Climate change has caused major changes in abiotic factors, with water stress as the greatest threat to agricultural production. The measures aimed at alleviating the problems caused by this limiting production factor have occurred through the adoption of sustainable strategies, especially microbial biotechnology, which uses the interactions between the microorganism and the plant, ensuring productive quality and inducing plant resistance to stresses biotic and abiotic. The objective of the present work was to evaluate the biological nitrogen fixation and the development of bean seedlings, with co-inoculation of two types of inoculants, which were subjected to water stress by different pot capacities. The experiment was conducted in a greenhouse, at Universidade Paranaense - UNIPAR, from April to June 2019. The experimental design was completely randomized (DIC), with 5 replications, 16 treatments and 80 experimental units. The cultivar used was SCS Riqueza. The parameters evaluated were pot capacity (25%, 50%, 75% and 90%); small, large and total nodules, shoot and root length, dry and fresh weight, total carbon and nitrogen. The evaluation of the morphological parameters of the bean seedlings indicated that the co- inoculation technique promoted beneficial effects for the dry mass parameters of shoot, nodule and root. The analysis of the percentage of carbon and nitrogen in the tissues of the seedlings provided an increase in the concentration of these elements in treatments that involved co-inoculation (Azospirillum brasilensis and Rhizobium tropici) with pot capacities of 25 and 75% (CV), demonstrating that the association of microorganisms is beneficial in the limiting water situation.(AU)


A mudança climática tem causado grandes mudanças nos fatores abióticos, sendo o estresse hídrico a maior ameaça à produção agrícola. As medidas destinadas a aliviar os problemas causados por este fator limitante de produção ocorreram através da adoção de estratégias sustentáveis, especialmente a biotecnologia microbiana, que utiliza as interações entre o microorganismo e a planta, garantindo a qualidade produtiva e induzindo a resistência da planta ao estresse biótico e abiótico. O objetivo do presente trabalho foi avaliar a fixação biológica de nitrogênio e o desenvolvimento de mudas de feijão, com co-inoculação de dois tipos de inoculantes, que foram submetidos ao estresse hídrico por diferentes capacidades de vaso. A experiência foi realizada em uma estufa, na Universidade Paranaense - UNIPAR, de abril a junho de 2019. O projeto experimental foi completamente randomizado (DIC), com 5 réplicas, 16 tratamentos e 80 unidades experimentais. A cultivar utilizada foi a SCS Riqueza. Os parâmetros avaliados foram a capacidade do vaso (25%, 50%, 75% e 90%); nódulos pequenos, grandes e totais, comprimento do rebento e da raiz, peso seco e fresco, carbono total e nitrogênio. A avaliação dos parâmetros morfológicos das mudas de feijão indicou que a técnica de co-inoculação promoveu efeitos benéficos para os parâmetros de massa seca do turião, nódulo e raiz. A análise da porcentagem de carbono e nitrogênio nos tecidos das mudas proporcionou um aumento na concentração destes elementos nos tratamentos que envolveram a co-inoculação (Azospirillum brasilensis e Rhizobium tropici) com capacidades de vaso de 25 e 75% (CV), demonstrando que a associação de microorganismos é benéfica na situação limite da água.(AU)


El cambio climático ha provocado importantes cambios en los factores abióticos, siendo el estrés hídrico la mayor amenaza para la producción agrícola. Las medidas encaminadas a paliar los problemas causados por este factor limitante de la producción se han producido mediante la adopción de estrategias sostenibles, especialmente la biotecnología microbiana, que utiliza las interacciones entre el microorganismo y la planta, asegurando la calidad productiva e induciendo la resistencia de la planta a los estreses bióticos y abióticos. El objetivo del presente trabajo fue evaluar la fijación biológica de nitrógeno y el desarrollo de plántulas de frijol, con la co-inoculación de dos tipos de inoculantes, que fueron sometidos a estrés hídrico por diferentes capacidades de maceta. El experimento se realizó en un invernadero, en la Universidade Paranaense - UNIPAR, de abril a junio de 2019. El diseño experimental fue completamente al azar (DIC), con 5 repeticiones, 16 tratamientos y 80 unidades experimentales. El cultivar utilizado fue SCS Riqueza. Los parámetros evaluados fueron capacidad de maceta (25%, 50%, 75% y 90%); nódulos pequeños, grandes y totales, longitud de brotes y raíces, peso seco y fresco, carbono y nitrógeno total. La evaluación de los parámetros morfológicos de las plántulas de frijol indicó que la técnica de coinoculación promovió efectos beneficiosos para los parámetros de masa seca de brotes, nódulos y raíces. El análisis del porcentaje de carbono y nitrógeno en los tejidos de las plántulas proporcionó un aumento en la concentración de estos elementos en los tratamientos que involucraron la coinoculación (Azospirillum brasilensis y Rhizobium tropici) con capacidades de maceta de 25 y 75% (CV), demostrando que la asociación de microorganismos es beneficiosa en la situación de agua limitante.(AU)

Non-centrifugal cane sugar (NCS) is the second most important Colombian agribusiness in social importance. However, the sugar cane industry is facing some challenges caused by the controversial nutritional and safety attributes of NCS. Some Colombian NCS producers employ natural mucilages as clarifiers; but the uncontrolled application of these components has caused a risk of extinction in the mucilage source plants. Other producers employ acrylamide as a clarifier. Health consequences have generated concerns from the consumers and demanded control from the food authorities. Efforts are being made to develop a standard manufacturing methodology to increase NCS productivity and improve its quality, hygiene, and storability. The application of better clarifiers, which provide the best clarifying activity and minimize the toxicity while conserving NCS's natural attributes, is one of the outstanding challenges as well. This study is a proposal which looks for sustainable, natural, nontoxic, and economical clarifiers for the Colombian NCS producers.

A liquid chromatography tandem mass spectrometry method (LC-MS/MS) preceded by a rapid and simple QuEChERS-based sample preparation was developed and validated for the determination of acrylamide in non-centrifugal sugar (NCS), a solid product obtained from sugarcane juice without centrifugation, up to a concentration greater than 90 ºBrix. Adequate linearity in calibration curves, analytical selectivity and sensitivity were achieved. A limit of detection (LOD) and a limit of quantitation (LOQ) of 10 and 20 µg kg-1, respectively, were obtained. Recoveries (84.3-107.5%) and coefficients of variation (CV<15%) for repeatability and reproducibility conditions were appropriate in intraday and interday laboratory conditions. The concentration of acrylamide was determined in 76 commercial samples of NCS from different Latin American countries and ranged from <20 to 1414 µg kg-1. The highest mean acrylamide amounts were found in samples from Peru, Ecuador and Colombia (636, 446 and 401 µg kg-1, respectively). Considering the form of the product, the highest average levels were found in granulated NCS (517 µg kg-1) when compared to block (294 µg kg-1). Within the Colombian samples, organic NCS, made with natural flocculant, presented a higher acrylamide mean concentration (721 µg kg-1) than conventional samples (363 µg kg-1). Although the Margin of Exposure (MOE) values for neurotoxicity suggested that the estimated intakes in Brazil and Colombia are not a concern, MOEs obtained for neoplastic effects raised attention.

BACKGROUND: Acrylamide in foods has been widely studied because of its possible carcinogenicity. Most of the foods investigated were prepared using low moisture and high temperature conditions. Non-centrifugal sugars (NCSs), which have been promoted as 'non-chemical' natural sweeteners, contain precursors of acrylamide and their production processes involved prolonged heating. The acrylamide content in 32 commercial NCSs from coconut, cane and palmyra palm purchased in Asian countries was investigated. Additionally, syrups (80 o Brix) produced from coconut and palmyra raw saps and cane juice were prepared by evaporation with prolonged heating (2.5 h to reach 100 °C, 1 h to increase to 110 °C, held at 110 °C for 30 min). The compositions and contents of sugars, amino acids and minerals, as well as the physical characteristics of the raw saps, juice and syrups, were determined. RESULTS: The acrylamide content of these 32 products ranged from < 15 to 4011 µg kg-1 . The raw saps and juice were mildly acidic (pH 5.14-5.66) and similar values were observed for their syrups (4.73-5.73). The contents of sucrose, fructose and glucose in the saps and juice from these plants were similar, whereas their compositions varied with respect to amino acids. The variation of the ornithine content was significant, demonstrating a striking influence on the extent of acrylamide formation (867-1564 µg kg-1 ) in the syrups prepared from these materials. CONCLUSION: The present study emphasizes the importance of a careful monitoring and control of the critical steps invloved in the manufacturing process of NCSs (particularly the evaporation phase), aiming to protect the health and safety of consumers. © 2021 Society of Chemical Industry.

Non-centrifugal cane sugar (NCS) samples obtained by traditional moulding and granulation, and also via a novel spray-drying powdering process without additives, were assessed to characterise their sugar and phenolic profiles, flavonoid content, as well as colour parameters. As expected, sucrose was the predominant sugar (91.9-95.5%), followed by glucose (2.9-4.6%), and fructose (1.6-3.7%). Total phenolic content was between 0.4 and 0.6% and total flavonoid content into the range of 0.2-0.4%. Six phenolic acids were found in all NCS samples: protocatechuic acid (0.36-0.94 µg/100 g), vanillic acid (0.70-1.45 µg/100 g), chlorogenic acid (2.08-3.82 µg/100 g), syringic acid (1.08-2.80 µg/100 g), p-coumaric acid (0.69-1.35 µg/100 g), and ferulic acid (0.50-0.95 µg/100 g). The thermal treatment under high temperatures required in the production of granulated products was related with darker colours and changes in phenol and flavonoid contents. In contrast, spray drying generates clearer products, but with slightly less phenol and flavonoid contents.

RESUMEN En Colombia, el departamento de Boyacá tiene uno de los mayores rendimientos de caña de azúcar (Saccharum spp.), para la producción de panela; sin embargo, los productores demandan constantemente la evaluación de material genético, que pueda aumentar los rendimientos por unidad de área y las características agroindustriales de los materiales tradicionales, de mayor dominio en la región. Con la finalidad de estimar los rendimientos de caña y de panela por hectárea, se evaluaron, a nivel experimental, los cultivares CC 01-1940, CC 99-2282, CC 05-940, CC 03-469, CC 06-791, en el municipio de Moniquirá, Boyacá. Posteriormente, se realizaron pruebas comerciales de molienda, con el mejor cultivar en Moniquirá y en San José de Pare, Boyacá, junto a los testigos de cada zona Caña Buena y RD 75-11, respectivamente. Experimentalmente, se destacó el cultivar CC 01-1940, con una producción de 183,3t/ha de caña (TCH), 24,2 toneladas de panela por hectárea (TPH), así como una conversión de 13,2% de panela (CP). En prueba comercial de molienda en San José de Pare, se encontró que CC 01-1940 alcanzó una producción de 221,9 TCH y 26,1 TPH, superando por más de 30 toneladas de caña y 5,2 toneladas de panela, al reporte alcanzado por RD 75-11. Para el municipio de Moniquirá, CC 01-1940 obtuvo 158,5 TCH, 18,5 TPH y 11,6% CP, superando al cultivar testigo Caña Buena.


ABSTRACT In Colombia, the department of Boyacá has one of the highest yields of sugar cane (Saccharum spp.) for panela production. However, producers constantly demand the evaluation of genetic material that could increase the yields per area and the agro-industrial characteristics of the traditional material of greater dominance in the region. In order to estimate cane and panela yields per hectare, cultivars CC 01-1940, CC 99-2282, CC 05-940, CC 03-469, CC 06-791 were evaluated experimentally in the municipality of Moniquirá, Boyacá. Subsequently, commercial milling tests were carried out with the best cultivar in Moniquirá and San José de Pare, Boyacá, together with the control materials from each zone, Caña Buena and RD 75-11, respectively. Experimentally, the cultivar CC 01-1940 stood out with a production of 183.3t/ha of sugarcane (TCH), 24.2 tons of panela per hectare (TPH), as well as a conversion of 13.2% of panela (CP). In a commercial milling test in San José de Pare, it was found that the cultivar CC 01-1940 had a production of 221.9 TCH and 26.1 TPH, surpassing by more than 30 tons of cane and 5.2 tons of panela, for what was reported by RD 75-11. For the municipality of Moniquirá, the cultivar CC 01-1940 obtained 158.5 TCH, 18.5 TPH and 11.6% CP, surpassing the cultivar Caña Buena.

Biological, physicochemical and textural parameters of a Panela cheese with and without probiotics (LSB-c and C-c) were analyzed during 15 days of storage at 4 °C. Changes in cohesiveness, hardness, springiness, and chewiness were measured by texture profile analysis. Additionally, moisture, pH, nitrogenous fractions (nitrogen soluble in pH 4.6, non-protein nitrogen, 70% ethanol-soluble nitrogen, and water-soluble extract) were evaluated. The peptide profile of nitrogenous fractions was also analyzed. Finally, biological activity was evaluated by ABTS (2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) and DPPH (2,2-diphenyl-1-picrylhydrazyl), as well as the Inhibition of Angiotensin-Converting Enzyme. Analysis of variance showed significant differences for most of the evaluated parameters. By principal component analysis (PCA), two groups were separated, one corresponding to LSB-c and the other corresponding to C-c. The separation was given mostly by hardness, chewiness, and ABTS of all nitrogenous fractions. LSB-c showed higher biological activities than C-c.

Non-centrifugal cane sugar (panela) is an unrefined sugar obtained through intense dehydration of sugarcane juice. Browning, antioxidant capacity (measured by ABTS (2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) assay and total phenolic content) and the formation of acrylamide and other heat-induced compounds such as hydroxymethylfurfural (HMF) and furfural, were evaluated at different stages during the production of block panela. Values ranged between below the limit of quantitation (LOQ)-890 µg/kg, < LOQ-2.37 mg/kg, < LOQ-4.5 mg/kg, 0.51-3.6 Abs 420 nm/g, 0.89-4.18 mg gallic acid equivalents (GAE)/g and 5.08-29.70 µmol TE/g, for acrylamide, HMF, furfural, browning, total phenolic content and ABTS (all data in fresh weight), respectively. Acrylamide significantly increased as soluble solid content increased throughout the process. The critical stages for the formation of acrylamide, HMF and furfural were the concentration of the clarified juice in the concentration stage to get the panela honey and the final stage. Similar trends were observed for the other parameters. This research concludes that acrylamide, HMF and furfural form at a high rate during panela processing at the stage of juice concentration by intense evaporation. Therefore, the juice concentration stage is revealed as the critical step in the process to settle mitigation strategies.

Yield, chemical composition, fatty acid profile, and sensory acceptability of Panela cheese produced from cows grazing in an intensive silvopastoral system (ISS) with Leucaena leucocephala and Cynodon nlemfuensis were evaluated and compared with Panela cheese from cows grazing a monoculture system (MS) of C. nlemfuensis only. The experiment lasted for 9 weeks in a tropical area in Mexico using ten crossbred cows (30-90 days of milking) assigned homogenously as five cows in each experimental group. No significant differences were found between the two systems for milk and cheese gross composition. Panela cheese from ISS showed lower content of the hypercholesterolemic fatty acids, accompanied with higher content of omega-3, omega-6 and polyunsaturated fatty acids. In addition, Panela cheese from ISS showed higher preference for the attributes of appearance, texture, flavor, and overall acceptability. It is concluded that Panela cheese from cows grazing in ISS has better acceptability and nutritional properties than that produced from MS with grass only.

Panela is a natural, unrefined non-centrifugal sugar obtained by intense dehydration of sugarcane juice. Acrylamide, hydroxymethylfurfural (HMF), and furfural were determined in 40 panela samples distributed as granulated and block according to the technological process. Colour, browning, moisture, water activity, pH and antioxidant capacity were also evaluated. Acrylamide ranged between 60 and 3058 µg/kg; granulated panela reporting the highest concentration (812 µg/kg) compared with block panela (540 µg/kg). The lower content in HMF and furfural, the intense dehydration, and the extensive darkening of granulated panela suggested the browning reactions were boosted due to the application of more severe thermal treatments. Principal component analysis showed a significant relationship between the panela presentation and the concentration of the analysed compounds. Benchmark values considering both types of processes would help to establish mitigation initiatives in panela products. The chromatic parameter a* could be used as an indirect index of the acrylamide content in panela.

Fresh cheeses, Panela type, were manufactured from cow milk and with goat milk incorporation, constituting 4 blends of milks (G10:C90, G20:C80, G30:C70, G40:C60, v/v). The cheeses were analyzed to determine the effect of the different goat milk ratios on the physicochemical, textural, rheological, and sensory properties over 15 d of storage. Significant differences in protein (14.6% to 18.5%), fat (13.0% to 19.4%), and moisture contents (51.7% to 61.3%), pH (6.38 to 6.67), color (Lh  > 64.4, ah  > 1.06, bh  > 5.14), textural (σf  > 14.8 kPa, εC : 0.77 to 0.79, elasticity modulus > 13.5 kPa), and rheological parameters (G' > G'', G': 10.6 to 31.9 kPa, G'': 2.39 to 7.31 kPa, tan δ: 0.21 to 0.24) were detected as a function of the milks ratio, as well as a function of the storage time. The incorporation of goat milk improved the overall quality in the formulation of Panela cheese, enhancing the texture, flavor and aroma, commonly associated with hand-crafted cheeses when they are used in the proper ratio. Furthermore, the nutritional value of the cheese is increased with the incorporation of goat milk, which can contribute to a better consumer health.

The study evaluated panela cheeses made from dairy-plant protein blends, using soybean or peanut protein isolates, supplemented with transglutaminase (TG). Plant proteins were isolated using an alkaline extraction method followed by acid precipitation, and added to the dairy system in order to increase 50% or 100% the protein concentration. The total protein extraction for peanut and soybean isolates was 30.3% and 54.6%, respectively (based on initial protein content of sources), and no impairment of their essential amino acid profile was detected. Cheeses supplemented with TG and soybean showed the highest moisture and crude yield (>67.8% and 20.7%, respectively), whereas protein content was higher in the peanut isolate--added samples without TG (>67.4%). Cheese solids yield (ratio between final and initial solids) was higher for treatments with TG and 100% of plant protein addition (>50.7%). Regarding texture, 4 parameters were measured: hardness, cohesiveness, chewiness, and springiness. All cheeses containing soybean isolates and TG presented the highest chewiness and cohesiveness values, similar to those of the control treatment. Springiness was similar for all treatments, but hardness was higher in cheeses prepared with the peanut protein isolate added with TG. From these results it can be concluded that panela cheeses can be elaborated following a traditional procedure, but with the addition of soybean or peanut protein to the dairy ingredients. Cheeses containing these protein isolates showed higher protein than the milk control cheese and similar textural characteristics.

El kéfir de agua (KA) es una bebida fermentada medianamente ácida elaborada con soluciones azucaradas y fermentada por un consorcio de microorganismos, principalmente bacterias ácido lácticas (BAL) y levaduras (LEV), embebidas en un polisacárido llamado gránulo de KA. La presencia de hongos y sus toxinas es un problema de la producción de alimentos, como Aspergillus ochraceus y sus micotoxinas especialmente en café y vino. Entre algunas alternativas que se han evaluado para su inhibición se incluyen las bacterias ácido lácticas y productos fermentados en general. El objetivo principal de esta investigación fue evaluar la capacidad del KA en inhibir o retrasar el crecimiento de A. ochraceus. Se emplearon 8 sobrenadantes libres de células (SLC) obtenidos de diferentes fermentaciones de panela con gránulos de KA y con diferentes concentraciones de ácidos orgánicos (láctico y acético). Se hicieron fermentaciones con gránulos de KA en solución de panela por periodos de 32,5 h, a 25, 30 y 37 °C. Se determinaron la cinética de acidificación; el incremento de biomasa y se hizo el recuento de los grupos de microorganismos que componen el gránulo. A 25 °C se determinó el mayor aumento de biomasa (92%). La temperatura de fermentación afectó el recuento de los microorganismos que conforman el gránulo, principalmente las BAL, disminuyendo su cantidad a la máxima temperatura de fermentación (37 °C) (1x10ˆ6 UFC ml-1), comparado con la mínima temperatura (25 °C) (6x10ˆ7 UFC ml-1). El fermento que presentó mayor actividad antifúngica fue el SLC5 (pH: 3,2; temperatura de fermentación: 30 °C). El poder inhibitorio se atribuyó a los ácidos orgánicos producidos durante la fermentación, aunque no se puede descartar que hayan actuado otras sustancias no cuantificadas. Se pudo comprobar que el KA puede fermentar y aumentar su biomasa en un sustrato como el agua de panela y que sus SLC tienen la capacidad de reducir el crecimiento de A. ochraceus.


Water kéfir (WK) is a moderately sour fermented beverage elaborated in sugar-containing solutions through fermentation by a microorganism consortium, principally lactic acid bacteria (LAB) and yeasts, embedded in a matrix of polysaccharide so-called WK grains. The presence of fungi and their toxins it is a problem for the food industry, such as Aspergillus ochraceus and their mycotoxin production especially in coffee and wine. Some alternatives that have been evaluated for their inhibition include lactic acid bacteria and generally fermented products. The main objective was to evaluate the capacity of WK to ferment a Colombian beverage made with Panela and to assess capability of this product to retard the germination of a common toxigenic fungi like Aspergillus ochraceus. 8 cell-free supernatants (CFS) were obtained from separate fermentations and with different organic acids (OA) concentrations (e. g., lactic and acetic). Different fermentations were conducted with WK in Panela broth during 32.5 h periods at 25, 30, and 37°C. We determined the kinetics of acidification of WK along with the corresponding increment in biomass and conducted a quantitation of microorganisms groups that composed the grain. The greatest biomass increase occurred at 25 °C (92%); but the fermentation temperature affected the composition of microorganisms conforming the grain, with the quantity of LAB decreasing at the highest fermentation temperatures (37 °C) (1x10ˆ6cfu ml-1), compared with the minimum temperature (25 °C) (6x10ˆ7 cfu ml-1). The CFS5 (pH 3.2; fermentation temperature 30 °C) exhibited the greatest antifungal activity. We attribute the inhibitory power of these ferments to the OA produced during fermentation, although we cannot discard the possibility of the action of other substances not specifically quantified. We concluded that WK can grow and fermentate Panela broth and that its CFS can exert an antifungal effect against A. ochraceus.

El objetivo de este trabajo fue determinar el contenido de polifenoles y la capacidad antioxidante en bebidas elaboradas con panela (edulcorante natural obtenido de la concentración del jugo de caña), a fin de evaluar su potencial como fuentes de antioxidantes. En bebidas elaboradas con tres marcas de panela (A, B y C) sabor a limón, mandarina y durazno, se determinó el contenido de polifenoles totales utilizando el reactivo de Folin-Ciocalteu y la capacidad antioxidante por tres métodos: Eficiencia antirradical DPPH, poder reductor férrico (FRP) y capacidad de absorción de radicales de oxígeno (ORAC). El contenido de polifenoles varió de 0,76 a 1,26 g EAG/mL y 0,73 a 1,32 g EAT/mL, observando un mayor contenido para la bebida sabor a limón seguido por mandarina y durazno. Las bebidas tienen una Eficiencia Antirradical (EA) baja y los compuestos antioxidantes presentes muestran una cinética lenta. El poder reductor férrico fue de 8,28 a 10,41 mmol Fe+2/L. Los valores de ORAC variaron desde 1.536 hasta 5.220 μmol ET/100mL, siendo las elaboradas con la marca B la de mayor ORAC, seguida por la marca A y C. La interacción marca-sabor afecta de forma significativa el contenido de polifenoles totales y la EA, además el procesamiento térmico afecta significativamente la EA (p < 0,05). Los valores de polifenoles encontrados y la capacidad antioxidante mostrada por las bebidas elaboradas con panela indican que son productos potencialmente con capacidad antioxidante.


Polyphenols content and antioxidant capacity in beverages made with panela. The objective of this work was to determine the total polyphenols content and antioxidant capacity in beverages made with panela (a natural sweetener obtained after drying the unrefined whole sugarcane juice) in order to assess their potential as sources of antioxidants. In beverages made with three panela brands (A, B and C) with lemon, tangerine and peach flavors, the total polyphenols content was determined using the Folin-Ciocalteu ´s reactive and antioxidant capacity was determined by three methods: antiradical efficiency DPPH, ferric reducing power (FRP) and oxygen radical absorbance capacity (ORAC). The total polyphenols content ranged from 0.76 to 1.26 EAG g/mL and 0.73 to 1.32 EAT g/mL. The lemon flavored beverage showed the highest total polyphenols content followed by tangerine and peach flavored beverages. The three beverages had a low antiradical efficiency (AE) and the antioxidant compounds present in the beverages showed a slow kinetic. The ferric reducing power ranged from 8.28 to 10.41 mmol Fe+2/L. The ORAC values ranged from 1,536 to 5.220 μmol ET/100mL. The brand B showed the highest ORAC, followed by brands A and C. The brand-flavor interaction significantly affects the total polyphenols content and the EA, thermal processing also significantly affect the AE (p<0.05). The values of polyphenols and antioxidant capacity found in the beverages made with panela indicate that they are products potentially with antioxidant capacity.

El objetivo de este proyecto fue evaluar la aplicación de las prácticas de manufactura en los trapiches San Francisco y La Esmeralda mediante la aplicación de encuestas etnográficas, documentación fotográfica e identificación de contaminantes microbiológicos presentes en la panela, manos de empleados e implementos de trabajo. En los resultados obtenidos se encontró que una proporción importante de las muestras presentaron contaminación por bacterias como Staphylococcus epidermidis, Streptococcus uberis, Leuconostoc mesenteroides, Bacillus spp, Corynebacterium spp, Actynomices spp, Lactococcus lactis y Gardnerella vaginalis, y hongos como Fusarium spp, Aspergillus spp, Paecilomyces spp, Penicillium spp y Mucor spp, demostrando falencias en el proceso de producción por la falta de implementación de las Buenas Prácticas de Manufactura. A partir del estudio, se recomendó capacitar a los empleados periódicamente acerca de la manipulación de alimentos y prácticas básicas de higiene y realizar una vigilancia más estricta a los trapiches.


In this study was evaluated the implementation of manufacturing practices in the San Francisco and La Esmeralda mills through ethnographic surveys, photographic evidence and recovery of microbiological contaminants from panela, employees hands and working tools. A significant proportion of samples from hands, work tools and panela were found contaminate with bacteria such as Staphylococcus epidermidis, Streptococcus uberis, Leuconostoc mesenteroides, Bacillus, Corynebacterium, Actinomyces spp, Lactococcus lactis and Gardnerella vaginalis, and fungi including Fusarium spp, Aspergillus spp, Paecilomyces spp, Penicillium spp and Mucor spp. These results revealed failures in the production process due to the lack of implementation of Good Manufacturing Practices. Based in this study it was recommended to give regular trainings to the employees about food handling and basic hygiene practices. Also carry out a strict monitoring of the mills in order to be able in the future to rank Colombia as greater panela producer and exporter.

Introducción: Este artículo presenta los resultados fisicoquímicos realizados a muestras de panela de consumo humano, consignados en las bases de datos del Laboratorio de Salud Pública de la Secretaría Distrital de Salud de Bogotá, entre el 1 de enero y el 31 de diciembre del 2009, dentro del programa de vigilancia y control sanitario que adelantan las empresas sociales del Estado. Objetivo: Determinar fisicoquímicamente la calidad de la panela que se distribuyó durante el 2009 en Bogotá. Metodología: Estudio descriptivo retrospectivo basado en análisis estadístico en Excel de 343 datos consignados en el Silasp, dentro del periodo objeto de estudio y obtenidos de información registrada luego de las pruebas fisicoquímicas practicadas al alimento panela en el Laboratorio de Salud Pública. Resultados: Durante el 2009, en Bogotá, el 84,26% (289/343) de las panelas arrojó calidad fisicoquímica que cumple con la normatividad vigente (Resolución 779 del 2006); sin embargo, el 15,74% (54/343) de las muestras analizadas presentó calidad fisicoquímica que no cumple; el 15,45% (53/343), por presencia de blanqueadores (sulfitos), y el 0,3% (1/343) por colorantes, los cuales son aditivos químicos prohibidos.


Introduction: This article presents the results obtained from the tests made to jaggery samples for human consumption recorded at the databases of the Laboratory of Public Health of Bogotá’s District Health Secretariat, from 01 January to December 31, 2009, within the Program of public health surveillance and control carried out by State Social Enterprises. Objective: To establish the physicochemical quality of unrefined whole sugar cane blocks distributed in 2009 in the Capital District. Methodology: This is a retrospective, descriptive study based on a statistical analysis of 343 Excel data from the SILASP (Public Health Lab’s Information System) for the period of study and obtained from information recorded pursuant to physico-chemical tests made to panela food at the Laboratory of Public Health. Results: 84.26% (289/343) of the jaggery blocks produced in Bogotá’s Capital District appeared to have physicochemical opperties that fulfill the current standard (Resolution 779/2006), whereas 15.74% (54/343) of the samples analyzed had physicochemical properties under the standard; 15.45% (53/343) of non-compliant samples contained whitening products (sulphites), and 0.3% (1/343) artificial colors, i.e. banned chemical additives.

La panela granulada es una nueva presentación del papelón (azúcar no refinada), con ventajas frente a la tradicional forma de bloque, elaborada a nivel artesanal bajo condiciones de proceso no estandarizadas que proveen un producto de calidad variable. Se evaluó el efecto de dos variedades de caña (Puerto Rico 61632 y Mayarí 5514), del lavado de la caña previo a la extracción del jugo, y de la temperatura de punteo (123 y 128°C) sobre la calidad de la panela granulada elaborada en una planta piloto, medida en términos de humedad, azúcares reductores, pH, sólidos solubles totales, color (L, a y b) y sólidos insolubles. La variedad influyó significativamente (p£0,05) en los azúcares reductores, color y pH. Las panelas elaboradas con la variedad Mayarí 5514 presentaron menor contenido de azúcares reductores (7,20%), color más claro (L=73,98) y mayor pH (6,09). Con caña lavada se obtuvo menor contenido de azúcares reductores (7,92%), pero no tuvo efecto significativo sobre los sólidos insolubles. La temperatura de punteo solo afectó el color, produciendo a 123°C panelas más claras y con menor intensidad en los tonos rojos. Se concluye que para obtener un producto de calidad uniforme es necesario controlar variables tales como la variedad de caña y la temperatura de punteo.


Granulated "panela" sugarcane is a new presentation for the "papelón" (unrefined cane sugar), handmade under non-standard processing conditions that result in a product of variable quality, but with advantages over the traditional block presentation. This study evaluated the effect of two varieties of sugar cane (Puerto Rico 61632 and Mayarí 5514), of their washing prior to juice extraction, and of the endpoint temperature (123 and 128°C) on the quality of the granulated "panela" cane sugar made in a pilot-plant. Moisture, reducing sugars, pH, total soluble solids, color (L, a and b) and insoluble solids were measured. The variety influenced significantly (p£0.05) the content of reducing sugars, color and pH. The "panela" cane sugar made with the Mayarí 5514 variety had lower content of reducing sugars (7.20%), lighter color (L=73.98) and higher pH (6.09). With washed cane, a lower content of reducing sugars was obtained (7.92%), but it did not have a significant effect on the insoluble solids. The endpoint temperature affected only the color, resulting at 123°C in "panela" cane sugars of lighter color and with a lower intensity of red hues. It is concluded that in order to obtain a product of uniform quality, it is necessary to control variables such as the cane variety and the endpoint temperature.


A rapadura granulada é uma nova apresentação do melado (açúcar não refinado), com vantagens diante da tradicional forma de bloco, elaborado a nível artesanal sob condições de processos não estandardizados que prevêem um produto de qualidade variável. Avaliou-se o efeito de duas variedades de cana (Porto Rico 61632 e Mayari 5514), da lavagem da cana prévia à extração do sugo, e da temperatura do tacho (123 e 128°C) sobre a qualidade da rapadura granulada elaborada em uma usina piloto, medida em termos de umidade, açúcares redutores, pH, sólidos solúveis totais, cor (L, a e b) e sólidos insolúveis. A variedade influiu significativamente (p£0,05) nos açúcares redutores, cor e pH. As rapaduras elaboradas com a variedade Mayari 5514 apresentaram menor conteúdo de açúcares redutores (7,20%), cor mais clara (L=73,98) e maior pH (6,09). Com cana lavada se obteve menor conteúdo de açúcares redutores (7,92%), mas não teve efeito significativo sobre os sólidos insolúveis. A temperatura do tacho (para atingir o "ponto") somente afetou a cor, produzindo a 123°C rapaduras mais claras e com menor intensidade nos tons vermelhos. Conclui-se que para obter um produto de qualidade uniforme é necessário controlar variáveis tais como a variedade de cana e a temperatura do tacho para atingir o "ponto".
