RESUMO

Textural stabilization of extruded beef jerky analogs (BJA) by using modified starches was studied. From a series of modified starches studied, Frigex W and Instant Pure Flo were identified to show very reduced retrogradation, both in gels and after extrusion. These starches were used as textural stabilizers for BJA, an extruded product obtained from potato granules and ground beef. The partial substitution of potato granules with modified starches, at a level of 5% of the formulation, led to increased moisture sorption capacity of the analogs. After a storage period of 1 mo, the samples that contained modified starch had a degree of swelling with 30% higher and much lower elastic modulus as compared to those that contained only potato starch.

RESUMO

The effects of the peptide constituents of two casein hydrolysates applied to the serosal surface, involved the activation of the water absorption alone. Application of these peptides to the mucosal surface slightly inhibited both the glucose and water absorption. The data obtained suggests the mechanism of the peptides action on the glucose and water absorption in the small intestine.

RESUMO

Using casein hydrolysates and the amino-acid mixture applied to mucosal or serosal surfaces, their effect on the transport of free glycine, glycine formed during glycyl glycine hydrolysis, and galactose, was studied in the small intestine. The data obtained suggest a mechanism of peptide transport in the enterocytes as well as a possibility of a regulatory effect of the peptides contained in casein hydrolysates on the transport of some basic nutrients.

RESUMO

The authors studied the resistance of animals to emotional stress when they were given in the diet, as a source of protein, casein and a protein fraction composed of a mixture of amino acids and low-molecular peptides (18 and 2.7%) obtained by reprocessing Saccharomyces cerevisiae yeasts, biomass. The ECG, rheovasogram, systolic arterial pressure, and respiratory rate were studied in rats given a diet containing 18 and 2.7% low-molecular peptides (controls) and in the same animals after 24-hour immobilization. Addition of low-molecular peptides in the indicated concentration to the diet reduced the resistance of animals to emotional stress.
