RESUMO

The effect of consuming breads made with wheat flour and Amaranth (Amaranthus dubius Mart. ex Thell.) wholemeal flour on Sprague Dawley rats with hyperlipidaemia and hyperglycaemia induced through feeding was studied. Four diets were provided: control (CD: Ratarina®), commercial bread (CBD), bread with 100 g·kg-1 (ABD10) and 200 g·kg-1 (ABD20) amaranth flour. Zoometric and blood chemistry parameters were measured before and after consuming the diets. A completely random factorial design of 2 × 4 × 2 was used. The factors were blood lipids and glucose level (normal, N and elevated, E), diet (CD, CBD, ABD10 and ABD20) and sex (female, F and male, M). The rats consuming ABD10 and ABD20 diets presented the lowest glucose values, although with no differences (p > 0.05) between the groups of elevated blood lipids and glucose rats (E). Triglyceride concentrations decreased in ABD10 and ABD20 treatments in comparison with CD, elevated blood lipids and glucose (E) rats, while ABD10 rats showed lower total cholesterol level than normal (N) rats. The high-density lipoprotein cholesterol values increased in the ABD10 and ABD20 groups (p < 0.05), while it did lower for very low-density lipoprotein cholesterol and cardiac risk index (p < 0.05). In ABD10 and ABD20 treatments, the abdominal circumference decreased in both sexes (p < 0.05) between weeks 23 and 31. In conclusion, consumption of bread with amaranth improved lipid profiles of rats and could help to prevent metabolic and cardiovascular diseases.

Introducción: La incorporación de ingredientes funcionales como el amaranto (Amaranthus dubius Mart. ex Thell.) en la elaboración de pan es una estrategia para aumentar el consumo de fibra, el cual está relacionado con efectos beneficiosos para la salud, mejorando la respuesta glicémica y el perfil lipídico. Materiales y métodos: Treinta ratas machos Sprague dawley se distribuyeron al azar en tres grupos: dieta de pan con 0% de amaranto (PA0, control), dieta de pan con 10% de amaranto (PA10) y dieta de pan con 20% de amaranto (PA20) para determinar el consumo de alimento, ganancia en peso, triglicéridos, colesterol total, VLDL-C, LDL-C, HDL-C, proteínas y la respuesta glicémica postpandrial. Los datos fueron analizados a través de un análisis completamente aleatorizado con 10 repeticiones, utilizando la prueba de comparación de medias de Tukey para los parámetros bioquímicos. La respuesta glicémica postprandial fue analizada por el método de medidas repetidas en el tiempo. Resultados y discusión: La ingesta diaria y la ganancia de peso no se afecto (p>0,05) en los grupos con PA10 y PA20. La concentración de glucosa, triglicéridos y roteína presentó diferencias estadísticamente significativas (p>0,05) por la diferencia de contenido de amaranto de las dietas. Los valores de colesterol total, LDL-C, factor de riesgo e índice aterogénico presentaron diferencias estadísticamente significativas (p>0,05) resultando el grupo de menor valor el formado por PA10 y PA20. En los grupos PA10 y PA20 el pico de hiperglucemia y la fase de hiperglucemia total fue más bajo, mostrando una mejor respuesta glicémica. Conclusión: el amaranto podría ser utilizado como ingrediente funcional en la elaboraciones de panes ya que permitió mejorar el perfil lipídico así como la respuesta glicémica postpandrial (AU)

Postprandial glycemic response was analyzed by the method of repeated measures over time. Results and discussion: The daily intake and weight gain was not affected (P>0.05) in the groups with PA10 and PA20. The concentration of glucose, triglycerides and protein showed statistically significant differences (P>0.05) by the difference in content of amaranth diets. The values of total cholesterol, LDL-C, and atherogenic risk factor index were statistically significant (P<0.05) resulting goodwill group formed by PA10 and PA20. PA10 and PA20 in the hyperglycemic peak groups and the total phase hyperglycemia were lower, showing a better glycemic response. Conclusion: amaranth could be used as a functional ingredient in breads working as it improved the lipid profile and postprandial glycemic response (AU)

The aim of this study was to quantify mucilages, pectins, hemicelluloses, and cellulose of nopalitos (edible, as vegetable, young cladodes of flat-stemmed spiny cacti) of most consumed Mexican cultivars, and sweet and acid cactus pear fruits of Opuntia spp. The hypothesis is that, regardless of their unavailable polysaccharides diversity, nopalitos and cactus pear fruits are rich sources of soluble and insoluble dietary fiber. Twelve cultivars of Opuntia spp. were used. Nopalitos had a significant variation in structural polysaccharides among the cultivars: mucilages (from 3.8 to 8.6% dry matter (DM)) averaged near a half of pectins content (from 6.1 to 14.2% DM) and tightly bound hemicelluloses (from 2.2 to 4.7% DM), which were the less abundant polysaccharides, amounted 50% of the loosely bound hemicelluloses (from 4.3 to 10.7% DM). Acid fruits (or 'xoconostle') had significantly higher unavailable polysaccharides content than sweet fruit, and contain similar proportions than nopalitos. Unavailable polysaccharides represent a high proportion of dry tissues of nopalitos and cactus pear fruits, composition of both of these soluble and insoluble polysaccharides (total dietary fiber) widely vary among cultivars without an evident pattern. Nopalitos and cactus pear fruit can be considered an excellent source of dietary fiber.
