We present results from the development of a new system of reversible electrical stunning of cattle. A single-pulse ultra-high current (SPUC) was generated from a capacitance discharge current spike of at least 5000 V at 70 A, for approximately 50 ms. Ninety-seven cattle were stunned in three experimental protocols. With improvements made to the design of the stun box and charge delivered, 38 cattle were either stunned and immediately jugulated or monitored for signs of reappearance of brain stem reflexes at which point a concussion stun was administered. This use of the SPUC charge, provided as a biphasic-pulse waveform, resulted in a high level of stunning efficacy, with unconsciousness lasting for up to 4 min. These results were supported by EEG data taken from a subsequent cohort of stunned cattle. The SPUC stun also apparently eliminated post-stun grand mal seizures that can occur following short-acting conventional electrical stun, with its associated negative consequences on operator safety and meat quality.

As part of the project "Religious slaughter (DIALREL): improving knowledge and expertise through dialogue and debate on issues of welfare, legislation and socio-economic aspects", this paper discusses an evaluation of current practices during Halal and Shechita slaughter in cattle, sheep, goats and poultry. During religious slaughter, animals are killed with and without stunning by a transverse incision across the neck that is cutting the skin, muscles (brachiocephalic, sternocephalic, sternohyoid, and sternothyroid), trachea, esophagus, carotid arteries, jugular veins and the major, superficial and deep nerves of the cervical plexus. In this report, the restraint methods, stunning, neck cutting, exsanguination, slaughter techniques and postcut handling in the abattoir were assessed for religious slaughter. Information about the procedures used during religious slaughter in Belgium, Germany, Italy, the Netherlands, Spain, the UK, Turkey and Australia was collected by means of spot visits to abattoirs. To standardize the information gathered during the spot visits three guidelines were designed, one for each species, and translated into the national languages of the countries involved. The document included questions on the handling and restraint methods (stunning, neck cutting/exsanguination/slaughter techniques and postcut handling performed under religious practices) and for pain and distress of the animal during the restraint, neck cutting and induction to death in each abattoir. Results showed differences in the time from restraining to stun and to cut in the neck cutting procedures and in the time from cut to death.

RESUMO

Ensuring meat quality attributes meet the requirements of the diverse range of markets is a critical component for the continued success of the New Zealand and Australian meat industries. Developing cost-effective and flexible technologies to help meet this requirement is a central objective of a current Meat and Wool New Zealand and Meat and Livestock Australia funded programme. This initiative was developed three years ago; it is a collaborative programme that involves meat scientists, electrical engineers and commercial meat processors. To ensure this programme successfully delivers technologies and knowledge to the Australasian meat industry, the following strategies have been developed: measurement of meat quality attributes 'on-line' during processing; development of 'expert systems' that can integrate and interpret on-line measurements and development of quality-related feedback systems from the market that can be fed back to producers; and, development of methods to manipulate structural and biochemical events in meat to create new commercial opportunities for both producers and processors. This paper gives an overview of some of the new technologies that have developed from this programme that are being used commercially or, are undergoing the final stages of commercial validation.

RESUMO

Ever since the middle of the nineteen-eighties electrical stunning of cattle is used in industrial slaughter plants in New Zealand. Today electrical stun boxes operate in export slaughter plants throughout New Zealand. The reversible stun is utilised on the vast majority of slaughtered cattle. The electrical stunning (head only) immediately followed by bleeding is an alternative to ritual slaughter without prior stunning. Throughout the world's islamic community this alternative is widely accepted as Halal.
