RESUMO

The aim of this study was to determine the quantity of particular toxic metals (Pb, Cd, As, Hg) and micronutrients (Cr, Fe, Co, Ni, Cu, Zn, Se) in the recommended daily dose of 51 food supplements based on beehive products. Samples taken from the Croatian market were submitted for the identification/quantification of studied metals and micronutrients. It was carried out by means of inductively coupled plasma mass spectrometry (ICP-MS). Eleven samples (21.57%) showed an increased concentration of total arsenic, three samples (5.88%) contained an increased concentration of total iron, and eight samples (15.68%) had an increased concentration of total nickel. Three samples (5.88%) contained an increased concentration of zinc, while one sample (1.96%) contained an increased concentration of selenium. Increased levels of certain toxic metals and micronutrients do not pose a danger to human health because the amount identified was less than what can cause toxic effects in humans. All other analysed metals and micronutrients fell within the defined literature values. Despite certain increases in particular parameters, all samples met the established toxicity criteria. This study evidenced their safety if consumed in the recommended daily dose.

Forty-five honey samples of three honey types - two monofloral (acacia and sunflower) and one polyfloral (meadow) were collected from the Autonomous Province of Vojvodina (Republic of Serbia) and analysed for their physicochemical parameters (moisture, acidity, pH, ash, electrical conductivity, glucose, fructose, hydroxymethylfurfural (HMF), CIE L∗a∗b∗ colour and mineral content). All tested physicochemical parameters were in agreement with the EU regulation except for moisture (4 samples) and HMF content (1 sample). Principal component analysis (PCA) was used for assessing the effects of three honey types on all investigated physicochemical parameters. According to PCA, acacia honey samples can be clearly isolated and form a cluster, while, regarding other honey types, PCA can offer the possibility to distinguish sunflower and meadow honey samples regarding examined physicochemical parameters and mineral content.

Screens of antioxidant activity (AA) of various natural products have been a focus of the research community worldwide. This work aimed to differentiate selected samples of Merlot wines originated from Montenegro, with regard to phenolic profile and antioxidant capacity studied by survival rate, total sulfhydryl groups and activities of glutathione peroxidase (GPx), glutathione reductase and catalase in H2O2⁻stressed Saccharomyces cerevisiae cells. In this study, DPPH assay was also performed. Higher total phenolic content leads to an enhanced AA under both conditions. The same trend was observed for catechin and gallic acid, the most abundant phenolics in the examined wine samples. Finally, the findings of an Artificial Neural Network (ANN) model were in a good agreement (r² = 0.978) with the experimental data. All tested samples exhibited a protective effect in H2O2⁻stressed yeast cells. Pre-treatment with examined wines increased survival in H2O2⁻stressed cells and shifted antioxidative defense towards GPx⁻mediated defense. Finally, sensitivity analysis of obtained ANN model highlights the complexity of the impact that variations in the concentrations of specific phenolic components have on the antioxidant defense system.

The preliminary assessment of the properties of alginate immobilized aquatic weed Myriophyllum spicatum beads-MsAlg in a multi-element system of nine Serbian lakes water samples was done. Herein, the results obtained in the biosorption experiment with MsAlg contents of twenty-two elements analysed by inductively coupled plasma-optical emission spectrometry, biosorption capacity, element removal efficiency, total hardness (TH) and quality index of water (WQI) are presented. Scanning electron microscopy with energy dispersive X-ray spectroscopy was used for the characterization of M. spicatum and its beads. The study showed that aluminium, magnesium and strontium were adsorbed by MsAlg in the water samples from all examined lakes; barium and iron in the water samples from six lakes. The overall average efficiency of MsAlg in biosorption of elements was in the following order: Al > Ba > Sr > Fe > Mg (58.6, 51.7, 48.2, 23.9 and 17.7%, respectively). The increase of TH and WQI values after the biosorption was noticed in all studied lake water samples. The most significant correlations for pH were regarding the contents of B, Mg and Ca, whereas WQI was highly correlated to the contents of B and Mg, and pH. The complexity of the obtained data was explained by Cluster Analysis and Principal Component Analysis, which showed good discrimination capabilities between the water samples taken from different locations. Considering that the invasive M. spicatum is natural, widespread and that its immobilization is cheap and eco-friendly, presented findings could be helpful in further assessment of MsAlg beads for its potential use as biofilter.

The aim of this study was to determine the levels of Zn, Cu, and Fe in three canned fish species marketed Serbia to see if they meet recommended daily intake requirements or exceed safety limits. We collected a total of 207 samples of canned tuna, sardine, and mackerel, in oil or tomato sauce and analysed them with inductively coupled plasma mass spectrometry (ICP-MS) after acid digestion. The highest levels were obtained for Zn (15.1 mg kg-1) and Cu (1.37 mg kg-1) in sardine in oil and tomato sauce, respectively, and for Fe (18.98 mg kg-1) in mackerel in tomato sauce. Our results keep within the ranges reported by several national food databases and available literature data, with a few exceptions. Our findings also single out canned sardines as the richest source of the three essential elements combined. The estimated daily intake (EDI) of the three essential elements, however, was subpar, and ranged between 0.14 % and 0.72 % of the recommended dietary allowance (RDA) for Zn, Cu, and Fe.

White cabbage heads cultivar "Futoski" and hybrid "Bravo" were investigated during fermentation process, for 50days, at different temperature regimes (16-18; 18-20; 20-22°C) and salt concentrations 1, 1.5 and 2%. The quantity of biogenic amines (tryptamine, phenylethylamine, putrescine, cadaverine, histamine, serotonine, tyramine, spermidine and spermine), as well as microbiological profile (lactic acid bacteria, total number of microorganisms, yeasts and moulds and Enterobacteriaceae) have been determined during fermentation. The optimum processing conditions were determined by Response Surface Method, coupled with Fuzzy Synthetic Evaluation algorithm. The optimal process parameters, regarding low biogenic amines and polyamines content, for "Futoski" cabbage was: salt concentration of 2%, at 18°C, and for hybrid "Bravo": salt concentration of 1%, at 20°C.

Antioxidant activity (AO) of commercial propolis extracts (PEs), available on Serbian market, was determined by direct current (DC) polarography. Polarographic anodic current of 5.0 mmol L(-1) alkaline solution of H2O2 was recorded at potentials of mercury dissolution. Decrease of the current was plotted against the volume of gradually added PEs. The volume of PE causing 20% current decrease was determined from the linear part of the plot. Antioxidant activity was expressed in H2O2 equivalent (HPEq), representing the volume of PE that corresponds to 1.0 mmol L(-1) H2O2 decrease. Resulting HPEq ranged between 1.71±0.11 and 8.00±0.18 µL. Range of 1,1-diphenyl-2-picryl hydrazyl (DPPH) radical scavenging activity was from 0.093±0.004% to 0.346±0.006%. Total phenolic content (TCP) of PE with superior AO activity was 5.31±0.05% g GAE, while the extract with the lowest activity contained 1.45±0.02% g GAE. Antioxidant activity, determined by polarographic method, was correlated with DPPH scavenging activity (R2=0.991) and TCP (R2=0.985). Validity of obtained results was further confirmed using ANOVA and post hoc Tukey HSD test.
