RESUMO

Quercetin (QCT) has a variety of pharmacological effects, such as antioxidant, antibacterial, anticancer, anticardiovascular and antiaging effects. However, its poor water solubility, stability and bioavailability limit its applications. The special structure of cyclodextrins and their derivatives with a hydrophobic inner cavity and hydrophilic outer wall can load a variety of hydrophobic drugs of a suitable size and shape, thereby improving the stability and solubility of these molecules. In this study, an inclusion complex of quercetin and sulfobutylether-ß-cyclodextrin was prepared. It was characterized via FT-IR, UV, 1H NMR, XRD, DSC, and SEM analysis, which revealed the successful formation of the inclusion complex. In vitro biological activity estimations were carried out and the results indicated that the inclusion complex displayed higher antioxidative and antibacterial properties compared with free QCT. In addition, the mechanisms of inclusion were explored using 1H NMR analysis and docking calculations, thus providing a theoretical basis for obtaining an inclusion complex.

Background: Posterior cortex epilepsy (PCE) primarily comprises seizures originating from the occipital, parietal, and/or posterior edge of the temporal lobe. Electroclinical dissociation and subtle imaging representation render the diagnosis of PCE challenging. Improved methods for accurately identifying patients with PCE are necessary. Objectives: To develop a novel voxel-based image postprocessing method for better visual identification of the neuroimaging abnormalities associated with PCE. Design: Multicenter, retrospective study. Methods: Clinical and imaging features of 165 patients with PCE were retrospectively reviewed and collected from five epilepsy centers. A total of 37 patients (32.4% female, 20.2 ± 8.9 years old) with magnetic resonance imaging (MRI)-negative PCE were finally included for analysis. Image postprocessing features were calculated over a neighborhood for each voxel in the multimodality data. The postprocessed maps comprised structural deformation, hyperintense signal, and hypometabolism. Five raters from three different centers were blinded to the clinical diagnosis and determined the neuroimaging abnormalities in the postprocessed maps. Results: The average accuracy of correct identification was 55.7% (range from 43.2 to 62.2%) and correct lateralization was 74.1% (range from 64.9 to 81.1%). The Cronbach's alpha was 0.766 for the correct identification and 0.683 for the correct lateralization with similar results of the interclass correlation coefficient, thus indicating reliable agreement between the raters. Conclusion: The image postprocessing method developed in this study can potentially improve the visual detection of MRI-negative PCE. The technique could lead to an increase in the number of patients with PCE who could benefit from the surgery.

The reduction of exogenous emissions of phosphorus (P) is a crucial measure for resolving eutrophication in lakes. However, the input of terrigenous materials still potentially contributes to an increase of P load in lake systems. In this study, we examined the phosphate oxygen isotope (δ18OP) of various P fractions in soils and sediments in a small lake watershed, namely, Shijiuhu watershed. The high-resolution in-situ diffusive gradients in thin films (DGT) technology was also used to survey the dynamic processes of P diffusion from sediment particles to the water. The results demonstrated that lighter δ18OP values (16.2-19.5‰) for individual P fractions in lake sediments were detected compared to other land-use patterns, indicating the cumulative biological P recycling on anaerobic condition. Fe bound P (Fe-P) overall had heavier δ18OP values (17.3-24.8‰) than some of Ca bound P (Ca-P) and equilibrium values, suggesting that Fe-P conserved the parental isotope signatures from terrigenous source and could act as the ideal tracer for the lake sediments. The mixing effect of terrigenous detrital input and biological mineralization made the source identification uncertain by using Ca-P, which had a wider range of δ18OP values (13.0-26.6‰). Additionally, significantly positive correlation (r = 0.551-0.913, p<0.05) between soluble reactive P (SRP) and Fe2+ in interstitial water obtained using DGT measurement revealed the conspicuous release and desorption of solid Fe-P toward the water. High diffusion fluxes from the sediments toward the overlying water further demonstrated that the desorption of Fe-P in the soil-originated sediments toward the solution conspicuously facilitated the accumulation of SRP in lake water. The first-time application of δ18OP isotope combined with in-situ DGT techniques certified that it's feasible for the contribution confirmation from terrigenous to lacustrine environments, and presented the direct evidence for management strategy making about P control and eutrophication restoration at the catchment scale of lakes.

Freshwater lakes undergo substantial alterations of the phosphorus (P) cycle in the water-sediment ecosystem due to thermal change. The impact process of seasonal fluctuation on P cycling in sediments has been scarcely investigated. P forms in sediments from a freshwater lake in China were analyzed using sequential extraction technique. The vertical distribution of soluble reactive P (SRP), Fe2+, and S2- in the interstitial water was measured using diffusion gradient technique (DGT). Fick's Law and DIFS model were used to obtain the diffusion fluxes of SRP and the kinetic parameters in the water-sediment system. The results showed that total P (TP) concentrations in the solid sediments varied from 207.5, 266.6 and 130.3 mg/kg to 614.7, 1053.1, and 687.6 mg/kg in winter, spring, and summer, respectively. The concentrations of individual P forms in spring were higher than those in other seasons, with Fe-bound P (Fe-P) concentration being the highest across all seasons. Notably, significant variations of SRP concentrations were found in the interstitial water between sedimentary depths of approximately 2 cm and 6 cm, particularly in the summer. Furthermore, higher diffusion fluxes of SRP through the interface were found in summer. A stable anaerobic environment failed to develop in spring with high water level, preventing the desorption of solid Fe-P and diffusion of Fe2+ into the water due to the afflux and deposition of P-containing particulate into deeper sediment layers along with organic material. Under extreme high-temperature in summer, decreased rainfall and rising temperatures boosted the activity of aquatic organisms in the water, thereby reducing P fixation by sediments and leading to P release. This process increased the risk of P excess and potential eutrophication in the water. Generally, clarifying the resupplying processes of endogenous P in sediment systems experiencing seasonal variations is critical for eutrophication management of lakes.

BACKGROUND: Plant volatile organic compounds (VOCs) modified by plant-associated microbes can attract or repel the oviposition of herbivores. Here, we explored the effects of three different fungi on apples' VOCs and the cascading impacts on the oviposition preference of yellow peach moth [YPM, Conogethes punctiferalis (Guenée)]. RESULTS: Among Penicillium crustosum-infected apples (PCA), Rhizopus oryzae-infected apples (ROA), Colletotrichum gloeosporioides-infected apples (CGA) and healthy apples (HA), mated YPM females preferred to oviposit eggs on ROA and CGA, and showed significant attractiveness to VOCs from PCA, ROA, and CGA under laboratory conditions. The VOCs analyses showed that there were significant differences between fungi-infected apples (ROA, CGA) and control treatments (mechanically damaged apples (MDA), HA) in terms of the relative contents of 13 VOCs. The relative contents of ethyl 2-methylbutyrate, ethyl caprylate, estragole, ethyl hexanoate in ROA and CGA were higher than those in MDA. The relative content of isopropyl 2-methylbutyrate in ROA was significantly higher than those in HA and CGA. The relative contents of 2-methylbutyl acetate, butyl 2-methylbutyrate, hexyl 2-methylbutyrate, amyl hexanoate, hexyl hexanoate, (E, E)-α-farnesene in ROA and CGA were lower than those in HA. The relative content of hexyl acetate in ROA and CGA was significantly higher than that in MDA, but lower than that in HA. Additionally, 10 fungi-induced VOCs were detected in ROA and/or CGA. When 20 VOCs from ROA and/or CGA were tested as individuals or mixed blends in Y-tube olfactometer assays, mated YPM females preferred amyl 2-methylbutyrate, isoamyl 2-methylbutyrate, isopropyl 2-methylbutyrate, hexyl propionate (common VOCs in ROA, CGA, and HA), and heptacosane (a fungi-induced VOC in ROA), but no significant preferences were observed between individual compounds and mixed blends, except for hexyl propionate. CONCLUSION: Different fungi infection increased the relative contents of common VOCs from healthy and fungi-infected apples, which ultimately resulted in the significant attractiveness for the oviposition of mated YPM females. This study clarified why fungi-infected apples were more attractive to YPMs than healthy apples and screened out the crucial VOCs for YPM oviposition. © 2023 Society of Chemical Industry.

Excessive phosphorus (P) enrichment is the critical cause of eutrophication in the lake water. Organic P (Po) mineralization processes induced by alkaline phosphatase (APase) regulated by phoD-encoding microorganisms in the lake ecosystems was still ambiguous due to the transseasonal shift of water temperatures and depths. Different P pools in the water and sediments of Shijiuhu Lake at varied seasons were measured using chemical extraction methods and solution 31P NMR. The alkaline phosphatase activity (APA) in the sediments were assessed together with enzyme kinetic parameters. The abundances and compositions of microbial communities encoding functional gene phoD were also obtained using high-throughput sequencing. The results showed that Po concentrations remarkably increased from winter toward spring when having higher water depths due to the terrigenous input and biomass deposition. Noteworthy elevation in the PO43- concentration was observed in the interstitial water during the spring, particularly at around 5 cm sediment depth with value reaching as high as 0.43 mg/L. The degradation and mineralization of momoesters and diesters with higher concentrations in the sediments of spring aggravated the PO43- load in the interstitial water. Higher APA reaching 91.6 µg/(g·h) in spring was responsible for the mineralization of Po. Remarkably upwards increasing of absolute abundance of phoD-encoding gene in spring reaching up to 2.6 times of that in winter facilitated the generation of APA in spring. Cobetia and Calothrix followed by Aquabacterium and Mitsuaria were the most abundant phoD-encoding genera with relative abundance > 4%. Weakly positive correlation between dominant bacterial genera and APA and P fractions suggested that low-abundance genera was also involved in the APA generation and Po hydrolysis. These results indicate that spring with high water temperature and depth facilitate the mineralization of Po in the sediment and increase of labile PO43- load in the water, further provide valuable information for the management of eutrophic lakes.

Nitrogen (N) reduction processes including denitrification and dissimilatory nitrate reduction to ammonium (DNRA) are critical for the eutrophication in the lake water. However, the understanding about the dominant pathways of N cycling keep limited due to the high complexity of N cycle processes in lacustrine environment. The N fractions in sediments collected from Shijiuhu Lake were measured using high-resolution (HR)-Peeper technique and chemical extraction method in varied seasons. The abundance and microbial community compositions of functional genes involved in various N-cycling processes were also obtained using high-throughput sequencing. The results showed that NH4+ concentrations in the pore water remarkably increased from the upper layer toward the deeper layer and from winter to spring. This trend suggested that higher temperature facilitated the accumulation of NH4+ in the water. Decreased NO3- concentrations were also detected at deeper sediment layers and higher temperature, indicating the intensification of N reduction on anaerobic conditions. The NH4+-N concentrations reduced in spring along with the slight change of NO3--N in solid sediment, indicating the desorption and release of mobile NH4+ from solid phase to the solution. Remarkably decreased absolute abundances of functional genes were found in spring with DNRA bacteria nrfA gene as dominant genus and Anaeromyxobacter as the most dominant bacterium (21.67 ± 1.03%). Higher absolute abundance (146.2-788.1 × 105 Copies/g) of nrfA gene relative to other genes was mainly responsible for the increase of bio-available NH4+ in the sediments. Generally, microbial DNRA pathway predominated the N reduction and retention processes in the lake sediment at higher temperature and water depth even experiencing the suppression of DNRA bacteria abundance. These results suggested the existence of ecological risk via N retention by the action of the DNRA bacteria in the sediment on the condition of higher temperature, further provided valuable information for N management of eutrophic lakes.

In this work, magnetic molecularly imprinted polymers (MMIPs) were prepared by a surface imprinting method using Fe3O4 nanoparticles as a support. The products were characterized by FT-IR spectroscopy, VSM, TGA, SEM, and TEM. Combined with HPLC, hydrocortisone in milk powder and milk were separated and purified, and their contents were monitored. The results showed that MMIPs with a particle size of approximately 1000 nm were successfully prepared. The adsorption mechanism of MMIPs was confirmed by kinetic adsorption and thermodynamic adsorption experiments; the maximum adsorption capacity was found to be 17.2 mg g-1, and adsorption equilibrium could be reached within 40 min. In the actual sample application, the recovery rates of milk powder and milk were 93.88-99.15% and 95.80-98.10%, respectively. These results showed that MMIPs had good performance in selectively identifying hydrocortisone and were suitable for determining hydrocortisone in milk products.

Identifying phosphorus (P) sources and contributions from terrestrial sources is important for clean water and eutrophication management in lake watersheds. However, this remains challenging owing to the high complexity of P transport processes. The concentrations of different P fractions in the soils and sediments from Taihu Lake, a representative freshwater lake watershed, were obtained using sequential extraction procedure. The dissolved phosphate (PO4-P) and alkaline phosphatase activity (APA) in the lake's water were also surveyed. The results showed that different P pools in the soil and sediments displayed different ranges. Higher concentrations of P fractions were measured in the solid soils and sediments from the northern and western regions of the lake watershed, indicating a larger input of P from exogenous sources, including agriculture runoff and industrial effluent from the river. Generally, higher Fe-P and Ca-P concentrations of up to 399.5 and 481.4 mg/kg were detected in soils and lake sediments, respectively. Similarly, the lake's water had higher concentrations of PO4-P and APA in the northern region. A significant positive correlation was found between Fe-P in the soil and PO4-P concentrations in the water. Statistical analysis indicated that appropriately 68.75% P was retained in the sediment from terrigenous sources, and 31.25% P experienced dissolution and shifted to the solution phase in the water-sediment ecosystems. The dissolution and release in Fe-P in the soils were responsible for the increase of Ca-P in the sediment after the afflux of soils into the lake. These findings suggest that soil runoff predominantly controls P occurrence in lake sediments as an exogenous source. Generally, the strategy of reducing terrestrial inputs from agricultural soil discharge is still an important step in P management at the catchment scale of lakes.

Bulk nanobubbles fascinate scientists because of their stability over long periods of time and their ability to carry gases, leading to numerous potential applications. Considering the hypoxic tumor microenvironment and the advantages of bulk nanobubbles, lipid-encapsulated oxygen nanobubbles are prepared from free bulk oxygen nanobubbles in this study. The obtained carrier is then modified with a protein fused with the single-chain antibody of human epidermal growth factor receptor 2 (anti-HER2 scFv) and tandem-repeat cytochrome c (anti-HER2 scFv-nCytc) to enhance tumor targeting and induce tumor apoptosis. Copper phthalocyanine is used as the photosensitizer to demonstrate how the oxygen in the nanobubbles affects the efficiency of photodynamic therapy (PDT). The combination of anti-HER2 scFv-nCytc and PDT synergistically improves the therapeutic effect and alleviates hypoxia in tumors in vivo while causing little inflammatory response. Based on the findings, bulk nanobubble water shows promise in the targeted delivery of oxygen and can be combined with antibody therapy to enhance the efficiency of PDT.

Deep-fried meat products are widely popular. However, harmful compounds produced by various chemical reactions during frying have been shown to be detrimental to human health. It is of great necessity to raise practical suggestions for improving the oxidation problem of frying oils and frying conditions in some aspects. Vegetable oils are not as thermally stable as saturated fats, and blended oils have higher thermal stability than single oil. In this review, we discussed the oxidation problems frying oils and meats are subject to during frying, starting from the oil oxidation mechanism, the effects of different oils and fats on the quality of different fried meats under different conditions were concluded to alleviate the oxidation problem, to highlight the necessity of applying blended oils for frying, and effective antioxidants added to frying oils are also introduced, that would provide more convenient and practical options for obtaining higher quality of fried meat products and offer better understanding of the potential of blended frying oils for frying meat products.

Carbon dots (CDs) have two unique advantages: one is ease of synthesis at low price, the other is desirable physical and chemical properties, such as ultra-small size, abundant surface functional groups, nontoxic/low-toxicity, good biocompatibility, excellent antibacterial and antioxidant activities etc. These advantages provide opportunities for the development of new food packaging enhancers and food preservatives. This paper systematically reviews the studies of CDs used to strengthen the physical properties of food packaging, including strengthen mechanical strength, ultraviolet (UV) barrier properties and water barrier properties. It also reviews the researches of CDs used to fabricate active packaging with antioxidant and/or antibacterial properties and intelligent packaging with the capacity of sensing the freshness of food. In addition, it analyzes the antioxidant and antibacterial properties of CDs as preservatives, and discusses the effect of CDs applied as coating agents and nano-level food additives for extension the shelf life of food samples. It also provides a brief review on the security and the release behavior of CDs.

Electrospinning is a promising technique for preparing bioartificial blood vessels. Nanofibers prepared by electrospinning can simulate the structure of extracellular matrix to promote cell adhesion and proliferation. However, thorn-like protrusions can appear as defects on electrospun scaffolds and coaxial electrospun nanofibers often have no clear core/shell structure, which can seriously affect the quality of bioartificial blood vessels. To address these problems, Tween 80 is added to the electrospinning solution, which results in a stable Taylor cone, eliminates the thorn-like protrusions on electrospun bioartificial blood vessels, and reduces interfacial effects due to different core/shell solutions during coaxial electrospinning. Simulations, biomechanical tests, and in vivo studies were performed. The results demonstrate the excellent mechanical properties and biocompatibility of the bioartificial blood vessel. This research provides a useful reference for optimizing the electrospinning process for fabricating bioartificial blood vessels.

Prepared dishes are increasingly popular convenience food that can be eaten directly from hygienic packaging by heating. Physics field (PF) is food processing method built with physical processing technology, which has the characteristics of high efficiency and environmental safety. This review focuses on summarizing the application of PFs in prepared dishes, evaluating and comparing PFs through quality changes during processing and storage of prepared dishes. Currently, improving the quality and extending the shelf life of prepared dishes through thermal and non-thermal processing are the main modes of action of PFs. Most PFs show good potential in handing prepared dishes, but may also react poorly to some prepared dishes. In addition, the difficulty of precise control of processing conditions has led to research mostly at the laboratory stage, but as physical technology continues to break through, more PFs and multi-physical field will be promoted for commercial use in the future. This review contributes to a deeper understanding of the effect of PFs on prepared dishes, and provides theoretical reference and practical basis for future processing research in the development of various enhanced PFs.

BACKGROUND: In patients with surgically amenable focal cortical dysplasia (FCD), subtle neuroimaging representation and the risk of open surgery lead to gaps in surgical treatment and delays in surgery. OBJECTIVE: To construct an integrated platform that can accurately detect FCD and automatically establish trajectory planning for magnetic resonance-guided laser interstitial thermal therapy. METHODS: This multicenter study included retrospective patients to train the automated detection model, prospective patients for model evaluation, and an additional cohort for construction of the automated trajectory planning algorithm. For automated detection, we evaluated the performance and generalization of the conventional neural network in different multicenter cohorts. For automated trajectory planning, feasibility/noninferiority and safety score were calculated to evaluate the clinical value. RESULTS: Of the 260 patients screened for eligibility, 202 were finally included. Eighty-eight patients were selected for conventional neural network training, 88 for generalizability testing, and 26 for the establishment of an automated trajectory planning algorithm. The model trained using preprocessed and multimodal neuroimaging displayed the best performance in diagnosing FCD (figure of merit = 0.827 and accuracy range = 75.0%-91.7% across centers). None of the clinical variables had a significant effect on prediction performance. Moreover, the automated trajectory was feasible and noninferior to the manual trajectory ( χ2 = 3.540, P = .060) and significantly safer (overall: test statistic = 30.423, P < .001). CONCLUSION: The integrated platform validated based on multicenter, prospective cohorts exhibited advantages of easy implementation, high performance, and generalizability, thereby indicating its potential in the diagnosis and minimally invasive treatment of FCD.

Carbon dots (CDs) were synthesized with the facile hydrothermal method to produce CDs/polyvinyl alcohol (PVA) active food packaging films. The CDs had a diameter ranging from 2.01 to 5.61 nm and were well-dispersed. The effects of different concentrations of CDs on mechanical strength, water resistance, morphology, optical, and thermal performance of the CDs/PVA films were discussed. The incorporation of CDs in the PVA film improved its mechanical properties, water resistance properties, UV blocking properties, and thermal stability and endowed the composite film with antioxidant and antimicrobial properties. The maximum scavenging rates of 2,2-diphenyl-1-picrylhydrazyl and ABTS free radicals by the 0.50% CDs/PVA film were 72.81 and 97.08%, respectively. The inhibition zone diameters of the 0.50% CDs/PVA solution against Staphylococcus aureus (S. aureus), Bacillus subtilis (B. subtilis), and Escherichia coli (E. coli) were 9.52, 8.21, and 9.05 mm, respectively. Using the 0.50% CDs/PVA film as active packaging, the shelf life of banana, jujube, and fried meatballs was observed to be extended significantly. These results demonstrate the viability of the CDs/PVA composite film as a promising active food packaging material.

With the increase of people's awareness of food safety, it is crucial to find natural and green antimicrobial agents to replace traditional antimicrobial agents. Essential oils of spices (SEOs) are low toxicity or nontoxic, which exhibited antioxidants and antimicrobial activity according to many in vitro and in situ experiments. Spices are widely available and low cost as a plant raw material for the extraction of SEOs. This review summarized highly efficient extraction techniques for SEOs, such as physical field assisted extraction technology, supercritical fluid extraction, and biological-based techniques. Furthermore, purification of SEOs and components were also recapitulated. Purification techniques of SEOs improve their utilization value due to the increased content of bioactive components. Finally, the review concentrated on the applications of SEOs in food industry, including food preservation, food active packaging by means of films or coatings, antioxidant properties. In addition, addressing the problem of unstability of SEOs and its role to inhibit the pathogenic bacteria, the encapsulation of SEOs for use in the food industrial sectors reduces the safety risk to human health.

Phosphorus (P) is normally considered as the limited nutrient for shallow freshwater lakes and can potentially trigger eutrophication on account of high concentrations. Due to the various transportation and transformation processes, P source apportionment and management in lake ecosystems have become more and more difficult. Combining with sequential extraction of P fractions and mineralogical analysis, the isotopic compositions of oxygen in phosphate (δ18OP) of resin-extractable P from the different samples including soil, estuary sediments, pond sediments, and lake sediments in the Shijiuhu Lake catchment, China, were investigated. The results showed that δ18OP values ranged from +15.23 to +21.92‰ in agricultural soil, +16.53 to +24.10‰ in estuary sediments, +18.90 to +20.90‰ in pond sediments, and +17.42 to +19.70‰ in lake sediments. Isotopic signatures indicated that chemical fertilizers with heavier δ18OP values (+20.70 to +26.50‰) were the predominant contributors of P in the soil. The river transportation together with Fe/Al-P desorption on anaerobic condition simultaneously stimulated the enrichment of P in the lake sediments, even though the biotic activity regulated the isotope values moving toward the equilibrium. Eroded soil was the important source of P in lake and pond sediments via drainage and runoff, and conserved the source isotope signal in the samples. Stronger biotic activity in the aquatic environments dragged δ18OP values toward the equilibrium. However, conspicuous off-equilibrium isotope signature suggested the terrestrial sources in the aquatic ecosystems. The calculation of two end-member linear mixing models suggested that soils also predominantly controlled the P occurrence in the lake sediments with contribution higher than 80%, indicating that decreasing inputs from the agricultural activities is important in P reduction on catchment scale. Generally, δ18OP from different sources can provide indirect and important evidences for the identification and management of P sources in the lake catchment.

The dispersal stage of pathogens is crucial for the successful spread and infection of their hosts. Some plant-parasitic nematodes (PPNs) have evolved specialized dispersal stages to reach healthy hosts by being carried out by insect vectors. Because gene gain and loss is a major factor contributing to the evolution of novel characteristics, it is essential to clarify the gene family characteristics among nematodes with different dispersal modes to disentangle the evolution of insect-mediated dispersal. Here, the size of the C-type lectin (CTL) family genes of insect-vectored nematodes was found to be drastically reduced compared with those of self-dispersing nematodes, whereas the diversity of their functional domains was significantly higher. The gene family sizes of vector-dispersed nematodes were only a twentieth of the size of that of a self-dispersing (i.e., without a biotic vector) nematode model Caenorhabditis elegans, and these genes were inactive during the dispersal stage. Phylogenetic analysis showed that some CTL genes of vector-borne PPNs shared higher homology to the animal parasitic nematodes compared with other PPNs. Moreover, homology modeling predicted that the CTLs of insect-vectored nematodes bear remarkable structural similarity to the lectin genes of their vector's immune system. Because CTL genes are important sugar-binding proteins for the innate immune response of C. elegans, the loss of some CTL genes of vector-transmitted PPNs might be responsible for their parallel adaptations to a mutualistic relationship with their vector. These results expand our understanding of the evolutionary benefits of vector-mediated transmission for the nematode and vector-nematode co-evolution.

The purpose of this study was to investigate the effects of Lactobacillus rhamnosus GG (LGG) fermentation on the composition, structure, and functional properties of dietary fiber (DF) in bamboo shoot. Then, we added it to bread to evaluate the texture properties, digestive properties, and functionality of bread. After LGG fermentation, the DF was decomposed into pieces, which had stronger water-swelling capacity and nitrite adsorption capacity. The ability of producing short-chain fatty acids was significantly improved and the digestive resistance was remarkable enhanced as well. Except the bread hardness was increased, there was no significant difference in other texture properties when adding 3% FTDF-LGG to bread. It had good adsorption capacity of cholesterol and more than 25% reduced the release of reducing sugar. Overall, the technic of LGG fermentation had improved functional properties of DF in bamboo shoot, which could be applied to bread production for exerting its effects in the future. PRACTICAL APPLICATIONS: Bamboo shoots are immature and tender stems of bamboo, rich in nutritional value, and rich in DF. Bamboo shoot DF has been proven to have a variety of biological activities, and is the main material for bamboo shoot to exert functional activities. In this study, bamboo shoot DF was modified by LGG fermentation, which showed stronger functional activity, and was successfully applied to bread. This study lays the foundation for the fermented modified bamboo shoot DF and its application in food.
