The objective of this study was to determine the clinical applicability of maternal intrapelvic area (PA) and selected morphometric parameters that can be measured before parturition in predicting dystocia in dairy heifers. The measurements were performed in 374 late-gestation Holstein-Friesian heifers. Inner pelvic height and width were measured using a pelvimeter, and PA was calculated. The heifers were monitored continuously around the time of calving, and calving difficulty was categorized as: unassisted calving (UC), slight assistance (SA), considerable difficulty (CD) and veterinary assistance (VA). Calving performance was analysed with the χ2 test, and the effect of body dimensions on the course of parturition was evaluated by one-way analysis of variance. Dystocia (CD + VA) was predicted with the use of the classification tree method. Dystocia accounted for 29.14% of all deliveries. The percentages of stillbirths and retained placenta increased (p < .01) with increasing calving difficulty. Average PA immediately before parturition was smaller (p < .01) in group VA (223.2 cm2 ) than in group UC (253.3 cm2 ). According to the classification tree, dystocia may occur (74.07% odds) in heifers with PA < 254.2 cm2 and a rump angle <5.68° before parturition. Measurements of heifer's cannon circumference and sire's body size improve the accuracy of dystocia prediction.

The study aimed at evaluating the influence of silage type (grass silage-GS, and maize silage-MS) and energy level in the feed portion on animals' performance, carcass value and the quality of Holstein-Friesian bull meat. The animals were reared using intensive (I) feeding, 1.02 feed units for meat production (UFV)/kg dry matter (DM), and semi-intensive (SI) feeding, 0.94 UFV/kg DM. Thirty-two HF bulls with an average live weight of 530 kg were assigned to four feeding groups. The proportions (g/kg DM) of feed in the diets were as follows: group GS-I, GS 500, concentrate 500; group GS-SI, GS 700, concentrate 300; group MS-I, MS 500, concentrate 500; and group MS-SI, MS 700, concentrate 300. After 4 months of the finishing phase, bulls were slaughtered and samples of the longissimus lumborum muscle were collected. The silage type did not affect performance, carcass value or meat quality. However, in the intensive feeding, a 33% increase (p < 0.01) in daily weight gain and a reduction in the feed conversion ratio compared to semi-intensive feeding were noted. The carcasses of bulls fed intensively received higher scores for conformation and fatness than the carcasses of bulls fed semi-intensively. The meat of I group bulls had a higher intramuscular fat content and received higher juiciness, tenderness, taste and overall acceptability scores.

The study was aimed at determining the effects of the rearing system and intensity of fattening on beef physicochemical properties and sensory quality, fatty acid composition, and mineral compounds and vitamins concentration. The study was conducted using meat from 38 young, crossbred bull calves, which were reared with nurse cows (C) or were fed milk replacer (R). In the study, intensive (Int) or semi-intensive (SInt) fattening system were applied. The bulls were slaughtered at the age of 560 days and samples of the longissimus lumborum (LL) muscle were collected. Meat from C bulls was juicier (p < 0.05) and had a higher concentration of conjugated linoleic acid (CLA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA), as well as zinc (Zn), iron (Fe), and α-tocopherol, compared with meat from R bulls. The Int system resulted in the intramuscular fat (IMF) content increase (p < 0.01) and reduced shear force (p < 0.05), compared with the SInt system. Meat from Int bulls had a better eating quality and a higher monounsaturated fatty acid (MUFAs), Zn, and Fe; however, it had a lower proportion of polyunsaturated fatty acids (PUFAs) and α-tocopherol concentration than meat obtained from SInt bulls.

The aim of the current study is to evaluate Virginia fanpetals silage based on an apparent digestibility and palatability test performed on six adult rams. Alfalfa silage was used as standard forage for comparison. Virginia fanpetals samples were harvested in the bud-formation stage and alfalfa samples were harvested in the late bud stage. Virginia fanpetals silage had a crude protein (CP) content of 176 g kg - 1 dry matter (DM), a neutral detergent fiber (NDF) content of 378 g kg - 1  DM, and a lignin content of 42.8 g kg - 1  DM. Virginia fanpetals silage had higher acidity (pH of 4.30) and was characterized by intense lactic acid fermentation compared with alfalfa silage (80 % vs. 51 % of the total acids). The digestibility coefficient of Virginia fanpetals silage was as follows: for DM it was 0.707, for organic matter (OM) it was 0.724, for CP it was 0.861, and for NDF it was 0.609. In comparison with alfalfa silage, Virginia fanpetals silage was characterized by higher apparent digestibility of nutrients, but a significant difference was noted only for CP. The voluntary intake of Virginia fanpetals silage was significantly higher than that of alfalfa silage (1427.4 vs. 954 g DM). The greatest differences in voluntary intake were observed 0-2 and 8-12 h after feeding. Virginia fanpetals silage had a chemical composition similar to that of alfalfa, but it was characterized by a more desirable fermentation pattern and higher digestibility, and it was more willingly consumed by rams. The present findings indicate that Virginia fanpetals silage can be fed to sheep.

The study was undertaken to investigate the effect of muscle, thermal treatment, and ageing on the beef quality. The longissimus lumborum (LL) and semimembranosus (SM) muscles were taken from Holstein-Friesian young bull carcasses then subjected to steam-cooking and sous-vide after 9 and 14-d wet ageing. It was shown that characteristics of cooked beef were the most significantly affected by thermal treatment method. Using sous-vide provided beef with lower shear force and cooking loss values, darker, and more red colour and more beneficial sensory quality. LL and SM muscles showed a similar quality when subjected to the same thermal treatment method after the same ageing time. It is possible to obtain juicy and tender beef from Holstein-Friesian bulls after 9-d ageing and sous-vide treatment.

This study was designed to compare the fatty acid (FA) profiles of four types of fat depots from crossbred bulls (Polish Holstein-Friesian × Limousin, PHF × LM) fattened semi-intensively (SI) and intensively (I). Intramuscular fat was most abundant in total polyunsaturated fatty acids (PUFAs), n-3 and n-6 PUFAs, and functional fatty acids C 18:2, C 18:3, C 20:4 and C 20:5 in comparison with the remaining fat types. Furthermore, note that external fat was more abundant in conjugated linoleic acid (CLA) than other fat types. Grass silage fed to cattle during fattening had a beneficial influence on the FA profile of beef, and an increase in the amount of concentrate in the ration did not decrease beef quality.

Different harvesting and preservation methods of Virginia fanpetals herbage were evaluated, based on the chemical composition and digestible organic matter (OM) content (D-value) of silage fed to adult sheep, the intake and digestibility of silage, and the performance of young cattle. The following harvesting methods were compared: direct-cut harvesting with a precision-cut forage harvester (DC), harvesting after field wilting with a precision-cut forage harvester (WC) or a round baler (WRB). The silage was fed for 81 days to 24 Polish Holstein Friesian (HF) bulls, as the sole forage supplemented with 3.0 kg of concentrate/head/day. Harvesting methods affected the density (p < 0.001) and water-soluble carbohydrate (WSC) content (p = 0.047). Differences were found among the groups in the digestibility coefficients of OM (DC-73.7, WC-78.9, WRB-79.9%) (p = 0.007), and crude protein (CP) (69.8%, 77.1%, 78.5%, respectively) (p < 0.001). Dry matter intake (DMI) reached 8.38 kg (DC), 8.74 kg (WC) and 7.21 kg (WRB). Live weight gain (LWG) differed (p < 0.001) among groups (0.939, 1.033, 0.813 kg/day, respectively). The feed conversion ratio (FCR) tended to improve in WC (8.66 kg DMI/kg LWG) (p = 0.08). The highest-quality silage was produced in group WC, and it could be successfully fed to growing bulls as the sole forage.

This study was designed to compare the fatty acid profiles of four types of fat depots from bulls, steers, and heifers. All animals were Polish Holstein-Friesian and Limousin crossbreds fattened semi-intensively-silage at libitum and concentrate in the amount corresponding to 30% of their net energy requirements. The fatty acid profile in intramuscular, intermuscular, and external and internal fat was determined. The intramuscular fat of bulls was most abundant in total PUFAs and n-6 PUFAs, and functional fatty acids C 18:2, C 20:4, and C 22:5 in comparison with steers and heifers. Regardless of sex category, intramuscular and external fat were characterized by higher levels of UFAs and a more desirable MUFA/SFA ratio than the remaining fat types. It should also be noted that external fat was more abundant in CLA than other fat types, and that the highest CLA content was found in bull fat, compared with the remaining sex categories of cattle.

OBJECTIVE: The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. METHODS: Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. RESULTS: Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). CONCLUSION: Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.

The aim of this study was to determine the effects of genotype and slaughter age on the mineral content and fatty acid profile of beef. The experiment was performed on 72 crossbred bulls produced by crossing Polish Holstein-Friesian (PHF) cows with bulls of three beef breeds: Hereford (HH), Limousin (LM), and Charolais (CH), slaughtered at 15, 18, and 21 months of age. Samples of the longissimus thoracis muscle were collected to determine their mineral (potassium-K, sodium-Na, magnesium-Mg, zinc-Zn, and iron-Fe) and fatty acid composition. The meat of PHF × LM crosses had a lower (p ≤ 0.01) content of K and Mg, compared with the remaining crossbred bulls. The Fe content per kg of meat was 4 mg higher (p ≤ 0.01) in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The content of monounsaturated fatty acids (MUFAs) in intramuscular fat was 2.77% higher in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The n-6/n-3 polyunsaturated fatty acids (PUFA) ratio did not exceed 4.0, and it was most desirable in PHF × LM crosses (2.84) and in the oldest bulls (2.92).

The aim of this study was to evaluate the effect of partial or complete substitution of alfalfa silage with Virginia fanpetals silage in rations based on maize silage on feed intake, digestibility, ruminal fermentation and milk yield and physicochemical characteristics. Nine Polish Holstein Friesian cows in the second half of lactation were fed three experimental diets in a replicated 3 × 3 Latin square design as follows: maize silage + alfalfa silage, maize silage + alfalfa silage and Virginia fanpetals silage in a 50:50 ratio, maize silage + Virginia fanpetals silage. Complete substitution caused an increase in dry matter intake (DMI), total volatile fatty acids (VFA), acetic acid to propionic acid (A/P) ratio, N-NH3 in the rumen contents and milk urea and a decrease in the feed conversion ratio. The partial and complete substitution changed the profile of milk fatty acids, resulting in a slight increase in saturated fatty acids (SFA) and a decrease in unsaturated fatty acids (UFA) as well as in all functional fatty acids except vaccenic acid. The most promising production effects were achieved through partial substitution of alfalfa silage with the Virginia fanpetals silage.

The aim of the study was to investigate the effect of ageing (9 and 14 days) on beef obtained from Polish Holstein-Friesian bulls (n = 24) fed different dietary treatments containing the addition of herbal preparations (treatments: control, one and two herbal preparations). Between the 9th and 14th day of ageing, moisture and expressible water contents, Warner-Bratzler Shear Force (WBSF) and intensity of untypical taste significantly decreased, whereas redness, yellowness, chroma, intensity of meat aroma and tenderness increased. Interactions between ageing and dietary treatment on pH, expressible water, cooking loss and WBSF were noted. Using two herbal preparations in a dietary treatment enabled to obtain 9-days aged beef with similar tenderness as compared with 14-days aged beef from the control treatment. Therefore, it is possible to decrease the ageing time of beef by using a well-designed dietary treatment.

OBJECTIVE: The objective of this study was to determine the effects of age and gender (bull vs steer) on feeding behavior parameters in young beef cattle fed grass silage. METHODS: The study was conducted on 180 young beef cattle at 7 to 18 mo of age. The experimental materials comprised 90 bulls produced by commercial crossing of Polish Holstein-Friesian cows with Charolais, Limousin and Hereford bulls (30 animals of each breed) and 90 steers of the same genotypes. The animals had ad libitum access to grass silage; the concentrate was fed separately, in feed stations. They received 28 g dry matter of concentrate per kg of metabolic body weight per day. Bunk visit data and silage intake for all experimental animals were recorded individually using the Roughage Intake Control system (5 feed bunks per 15 animals). RESULTS: Age and gender (bull vs steer) exerted significant effects on the feeding behavior of young beef cattle. The frequency of bunk visits and meal frequency decreased, whereas the feeding rate of silage, and the average duration and size of a single meal increased with age (p<0.01). Bunk attendance and meal frequency were higher (p<0.01) in steers than in bulls (49.1 vs 37.4 visits/d, and 8.63 vs 7.99 meals/d, respectively). Daily feeding time was longer in steers than in bulls (102.3 vs 100.3 min/d, respectively), but the feeding rate of silage was lower in steers, and their meals were smaller in size and shorter in duration (p<0.01). Daily silage dry matter intake was higher (p<0.01) in bulls than in steers (4.62 vs 4.47 kg/d, respectively). CONCLUSION: The results of this study indicate that age and gender (bull vs steer) exerted significant effects on the feeding behavior of young beef cattle.

Twenty four Holstein-Friesian bulls were randomly assigned to one of three dietary treatments: a control diet, diet O (supplemented with Optirum herbal extracts improving the functioning of the gastrointestinal tract of cattle), and diet OS (containing two herbal preparation: Optirum and Stresomix, used to reduce stress). The quality of longissimus lumborum (LL) and semimembranosus (SM) muscles were determined after 14 days of wet ageing. The diet influenced proximate composition, pH, water holding capacity, colour, shear force and some sensory quality attributes of beef, although the influence depended on the muscle type. The supplementation of the bulls' diet with two herbal preparations (OS diet) had a beneficial impact on technological properties and sensory tenderness of LL muscles. The herbal extracts O and OS had no negative effect on lipid oxidation or the sensory attributes of beef. Thus, it is recommended to use a combination of these two products in cattle feeding.

The aim of this study was to determine the effect of disease incidence on selected parameters of cattle fattening performance and carcass quality, and the fatty acid profile of beef. The experimental materials comprised 16 bulls and 16 steers, Polish Holstein-Friesian × Limousin crossbreeds (including 10 healthy and six treated animals of each category). At 5 weeks of age, bloodless castration was carried out using a rubber elastrator. The calves were fed milk replacer provided in automatic feeding stations. Until 540 days of age, the animals were fattened in an Animal Research Laboratory equipped with the Roughage Intake Control (RIC) system (Insentec, the Netherlands). In comparison with healthy (untreated) bulls and steers, sick (treated) animals had lower average body weight at 180 days of age, by 37 kg (P ≤ 0.05) and lower average final body weight at 540 days of age, by 56 kg (P ≤ 0.05). Sick animals were characterized by lower feed intake and worse feed efficiency (not statistically significant differences). Hot carcass weight reached 318 kg in healthy animals and 258 kg in treated bulls (P ≤ 0.05). In treated steers, the percentage of lean meat and bones in the three-rib section was higher and the percentage of fat was lower, compared with their healthy counterparts (P ≤ 0.01). There was a category × health status interaction for carcass tissue composition. There were no significant influences of type of sickness on analyzed traits. In comparison with healthy steers, intramuscular fat of Musculus longissimus dorsi (MLD) from treated steers had significantly (P ≤ 0.05) higher concentrations of polyunsaturated fatty acids (n-6 and n-3) and a lower content of conjugated linoleic acid.

The objective of this study was to determine the usefulness of live animal measurements in estimating the intramuscular fat (IMF) content of m. longissimus thoracis (MLT) in beef cattle. Live animal measurements were performed in young crossbred bulls (96) and steers (59), the offspring of Holstein-Friesian (HF) cows and beef bulls (Limousin, Hereford and Charolais), at the end of the fattening period. The content of intramuscular fat was determined in samples from MLT by chemical analyses. A prediction model was developed by stepwise regression. In the validation model, the values of R2=0.74, RMSE=0.37% were determined. The results indicate that selected biometric (chest width, chest girth) ultrasound measurements (thickness of subcutaneous rump and back fat) and selected blood parameters (triglycerides) can be used to predict IMF content with satisfactory precision and accuracy. The analyzed parameters could constitute a valuable tool in the process of selecting beef quality traits and determining the slaughter value of young beef cattle.

The aim of the study was to determine effects of feeding intensity on collagen content and eating quality of infraspinatus (INF) muscle. Twenty Polish Holstein-Friesian bulls (11-month-old) were fed either intensively (I, n=10, with triticale meal addition to total mixed ration) or semi-intensively (SI, n=10, without triticale meal) before slaughter at 19months. The animals from I group showed higher body weight at the end of fattening, average daily gain and dressing percentage than SI group. The INF muscle from I treatment had higher fat content and the proportion of water-soluble collagen, whereas lower insoluble collagen content compared with SI treatment. There were no differences in shear force values, cooking loss and eating quality between the treatments. In conclusion, feeding Holstein-Friesian bulls with increased energy value fodder beneficially affected its slaughter value and collagen profile in infraspinatus muscle.

The study compared the slaughter value and meat quality of heifers and once-calved heifers slaughtered at the age of 18 and 28months, respectively. The once-calved heifers at the age of 15months, were bred with semen of Limousine bulls and following the calving they fed their offspring and then they were slaughtered. There were no differences in the carcass conformation and fatness between the treatments. Once-calved heifers' carcasses had a higher proportion (P<0.05) of 5 most valuable primal cuts as compared with heifers. Meat of once-calved heifers contained more (P<0.05) intramuscular fat, was darker (P<0.01), and exhibited a higher water-holding capacity and lower cooking loss (P<0.05) as compared with heifers' meat. In conclusion, due to the possibility for obtaining additional offspring and a heavier pre-slaughter weight without reducing the slaughter value of the carcass and meat quality, it is recommended to use heifers originating from commercial crossbreeding as the once-calved ones.

The aim of the present study was to investigate the effects of crossbreeding on collagen content and solubility, shear force (WBSF) and the eating quality of Infraspinatus (INF) and Semimembranosus (SM) muscles of young bulls and the relationships between collagen content and solubility, shear force and the eating quality of beef. The experimental material comprised muscles of crossbred young bulls (about 600 days old) of Polish Holstein-Friesian (PHF) × Limousine (LM) (n = 10), PHF × Charolaise (CH) (n = 9), PHF × Hereford (HER) (n = 9) breeds. The crossbreeding influenced WBSF, aroma and taste, total, water-soluble, acid-soluble, total soluble and insoluble collagen content, as well as the acid-soluble, total soluble and insoluble collagen proportions. WBSF was significantly negatively correlated with sensorial tenderness and water-soluble collagen content. The eating quality of beef obtained from different crossbreds was similar; however, the meat from PHF × LM and PHF × HER bulls had lower WBSF values than PHF × CH bulls. © 2016 Japanese Society of Animal Science.

The objective of this study was to determine the effect of slaughter season on the fatty acid profile in four types of fat deposits in crossbred (Polish Holstein Friesian Black-and-White×Limousine) beef bulls. The percentage share of fatty acids was determined by gas chromatography and were divided into the following categories of fatty acids: saturated (SFAs), unsaturated (UFAs), monounsaturated (MUFAs), polyunsaturated (PUFAs), desirable hypocholesterolemic (DFAs) and undesirable hypercholesterolemic (OFAs), n-3 and n-6. Perinephric fat was characterized by the highest SFA concentrations (59.89%), and subcutaneous fat had the highest MUFA content (50.63%). Intramuscular fat was marked by a high percentage share of PUFAs and the highest PUFA/SFA ratio. The slaughter season had a significant effect on the levels of C18:3, C20:4 (p≤0.01) and conjugated linoleic acid (p≤0.05). There was an interaction between the slaughter season and fat type for the content of C20:4 (p≤0.01) and C20:5 (p≤0.05). The results of this study show that beef from cattle slaughtered in the summer season has a higher nutritional value and more health-promoting properties.
