RESUMO

The nutritional value and biological properties of 24 samples of Chilean edible mushrooms were evaluated. The nutritional value was determined by measuring moisture, protein, fat, ash and carbohydrate contents. The biological activity was determined by using antibacterial, antifungal and antioxidant tests. The mushrooms showed high total carbohydrate (83.65-62.97 g/100 g dw) and crude protein (23.88-8.56 g/100 g dw) contents, but low fat contents (6.09-1.05 g/100 g dw). Ch2Cl2-extracts were more active against bacteria and fungi than MeOH-extracts. Ch2Cl2-extracts of B. loyo, C. lebre, L. edodes, M. conica and R. flava inhibited the growth of Gram-positive bacteria. The Ch2Cl2-extracts of A. cylindracea, B. loyo, and G. gargal showed strong effects against fungi. R. flava showed the highest phenolic content and antioxidant activity. The Chilean species B. loyo, C. lebre and G. gargal exhibited interesting nutritional value and biological properties, showing potential to be used as a dietary nutritional supplement.

Background: Helicobacter pylori is considered as the main risk factor in the development of gastric cancer. In the present study, we performed a detailed characterization of the probiotic properties and the anti-H. pylori activity of a previously isolated lactobacillus strain ­ Lactobacillus fermentum UCO-979C ­ obtained from human gut. Results: The strain tolerated pH 3.0; grew in the presence of 2% bile salts; produced lactic acid and hydrogen peroxide; aggregated in saline solution; showed high hydrophobicity; showed high adherence to glass; Caco-2 and gastric adenocarcinoma human cells (AGS) cells; showed an efficient colonization in Mongolian Gerbils; and potently inhibited the growth and urease activity of H. pylori strains. L. fermentum UCO-979C significantly inhibited H. pylori-induced IL-8 production in AGS cells and reduced the viability of H. pylori. With regard to innocuousness, the strain UCO-979C was susceptible to several antibiotics and did not produce histamine or beta-haemolysis in blood agar containing red blood cells from various origins. Conclusion: The results demonstrated that L. fermentum UCO-979C is a very good candidate as a probiotic for the protection of humans against H. pylori infections.

The aim of this study was to evaluate the effects of high hydrostatic pressure treatment at three pressure levels (300, 400 and 500Mpa) on the functional and quality characteristics of Aloe vera gel including vitamin C and E, aloin, minerals, phenolic content and antioxidant activity. The results show that HHP exerted a clear influence on minerals content, vitamin C and E content, antioxidant activity, total phenolic and aloin content. After 35days of storage all treated samples presented a decrease in mineral content, except for phosphorus. Total phenolic content and vitamin C and E content decreased at high pressures (500MPa), while all pressurised samples showed a higher antioxidant activity and aloin content than untreated sample after 35days of storage. The maximum values of antioxidant activity and aloin were 6.55±1.26µg/ml at 300MPa and 24.23±2.27mg/100g d.m. at 400MPa.
