RESUMO

Honey adulteration represents a worldwide problem, driven by the illicit economic gain that producers, traders, or merchants pursue. Among the falsification methods that can unfairly influence the price is the incorrect declaration of the botanical origin and harvesting year. Therefore, the present study aimed to test the potential given by the application of Artificial Neural Networks (ANNs) for developing prediction models able to assess honey botanical origin and harvesting year based on isotope and elemental fingerprints. For each classification criterion, significant focus was dedicated to the data preprocessing phase to enhance the models' prediction capability. The obtained classification performances (accuracy scores >86% during the test phase) have highlighted the efficiency of ANNs for honey authentication as well as the feasibility of applying the developed classifiers for a large-scale application, supported by their ability to recognize the correct origin despite considerable variability in botanical source, geographical origin, and harvesting period.

RESUMO

Food safety and quality are major concerns in the food industry. Despite numerous studies, polyethylene remains one of the most used materials for packaging due to industry reluctance to invest in new technologies and equipment. Therefore, modifications to the current materials are easier to implement than adopting whole new solutions. Antibacterial activity can be induced in low-density polyethylene films only by adding antimicrobial agents. ZnO nanoparticles are well known for their strong antimicrobial activity, coupled with low toxicity and UV shielding capability. These characteristics recommend ZnO for the food industry. By incorporating such safe and dependable antimicrobial agents in the polyethylene matrix, we have obtained composite films able to inhibit microorganisms' growth that can be used as packaging materials. Here we report the obtaining of highly homogenous composite films with up to 5% ZnO by a melt mixing process at 150 °C for 10 min. The composite films present good transparency in the visible domain, permitting consumers to visualize the food, but have good UV barrier properties. The composite films exhibit good antimicrobial and antibiofilm activity from the lowest ZnO composition (1%), against both Gram-positive and Gram-negative bacterial strains. The homogenous dispersion of ZnO nanoparticles into the polyethylene matrix was assessed by Fourier transform infrared microscopy and scanning electron microscopy. The optimal mechanical barrier properties were obtained for composition with 3% ZnO. The thermal analysis indicates that the addition of ZnO nanoparticles has increased thermal stability by more than 100 °C. The UV-Vis spectra indicate a low transmittance in the UV domain, lower than 5%, making the films suitable for blocking photo-oxidation processes. The obtained films proved to be efficient packaging films, successfully preserving plum (Rome) tomatoes for up to 14 days.

RESUMO

The presence of potentially toxic elements in drinking water can be dangerous for human health because of their bioaccumulation and toxicity, which is a huge concern for many researchers. In the case of bottled water, the exposure to toxic elements is achieved, especially by ingestion, leading to disorders of important functions of the human body. The aim of this study was the detection of some potentially toxic elements, from 50 samples of bottled drinking water, available on the Romanian market. Based on obtained concentrations, an assessment of the carcinogenic and non-carcinogenic health risk was performed. The concentrations of potentially toxic elements analyzed were below the maximum allowable limits, for all contaminants, excluding Pb and Fe. Moreover, the results of total risk via ingestion, showed that 30% of samples had an Hazard Quotient (HQ) < 1, and 70% had an HQ > 1; which implies a potential risk following the consumption of those samples. Concerning total cancer risk, 28% of the samples are in the acceptable level, while 72% of the samples are considered harmful and can lead to a type of cancer after repeated exposure. The study concluded that long term use of bottled water of poor quality may pose a hazard to human health; it is helpful for inhabitants to avoid ingestion of contaminated water.

RESUMO

Food waste is a hot topic around the world due to the significant environmental challenge it poses. The study aims to assess the impact of food waste on the food chain at the national level. The data were obtained from quantitative impact studies, carried out in a project funded by the Ministry of Agriculture and Sustainable Development, "Methods to reduce food waste on the agri-food chain, at national level, to prevent and reduce socio-economic impact, until 2030". A total of 852 companies were interviewed, with a turnover of almost 6.5 billion euro and a number of over 69 thousand employees, including 273 primary production enterprises, 270 food processing units, 171 distribution/retail units, and 138 HoReCa units.

RESUMO

Preventing and controlling the spread of multidrug-resistant (MDR) bacteria implicated in healthcare-associated infections is the greatest challenge of the health systems. In recent decades, research has shown the need for passive antibacterial protection of surfaces in order to reduce the microbial load and microbial biofilm development, frequently associated with transmission of infections. The aim of the present study is to analyze the efficiency of photocatalytic antimicrobial protection methods of surfaces using the new photocatalytic paint activated by light in the visible spectrum. The new composition is characterized by a wide range of analytical methods, such as UV-VIS spectroscopy, electron microscopy (SEM), X-ray powder diffraction (PXRD) or X-ray photoelectron spectroscopy (XPS). The photocatalytic activity in the UV-A was compared with the one in the visible light spectrum using an internal method developed on the basis of DIN 52980: 2008-10 standard and ISO 10678-2010 standard. Migration of metal ions in the composition was tested based on SR EN1186-3: 2003 standard. The new photocatalytic antimicrobial method uses a type of photocatalytic paint that is active in the visible spectral range and generates reactive oxygen species with inhibitory effect against all tested microbial strains.

RESUMO

Across the world, there has been an increase in the consumption of food supplements. This may be due to the perception that these dietary supplements cannot negatively affect the health of consumers in any way. However, dietary supplements may not have the expected effect. In addition, it has been shown that supplements can sometimes be chemically, physically or microbiologically contaminated, if the hygiene conditions and Hazard Analysis Critical Control Points (HACCP) plan are not fully complied with. The aim of this study was to determine the lead and cadmium content of 41 food supplements available on the Romanian market and to assess the risk to consumer health. The graphite furnace atomic absorption spectrometry (GFAAS) technique was used for sample analysis after wet mineralization of the samples. The risk assessment was determined based on Estimated Daily Intake (EDI), Target Hazard Quotient (THQ), and Carcinogenic Risk (CR) calculations. Values obtained for both lead and cadmium fall within the limits imposed by the legislation in force. Small risks associated with the consumption of these food supplements was shown, with a main recommendation being to decrease the recommended daily dose in the case of food supplements.

RESUMO

The aim of this study was to obtain membranes with antimicrobial activity presenting a complex sandwich-type structure. The outer layers are comprised of poly(methyl methacrylate) membranes, whereas the inner active layer consists of a modified commercial membrane to achieve antimicrobial properties. This activity arises due to the presence of silver nanoparticles in a material with a hybrid composition deposited on a commercial membrane. This hybrid material consists of polymer colloids and multiwall carbon nanotubes used for both the stabilization of the active layer by the interconnections of the polymer particles and as active component. The filtration tests revealed a good stability of the materials and an increased hydrophilicity of the hybrid membranes. The antimicrobial properties have been evaluated using Staphylococcus aureus and Escherichia coli, and have been correlated with the content and migration rate of silver ions.
