RESUMO

The feasibility of Near Infrared Spectroscopy was assessed for aging traceability of steaks of Angus beef (Biceps femoris) individually vacuum-packaged, as well as for the prediction of the refrigeration storage time (0, 7, and 14 days). For this purpose, a total of 288 steaks homogeneously distributed among the sampling times were used. The model developed by Partial Least Squares-Discriminant Analysis offered high discrimination ability between aged beef vs. non-aged. The accuracy after external validation exceeded 90%. Regarding the predictive capacity of the storage time, it was greater on the set of aged samples, in which the accuracy achieved values higher than 96%, while the accuracy decreased to 75% for the non-aged samples. Results obtained support the ability of NIRS technology to be considered in any digital transformation strategy for traceability across the meat supply chain.

Recent changes in food purchasing and consumption have led consumers to place greater importance on aspects such as convenience and the impact of food production and processing on health and the environment. This, in turn, poses a challenge for the food industry, especially with respect to highly perishable foods such as fruit. Great efforts have been made by the industry to reduce post-harvest losses by using natural preservatives that can replace traditional chemical fungicides, which are increasingly rejected by both citizens and governments. In this context, the purpose of this study was to obtain an overview of consumer perceptions towards the application of these novel products in fruit. In order to achieve this goal, five focus group sessions were held in multiple Spanish cities from December 2019 to February 2020. A total of 48 people with a mixed socio-demographic background took part in the study. The results showed both positive and negative consumer perceptions towards fruit, on the one hand being healthy and natural, and on the other lacking convenience. Packaging increases fruit convenience at the cost of its perception as a natural food product. In addition, consumers reported negative opinions associated with both the use of chemicals to improve fruit preservation and the environmental impact of the packaging. Participants showed interest in the use of natural preservatives in fruit, as these are considered more natural, healthier and more environmentally friendly. Although natural preservatives can influence consumers' fruit purchasing decisions, lack of information about such preservatives can cause doubts about their effectiveness and misjudgements about the price premium they add. Therefore, information about these types of preservatives, their characteristics and their benefits is key to overcoming mistrust and communicating to consumers the differentiation that their use adds to foods.

Spanish consumers have a strong preference for Iberian meat products, as they perceive them to be of extra sensorial and nutritional quality. The production of these meat products depends on multiple variables, such as genetics, livestock production systems and, above all, the feed provided. The aim of this paper is to study the preferences of Spanish consumers for the various types of Iberian dry-cured ham, analysing whether they are willing to pay the premium required by the highest-quality products. The methodological approach combined a sensory analysis and a choice-based conjoint experiment with obtained through tasting sessions in Extremadura (SW of Spain). Findings of the sensory test have shown that there are significant differences in odour, texture and taste, explained mainly by the type of feed pigs were fed. The main results of the choice experiment have also shown that the type of feed is the most preferred attribute by consumers, in line with the sensory analysis.

This paper provides a list of specific indicators that will allow the managers of dehesa farms to assess their sustainability in an easy and reliable way. To this end a Delphi analysis has been carried out with a group of experts in agroforestry systems and sustainability. A total of 30 experts from public institutions, farming, research bodies, environmental and rural development associations, agricultural organizations and companies took part in the study which intended to design a set of sustainability indicators adapted to dehesa agroforestry systems. The experts scored 83 original indicators related to the basic pillars of sustainability (environmental, social and economic) through a two-round procedure. Finally, 24 indicators were selected based on their importance and the consensus achieved. From an environmental point of view, and in line with its significance for dehesa ecosystems, it has been observed that "Stocking rate" is the indicator with greater relevance. Within the economic pillar, "Farm profitability" is the most important indicator, while regarding the technical indicators "Percentage of animal diet based on grazing" is the one that got the highest score. Finally, the "Degree of job satisfaction" and the "Generational renewal" were the most relevant labor indicators. It is considered that the Delphi approach used in this research settles some of the flaws of other sustainability models, such as the adaptation to the system to be studied and the involvement of stakeholders in the design.

This paper evaluates consumer liking and preferences towards organic beef from two production systems allowed by EU regulation: i) free-range and ii) intensive (fattened in feed-lot with organic feedstuff) as compared with conventionally produced beef. Data were obtained in April-May 2014 with a sample of 150 regular beef consumers who completed two tasks: firstly a sensory test where consumers tasted and rated the meats and secondly a conjoint analysis to study beef purchasing preferences. Willingness-to-pay for the different meats was also calculated from conjoint results. Results show that consumers preferred organic-from-concentrate beef at sensory level while organic beef from animals fed on grass was preferred when process characteristics (i.e. farming system) or attributes perceived at the point of purchase (i.e. colour) were evaluated. It was also found that the price-premium for organic beef is over 40%, with organic-fed-on grass beef preferred slightly over that fed-on-concentrate.
