This is the first study on the modeling of the controlled release of the estimated antioxidants (flavonoids or flavonolignans) from ß-cyclodextrin (ß-CD)/hydrophilic vegetable extract complexes and the modeling of transdermal pharmaceutical formulations based on these complexes using an overall estimation by the spectrophotometric method. The Korsmeyer-Peppas model was chosen for evaluating the release mechanisms. ß-CD/chamomile (Matricaria chamomilla L., Asteraceae) ethanolic extract and ß-CD/milk thistle (Silybum marianum L., Asteraceae) ethanolic extract complexes were obtained by the co-crystallization method with good recovering yields of 55-76%, slightly lower than for ß-CD/silibinin or silymarin complexes (~87%). According to differential scanning calorimetry (DSC) and Karl Fischer water titration (KFT), the thermal stability of complexes is similar to ß-CD hydrate while the hydration water content is lower, revealing the formation of molecular inclusion complexes. In the Korsmeyer-Peppas model, ß-CD/M. chamomilla flower extract complexes reveal Case II transport mechanisms, while the corresponding complexes with leaf extracts indicate non-Fickian diffusion for the controlled release of antioxidants in ethanol 60 and 96%. The same non-Fickian diffusion was revealed by ß-CD/S. marianum extract and ß-CD/silibinin complexes. On the contrary, almost all model transdermal pharmaceutical formulations based on ß-CD/M. chamomilla extract complexes and all those based on ß-CD/S. marianum extract complexes revealed non-Fickian diffusion for the antioxidant release. These results indicate that H-bonding is mainly involved in the diffusion of antioxidants into a ß-CD based matrix, while the controlled release of antioxidants in model formulations is mainly due to hydrophobic interactions. Results obtained in this study can be further used for studying the particular antioxidants (namely rutin or silibinin, quantified, for example, by liquid chromatographic techniques) for their transdermal transport and biological effects in innovatively designed pharmaceutical formulations that can be obtained using "green" methods and materials.

The Metabolic Food Waste MFW (kg of food) first developed in 2016 as a new indicator by Serafini and Toti, indicates the amount of food consumed above the nutritional requirements, and the impact of this overconsumption on the environment. It is necessary to identify the causes and to develop potential methods to prevent and reduce MFW, at the same time as increasing consumer awareness about unsustainable diets and changing diet habits towards more environmentally conscious consumption patterns. This study was conducted by collecting and analysing existing reports and studies regarding nutritional requirements, consumer behaviour related to food consumption and food waste, environmental impacts of food waste, and the concept of Metabolic Food Waste. The process of data collection involved searching the studies available online, using keywords related to the subject of MFW and overconsumption. The references in the initial studies consulted were also analysed in order to further identify new data relevant to overconsumption and MFW. The materials studied and analysed related to the environmental impact of MFW were published by E. Toti and M. Serafini in 2016 and 2019; additionally, in order to understand the causes of overconsumption numerous studies were reviewed regarding consumer behaviour, the relationship between economic development and overconsumption, mental health and dietary habits, physical context and dietary habits, genetic predisposition, also childhood and early adulthood environment. By analysing and corroborating external data available for food waste, nutritional requirements, and the environmental impact of food waste and consumer behaviour, we identified as primary causes for MFW the lack of nutritional education and little understanding of the nutritional requirements amongst all categories of consumers, poor access to appropriate food resources or reduced availability of fresh produced food. We conclude that for the quantification of the negative impact of MFW on both the environment and human health we need decisive action to raise consumer awareness for healthy and sustainable diets, together with a uniform worldwide distribution system for nutritious food.

Background: Quercetin's role in the homeostasis of certain trace elements in dyslipidemia induced in mice was assessed. Methods: Forty BALB/c mice were allocated into 4 groups as follows: control; HFD, received fat diet; HFD + Q group, received HFD +500 mg/L quercetin; and blank control (Q)-normal food + 500 mg/L quercetin in drinking water. Results: By analyzing the values of total proteins, albumins, cholesterol, triglycerides, HDL cholesterol, LDL cholesterol, and the levels of several trace elements in blood and organs, we perceived a statistically significant increase ( ∗∗ , p < 0.01) of TP, ALB, TC, TGE, and LDL-c. A nonsignificant decrease was ascertained to HDL-c value in the HFD and quercetin groups (p > 0.05). In the HFD group, all analyzed elements in the kidney and spleen increased, also Cu, Li, Mg, Mn, Pb, and of B, Ba, Cr, Cd, Cu, Fe, Li, Mn, Ni, Pb, and Zn in the heart increased, but furthermore, Ag, B, Ba, Cd, Cr, Fe, Ni, and Zn in blood, Ag and Zn in the liver, and Cd in the spleen decreased. In the HFD group who received quercetin, elements (except B) were decreased in kidney and liver, also increased Ag, Ba, Cr, Fe, Li, Ni, Zn in blood, but similarly, Ag, B, Ba, Cd, Cu, Mn, and Pb declined in the spleen and heart. Conclusions: Results proved the quercetin beneficial role.

Reducing the Campylobacter load on poultry carcasses represents a major tasks for the industry as its ability to reduce their presence is of major interest aiming to increase consumer safety. This study investigated the ability of a mixture of natural antimicrobials (A3001) to reduce the adherence of the T6SS+/-C. coli isolates (NC1hcp-, NC2 hcp- and NC3 hcp+) to chicken neck skin and whole carcasses. Overall, the antimicrobial mixture induced a significant reduction in the capability of our C. coli isolates to colonise the chicken skin (p < 0.05) and carcasses (p < 0.0001) but with a greater effect (≈3 log reduction) on the NC3 isolate. Using the HCT-8 in vitro infection model we also show that at a concentration of 0.5% A3001, the impact on the NC3 isolate is accompanied by the downregulation of the hcp gene (p = 0.0001), and indicator of the T6SS presence. The results described herein also indicated that these isolates are highly resistant to H2O2, up to 20 mM, suggesting a high resilience to environmental stresses. In summary our study shows that natural antimicrobials can reduce the ability of T6SS positive chicken C. coli isolates to adhere to chicken skin or to the whole carcass and to infect epithelial cells in vitro and could be considered a potential intervention at processor level.
