The consumer acceptance of alternative plant-focused ingredients within the meat industry is growing globally. Oat protein is insoluble and used to increase product yield and fat retention. Furthermore, inclusion of oat protein can provide manufacturers another option for extending beef supplies. As the consumer diet shifts for improvements in nutritional density, oat protein is an alternative ingredient that lacks information on inclusion in a ground beef formulation. Coarse ground beef was allocated to one of four treatments, mixed with oat protein (0%, 1.5%, 3.5% and 4.5%), water, salt, pepper, textured vegetable protein, soy protein concentrate, and sodium tripolyphosphate. Meat blocks (n = 3 batches) were finely ground and formed into patties (N = 65/treatment). Patties were placed onto an expanded polystyrene tray, overwrapped with polyvinyl chloride film and displayed for 7 days. Instrumental color (L*, a*, and b*) decreased throughout simulated display (p = 0.0001). Increased usage rates of oat protein in patties resulted in greater cook yields (p = 0.0001). Objective measures of Allo-Kramer shear force values increased as oat protein inclusion rates increased (p = 0.0001). Oat protein can be incorporated in ground beef patties with positive effects on cook yield, but inclusion rate may have a deleterious impact on color and instrumental tenderness.

M. biceps femoris (BF), m. semimembranosus (SM) and m. semitendinosus (ST) from fresh pork ham were evaluated for characteristics of quality after cooking to an internal endpoint temperature of 62 °C or 73 °C. Fresh ham muscles from the left side (N = 68) were cut into 2.54 cm thick chops and allocated to cooking loss, Warner-Bratzler shear force (WBSF), pH and instrumental cooked color analysis. Cooking losses were greater (p < 0.0001) for SM and chops cooked to an internal temperature of 73 °C (p < 0.0001), whereas WBSF did not differ (p = 0.2509) among the three muscles, but was greater (p < 0.0001) in chops cooked to 73 °C. Fresh muscle's pH was greater (p < 0.05) in ST than BF or SM. Lastly, the interactive effect (p < 0.05) of muscle × endpoint temperature for ST chops cooked to 73 °C was lighter (L*), but, when cooked to 62 °C, they were more red (a*), more yellow (b*) and incurred less color change from red to brown than BF or SM. The current results suggest it is plausible for BF, SM and ST to be considered for alternative uses instead of traditional value-added manufacturing.

Blended meat/plant products are capturing industry market space at the retail counter for value-added beef products. Plant protein ingredients can be added to meat formulations to create appealing and functional products. Ground beef was combined with one of three plant protein inclusion treatments: control, pea, oat, or rice, along with 5% textured vegetable protein (TVP) and 1.5% soy protein concentrate then formed into 226 g patties containing up to 10% plant-based proteins. Patties were analyzed for fresh and cooked characteristics throughout a 5- or 7-day retail display. The inclusion of plant-based proteins negatively affected the instrumental tenderness values which were greater (p < 0.01) in plant-inclusion patties compared to the control patties. The inclusion of plant proteins increased (p = 0.01) the cooking yield of patties compared to the control. Cooking time was longer (p = 0.04) for oat patties compared to the control patties. Cooked color values for vegetable inclusion patties did not affect (p = 0.12) lightness (CIE L*) values; however, redness (CIE a*) was greater (p < 0.01) for rice than all other treatments and yellowness (CIE b*) values were greater (p < 0.01) for all protein treatments compared to the control. Rice improved (p < 0.01) fresh a* values on day 5 of display compared to the control; whereas pea decreased (p = 0.04) values compared to the control. There was a treatment × day interaction (p < 0.01) on lipid oxidation values with a reduction in values on day 3 for all vegetable proteins compared to the control and on day 7 lipid oxidation was reduced (p ≤ 0.03) for oat patties.

OBJECTIVE: The progestogen-associated endometrial protein (PAEP) gene encodes the main whey protein in milk, ß-lactoglobulin. The aim of the study was to investigate polymorphism in the PAEP gene and its association with milk yield, composition, and quality. METHODS: Test-day records for 782 dairy cows were analysed. A total of 10 single nucleotide polymorphisms (SNP) within the PAEP gene were investigated. The following parameters were recorded: milk yield (MY, kg/d), percent milk fat (%), protein (PP, %), dry matter (DMP, %) and lactose (LP, %), urea content (UC, mg/L) as well as natural logarithm for somatic cell count (LnSCC, ln). Effect on genomic estimated breeding values accuracy was evaluated with pedigree and single step model. RESULTS: Results show that only three SNPs were polymorphic, creating 5 composite genotypes: P1 to P5. Differences in MY between composite genotypes were noted in the two tested herds. Cows with P5 composite genotypes were characterised by the highest PP and LnSCC and the lowest LP and UC (p<0.05). P4 was linked to an increased DMP and UC, while P3 to an increase in LP and decrease in PP and LnSCC. Both factors are important markers in herd management and have high influences on the herds economics. For 5 out of 7 traits the accuracy of prediction was improved by including the haplotype as a fixed effect. CONCLUSION: Presented results may suggest a new way to optimise breeding programmes and demonstrate the impact of using genomic data during that process.

BACKGROUND: Tropical tree or shrub leaves are an important source of nutrients for ruminants and a potential source of biologically active compounds that may affect ruminal metabolism of nutrients. Therefore, eight woody species from the native flora of Argentinean Dry Chaco, rich in secondary compounds such as condensed tannins (CT), were assessed for their nutritional value, CT fractions and in vitro true digestibility of dry matter, as well as biological activity (BA). RESULTS: Differences among species were found in contents of total phenol, protein-precipitating phenols (PPP), bound proteins to PPP (BP) and BP/PPP (P < 0.0001). The BP/PPP ratio reveals differences among species in potential BA as indicated by protein precipitation. The major CT of each species were isolated and purified for use as a standard. Although Schinopsis balansae had the most (P ≤ 0.05) total CT (19.59% DM), Caesalpinia paraguariensis had greater (P ≤ 0.05) BA with the most PPP (530.21% dry matter). Larrea divaricata, at 0.97, followed by Acacia aroma, at 0.89, had CT with the highest (P ≤ 0.05) BP/PPP ratios, followed by Prosopis alba (0.59). CONCLUSION: There were differences in nutritive value and bioactivity among species. Those with the greatest CT were not necessarily those with the most BA. Caesalpinia paraguariensis, S. balansae and L. divaricata were the most promising species as native forage CT sources. Cercidiurm praecox (20.87% CP; 18.14% acid detergent fiber) and Prosopis nigra (19.00% CP; 27.96% acid detergent fiber) showed the best (P ≤ 0.05) nutritive values. According to their nutritive traits, these species might be complementary in grass-based ruminant diets. © 2017 Society of Chemical Industry.

Otobius megnini (Dugès), often referred to as the ear tick or spinose ear tick, is a one-host tick native to the southwestern United States and Mexico. Infestations of this species can cause severe irritation and may affect breeding behavior in the host. Although chemical repellents are commonly used as an alternative approach to conventional arthropod vector control, information on repellency against O. megnini is lacking. This study compared repellency of ammonia, BioUD(®), 98.25% DEET, garlic pepper tea, permanone, and pyrethrin with piperonyl butoxide, against larvae stages of O. megnini, Amblyomma americanum (L.), Dermacentor variabilis (Say), and Rhipicephalus sanguineus (Latreille). To test for repellency, tick movement was recorded at 30 s intervals for five min after introduction to a partially treated piece of filter paper. Results showed larvae of O. megnini exhibited less aversion to the chemicals tested when compared to the other tick species.

Reducing chemical use for suppressing internal and external parasites of livestock is essential for protecting environmental health. Although plant condensed tannins are known to suppress gastro-intestinal parasites in small ruminants, no research on the effects of tannins on external arthropod populations such as the house fly, Musca domestica L., have been conducted. We examined the impact of plant material containing condensed tannins on house fly development. Prairie acacia (Acacia angustissima (Mill.), Kuntze variety hirta (Nutt.) B.L. Rob.) herbage, panicled tick-clover (Desmodium paniculatum (L.) DC.) herbage, and quebracho (Shinopsis balansae Engl.) extracts were introduced at rates of 1, 3 or 5% condensed tannins/kg beef cattle, dairy cattle, and goat manure, respectively. In a second experiment, we also introduce purified catechin at 1 or 3% of dairy manure dry matter and measured its impact on house fly development. For the house flies used in these experiments, the following was recorded: percent fly emergence (PFE), average daily gain (ADG), and average fly weight (AFW). No effects (P>0.05) in house fly development were measured in the caprine manure. Prairie acacia (20.9% condensed tannins) had no effect on house flies developing in either bovine manures. Tick clover (4.9% condensed tannins) had a negative effect on all three quantifiable variables of house fly development in the bovine manures, whereas quebracho extract (64.0% condensed tannins) at the 3 and 5% rate reduced fly emergence in beef manure and average daily gain in dairy manure. The application of purified catechin at 3%, but not 1%, reduced fly PFE, ADG, and AFW.

Bermudagrass (Cynodon dactylon L.), widely grown for forage in the southeastern USA and throughout tropical and sub-tropical environments, is now being considered as a potential cellulosic bioenergy feedstock. The question is whether we can utilize extant forage data that seeks to balance yield with nutritive value to estimate its yield under single, yearly harvests designed purely for maximizing cellulosic biomass yield? To contribute to our knowledge of yield potentials and mineral concentrations in biomass-harvest regimens where nutritive value to ruminants is not a factor, 'Tifton 85' and 'Coastal' accumulated bermudagrass was harvested at 14-day intervals and compared to 21-day repeated harvests. Coastal accumulated biomass earlier but ended growing seasons with dry matter (DM) and carbon (C) yields comparable to Tifton 85. Peak yields were approximately 6.1 Mg ha(-1)yr(-1) during a growing season with 459 mm rainfall but ranged from 10.3 to 11.2 Mg ha(-1)yr(-1) during a growing season with 845 mm rain. Average peak accumulated harvests out-yielded cumulative 21-day repeated harvest DM by 44% and C by 47% over two years; 21-day harvest material yielded 84% more N than the accumulated material. Results indicate that bermudagrass yields and mineral concentrations reported for forage trials are not directly applicable to biomass-harvest regimens. If similar data is collected from a number of other locations to confirm our findings, we may be able to formulate predictions or mathematical models of bermudagrass biomass production based on already available forage yield data.

Black soldier flies, Hermetia illucens L., are a common colonizer of animal wastes. However, all published development data for this species are from studies using artificial diets. This study represents the first examining black soldier fly development on animal wastes. Additionally, this study examined the ability of black soldier fly larvae to reduce dry matter and associated nutrients in manure. Black soldier fly larvae were fed four rates of dairy manure to determine their effects on larval and adult life history traits. Feed rate affected larval and adult development. Those fed less ration daily weighed less than those fed a greater ration. Additionally, larvae provided the least amount of dairy manure took longer to develop to the prepupal stage; however, they needed less time to reach the adult stage. Adults resulting from larvae provided 27 g dairy manure/d lived 3-4 d less than those fed 70 g dairy manure. Percentage survivorship to the prepupal or adult stages did not differ across treatments. Larvae fed 27 g dairy manure daily reduced manure dry matter mass by 58%, whereas those fed 70 g daily reduced dry matter 33%. Black soldier fly larvae were able to reduce available P by 61-70% and N by 30-50% across treatments. Based on results from this study, the black soldier fly could be used to reduce wastes and associated nutrients in confined bovine facilities.

Our results in a previous study indicated that the portal absorption of intragastrically fed alpha-ketoglutarate (AKG) was limited in young pigs. Our aim was to quantify the net portal absorption, first-pass metabolism, and whole-body flux of enterally infused AKG. In study 1, we quantified the net portal nutrient absorption in young pigs (n = 9) given an intraduodenal infusion of milk replacer [10 mL/(kg . h)] and either saline (control) or 930 micromol/(kg . h) AKG for 4 h. In study 2, we quantified the luminal disappearance of a duodenal AKG bolus in young pigs (n = 7). In study 3, we quantified the whole-body kinetics of (13)C-AKG metabolism when infused either enterally (n = 9) or intravenously (n = 9) in young pigs. In study 1, when compared with the control group, enteral AKG infusion increased (P < 0.01) the arterial (13.8 +/- 1.7 vs. 27.4 +/- 3.6 micromol/L) and portal (22.0 +/- 1.4 vs. 64.6 +/- 5.9 micromol/L) AKG concentrations and the net portal absorption of AKG [19.7 +/- 2.8 vs. 95.2 +/- 12.0 micromol/(kg . h)]. The mean fractional portal appearance of enterally infused AKG was 10.23 +/- 1.3%. In study 2, the luminal disappearance of AKG was 663 micromol/(kg . h), representing 63% of the intraduodenal dose. In study 3, the whole-body (13)C-AKG flux [4685 +/- 666 vs. 801 +/- 67 micromol/(kg . h)] was higher (P < 0.05) when given enterally than intravenously, but (13)CO(2) recovery was not different (37.3 +/- 1.0 vs. 36.2 +/- 0.7%dose). The first-pass splanchnic (13)C-AKG utilization was approximately 80%, of which 30% was oxidized to (13)CO(2). We conclude that the intestinal absorption of AKG is limited in young pigs largely due to substantial first-pass gastrointestinal metabolism.

Our aim was to determine the speed of onset of total parenteral nutrition (TPN)-induced mucosal atrophy, and whether this is associated with changes in intestinal blood flow and tissue metabolism in neonatal piglets. Piglets were implanted with jugular venous and duodenal catheters and either a portal venous or superior mesenteric artery (SMA) blood flow probe. At 3 wk of age, piglets were randomly assigned to receive continuous enteral formula feeding (n = 8) or TPN (n = 17) for 24 or 48 h. Blood flow was recorded continuously and piglets were given an i.v. bolus of bromodeoxyuridine and (13)C-phenylalanine to measure crypt cell proliferation and protein synthesis, respectively. After 8 h of TPN, portal and SMA blood flow decreased 30% compared with enteral feeding (P < 0.01), and remained near levels of food-deprived piglets for the remaining 48 h of TPN. After 24 h, TPN reduced jejunal inducible nitric oxide synthase (iNOS) activity and protein abundance (P < 0.05), small intestinal weight, and villous height (P < 0.01) compared with enterally fed piglets. Cell proliferation and DNA mass were decreased (P < 0.05) and apoptosis increased (P < 0.05) after 48 h of TPN. Protein synthesis was lower (P < 0.05) after 24 h of TPN, and protein mass was lower (P < 0.05) after 48 h of TPN, compared with enteral feeding. These data indicate that the transition from enteral to parenteral nutrition induced a rapid (<8 h) decrease in intestinal blood flow, and this likely precedes villous atrophy and the suppression of protein synthesis at 24 h, and of cell proliferation and survival at 48 h.

Our aim was to quantify the intestinal metabolic fate of dietary alpha-ketoglutarate (AKG). Female pigs (n = 6; 21 d old) were implanted with arterial, venous, portal and gastric catheters and an ultrasonic portal flow probe and fed a corn and soybean meal-based diet. On the day of the experiment, the pigs received a 4-h intragastric infusion of sodium AKG at a rate equivalent to 0, 2.5, 5 or 10% of dietary intake. The net portal AKG balance of the control and 2.5% treatments did not differ and were not different from zero. However, the net portal AKG balance of both the 5 [163 micro mol/(kg. h)] and 10% [159 micro mol/(kg. h)] treatments were greater (P < 0.05) than the control. Despite significant net AKG absorption at the 5 and 10% levels, the net portal appearance represented only 10.8 and 6.7%, respectively, of the enteral input. The net portal appearances of glutamate, glutamine, ammonia and the branched-chain amino acids were not affected by dietary AKG level. We conclude that the absorption of dietary AKG is limited in young pigs and does not change the net portal balance of amino acids or ammonia.

The effects of supplemental methionine (Met), supplied abomasally, on the activities of methionine synthase (MS), cystathionine synthase (CS) and betaine-homocysteine methyltransferase (BHMT) were studied in growing steers. Six Holstein steers (205 kg) were used in a replicated 3 x 3 Latin square experiment. Steers were fed 2.6 kg dry matter daily of a diet containing 83% soybean hulls and 8% wheat straw. Ruminal infusions of 180 g/d acetate, 180 g/d propionate, 45 g/d butyrate, and abomasal infusion of 300 g/d dextrose provided additional energy. An amino acid mixture (299 g/d) limiting in Met was infused into the abomasum to ensure that nonsulfur amino acids did not limit growth. Treatments were infused abomasally and included 0, 5 or 10 g/d L-Met. Retained N (20.5, 26.9 and 31.6 g/d for 0, 5 and 10 g/d L-Met, respectively) increased (P < 0.01) linearly with increased supplemental Met. Hepatic Met, vitamin B-12, S-adenosylmethionine and S-adenosylhomocysteine were not affected by Met supplementation. Hepatic folates tended (P = 0.07) to decrease linearly with Met supplementation. All three enzymes were detected in hepatic tissue of our steers. Hepatic CS activity was not affected by Met supplementation. Hepatic MS decreased (P < 0.01) linearly with increasing Met supply, and hepatic BHMT activity responded quadratically (P = 0.04), with 0 and 10 g/d Met being higher than the intermediate level. Data from this experiment indicate that sulfur amino acid metabolism may be regulated differently in cattle than in other tested species.
