OBJECTIVE: To discern the impact of food donations provided by a food pantry and soup kitchen on food security. DESIGN: In this cross-sectional study, participants completed a demographic questionnaire, core food security module, FFQ and list of food donations. The FFQ was utilized to assess diet quality as estimated via the 2010 Healthy Eating Index. SETTING: Clients were selected randomly from a food pantry and soup kitchen in Central Texas, USA.ParticipantsA total of 222 adults. RESULTS: Approximately 73 % of participants lacked food security. Compared with the food secure, the food insecure consisted of 61 % men, 42 % Caucasians, 56 % single and 67 % homeless. Also, of the food insecure, 60 % were soup kitchen clients and 64 % had an annual income <$US 1000 (P<0·01). The probability of food insecurity was reduced by ≥1·17-fold when the total dietary intake included the food donations, as these were rich in fruits, total vegetables and grains, dairy and protein foods (P<0·05). CONCLUSIONS: Food insecurity was quite prevalent in this sample of individuals who visited food pantries and soup kitchens. The addition of food donations improved the quality of the participants' total diet and had a positive influence on food security. Thus, community organizations should financially support these food assistance agencies and strive to offer a variety of healthy and tasty foods in adequate quantities to provide optimum diet quality.

Objective: This cross-sectional study assessed the effect of food donations on total nutrient intake of clients of a food pantry in Central Texas. Methods: Nutrient intakes of total, base and food donation diets were estimated for 112 food pantry recipients using specific questionnaires; and then compared to the dietary reference intakes (DRI) and 2015-2020 US Dietary Guidelines. Results: Food donations accounted for more than half of the client's daily intake of energy, carbohydrates, vitamin B6, phosphorus, copper and selenium. Yet, daily total intake remained less than their DRIs for carbohydrates, poly-unsaturated fats, dietary fiber, fat soluble vitamins and vitamin C, and was even lower for calcium, magnesium and potassium. Total food intake of clients almost met the US Dietary Guidelines for refined grains, fruits, vegetables, and meat; however, the amount of whole grains and dairy was inadequate. Conclusions: Supplemental foods offered at food pantries are an important resource for improving nutrient intake of low-income populations.

Manganese (Mn) is an essential trace element that is critical for human health and development. At the turn of the century when diets were based on whole grains, cereals and other traditional foods, Mn intakes (8-9mg/d) were much greater than that prevalent today (2mg/d). As societies have developed, diets have shifted as part of a nutrition transition, to those that are high in processed foods, fat, and sugar. These foods are virtually devoid of Mn. Thus, dietary Mn has declined substantially throughout the world, as confirmed by several wide-scale, total diet studies. International variability in dietary Mn is considerable, due to tremendous diversity in food and culture. In countries where fruit and vegetable intake may be limited, i.e. the United Kingdom, populations may ingest much lower levels of Mn (1.4mg/d) as compared to Asian cultures (4mg/d) which have an abundance of plant foods in their food supply and cuisine. The bioavailability of Mn must be considered, including chemical form, oxidation state, mineral-mineral interactions, presence of dietary components and traditional food processing techniques (milling, germination, malting, fermentation). Manganese toxicity is a public health problem that results from exposure to a naturally high water source or contaminated environment of the soil and/or drinking water. In contrast, inadequate intake is associated with adverse health effects such as diabetes, metabolic syndrome, poor birth outcomes and possibly, cancer. Future studies are recommended to set dietary standards for this mineral in countries that lack recommendations to help achieve optimal health.

Obesity is a worldwide epidemic associated with diseases such as diabetes mellitus and cardiovascular disease. Current methods for weight loss are not very effective, particularly for those with morbid obesity. Surgical therapy may be recommended for those with a BMI≥40kg/m(2), or BMI≥35kg/m(2) with co-morbidities. This therapy can produce significant weight loss and improve/resolve co-morbidities including hypertension and hyperlipidemia. Yet successes may be tempered by adverse effects on trace element absorption and status. A PubMed literature search identified studies from January 1980 to February 2013 for inclusion in a meta-analysis. Publications that contained keywords 'bariatric surgery or gastric bypass,' 'trace element or mineral or zinc or iron or copper or iodine or manganese', and 'absorption or status or rate or level' were identified. Inclusion criteria were human markers that reflect changes in trace element status before and after bariatric surgery. The meta-analysis found a decrease in blood copper, zinc, hemoglobin, as well as an increase in iron, regardless of the type of surgery. The pooled effect sizes and 95% confidence intervals were 0.17 and -0.09 to 0.43 for plasma/serum iron (p=0.20); -0.49 and -0.67 to -0.31 for blood hemoglobin (p=0.00); -0.47 and -0.90 to -0.05 for plasma/serum copper (p=0.03); -0.77 and -1.20 to -0.35 for plasma/serum zinc (p=0.00). Differences in levels of these minerals pre- and post-surgery may have been influenced by the time period after surgery, a pre-existing deficiency, type and dose of vitamin-mineral supplements, and malabsorption due to elimination of parts of the gastrointestinal tract.

The present study has investigated the occurrence of body image dissatisfaction among adolescent schoolgirls in Amman, Jordan, and the risk factors that are known to predispose it including individual, familial and social variables. A sample of 326 adolescent girls aged 10-16 years was recruited from public and private schools in Amman. Participants completed a socio-demographic data sheet, eating attitude test, and body shape questionnaire. Approximately, 21.2% of participants displayed body image dissatisfaction in which physical changes associated with puberty and exhibiting negative eating attitudes were associated with this dissatisfaction. Additionally, mass media messages, as well as peers and family pressures towards thinness were associated with participants' preoccupation with their body image. In conclusion, negative body image perception was observed in the present sample. Therefore, well-controlled prospective studies and development of intervention programs on body image among adolescent girls in Jordan are needed.
