This review makes an attempt to characterize the physical attributes of heat tolerance, thermal equilibrium and thermal stress thresholds for dairy cows living in tropical environments, with a particular emphasis on pasture-based systems. Under such circumstances, the radiant heat load is the principal climatic factor that determines rates of heat and mass exchanges between cows and the environment. This fact may explain why simple mechanistic models based on air temperature and humidity are not adequately predicting thermal stress thresholds for cattle in tropical regions. To overcome this limitation, the Index of Thermal Stress for Cows (ITSC) and Index for the time spent in shade (ITS), which account for various sources of thermal radiation, were proposed to predict autonomous and behavioral thermoregulation of cows. Overall, the evolutionary adaptation of cattle in tropics favored animals that have cutaneous surface with a skin well protected against penetration of ultraviolet solar radiation (UV), covered by a coat surface with high thermal conductivity. For Holstein breed, although predominantly black animals absorb greater levels of short-wave solar radiation, they may present better protection of skin than white ones. However, dark-colored cows in tropical pastures have potential to absorb as much as 640 W m-2 of thermal radiation. This amount of heat load would require close to 1,300 g h -1 of cutaneous evaporative water loss through sweating to prevent increases to body temperature, where cows do not have access to shade. Cows are motivated to reduce time spent grazing and to seek shade when solar irradiance exceeds 550 W m-2, levels that in equatorial latitudes are likely to occur between 08:00 and 16:00h. This information may help producers improve the welfare of cows, as they can determine more comfortable hours for them to graze, for example, by employing nocturnal grazing. Over the daytime, cows should have access to areas with shade and this could include shade provided via solar panels, which has the potential to improve thermal comfort and sustainability of dairy production in tropical areas.

It has been well-established that dark cutting (DC) is a multifactorial issue that is associated with numerous animal and management factors. However, there is limited understanding of the feedlot-based factors that contribute to the influence of DC. The aim of this study was to evaluate the effect of climate, animal, and feedlot factors on the incidence of pH non-compliance in Australian grain-fed cattle. For this study, feedlot and abattoir records from 142,228 individual cattle over a 1-year period were investigated. These data incorporated records from seven feedlots that consigned cattle to three abattoirs. The average incidence of DC in these carcasses was 2.8%. The production factors that were associated with increased risk of DC included feedlot, sex, hormone growth promotants (HGP), cattle health, and days on feed (DOF). Additionally, DC also increased by reduced solar radiation (SR, W/m2), lower wind speeds (WS, m/s), increased ambient temperature (TA, °C), higher rainfall, a higher average temperature-humidity index (THI), and increased duration of time above heat-load-index threshold of 86 (HLI ≥ 86) during the 7 days prior to feedlot departure. This study identified the feedlot factors that increase the risk of DC from a feedlot-management perspective.

The aim of this study was to evaluate the effect of carcass traits, lairage time and weather conditions during lairage and abattoir factors that impact the incidence of dark cutting in 142,228 grain-fed carcasses, as defined by Meat Standards Australia (MSA) guidelines. This study was conducted over a 12-month period analysing data from cattle that were supplied from seven feedlots and processed at three abattoirs. Abattoir data indicated that the average incidence of dark cutting within the study was 2.8%. Increased wind speeds (WSs) and rain during lairage at the abattoir was associated with an increased risk of dark cutting, whereas variation in ambient temperature and/or relative humidity did not influence dark cutting. Heavier carcasses with whiter fat, larger hump heights, more rib fat, higher marble scores and lower ossification had lower incidences of dark cutting. The factors abattoir, time in lairage, time to grading and grader within Abattoir had significant effects on the incidence of dark cutting. The results from this study suggest that reducing the time in lairage and increasing the time between slaughter and grading are the two major ways to reduce dark cutting in MSA carcasses.

Previous studies have indicated that cattle with more excitable temperaments exhibit an increased stress response. The objective of this study was to investigate the relationship between temperament traits, handling, and stress-induced hyperthermia (SIH) in beef cattle. Rectal temperatures (TREC, °C) of 60 purebred Angus cattle (30 heifers, 30 steers; 235.2 ± 5.11 kg) were recorded at 20 s intervals from 30 min prior to handling until two hours post handling. All cattle were exposed to a standardized handling procedure consisting of (i) being restrained in a weighing box for 30 s; (ii) being held within the crush for 30 s; and then (iii) being restrained in a head bail for 60 s. Cattle temperaments were evaluated via three traits: (1) agitometer score (AG); (2) crush score (CS); and (3) flight speed (FS) during the handling procedure. Agitometer scores and FS measures were used to describe an AG category (AGCAT) and an FS category (FSCAT) that were used to classify animals into three temperament categories: 1, calm; 2, intermediate; and 3, temperamental. Pearson's correlation coefficients were used to evaluate the associations between (i) AG, CS, FS, and TREC 30 min prior to entry into the weighing box (T-30) and then at 1 min intervals between time of entry into the weighing box (T0) until 10 min post-weighing (T10); and (ii) the relationship between AG, CS, and FS. The relationship between TREC and temperament traits over the 2.5 h were modeled by using a first-order autoregressive repeated measures model. Flight speed had strong to moderate associations with TREC at T-30 (r ≥ 0.37; p ≤ 0.006) and between T0 and T10 (r ≥ 0.36; p ≤ 0.01). There were moderate associations amongst TREC between T0 and T10 and CS (r ≥ 0.31; p ≤ 0.01). A weak relationship existed with CS (r = 0.16; p = 0.16). There were no associations between AG and TREC at T-30 (r ≥ -0.15; p = 0.84) or between T0 and T10 (r ≤ 0.04; p ≥ 0.4). Rectal temperature, irrespective of sex and temperament traits, was influenced by time (p < 0.0001), and maximum TREC (39.3 ± 0.04 °C) occurred between 4 and 5.7 min after entry into the weighing box. In addition, CS (p = 0.007) influenced TREC in these cattle. There were also time × temperament trait × sex interactions with the CS (p = 0.0003) and FSCAT (p = 0.043) categories; however, time × temperament trait interactions were not statistically significant. Results from this study suggest that cattle with excitable temperaments, as evaluated by FS and CS, have a greater increase in TREC. In addition, these results suggest that a relationship exists between basal TREC and FS and CS. Together, these results highlight that temperament, as assessed by FS and CS, influences both basal TREC and the peak temperature recorded following handling but does not influence the magnitude of change in TREC post handling.

Animal biometeorology (insects excluded) has been part of the International Journal of Biometeorology since its inception in 1958. Over the first 60 years of the journal, 480 animal biometeorology papers were published. Thus, approximately 14% of published papers dealt with animals. Over the first 60 years, data from more than 50 animal species was presented, with the lead authors coming from 48 countries. The two most common species used in animal papers between 1957 and 2016 were cattle (109 papers: 22.7% of all animal papers) and rats (96 papers: 20.0% of all animal papers). Although cattle and rats dominated, the species in the most cited paper (240 citations) was chickens, followed by bird migration (155 citations), and general livestock (118 citations). Overall, five papers exceeded 100 citations, and a further two exceeded 200 citations. In the last decade, 126 animal papers were published (26% of all animal papers). Many of these papers had a focus on livestock production in developing countries especially Brazil.

Actinidin is a cysteine protease enzyme which occurs in kiwifruit and has been associated with improved tenderness in red meat. This study evaluated the impact of actinidin, derived from kiwifruit, on consumer sensory outcomes for striploin (M. longissimus lumborum) and outside flat (M. biceps femoris). Striploins and outside flats were collected from 87 grass-fed steers. Carcasses were graded to the Meat Standards Australia (MSA) protocols. Striploins and outside flats were then dissected in half and allocated to one of the following two treatments: (1) not infused (control) and (2) infused with a kiwifruit extract (enhanced), and then prepared as grill and roast samples. Grill and roast samples were then aged for 10 or 28 days. Consumer evaluations for tenderness, juiciness, flavor, and overall liking were conducted using untrained consumer sensory panels consisting of 2080 individual consumers, in accordance with the MSA protocols. These scores were then used to calculate an overall eating quality (MQ4) score. Consumer sensory scores for tenderness, juiciness, flavor, overall liking, and MQ4 score were analyzed using a linear mixed-effects model. Kiwifruit extract improved consumer scores for tenderness, juiciness, flavor, overall liking, and MQ4 scores for striploins and outside flat (p < 0.05). These results suggest that kiwifruit extract provides an opportunity to improve eating experiences for consumers.

Heat stress and cold stress have a negative influence on cattle welfare and productivity. There have been some studies investigating the influence of cold stress on cattle, however the emphasis within this review is the influence of heat stress on cattle. The impact of hot weather on cattle is of increasing importance due to the changing global environment. Heat stress is a worldwide phenomenon that is associated with reduced animal productivity and welfare, particularly during the summer months. Animal responses to their thermal environment are extremely varied, however, it is clear that the thermal environment influences the health, productivity, and welfare of cattle. Whilst knowledge continues to be developed, managing livestock to reduce the negative impact of hot climatic conditions remains somewhat challenging. This review provides an overview of the impact of heat stress on production and reproduction in bovines.

This study was conducted to determine the relationship between rectal temperature (TREC) and rumen temperature (TRUM) and to assess if TRUM could be used as a proxy measure of core body temperature (TCORE) in feedlot cattle. Eighty Angus steers (388.8 ± 2.1 kg) were orally administered with rumen temperature boluses. Rumen temperatures were recorded at 10-min intervals over 128 days from all 80 steers. To define the suitability of TRUM as an estimation of TCORE, TREC were obtained from all steers at 7-day intervals (n = 16). Eight feedlot pens were used where there were 10 steers per pen (162 m2). Shade was available in each pen (1.8 m2/animal; 90% solar block). Climatic data were recorded at 30-min intervals, including ambient temperature (TA; °C); relative humidity (RH; %); wind speed (WS; m/s) and direction; solar radiation (SR; W/m2); and black globe temperature (BGT; °C). Rainfall (mm) was recorded daily at 0900 h. From these data, temperature humidity index (THI), heat load index (HLI) and accumulated heat load (AHL) were calculated. Individual 10-min TRUM data were converted to an individual hourly average. Pooled mean hourly TRUM data from the 128-day data were used to establish the diurnal rhythm of TRUM where the mean minimum (39.19 ± 0.01 °C) and mean maximum (40.04 ± 0.01 °C) were observed at 0800 h and 2000 h respectively. A partial correlation coefficient indicated that there were moderate to strong relationships between TRUM and TREC using both real-time (r = 0.55; P < 0.001) and hourly mean (r = 0.51; P < 0.001) TRUM data. The mean difference between TREC and TRUM was small using both real-time (0.16 ± 0.02 °C) and hourly mean TRUM (0.13 ± 0.02 °C) data. Data from this study supports the hypothesis that TRUM can be used as an estimate of TCORE, suggesting that TRUM can be used to measure and quantify heat load in feedlot cattle.

This study evaluated the relationship between rectal temperature (TREC, °C) and vaginal temperature (TVAG, °C) in grazing Bos taurus heifers, to develop an understanding of the reliability of these measures as estimates of core body temperature. Nineteen Angus heifers (BW = 232.2 ± 6.91 kg) were implanted with intra-rectal and intra-vaginal data loggers. Rectal temperature and TVAG were simultaneously recorded at 20 s intervals over 18.5 h. Heifers were housed as a singular cohort on grazing pastures for the duration of the study. A strong linear relationship (R² = 0.72, p < 0.0001) between the measurement sites was identified. The mean difference between TREC and TVAG was small, in which TVAG was on average 0.22 ± 0.01 °C lower than TREC. Individual twenty second TREC and TVAG data were used to determine the pooled mean TREC and TVAG and then to highlight the within measure variation over time. The coefficient of variation was, on average, lower (p < 0.001) for TVAG (0.38%) than TREC (0.44%), indicating that TVAG exhibited less variation. Overall, the results from the current study suggest that a strong relationship exists between TREC and TVAG, and that TVAG may be a more reliable estimate of core body temperature than TREC in grazing Bos taurus heifers.

Thirty-six Black Angus steers were used in a replicated study; three replicates of 12 steers/replicate. Steers had an initial non-fasted BW of 392.3 ± 5.1, 427.5 ± 6.3, and 392.7 ± 3.7 kg for each replicate, respectively. Steers were housed outside in individual animal pens (10 m × 3.4 m). Each replicate was conducted over a 6-day period where infrared thermography (IRT) images were collected at 3-h intervals, commencing at 0600 h on day 1 and concluding at 0600 h on day 6. Rumen temperatures (T RUM) were measured at 10-min intervals for the duration of each replicate using a radio-frequency identification (RFID) rumen bolus. These data were used to determine the relationship with surface temperature of the cattle, which was determined using IRT. Individual T RUM were converted to an hourly average. The relationship between T RUM and surface temperature was determined using Pearson's correlation coefficient. There were no linear trends between mean hourly T RUM and mean surface temperature. Pearson's correlation coefficient indicated that there were weak associations (r ≤ 0.1; P < 0.003) between T RUM and body surface temperature. These data suggest that there was little relationship between the surface temperature and T RUM.

RESUMO

The International Society of Biometeorology (ISB) has covered significant breadth and depth addressing fundamental and applied societal and environmental challenges in the last 60 years. Biometeorology is an interdisciplinary science connecting living organisms to their environment, but there is very little understanding of the existence and placement of this discipline within formal educational systems and institutions. It is thus difficult to project the ability of members of the biometeorological community-especially the biometeorologists of the future-to help solve global challenges. In this paper, we ask: At present, how we are training people to understand and think about biometeorology? We also ask: What are the current tools and opportunities in which biometeorologists might address future challenges? Finally, we connect these two questions by asking: What type of new training and skill development is needed to better educate "biometeorologists of the future" to more effectively address the future challenges? To answer these questions, we provide quantitative and qualitative evidence from an educationally focused workshop attended by new professionals in biometeorology. We identify four common themes (thermal comfort and exposures, agricultural productivity, air quality, and urbanization) that biometeorologists are currently studying and that we expect to be important in the future based on their alignment with the United Nations Sustainable Development Goals. Review of recent literature within each of these thematic areas highlights a wide array of skill sets and perspectives that biometeorologists are already using. Current and new professionals within the ISB have noted highly varying and largely improvised educational pathways into the field. While variability and improvisation may be assets in promoting flexibility, adaptation, and interdisciplinarity, the lack of formal training in biometeorology raises concerns about the extent to which continuing generations of scholars will identify and engage with the community of scholarship that the ISB has developed over its 60-year history.
