab and therefore it is highly likely that the animals are still conscious.

Slaughter by puntilla followed by neck sticking was examined in 20 recumbent llamas. Repeat stabbing was needed to penetrate the foramen ovale in 45% of the llamas, and two animals attempted to stand after the first stab. Puntilla was found to be ineffective, as all animals showed rhythmic breathing movements at the flank following puntilla and before sticking, and 95% had a positive palpebral reflex at the same time. The findings indicated that it is difficult in practice to penetrate the spinal cord with a single puntilla stab.

It has previously been shown that the cattle brain is supplied with blood via a basi-occipital plexus, in addition to branches from the carotid and basilar arteries. In addition it has been shown during conventional stunning and slaughter that the carotid arteries in cattle can develop false aneurysms at their severed ends and this can curtail exsanguination. This investigation examined whether false aneurysms can occur during religious slaughter, and during bleeding following electrical stunning that simultaneously induced a cardiac arrest. The prevalence of large (>3cm outer diameter) false aneurysms in cattle carotid arteries was 10% for both shechita and halal slaughter. The prevalence of animals with bilateral false aneurysms (at least 2cm in one artery and at least 3cm diameter in the opposite artery) was 7% and 8% for shechita and halal slaughter, respectively. No false aneurysms occurred during bleeding in cattle that were electrically stunned and simultaneously developed a cardiac arrest. The combination of false aneurysms and collateral routes to the brain present a risk of sustained consciousness during religious slaughter in cattle.

The prevalence of shallow depth of concussion following captive bolt shooting was assessed in 1608 cattle at an abattoir. Depth of concussion was determined in each animal from physical collapse, presence or absence of corneal reflex, normal rhythmic breathing, eyeball rotation, and whether the animal was re-shot. The presence of nystagmus and the absence of tongue protrusion were also monitored as potential indicators of a shallow depth of concussion, and simultaneous noise measurements assessed whether loudness of gun discharge was linked to concussion depth. The prevalence of a shallow depth of concussion was 8% for all cattle and 15% for young bulls. Nystagmus was associated with other indicators of a shallow depth of concussion. Absence of tongue protrusion was not associated with depth of concussion, but could serve as a useful indicator of jaw relaxation and insensibility following exsanguination. Soft-sounding shots (⩽111dB) when using 4.5 gr cartridges were associated with shallow depth of concussion.

The effects of eight different pre-slaughter diets on gut microflora, pH and dry matter were evaluated in 112 slaughter-weight, pasture-finished heifers. Hide dirtiness at slaughter, plasma cortisol, meat pH and stickiness, and liveweight loss, were also examined. The pre-slaughter diets were: 48 h of 100% meadow hay, lucerne hay, red clover hay, perennial ryegrass hay, haylage, haylage supplemented with maize silage, pasture, or 24 h fasting before transport. Fasted animals had the highest counts of rumen Escherichia coli and Enterobacteria compared to other treatments (P<0.001), while red clover hay and haylage had the lowest (P<0.05). Faecal E. coli counts were also highest for fasted animals (P<0.05). Rumen E. coli and Enterobacteria counts were positively correlated with rumen pH (P<0.001), and negatively correlated with fibre intake (P<0.001). Diet significantly affected the pH of both the rumen and faeces (P<0.001), with fasted animals having the highest rumen pH and haylage and red-clover hay-fed animals the lowest. Dry matter (%) of the rumen contents was also significantly affected by diet (P<0.001). The mean carcass weight of fed heifers was 5 kg heavier than that of the fasted heifers (P<0.05). A pH/volatile fatty acid (VFA) dependent mechanism is suggested as the major mode for E. coli suppression by feeds used in the study. Coumarins may have contributed to lower ruminal and faecal E. coli counts with E. coli counts negatively correlated with expected coumarin ingestion (P<0.01). Feeding pasture-fed cattle conserved herbaceous forages, in preference to fasting, before transport for slaughter may prove beneficial in reducing the risk of carcass contamination with E. coli and other bacteria of digesta and/or faecal origin, and in protecting carcass weight.
