Dried and milled eggplant fruit peel and calyces (PC) and mesocarp, placenta and core (Mes) were utilized as natural sources of valuable chemicals. Pectins were extracted with 0.1 M Na2CO3 (1 h; 23 °C). A high-power ultrasound (US) pretreatment (10 min net time; 12.76 W/cm2 power intensity) in 10:200 (g/mL) powder:water ratio led to the lowest solvent and energy consumptions after the subsequent 0.1 M Na2CO3 stirring, permitting the highest recoveries of uronic acid (UA) from PC and Mes (80.25 and 93.8 %, respectively). Homogalacturonans (>65 % w/w UA) of low degree of methylesterification, of acetylation, and 90,214-138,184 Da molecular weights with low polydispersity (≈1.32-1.40) were obtained. They included released ferulate (≈3.5 mg/100 g) esterified pectins. Antioxidants (caffeoylquinic acid, putrescine and spermidine derivatives, ß-carotene, lutein) gave additional technological value to their thickening effect as pectins protected tryptophan, tyrosine, alkyl side chains and sulfhydryl of skim milk proteins from UV-C photo-oxidation.

The aim of this work was to study the effect of finishing diets including distiller grains (DG) on color and oxidative stability of beef after being exposed to aerobic retail display conditions, with or without previous aging. For this purpose, beef samples from animals fed with finishing diets including 0%, 15%, 30%, and 45% DG (on a dry matter basis), which had been exposed to aerobic retail display conditions, with or without previous aging under vacuum packaging, were evaluated. The content of γ-tocopherol, ß-carotene, and lutein in diet samples increased with the level of DG. Beef evaluated at 72 h post-mortem showed greater content of γ-tocopherol and retinol as the DG level increased. Meat color was not affected by DG inclusion, but color parameters decreased with retail conditions. Meat from animals fed with DG showed the lowest values of thiobarbituric acid reactive substances (TBARS), independently of the retail display conditions. However, all samples were below the threshold associated with rancid aromas and above the a* value related to meat color acceptance. Thus, feeding diets including up to 45% of DG improved the antioxidant status of meat, preserving the color, and delaying lipid oxidation in meat samples under the display conditions evaluated.

Carrot residues were upgraded as pectin-enriched fractions (PEFs) useful for functional food formulation due to co-extracted antioxidants (α- and ß-carotenes, lutein, α-tocopherol), and gelling effect. High power ultrasound (US)-enzyme assisted extraction was applied for efficiency and sustainability. Carrot powder (CP) in citrate-buffer (pH 5.20) was submitted to US-pretreatment (12.27 W/cm2: 20 kHz, 80% amplitude, 20 min) and a subsequent digestion (5 h-40 °C) without or with hemicellulase or cellulase. US-hemicellulase led to the highest PEF yield (27.1%), and extracted almost the whole pectin content of CP. US-pretreatment increased the extraction yield of all PEFs, but the existence of an additional positive effect of the following step depended on the enzyme used. PEFs contained 40-47% of UA with low DM (24-49.9%), and co-extracted antioxidants. US decreased the antioxidant contents, DM, and molecular weight, but allowed obtaining calcium crosslinked true gels, also with higher elastic modulus than non-US-extracted PEFs, being promising as food additives.

Objetivo: Analisar a compreensão de enfermeiros sobre a Educação Permanente em Saúde como ferramenta de gestão. Métodos: Investigação qualitativa realizada com o aporte teórico-metodológico da hermenêutica dialética. Os dados foram coletados por entrevistas com 14 enfermeiros. Resultados: Q maioria dos enfermeiros relata compreender a importância da Educação Permanente em Saúde como ferramenta de gestão, mas demonstra uma visão incipiente desta ao descrever práticas educativas como atividades de transmissão do conhecimento pontuais, geralmente direcionadas a um grupo profissional específico e com temáticas definidas à partir de necessidades gestoras. Conclusão: A Educação Permanente em Saúde, entendida como questionamento permanente e compartilhado do processo de trabalho, com vistas à transformação das práticas em saúde, é uma potente ferramenta para a mudança no cotidiano dos serviços, assim como na gestão do Sistema Único de Saúde


Objective: To analyze the nurses understanding of Permanent Education in Health as a management tool. Methods: Qualitative research supported by the theoretical-methodological contribution of the dialectical hermeneutics. The data collection consisted of interviews with 14 nurses. Results: Most nurses report understanding the importance of Permanent Education in Health as a management tool, but show an incipient view of it when describing educational practices as punctual knowledge transmission activities, usually directed to a specific professional group and with pre-defined themes based exclusively on management needs. Conclusion: Permanent Education in Health, understood as a permanent and shared analysis of work process, aiming at the transformation of health practices, is a powerful tool to promote changes in the services, as well as in the management of the Unified Health System (SUS)

Resultados:La mayoría de los enfermeros relata comprender la importancia de la Educación Permanente en Salud como herramienta de gestión, pero demuestra una visión incipiente de ella en describir las prácticas educativas como actividades puntuales de trasmisión de conocimiento, en general dirigidas a un grupo específico de profesionales y con temáticas definidas a partir de las necesidades gestoras. Conclusión: La Educación Permanente en Salud, comprendida como cuestionamiento permanente y compartido del proceso de trabajo, con el fin de la transformación de las prácticas en salud, es una fuerte herramienta para el cambio en la cotidianidad de los servicios, así como en la gestión del Sistema Único de Salud (SUS)

This work describes the formulation of a functional yogurt-like product based on fermented maize with added phytosterols and its oxidative stability during cold storage. The technological challenge was to stabilize 3.5% esterified phytosterols (between 2 and 3 g of free sterols) in a low-fat emulsion and to preserve the obtained product throughout processing and storage. The natural bioactive compounds: lutein, zeaxanthin, ß-cryptoxanthin, ß-carotene and γ-tocopherol were detected in the yogurt, and remained stable during 12 days of refrigeration. Higher content of C18:1 n-9 and C18:3 n-3 (six and ninefold, respectively) were obtained in samples with phytosterols. This was desirable from a nutritional point of view, but at the same time it induced lipid oxidation that was 1.4-fold higher in the product with phytosterols than in the controls. The use of a multivariate approach served to find descriptors which were related to treatments, and to explain their behavior over time.
