SCOPE: Dietary salt (sodium chloride, NaCl) is necessary for processed meat products, but intake of a high-sodium diet carries serious health risks. Considerable studies indicate that the partial substitution of NaCl with potassium chloride (KCl) can produce sodium-reduced cooked meat. However, most studies of sodium-reduced cooked meat focus on the production process in vitro, and the effect of cooked meat on health has not been well clarified in vivo. METHODS AND RESULTS: This study finds that compared to the high-sodium group (HS), serum renin, angiotensin-converting enzyme (ACE), angiotensin (Ang) II, and the levels of some indicators of dyslipidemia are decreased in the reduced salt by partial substitution of NaCl with KCl group (RS + K). Furthermore, RS + K increases the antioxidation abilities, inhibits the renin-angiotensin system (RAS) through ACE/Ang II/Ang II type 1 receptor axis pathway, reduces synthesis of triglyceride and cholesterol and protein expressions of inflammatory factors interleukin-17A and nuclear factor-kappa B in the liver. CONCLUSION: Partial substitution of NaCl with KCl in cooked meat can be a feasible approach for improving the health benefits and developing novel functional meat products for nutritional health interventions.

Highly efficient multi-dimensional data storage and extraction are two primary ends for the design and fabrication of emerging optical materials. Although metasurfaces show great potential in information storage due to their modulation for different degrees of freedom of light, a compact and efficient detector for relevant multi-dimensional data retrieval is still a challenge, especially in complex environments. Here, we demonstrate a multi-dimensional image storage and retrieval process by using a dual-color metasurface and a double-layer integrated perovskite single-pixel detector (DIP-SPD). Benefitting from the photoelectric response characteristics of the FAPbBr2.4I0.6 and FAPbI3 films and their stacked structure, our filter-free DIP-SPD can accurately reconstruct different colorful images stored in a metasurface within a single-round measurement, even in complex environments with scattering media or strong background noise. Our work not only provides a compact, filter-free, and noise-robust detector for colorful image extraction in a metasurface, but also paves the way for color imaging application of perovskite-like bandgap tunable materials.

The extensive utilization of neonicotinoid insecticides (NNIs) in agricultural practices ultimately poses a significant threat to both the environment and human health. This work focuses on the efficient degradation and detoxification of the representative NNI, thiamethoxam (THX), and explores the underlying mechanism using a Co-Fe-Mn mixed spinel doped carbon composite catalyst activated persulfate. The findings demonstrate that the composite effectively degrades THX, achieving a degradation rate of 95% in 30 mins, while requiring only a fraction (one-sixteenth) of the oxidant dosage compared to pure carbon. The study aimed to examine the negative impact of reactive halogens on reactive oxygen species within a saline environment. The degradation byproducts were linked to the presence of two common electron-withdrawing groups, namely halogens and nitro in the THX molecule. It was hypothesized that the degradation process was primarily influenced by C-N bond breaking and hydroxylation occurring between the diazine oxide and 2-chlorothiazole rings. Consequently, dehalogenation and carbonylation processes facilitated the elimination of halogenated components and pharmacophores from the THX, leading to detoxification. In addition to the identified free radical pathway including SO4•-, •OH and O2•- contributed to THX degradation, the participation of non-radical pathways (1O2 and electron transfer) were also confirmed. The efficacy of detoxification was further validated through toxicity assessment, employing quantitative conformation relationship prediction and microbial culture utilizing Bacillus subtilis.

On the basis of computational ghost imaging (CGI), we present a new imaging technique, feature ghost imaging (FGI), which can convert the color information into distinguishable edge features in retrieved grayscale images. With the edge features extracted by different order operators, FGI can obtain the shape and the color information of objects simultaneously in a single-round detection using one single-pixel detector. The feature distinction of rainbow colors is presented in numerical simulations and the verification of FGI's practical performance is conducted in experiments. Furnishing a new perspective to the imaging of colored objects, our FGI extends the function and the application fields of traditional CGI while sustaining the simplicity of the experimental setup.

Inhibition of epithelial ferroptosis in colonic tissues relieved clinical symptoms and improved endoscopic presentations in inflammatory bowel disease (IBD). Kumatakenin, the main ingredient of traditional Chinese medicinal cloves and Alpinia purpurata, is reported to possess therapeutic benefits. However, whether kumatakenin could inhibit ferroptosis and further alleviate colitis remains unclear. Here, we measured the effects of kumatakenin on ferroptosis of colonic epithelial cells from colitis mice. The colitis model was induced in mice by oral intake of 2.5% dextran sulfate sodium in drinking water. RNA sequencing was performed to investigate the mechanism underlying kumatakenin-mediated effects on colitis. The results showed that different doses of kumatakenin significantly alleviated symptoms and suppressed intestinal inflammation in the colitis mouse model. Kumatakenin supplementation decreased cellular iron levels and suppressed ferroptosis in epithelial cells from colitis mice. RNA sequencing, qPCR, and pharmacological inhibition assays showed that kumatakenin reduced cellular iron levels and suppressed ferroptosis in epithelial cells from colitis mice at least partially by upregulating expression of enolase (Eno-3). Furthermore, kumatakenin decreased iron levels in epithelial cells by modulating the Eno3-iron regulatory protein (IRP1) axis. Molecular docking results revealed that kumatakenin could bind Eno3 via hydrogen bonding with the amino acid residues Thr208, Val206, and Pro203. This work will provide a scientific basis for the clinical use of kumatakenin in the treatment of colitis.

Exploring amorphous mixed transition metal hydroxide electrocatalysts with high performance and stability for overall water splitting is a difficult challenge under industrial electrolytic conditions. Herein, a sea urchin-like amorphous MgNiCo hydroxide (MgxNi1-xCo-OH, 0 < x < 1), self-assembled from nanowire arrays, is synthesized by the hydrothermal process. The synergistic effect between Mg and Ni/Co adjusts their crystal structure and morphology, which can improve the inherent activity and provide more active sites. Benefiting from the favorable structural features, Mg0.5Ni0.5Co-OH exhibits superior electrocatalytic oxygen and hydrogen evolution reaction (OER and HER) activity with a low overpotential of 277 and 110 mV (10 mA cm-2) in 1 M KOH at 25 °C. Furthermore, overpotentials of 239 and 197 mV are required to achieve a current density of 50 mA cm-2 for the OER and HER under simulated industrial electrolysis conditions (5 M KOH at 65 °C). Notably, Mg0.5Ni0.5Co-OH remarkably accelerates water splitting with a low voltage of 1.938 and 1.699 V for 50 mA cm-2 in 1 M KOH at 25 °C and 5 M KOH at 65 °C, respectively. This work presents a novel amorphous strategy to design and construct sea urchin-like mixed metal hydroxide bifunctional efficient electrocatalysts for industrial applications.

Single-pixel imaging (SPI) can perceive the world using only a single-pixel detector, but long sampling times with a series of patterns are inevitable for SPI, which is the bottleneck for its practical application. Developing new patterns to reduce the sampling times might provide opportunities to address this challenge. Based on the Kronecker product of Hadamard matrix, we here design a complete set of new patterns, called Gao-Boole patterns, for SPI. Compared to orthogonal Hadamard basis patterns with elements valued as +1 or -1, our Gao-Boole patterns are non-orthogonal ones and the element values are designed as +1 or 0. Using our Gao-Boole patterns, the reconstructed quality of a target image (N × N pixels) is as high as the Hadamard one but only with half pattern numbers of the Hadamard ones, for both full sampling (N2 for Gao-Boole patterns, 2N2 for Hadamard basis patterns) and undersampling cases in experiment. Effectively reducing the patterns numbers and sampling times without sacrificing imaging quality, our designed Gao-Boole patterns provide a superior option for structural patterns in SPI and help to steer SPI toward practical imaging application.

The effects of cooked lean pork batters with three ionic types of polysaccharides (anionic xanthan-gum/sodium-alginate, neutral curdlan-gum/konjac-gum and cationic chitosan) on the intestinal health of mice were investigated in this study. The results showed that the zeta potential in the sodium-alginate group (−31.35 mV) was higher (p < 0.05) than that in the chitosan group (−26.00 mV), thus promoting the protein hydrolysis in the anionic group because of electrostatic repulsion. The content of total free amino acids in the small intestine in the xanthan-gum and sodium-alginate groups (2754.68 µg and 2733.72 µg, respectively) were higher (p < 0.05) than that in the chitosan group (1949.78 µg), which could decrease the amount of undigested protein entering the colon. The two anionic groups could also increase the abundance of Lactobacillus and the balance of Faecalibaculum and Alistipes in the colon. The content of proinflammatory factor IL−6 of colon tissues in the sodium-alginate group (1.02 ng/mL) was lower (p < 0.05) than that in chitosan, curdlan-gum and konjac-gum groups (1.29, 1.31 and 1.31 ng/mL, respectively). The result of haematoxylin-eosin staining of the colon also revealed that sodium alginate was beneficial for colonic health. The two neutral groups increased the content of faecal short-chain fatty acids in mice. These results demonstrated that anionic polysaccharides have potential for developing functional low-fat meat products.
