RESUMO

Fabricating metal oxide nanoparticles has garnered much attention lately because creating safe chemicals, sustainable materials, economic processes, and renewable resources is becoming increasingly important. This research shows how TiO2 nanoparticles (NPs) could be generated in an ecologically responsible way using waste coconut husk with the help of tender coconut. This extract functions as both a reducing agent and a sealing agent. The investigation of TiO2 NPs exploited ultraviolet (UV), X-ray diffraction (XRD), Fourier transform infrared spectroscopy (FT-IR), and field-emission scanning electron microscopy (FE-SEM) with energy-dispersive X-ray (EDX) methods. The germicidal properties of TiO2 NPs against food-borne pathogenic strains were studied using the agar well method. Employing Congo red pigment, the photodecomposition behavior was investigated. The TiO2 NPs produced had a crystallite size measuring 16.2 nm. The average grain size of the sample, as measured by FE-SEM inspection, falls within the range of 15 to 25 nm. Impressive anti-germ effects against food-borne germs like Gram-positive (Staphylococcus aureus and Listeria monocytogenes), Gram-negative (Salmonella typhimurium and Escherichia coli) bacteria, and fungi (Candida albicans and Aspergillus niger) have been proved by the sustainable fabrication of TiO2 NPs. The catalytic effectiveness of Congo red decreased by 88% after 90 min. The findings suggest that sustainable synthesis of TiO2 NPs is an effective tool for food-borne germicides and photodecomposition behaviors.

A recent pilot study in amyotrophic lateral sclerosis (ALS) patients analyzed the effect of a Mediterranean diet (MeDi) supplemented with nicotinamide riboside (NR, a NAD+ promoter), pterostilbene (PTER, a natural antioxidant) and/or coconut oil on anthropometric variables in ALS patients. The results suggested that the MeDi supplemented with NR, PTER and coconut oil is the nutritional intervention showing the greatest benefits at anthropometric levels. Over the last 30 years, glucose intolerance has been reported in ALS patients. Thus, suggesting that an alternative source of energy may be preferential for motor neurons to survive. Ketone bodies (KBs), provided through a MeDi with a lower carbohydrate content but enriched with medium chain triglycerides, could be a therapeutic alternative to improve the neuromotor alterations associated with the disease. Nevertheless, the use of a coconut oil-supplemented diet, as potentially ketogenic, is a matter of controversy. In the present report we show that a MeDi supplemented with coconut oil increases the levels of circulating KBs in ALS patients.

Nano-Fe3O4 was loaded onto coconut-based activated carbon fibres (CACF) using an electrostatic self-assembly method. The effects of the mass ratio of CACF to nano-Fe3O4, loading time, pH and temperature on the loading effect were investigated and ideal loading conditions were determined. To study the adsorption performance of MACF@Fe3O4 for methylene blue, the effects of the initial concentration, pH and time on the adsorption were investigated and the working conditions of adsorption were established. MACF@Fe3O4 was systematically characterized. Adsorption kinetics were investigated under ideal conditions. The ideal loading conditions for MACF@Fe3O4 were as follows: mass ratio of 1:1, 20 min, pH 9.36, 22.5°C. The saturation magnetization of MACF@Fe3O4 was 48.2263 emu·g-1, which could be quickly separated under an external magnetic field. When the dosage was 0.010 g, the adsorption rate reached 97.29% and the maximum adsorption capacity was 12.1616 mg·g-1. The adsorption process conformed to pseudo-first-order kinetics during the first 15 min and pseudo-second-order kinetics during 20-120 min. The equations were ln( Q e - Q t )=2.2394-0.0689t and t Q t =0.0774 + 0.5295t , respectively. The isothermal adsorption model showed that MACF@Fe3O4 was more in line with the Langmuir model, indicating that the adsorption process was mainly monolayer adsorption. The thermodynamic analysis results showed that the adsorption process of MB by MACF@Fe3O4 was an endothermic process. In this study, MACF@Fe3O4 with high adsorption capacity and easy separation from coconut palm fibres has good application prospects in the field of adsorption, which can promote the high-value utilization of coconut palms.

Tuberculosis (TB) remains a critical health threat, particularly with the emergence of multidrug-resistant strains. This demands attention from scientific communities and healthcare professionals worldwide to develop effective treatments. The enhanced intracellular survival (Eis) protein is an acetyltransferase enzyme of Mycobacterium tuberculosis that functions by adding acetyl groups to aminoglycoside antibiotics, which interferes with their ability to bind to the bacterial ribosome, thereby preventing them from inhibiting protein synthesis and killing the bacterium. Therefore, targeting this protein accelerates the chance of restoring the aminoglycoside drug activity, thereby reducing the emergence of drug-resistant TB. For this, we have screened 406,747 natural compounds from the Coconut database against Eis protein. Based on MM/GBSA rescoring binding energy, the top 5 most prominent natural compounds, viz. CNP0187003 (- 96.14 kcal/mol), CNP0176690 (- 93.79 kcal/mol), CNP0136537 (- 92.31 kcal/mol), CNP0398701 (- 91.96 kcal/mol), and CNP0043390 (- 91.60 kcal/mol) were selected. These compounds exhibited the presence of a substantial number of hydrogen bonds and other significant interactions confirming their strong binding affinity with the Eis protein during the docking process. Subsequently, the MD simulation of these compounds exhibited that the Eis-CNP0043390 complex was the most stable, followed by Eis-CNP0187003 and Eis-CNP0176690 complex, further verified by binding free energy calculation, principal component analysis (PCA), and Free energy landscape analysis. These compounds demonstrated the most favourable results in all parameters utilised for this investigation and may have the potential to inhibit the Eis protein. There these findings will leverage computational techniques to identify and develop a natural compound inhibitor as an alternative for drug-resistant TB.

A four-year study was conducted to evaluate selected vegetative and reproductive characteristics in four coconut genotypes namely: Niu Leka Dwarf (NLD), New Guinea Brown Dwarf (NGBD), Malayan Green Dwarf (MGD), Indonesian Brown Dwarf (IBD), and a hybrid between Sri Lankan Green Dwarf and Vanuatu Tall (SGDVTT), which was used as a control. The study was located at Anwea in the Western Region of Ghana, an endemic zone to the lethal yellowing disease. This experiment was laid out in a randomized complete block design (RCBD) in three replications. Results showed a significant higher growth for NGBD, IBD, and NLD in stem girth, leaf length, petiole length, and number of leaflets. NGBD, IBD, and SGDVTT also recorded significantly higher reproductive characteristics. Time taken for first flowering was noticed in IBD (41.30 months). NGBD recorded the highest number of female flowers (27.80), number of spikelets with female flowers (17.20), and total number of spadix (12.50) seasonally. Significant and positive correlations were observed between the number of leaves emitted, and the number of female flowers produced in the coconut genotypes except for MGD. The highest correlation between these vegetative and reproductive characteristics was expressed in IBD while the least was observed in the MGD genotype. MGD also recorded the least number of spikelets with female flowers, suggesting that this genotype is not likely to produce high number of fruits and should not be included in future breeding programs. Low and less robust characteristics were expressed in both SGDVTT, and MGD in the growing period, which could be ascribed to the rather low number of leaflets observed in these genotypes. Conclusions from this study suggest that NGBD, IBD, and NLD are potential genotypes to be integrated into further breeding programs across coconut-growing regions in Ghana.

Soil contamination with metals is a major threat for the environment and public health since most metals are toxic to humans and to non-human biota, even at low concentrations. Thus, new sustainable remediation approaches are currently needed to immobilize metals in soils to decrease their mobility and bioavailability. In this work, we explore the application of discarded substrates from hydroponic cultivation, namely coconut shell and a mixture of coconut shell and pine bark, for immobilization of metals (Cd, Cr, Ni, Cu, Pb, Hg, Sb and As) in a naturally contaminated soil from a mining region in Portugal. The immobilization capacity of substrates (added to the soil at 5% mass ratio) was assessed both individually and also combined with other traditional agriculture soil additives (limestone and gypsum, at 2% mass ratio) and nanoparticles of zero-valent iron (nZVI) at 1-3% mass ratio. The overall results obtained after a 30-d incubation showed that the discarded substrates are a viable, economic, and environmental-friendly solution for metal remediation in soils, with the capacity of immobilization ranging from 20 to 91% for the metals and metalloids studied. Furthermore, they showed the capacity to reduce the soil toxicity (EC50 ∼ 6000 mg/L) to non-toxic levels (EC50 > 10000 mg/L) to the bacteria Aliivrio fischeri.

Coconut Inflorescence Sap (CIS) is the sweet, oyster-white colored, non-fermented juice obtained from the immature inflorescence of the Coconut tree. Acetaminophen (N-acetyl-p-aminophenol, or paracetamol) is one of the most frequently used drugs worldwide as an antipyretic or analgesic. HepG2 cell lines were used as an experimental model for studying in vitro hepatotoxicity induced by Paracetamol. The present study aims to identify biologically active compounds of CIS using LCMS analysis and to elucidate the ameliorative potential of CIS in alleviating paracetamol-induced hepatotoxicity. LC-MS analysis revealed the presence of 17 bioactive compounds. HepG2 cells were pretreated with Paracetamol(20mM) for inducing toxicity, and Silymarin at a concentration of 50µg/ml was used as a standard drug. The morphological analysis and MTT assay showed effective recovery from toxicity in cells treated with CIS in a dose-dependent manner. CIS at 25 µg/ml potentially showed the highest percentage of inhibitory activity against the toxicity induced by paracetamol. The treatment with paracetamol significantly increased the indicators of liver toxicity - LDH, SGOT, SGPT, and Glut.S Transferase in the media.CIS administration also increased the total protein levels, SOD, and Catalase activity. The morphological analysis, MTT assay, cytocompatibility studies, determination of enzymatic activities, etc., confirms the significant hepatoprotective efficacy of CIS.

Objective: Chronic stress arises from stressful situations in day-to-day life that are ignored or managed incorrectly. Long-term stress can have negative effects, especially when it plays a role in the development of neurological illnesses. Severe stress can also negatively impact emotional well-being. Virgin coconut oil (VCO) has numerous health advantages. The aim of this study was to assess how VCO affected the biochemical and behavioral characteristics of Wistar albino rats exposed to chronic, unpredictable stress. Materials and Methods: Healthy Wistar albino rats (150-200 gm) were split into two groups: experimental group and control group. Based on stress exposure and treatment with VCO and antidepressants, they were further divided into various subgroups. A chronic, unpredictable stress procedure was given for 21 days. After the experimental procedure, the rats were anesthetized, and through a cardiac puncture, blood was collected. The liver and brain were dissected to estimate different biochemical markers. Results: VCO proved to be a protective agent against chronic, unpredictable stress-induced changes in the biochemical parameters, hepatic enzyme activity, lipid profile, oxidative stress, and cognition. Conclusion: VCO might be helpful as an effective natural treatment that can be utilized to effectively combat chronic, unpredictable stress-induced changes in brain and liver tissue.

Background: Monitoring noncommunicable diseases is regarded as a critical concern that has to be managed in order to avoid a wide variety of complications such as increasing blood lipid levels known as dyslipidemia. Statin drugs, mostly, Rosuvastatin (RSV) was investigated for its effectiveness in treating dyslipidemia. However, reaching the most efficient treatment is essential and improving the effect of RSV is crucial. Therefore, a combination therapy was a good approach for achieving significant benefit. Although RSV is hydrophobic, which would affect its absorption and bioavailability following oral administration, overcoming this obstacle was important. Purpose: To that end, the purpose of the present investigation was to incorporate RSV into certain lipid-based nanocarriers, namely, nanostructured lipid carrier (NLC) prepared with virgin coconut oil (CCO). Methods: The optimized RSV-NLC formula was selected, characterized and examined for its in vitro, kinetic, and stability profiles. Eventually, the formula was investigated for its in vivo hypolipidemic action. Results: The optimized NLC formulation showed a suitable particle size (279.3±5.03 nm) with PDI 0.237 and displayed good entrapment efficiency (75.6±1.9%). Regarding in vitro release, it was efficiently prolonged for 24 h providing 93.7±1.47%. The optimized formula was established to be stable after 3 months storage at two different conditions; 4°C and 25°C. Importantly, including CCO in the development of RSV-NLC could impressively enhance lowering total cholesterol level in obese rat models, which endorse the potential synergistic action between RSV and CCO. Conclusion: The study could elucidate the impact of developing NLC using CCO for improving RSV anti-hyperlipidemic activity.

In food systems, proteins and polyphenols typically coexist in a non-covalent manner. However, the inherent rigid structure of proteins may hinder the binding sites of polyphenols, thereby limiting the strength of their interaction. In the study, magnetic field (MF) treatment was used to enhance non-covalent interactions between coconut globulin (CG) and tannic acid (TA) to improve protein flexibility, enhancing their functional properties without causing oxidation of polyphenols. Based on protein structure results, the interaction between CG and TA caused protein structure to unfold, exposing hydrophobic groups. Treatment with a MF, particularly at 3 mT, further promoted protein unfolding, as evidenced by a decrease in α-helix structure and an increase in coil random. These structural transformations led to the exposure of the internal binding site bound to TA and strengthening the CG-TA interaction (polyphenol binding degree increased from 62.3 to 68.2%). The characterization of molecular forces indicated that MF treatment strengthened hydrogen bonding-dominated non-covalent interactions between CG and TA, leading to improved molecular flexibility of the protein. Specifically, at a MF treatment at 3 mT, CG-TA colloidal particles with small size and high surface hydrophobicity exhibited optimal interfacial activity and wettability (as evidenced by a three-phase contact angle of 89.0°). Consequently, CG-TA-stabilized high internal phase Pickering emulsions (HIPPEs) with uniform droplets and dense gel networks at 3 mT. Furthermore, the utilization of HIPPEs in 3D printing resulted in consistent geometric shapes, uniform surface textures, and distinct printed layers, demonstrating superior printing stability. As a result, MF treatment at 3 mT was identified as the most favorable. This research provides novel insights into how proteins and polyphenols interact, thereby enabling natural proteins to be utilized in a variety of food applications.

In this study, magnetic coconut shell biochar loaded with spherical Fe3O4 and γ-Fe2O3 particles was successfully synthesized using a chemical coprecipitation method. The magnetic biochar exhibited a good magnetic separability and environmental security. The maximum sulfadiazine (SDZ) and norfloxacin (NOR) removal efficiencies were 94.8% and 92.3% at pH 4 and 25 °C with adsorbent dosage of 2.5 g/L, respectively. When antibiotic concentrations ranged from 5 to 50 mg/L, the theoretical maximum adsorption capacities of SDZ and NOR were 16.7 mg/g and 25.8 mg/g, respectively. The Langmuir isotherm and pseudo-second-order kinetic models could better describe the adsorption process of both antibiotics, implying the monolayer chemical adsorption. The thermodynamic analysis indicated that the adsorption process was spontaneous and endothermic. The ionic strength had no significant effect on the adsorption behavior of either antibiotic. Combined with BET, FTIR, and XPS results, the dominant mechanisms for SDZ and NOR adsorption were pore filling, π-π electron-donor-acceptor interaction, hydrogen bonds and surface complexation. Moreover, Lewis acid-base interaction also contributed to SDZ adsorption.

The increasing discharge of oily wastewater from life poses a serious threat to the ecological environment and human health. To develop green, efficient, and low-cost materials for oil-water separation, a superhydrophobic photothermal oil-absorbing sponge (CAC-PDA@MF) was prepared by using nanoscale coconut shell activated carbon (CAC) loaded on a melamine sponge in this study. The sponge had excellent superhydrophobicity (WCA of 159.53°) due to the reduction of surface energy by grafting long-chain silanes. The adsorption capacity of the sponge was 69.04 g/g-158.27 g/g for a wide range of oils and organic solvents, and the sponge had excellent mechanical properties for multiple adsorption and recovery of oil. After 50 cycles of oil-water separation, its separation efficiency was maintained at over 98 %. In addition, the material had high acid, alkali, and salt resistance as well as excellent photothermal conversion properties. Its surface temperature rose rapidly to 100 °C and above, at a light intensity of 1.0 kW/m2. The material was capable of adsorbing and recovering high-viscosity oils that were solid or semi-solid at room temperature. Its versatility and commercial value made it a promising candidate for a wide range of applications.

Constructed wetlands (CWs), crucial for the rural decentralized wastewater treatment, have encountered limitations in nutrient removal efficiency and require extensive land area. This study has constructed a novel overlapping horizontal subsurface flow CWs (OLCWs). Remarkably, OLCWs with mixed lightweight fillers (M-OLCWs) exhibited a significant enhancement in total nitrogen (TN) removal efficiency (88-91 %) in different hydraulic loading rates compared to single filler OLCWs (48-62 %). This significant enhancement can be attributed to the lightweight fillers, which have higher abundances and diversity of nitrogen related microorganisms. The treatment dynamics revealed that the second stage exhibited an excellent TN removal efficiency (73-75 %) attributed to sufficient dissolved oxygen concentration by water drops reoxygenation. The research reveals that M-OLCWs, by utilizing water drops reoxygenation and lightweight fillers, not only enhance pollutant treatment efficiency but also reduce required land area, thereby offering a sustainable solution for rural decentralized wastewater treatment.

Coconut wood (Cocos nucifera L.) is lightweight and has variable quality, making it a potential candidate for manufacturing sound absorption boards. However, its sound absorption coefficient needs enhancement to optimize its effectiveness in this application. This study aims to enhance its sound absorption properties using eco-friendly hydrogen peroxide and acetic acid treatments. This treatment modified the carbohydrate polymers (hemicellulose and cellulose) and lignin structures in the wood cell wall. The novelty of this approach lies in using these chemicals to improve acoustic performance significantly. Coconut wood samples were treated with a 1:1 acetic acid and hydrogen peroxide mixture for 20, 40, 60, and 80 min. Characterization techniques such as FTIR, XPS, and XRD, and 3D optical profilometry analyzed changes in chemical functionalities, crystallinity, and surface roughness. Sound absorption coefficients were measured using the impedance tube method. Results showed a significant improvement in sound absorption for all treated samples, especially at 60 min. The treatment also enhanced surface roughness, air permeability, porosity, and pore sizes, contributing to better sound absorption. This proposed treatment method addresses environmental consciousness and enhances the sustainable use and utilization of coconut wood.

With the development of the technical trend, concrete using waste alternate material instead of sand material found economic potential for good structural behaviour. Besides, the susceptible crack, low strength-to-weight ratio, and low compressive strength are the reasons for shrinkage. Due to this reason, the investigation aims to limit the shrinkage under live load and increase the compression and flexural strength by the introduction of coconut waste chopped fiber (wCF), waste fly ash (wFA), and carbon nanotube powder (CNT) blended with conventional Portland paste. The developed concrete consists of 5 wt% wCF, 10 wt% wFA, and 0, 5, 10, and 15 wt% of CNT and is subjected to X-ray diffraction analysis, bulk density, compression and flexural strength, and water absorption studies. The X-ray diffraction pattern revealed the wCF, wFA, CNT, and matrix compositions. The concrete developed with 5 wt% wCF, 10 wt% wFA, and 15 wt% CNT cured within 28 days recorded maximum behaviour of compression strength (47 ± 1.8 MPa), flexural strength (4.9 ± 0.19 MPa), and water absorption of (2.8 ± 0.05 %).

Extraction of coconut paring oil (CPO) from processing by-products adds value to the product and reduces resource wastage. This study aims to assess the impact of 20 kHz, 20/80 kHz and 20/40/80 kHz of multi-frequency ultrasonic-assisted enzymatic extraction (MFUAEE) on the yield, physicochemical properties, fatty acid composition, total phenolic content, antioxidant activity, and emulsion stability of CPO derived from wet coconut parings (WCP). Results revealed that the CPO extraction yield with MFUAEE was 32.58 % - 43.31 % higher compared to AEE. The tri-frequency 20/40/80 kHz mode of multi-frequency ultrasound pretreatment exhibited the highest CPO extraction yield (70.08 %). The oil extracted through MFUAEE displayed similar fatty acid profiles to AEE, but had lower peroxide value, K232 and K270 values. Particularly, MFUAEE oil contained higher total phenolic content and exhibited potent DPPH free radical scavenging capacity. Results observed by SEM indicated that the pretreatment with multi-frequency ultrasound more efficiently disrupts the cellular structure of the WCP. Additionally, MFUAEE enhanced emulsion stability through the cavitation effect of ultrasound. These findings suggest that MFUAEE is a valuable approach for method for obtaining CPO with elevated extraction yield and superior quality, thereby enhancing the utilization of coconut by-products.

Packaged coconut water offers various options, from pure to those with added sugars and other additives. While the purity of coconut water is esteemed for its health benefits, its popularity also exposes it to potential adulteration and misrepresentation. To address this concern, our study combines Fourier transform infrared spectroscopy (FTIR) and machine learning techniques to detect potential adulterants in coconut water through classification models. The dataset comprises infrared spectra from coconut water samples spiked with 15 different types of potential sugar substitutes, including: sugars, artificial sweeteners, and sugar alcohols. The interaction of infrared light with molecular bonds generates unique molecular fingerprints, forming the basis of our analysis. Departing from previous research predominantly reliant on linear-based chemometrics for adulterant detection, our study explored linear, non-linear, and combined feature extraction models. By developing an interactive application utilizing principal component analysis (PCA) and t-distributed stochastic neighbor embedding (t-SNE), non-targeted sugar adulterant detection was streamlined through enhanced visualization and pattern recognition. Targeted analysis using ensemble learning random forest (RF) and deep learning 1-dimensional convolutional neural network (1D CNN) achieved higher classification accuracies (95% and 96%, respectively) compared to sparse partial least squares discriminant analysis (sPLS-DA) at 77% and support vector machine (SVM) at 88% on the same dataset. The CNN's demonstrated classification accuracy is complemented by exceptional efficiency through its ability to train and test on raw data.

Lauric acid, a major component of coconut oil, has been studied for its various health benefits over the years. Lauric acid is a medium-chained fatty acid with several potential biomedical applications based on its antimicrobial action, capacity for drug delivery, tissue engineering scaffolds, and cleansing capabilities. Various studies are carried out in vitro and in vivo using experimental animals, such as rats, shedding light on the efficacy of lauric acid. The studies related to lauric acid were brought under one umbrella and emphasized the need for further research to explore the efficacy of lauric acid in human health. This review aims to scientifically assess the reported data and present a narrative review on lauric acid in medicine.

Coconut palm (Cocos nucifera) is a treasured tree of the tropics, with every part put to use. The edible portions are loaded with diverse nutrients and nutraceutical ingredients. While the unique mineral profile of the liquid endosperm, the low-glycemic inflorescence sap (neera) and the medium-chain triglyceride fraction of coconut oil are better recognized, other fractions such as the haustorium remain underexplored. Overall, it is evident that, globally, the present status of coconut value addition is conventional, limited to a handful of products, and novel products hold a promising scope. A massive fraction of global coconut production goes for culinary and religious purposes. In the article, value-added products from coconut are classified into conventional and non-conventional products, with the latter in focus. Based on the part from which it is collected, all products have been categorized as haustorium-based, inflorescence-based, kernel-based and water-based products. For each non-conventional product introduced, its production approach and unique application range are highlighted. Given its health-promoting capabilities, characteristic sensorial attributes, wide application range and technological advancements, coconuts are increasingly being recognized around the world, even in regions that do not cultivate them; this applies to non-food products as well. In the context of value-added products from coconuts, this decade has witnessed a surge in research and commercial interest considering the inclusion of coconut as an ingredient in several food and nutraceutical products. The future will certainly consider regulatory protocols and standards, better documentation of the health impact of coconut-based diets, and the sustainability of coconut production, processing and consumption. © 2024 Society of Chemical Industry.

This study aimed to stabilize and mask the bitterness of peptides obtained from the enzymatic hydrolysis of coconut-meal protein with maltodextrin (MD) and maltodextrin-pectin (MD-P) as carriers via spray-drying. Essential (~35%), hydrophobic (~32%), antioxidant (~15%), and bitter (~45%) amino acids comprised a significant fraction of the peptide composition (with a degree of hydrolysis of 33%). The results indicated that the peptide's production efficiency, physical and functional properties, and hygroscopicity improved after spray-drying. Morphological features of free peptides (fragile and porous structures), spray-dried with MD (wrinkled with indented structures), and MD-P combination (relatively spherical particles with smooth surfaces) were influenced by the process type and feed composition. Adding free and microencapsulated peptides to the bread formula (2% W/W) caused changes in moisture content (35%-43%), water activity (0.89-0.94), textural properties (1-1.6 N), specific volume (5.5-6 cm3/g), porosity (18%-27%), and color indices of the fortified product. MD-P encapsulated peptides in bread fortification resulted in thermal stability and increased antioxidant activity (DPPH and ABTS+ radical scavenging: 4.5%-39.4% and 31.6%-46.8%, respectively). MD-P (as a carrier) could maintain sensory characteristics and mask the bitterness of peptides in the fortified bread. The results of this research can be used to produce functional food and diet formulations.
