RESUMO

Es en la urdimbre entre la materialidad de la comida (calidad/cantidad) y el cuerpo del comensal (sentidos corporales) que se entretejen las sensibilidades a partir de las cuáles se significa el mundo. El presente artículo propone conocer las cocinas familiares en contextos de pobreza urbana a partir de los sentidos (corporal/social) que las significan. Se trabajó con metodología cualitativa a partir de la interpretación y análisis de observaciones participantes, encuentros domiciliarios y entrevistas semiestructuradas. Como resultados de la investigación las cocinas se definieron a partir de las siguientes categorías analíticas: descriptores (sensoriales y sociales) de la comida y del cocinar; auto-definición de su propia alimentación, creencias alimentarias asociadas y perspectivas de su alimentación futura. Este estudio sienta bases para continuar abordando la multiplicidad de formas del ôcomerö, y sus ôpor quéö (contexto social, cultural, político, económico, familiar), así como su impacto en la salud.(AU)


It is in the warp and woof between the corporeity of the food (quality/quantity) and the body of the diner (body senses) where the sensitivities in which the world finds meaning are interwoven. The aim of this article is to get acquainted, from the senses (body/social), with family kitchens in contexts of urban poverty. We used qualitative methodology based on interpretation and analysis of participant observations, meetings in houses, and semi-structured interviews. As results of this research, kitchens were defined using the following analytical categories: descriptors (sensory and social) of the food and of the cooking process, self- definition of personal nourishment, food related beliefs and perspectives of future nutrition. This study sets the basis to keep dealing with the subject of multiplicity concerning different ways of ôeatingö and its ôreasonsö (social, cultural, political, economic and family contexts), as well as its impact on health.(AU)

RESUMO

Two exocellular nucleases with molecular masses of 18 and 34 kDa, which are nutritionally regulated and reach their maximum activity during aerial mycelium formation and sporulation, have been detected in Streptomyces antibioticus. Their function appears to be DNA degradation in the substrate mycelium, and in agreement with this proposed role the two nucleases cooperate efficiently with a periplasmic nuclease previously described in Streptomyces antibioticus to completely hydrolyze DNA. The nucleases cut DNA nonspecifically, leaving 5'-phosphate mononucleotides as the predominant products. Both proteins require Mg2+, and the additional presence of Ca2+ notably stimulates their activities. The two nucleases are inhibited by Zn2+ and aurin tricarboxylic acid. The 18-kDa nuclease from Streptomyces is reminiscent of NUC-18, a thymocyte nuclease proposed to have a key role in glucocorticoid-stimulated apoptosis. The 18-kDa nuclease was shown, by amino-terminal protein sequencing, to be a member of the cyclophilin family and also to possess peptidylprolyl cis-trans-isomerase activity. NUC-18 has also been shown to be a cyclophilin, and "native" cyclophilins are capable of DNA degradation. The S. antibioticus 18-kDa nuclease is produced by a proteolytic processing from a less active protein precursor. The protease responsible has been identified as a serine protease that is inhibited by Nalpha-p-tosyl-L-lysine chloromethyl ketone and leupeptin. Inhibition of both of the nucleases or the protease impairs aerial mycelium development in S. antibioticus. The biochemical features of cellular DNA degradation during Streptomyces development show significant analogies with the late steps of apoptosis of eukaryotic cells.

RESUMO

OBJECTIVE: To determine whether or not anesthesiologists are more vulnerable to stress, and whether or not they suffer related psychosomatic symptoms. MATERIAL AND METHOD: Representative samples of 50 anesthesiologists and 80 other physicians not members of surgical teams in Havana, taken from a stratified randomized sample population. Data on the subjects' vulnerability to stress, anxiety levels and symptoms were collected through psychological testing and questionnaires. RESULTS: Data obtained were subjected to statistical analysis, showing that susceptibility to stress was higher among anesthesiologists (64%) than in the control group (40%). Stress levels were also higher among anesthesiologists (60%) than among the controls (43%) and psychosomatic symptoms were highly related. CONCLUSION: Anesthesiologists are subjected to stress that leads to psychosomatic symptoms to a greater extent than are other physicians.

RESUMO

Se trabajo con 28 ratas albinas machos, que se dividieron en dos grupos de animales; uno control y otro ejercitado por 120 minutos, por medio de natación forzada. Se obtuvo el suero sanguíneo y se comparó el comportamiento de las Proteínas Séricas Totales por el método de Biuret y el de sus fracciones por medio de electroforesis en agar. Se comprobó que existían diferencias en la concentración de las Proteínas Totales y de las fracciones entre el grupo control y el ejercitado, aunque las mismas no fueron estadísticamente significativas
