The consumption of jabuticaba (Plinia cauliflora), a native Brazilian fruit, has shown promising results concerning some metabolic disorders. Therefore, studying it may aid in the development of products capable of preventing or delaying pathological conditions. The objective of the present study was to formulate a functional sourdough bread with the inclusion of jabuticaba peel flour (JPF) and to evaluate the effect on the postprandial response. The proximate composition of the JPF and bread, the stability of the antioxidant compounds after baking, and the functional activity in a clinical trial were carried out to develop the product and guarantee its quality. JPF increased the fiber content of the bread in comparison to the control from 1.0 g/100 g to 2.3-2.9 g/100 g. Also, the antioxidant capacity increased 1.35 to 3.53 times by adding JPF to the bread, as well as the total reducing capacity (1.56 to 2.67 times). The bread's shelf life was guaranteed for seven days. In the clinical trial, the consumption of control bread resulted in a glycemia peak at 30 min, remaining high until 45 min; for the JPF bread, we noticed a less prominent peak at 45 min and a decrease with less inflection until 180 min. The serum antioxidant capacity of the individuals increased after the 3 h. Although no statistical difference was observed between the groups in the satiety profile, JPF bread presented higher scores after 60 min. Furthermore, a lessened desire to eat other foods and hunger was observed after consuming JPF bread. The inclusion of JPF in the bread manufacturing process promoted a longer shelf life and increased nutritional quality.

Araçá is a native Brazil fruit, and has two morphological types, yellow and red; however, it is still little consumed by the population. Although there are few studies on the araçá fruit, some phytochemical propriety benefits have been described for this plant, such as antioxidant effects. To explore the benefits of araçá fruit, the physicochemical characteristics and in vitro toxicological effects of red and yellow araçá fruit were evaluated. In this work, the toxicity of araçá extracts in NIH/3T3 cell lines, the antiproliferative effects in cancer cell lines (C6, HT-29, and DU149), and the overall antifungal effects were evaluated. The irritant potential of araçá extracts was assessed by the HET-CAM test. The results demonstrated that the fruits are rich in fiber content and showed high phenols content. In addition, the araçá extracts had no present toxicity effects in cell lines; however, the red araçá extracts showed antiproliferative effects in HT-29 cancer cells at 50 mg/mL. The antifungal effects of araçá extract were promising in 23 isolates of Candida spp., and both araçá extracts showed no irritant effects. Therefore, this study demonstrated that red and yellow araçá fruit extract has promising biological and pharmacological effects that should be further explored.

Feijoa (Acca sellowiana) is a native Brazilian fruit with a peculiar flavour, a considerable amount of bioactive compounds and antioxidant activity. Even though this fruit tree is currently cultivated in several countries around the world, in Brazil, the process of domestication is underway, and the selection and breeding of new genotypes that are more productive and with better fruit quality is necessary. The objective of this work was to evaluate phenotypic diversity among and within progeny and to study the correlations among the quality variables of Feijoa fruit, seeking to select individuals with superior characteristics using principal component analysis. The parents who formed the progeny (families) were selected from a participatory breeding programme. We observed that individuals 47 and 93 had a combination of desirable fruit characteristics for selection, and individuals 15, 910, 98 and 410 should be selected for future crossings, as they had a high total fruit mass and soluble solid content or the highest percentage of pulp and rounded fruit shape. Larger fruit, in general, had a lower percentage of pulp. Principal component analysis is a viable tool in the pre-selection of new genotypes and potential progenitors for Feijoa breeding programmes.(AU)
Feijoa (Acca sellowiana) é uma fruteira nativa do Brasil com sabor peculiar, com considerável quantidade de compostos bioativos e atividade antioxidante. Mesmo sendo cultivada em diversos países, no Brasil, seu processo de domesticação está em curso e a seleção e o melhoramento para obtenção de novos genótipos, com maior produtividade e melhor qualidade de frutas, é necessário. O objetivo deste trabalho foi avaliar a diversidade fenotípica entre e dentro de progênies e estudar as correlações entre as variáveis de qualidade de frutos de Feijoa, buscando selecionar indivíduos com características superiores, usando análise de componentes principais. Os progenitores que formaram as populações (famílias) analisadas foram selecionados a partir de um programa de melhoramento participativo. Foi observado que os indivíduos 47 e 93 apresentaram uma combinação de características de frutos desejáveis para seleção, e os indivíduos 15, 910, 98 e 410 podem ser selecionados para futuros cruzamentos, pois possuem maior massa total de frutos e sólidos solúveis, ou maior porcentagem de rendimento de polpa e formato arredondado. Maior tamanho de frutos, em geral, tiveram uma menor percentagem de polpa. A análise de componentes principais é uma ferramenta viável para pré-seleção de genótipos e potencias progenitores em programas de melhoramento de Feijoa.(AU)

Fruta-do-lobo (Solanum lycocarpum St. Hill) is an underutilized native fruit commonly found in the Brazilian Cerrado, very known due to the presence of glycoalkaloids. In this work we evaluated the biochemical changes on carbohydrates, phenolic and alkaloids during ripening of fruta-do-lobo using chromatographic and spectrometric techniques. During ripening, we observed an increase in glucose, fructose and sucrose, while oligosaccharides levels varied. Chlorogenic acid isomers represented 80% of the identified phenolic compounds in unripe stage, but they reduced during ripening, resulting in predominance of p-coumaroylquinic acid (peel and pulp) and 1-O-sinapoyl-glucoside (seeds). Statistical analysis shows that the unripe fractions were richer in alkaloids compounds, which were the most important for antioxidant activity. Molecular network analysis summarizes the compound changes during ripening, especially regarding the alkaloid compounds, with a reduction of around 85% of solamargine abundance. These data show that fruta-do-lobo can presents different chemical compositions due their ripening stage providing support for future research aimed to the application of these compounds in glycemia control or uses of their extracts with higher content of alkaloids compounds.

BACKGROUND: Red araçá is a Brazilian native species whose fruits are rich in phenolic acids, flavonoids, anthocyanins, and carotenoids. To preserve the properties of compounds during processing, red araçá pulp (RAP) was encapsulated by hydrolyzed pinhão starch (PS), tara gum (TG), and arabic gum (AG) in different blends in equal proportions, serving as a coating material. RESULTS: Fresh RAP had a gallic acid equivalent of 3098 mg per 100 g of dry weight, 156.29 µg ß-carotene per gram of dry weight, total anthocyanins of 18 mg per 100 g of dry weight and exhibited high antioxidant activity. The highest encapsulation efficiency achieved with the PS, TG, and AG blend was 80.4% for the total carotenoids, and that for the total anthocyanins was 76% with the TG and AG blend. Only one step of antioxidant activity degradation was identified, and the carrier system PSTG was efficient at maintaining the antioxidant activity, with half-life of 23.60-37.27 days. CONCLUSION: The use of PS alone as a coating material or associated with TG and AG gums resulted in improved retention of bioactive compounds, these being an excellent alternative coating material since they improved the stability of the antioxidant activity of RAP. © 2020 Society of Chemical Industry.

Eleven non-conventional tropical fruits were evaluated regarding their nutritional value, antioxidant potential, carotenoid contents and bioaccessibility. The fruits were chosen due to their spread through the Brazilian territory: araçá-boi, jaracatiá, cambuití, seriguela, capeba, pitangatuba, pitanga, buriti, acerola, dovialis and abricó-da-praia. Results have shown that these fruits are in general, i.e. depending on the fruit, rich sources of dietary fibers and minerals, high in moisture, and low in proteins. Twelve carotenoids were analyzed by HPLC-DAD and results ranged from 0.04 to 104 µg/g wet weight. Xanthophylls stood out, being higher than carotenes for araçá-boi, seriguela, pitangatuba and dovialis. Bioaccessibility varied both between fruits and carotenoids ranging from 2 to 75%. Although the fruit matrix effect, xanthophylls were more bioaccessible than carotenes, while lycopene and γ-carotene presented the poorest bioaccessibility. The present study is fundamental to expand the knowledge about the fruit properties, carotenoids bioaccessibility and potential benefits for health, as well to preserve natural resources and encourage the intake of new fruits for human nutrition.
