RESUMO

Three levels (0%, 1% and 2%) of an enriched conjugated linoleic acid oil (CLA) were combined with two levels of monounsaturated fatty acids (MUFA) (low (19%) average and high (39%) average) for pig feeding. The profile of volatile compounds of fresh and dry-cured loin as affected by dietary CLA, MUFA and CLA×MUFA interaction was studied by headspace-solid phase microextraction coupled to gas chromatography-mass spectrometry. A total of 27 and 69 compounds were identified in fresh loin and dry-cured loin, respectively. Identified compounds were alcohols, aldehydes, aliphatic hydrocarbons, aromatic hydrocarbons, esters, furans, ketones, nitrogen compounds, sulphur compounds and terpenes. No qualitative differences in volatile compounds caused by the assayed treatments were found neither in fresh loin nor in dry-cured loin. Dietary CLA, MUFA and their interaction did not affect the level of most detected volatiles. Nevertheless, in fresh loin, the level of heptanal significantly increased due to dietary CLA (p=0.001) and the area units (AU) for ethyl benzene and 1,3-dimethyl benzene increased at 1% CLA (p<0.05). In the case of dry-cured loin, the AU of heptanal, nonanal and 2-nonenal contents increased due to dietary CLA (p=0.016, 0.024 and 0.019, respectively).

Three levels (0%, 1% and 2%) of an enriched conjugated linoleic acid oil (CLA) were combined with two levels of monounsaturated fatty acids (MUFA) (low -19% average and high -39% average) for pig feeding. Composition, weight losses, lipid oxidation (thiobarbituric acid test, TBARs), change in the fatty acid content of the lipid fractions and sensory analysis of dry-cured loin as affected by dietary CLA, MUFA and CLA×MUFA interaction were studied. CLA and CLA×MUFA did not affect moisture and intramuscular fat content of dry-cured loin, weight losses during the processing, changes in the content of most fatty acids from lipid fractions and sensory traits. CLA and MUFA supplementation led to lower TBARs values (1.3mg MDA/kg sample for 0% CLA and 0.9mg MDA/kg sample for 2% CLA; 1.2mg MDA/kg sample for low MUFA diets and 0.9mg MDA/kg sample for high MUFA diets), the highest TBARs values being detected for 0% CLA-low MUFA diets [1.5mg MDA/kg sample]. The combination of dietary CLA with different MUFA levels in pig diets did not affect most composition and quality traits of dry-cured loin. Dietary CLA and MUFA seemed to lead to lower lipid oxidation in this product.

The fatty acid (FA) and dimethylacetal profiles of the sn-1 and sn-2 positions of different phospholipid (PL) classes from skeletal muscle of rats as affected by dietary FA profiles were studied. Rats were fed either a control diet, an olive oil-enriched diet, or a sunflower oil-enriched diet. The FA composition of both positions of the studied PL classes was affected by diet to different extents. The FA composition of the sn-2 position of phosphatidylserine was the most influenced by diet, while phosphatidylinositol was less affected by dietary modification. The FA profile of phosphatidylcholine reflected consumed FA better than any other studied PL. Thus, olive oil rats showed higher oleic acid (C18:1 n-9) contents in both positions of phosphatidylcholine, and sunflower oil rats had higher proportions of arachidonic acid (C20:4 n-6) in the sn-1 position of this PL class. Dimethylacetals were scarcely affected by diet, and only the dimethylacetal composition of phosphatidylethanolamine showed significant modifications.

Physico-chemical parameters involved in technological meat quality for dry cured processing of four different lines (Entrepelado, Lampiño, Retinto and Torbiscal) of Iberian pigs were studied in the Masseter (MS) and Longissimus dorsi (LD) muscles. The line of Iberian pig significantly affected intramuscular fat content of MS muscle, animals from the Torbiscal line showing lower values. Proportions of several fatty acids of total lipids and polar lipids from the MS muscle were also affected. However, fatty acid composition and total lipids, neutral lipids and polar lipids of LD muscle and neutral lipids of MS muscle were scarcely affected. Lipid oxidation was also unaffected by Iberian pig line, but instrumental colour parameters of MS muscle showed significant variations.

Cholesterol and cholesterol oxidation products (COPs) were determined in four different groups of dry-cured Iberian hams, based on the feeding received by pigs and their degree of crossbreeding. After lipid extraction, GC-FID for cholesterol determination and GC-MS to analyze COPs were used. Cholesterol content ranged from 30 to 34 mg/100 g of muscle. Some of the COPs analyzed, such as 7alpha-hydroxycholesterol, 7beta-hydroxycholesterol, and 7-ketocholesterol, were detected in all of the samples. The major cholesterol oxide was 7-ketocholesterol; its concentration ranged from 57 to 71 microg/100 g of muscle. The content of cholesterol and cholesterol oxides in intramuscular lipids of hams was not affected by diet or crossbreeding of Iberian pigs.

RESUMO

La epidermolisis ampollar adquirida (EAA) es una enfermedad ampollar subepidérmica, crónica, poco frecuente, caracterizada por la presencia de anticuerpos circulantes y/o tisulares tipo IgG dirigidos contra el colágeno tipo VII de las fibrillas de anclaje de la unión dermo-epidérmica. Su aspectro clínico e histopatológico es variable y se han definido tres presentaciones: la forma clásica similar a una porfiria cutánea tarda o a una epidermolisis ampollar distrófica, la forma tipo penfigoide ampollar y la forma tipo penfigoide cicatricial. El diagnóstico definitivo se establece mediante la inmunofluorescencia directa con piel perilesional separada con NaCI 1 molar o mediante la inmunomicroscopía electrónica. En nuestro medio, es una enfermedad poco frecuente o no detectada ya que plantea dificultades diagnósticas con otras enfermedades ampollares. En este estudio presentamos tres casos catalogados como EAA recolectados con la consulta de enfermedades ampollares de nuestro centro, que ilustran la diversidad clínica e histológica de esta entidad

RESUMO

No siempre las enfermedades vesículo-ampollares de compromiso autoinmune presentan características clínicas, histológicas y de inmunofluorescencia directa concluyentes. Desde 1974 se viene utilizando el término de Enfermedad Ampollar Mixta para este grupo de enfermedades, no estando claro si es una entidad diferente o la coexistencia de dos enfermedades ampollares. En el presente trabajo se estudian las historias de 15 pacientes con el diagnóstico de enfermedades ampollares, realizado en el HUC, entre los años Marzo de 1978 a Agosto de 1996, encontrándose constantes que permiten proponer el uso de criterios mayores y menores para la inclusión en ese diagnóstico

RESUMO

Las infecciones de las vías urinarias siguen en frecuencia a las del aparato respiratorio. La importancia de las infecciones de las vías urinarias radica no solo en su frecuencia, sino también en el riesgo que entrañan de originar bacteriemia, lesión progresiva e irreversible y recurrencias, de tratamiento y profilaxis a menudo difíciles. El objetivo de nuestro trabajo fue evaluar la eficacia de la netilmicina en el tratamiento de infecciones urinarias bajas, no complicadas, a dosis única de 300 mg vía intramuscular, obteniéndose resultados muy satisfactorios que permiten acortar la curación de la patología de una forma rápida de fácil cumplimiento y más económica

Se realizó un estudio comparativo, para medir los efectos beneficiosos en la resolución de queloides, de la pentoxifilina intralesional + vía oral, versus la triamcinolona intralesional (tratamiento convencional). A una muestra de 41 pacientes del HUC (año 1988), portadores de esta patología cuyas edades estaban compredidas entre los 15 y 73 años, durante un lapso de 9 meses; se les dividió en 2 grupos, a uno de los cuales se le administró pentoxifilina intralesional y vía oral; al otro, sólo triamcinolona intralesional, obteniéndose como resultado, que aunque ambos tratamientos son equiparables en efectividad, las reacciones secundarias tanto locales como sistémicas de la triamcinolona hacen de la petoxifilina un tratamiento alternativo eficaz en la mejoría de las lesiones queloideas
