INTRODUCCIÓN. Según datos de la Organización Mundial de Salud los trastornos musculoesqueléticos son la principal causa de discapacidad en el mundo; retrasar su diagnóstico provocaría una discapacidad prevenible. OBJETIVO. Determinar la prevalencia de síntomas osteomusculares en galponeros de granjas avícolas asociados a condiciones del trabajo. MATERIALES Y MÉTODOS. Estudio descriptivo transversal. Muestra aleatoria estratificada de 223 trabajadores, divididos en 106 galponeros y 117 personal administrativo de granjas avícolas de la provincia de Manabí. Criterios de inclusión: trabajadores mayores de 18 años de edad con al menos un año en la misma actividad. Para el análisis de datos, se utilizó Epi Info versión 7. RESULTADOS. La prevalencia de síntomas osteomusculares en los últimos 12 meses fue mayor en los galponeros en: hombro 81,69% y columna lumbar 56,96%. Mediante un análisis a través de regresión logística se determinó que los galponeros que trabajan por más de 10 años y que realizan movimientos repetitivos en menos de un minuto, tienen mayor riesgo de presentar dolor en el hombro (IC del 95% 1,26 ­ 4,98) e (IC del 95% 1,65 ­ 5,29). CONCLUSIÓN. Se registró la prevalencia de síntomas osteomusculares en galponeros de granjas avícolas asociados a condiciones del trabajo. RECOMENDACIÓN. Es necesario contar con sistemas de vigilancia a fin de proponer estrategias públicas en la industria avícola del Ecuador


INTRODUCTION. According to data from the World Health Organization musculoskeletal disorders are the leading cause of disability in the world; delaying their diagnosis would result in preventable disability. OBJECTIVE. To determine the prevalence of musculoskeletal symptoms in poultry farm workers associated with working conditions. MATERIALS AND METHODS. Cross-sectional descriptive study. Stratified random sample of 223 workers, divided into 106 poultry sheds workers and 117 administrative personnel of poultry farms in the province of Manabí. Inclusion criteria: Workers over 18 years of age with at least 1 year in the same activity. Fort he data analysis, Epi Info version 7 was used. RESULTS. The prevalence of musculoskeletal symptoms in the last 12 months was higher in sheds workers in: shoulder 81,69% and lumbar spine 56,96%. Using logistic regression analysis, it was determined that the sheds workers who have been working for more than 10 years and who perform repetitive movements in less than one minute have a greater risk of presenting shoulder pain (95% CI 1,26 ­ 4,98) and (95% CI 1,65 ­ 5,29). CONCLUSION. The prevalence of osteomuscular symptoms in poultry farm workers associated with working conditions was recorded. RECOMMENDATION. It is necessary to have surveillance systems in order to propose public strategies in the Ecuadorian poultry industry

In recent years, the global poultry industry has been facing increasing and challenging myopathies such as the woody breast (WB) condition that has caused significant economic losses. Even though the etiological causes of WB myopathy are still unknown or partially understood, the intensive genetic selection for rapid-growth rates and high yields in broilers may be the main factor associated with the development of this abnormality. The severity of this anomaly and its incidence rates are associated with fast-growing and heavier broilers, especially with those from high breast yielding strains. Such WB myopathy is primarily characterized by a notorious hardness in broiler breast muscles, which exhibit morphometric and histopathological alterations coupled with physicochemical abnormalities that result in undesired sensory, nutritional, and technological properties. In this negative context, although scientists are trying to solve or reduce the prevalence of this meat quality problem, the poultry industry needs noncontact and rapid in-line methods for WB detection at the fillet and/or carcass level that could help to establish automated objective grading or sorting systems according to its severity. Another need is the development and selection of profitable alternatives for the utilization of WB meat once poultry carcasses or deboned fillets affected by this abnormality are objectively detected and sorted. Indeed, there is a need for studies to expand the industrial applications of WB meat in further processed products, optimizing the incorporation of this affected chicken meat based on sensorial, technological, and nutritional profile evaluations. Even though a better understanding of the contribution of genetic and nongenetic factors to the development of growth-related myopathies can be the main strategy to mitigate their negative effects, the poultry industry could benefit from meeting the aforementioned needs.

Background: The genus Salmonella, associated with poultry products, is considered the leading cause of foodborne outbreaks in humans in many countries. In Brazil, Salmonella Enteritidis (SE) is the serovar remains as one most frequentlyisolated from humans, and it is also a major serovar found in animals, food, animal feed, and environmental samples, despiteall the efforts to control this pathogen. Also, the bacterium is able to form biofilms on different surfaces, protecting cellsfrom both cleaning and sanitizing procedures in the food industries. This study aimed to verify the ability of SalmonellaEnteritidis isolates to form biofilm on polystyrene at different incubation temperatures.Materials, Methods & Results: A total of 171 SE samples were isolated from foodborne outbreaks (foods and stool cultures) and poultry products between 2003 and 2010. The biofilm-forming ability of samples was measured at four differenttemperatures (3°C, 9ºC, 25ºC, and 36ºC), for 24 h, simulating temperatures usually found in poultry slaughterhouses. Later,200 μL of each bacterial suspension was inoculated, in triplicate, onto 96-well, flat-bottomed sterile polystyrene microtiterplates, washed, after that, the biofilm was fixed with methanol. The plates were dried at ambient temperature, stained with2% Huckers crystal violet. Afterwards, absorbance was read using an ELISA plate reader and the optical density (OD)of each isolate was obtained by the arithmetic mean of the absorbance of three wells and this value was compared withthe mean absorbance of negative controls (ODnc). The following classification was used for the determination of biofilmformation: no biofilm production, weak biofilm production, moderate biofilm production and strong biofilm production.Results demonstrated all isolates from stool cultures and foods involved in foodborne outbreaks, at least one of the fourtemperatures tested, were able to form biofilm...(AU)

Background Campylobacter jejuni is one of the main causal agents of food borne diseases. Infections with this pathogen are mainly caused by chicken meat consumption. Aim To characterize antibiotic resistance and virulence factors in C. jejuni strains obtained from chicken meat and poultry feces in Central Chile. Material and Methods The presence of C. jejuni in 30 meat and 40 feces samples from poultry was studied. From these samples, we obtained 40 strains which were characterized at the molecular level for the presence of 16 genes involved in virulence using PCR. In parallel, antibiotic resistance for ciprofloxacin, nalidixic acid, tetracycline, erythromycin, azithromycin, chloramphenicol y ampicillin was analyzed. Results Twenty and 63% of feces and chicken meat samples were positive for C. jejuni, respectively. Moreover, a high percentage of strains showed antibiotic resistance, where 27% of strains were resistant to all tested antibiotics, except for azithromycin. Finally, 10% of the strains coming from feces contained 14 out of 16 virulence genes evaluated. Only 23% of the strains did not contain any of these genes. Conclusions A high percentage of feces and chicken meat samples are contaminated with C. jejuni. Moreover, these strains show a high genetic and phenotypic diversity represented by their antibiotic resistance profiles and the presence of virulence factors.

Salmonella enterica is responsible for alimentary toxic infections associated with the consumption of contaminated poultry products and the antimicrobial resistant patterns of Salmonella circulating in the Tolima region are currently unknown. To address this issue, both the phenotype and genotype antibiotic resistance patterns of 47 Salmonella isolated from raw chicken carcasses sold at the Ibague city were analyzed by the disc diffusion, microdilution and PCR assays. All 47 Salmonella isolates showed resistance to five or more antimicrobial agents. Resistance to Ampicillin (AMP), Amikacin (AMK), Gentamicin (GEN), Tobramycin (TOB), Cefazoline (CFZ), Cefoxitin (FOX), Nitrofurantoin (NIT), Trimethoprim-Sulfamethoxazole (SXT), Tetracycline (TET), Ciprofloxacin (CIP) and Enrofloxacin (ENR) was observed in 42.35% of Salmonella isolates. All tested S. Paratyphi B var Java isolates showed resistance to at least 12 antibiotics. S. Hvittingfoss showed resistance to 5 antibiotics, whereas S. Muenster showed resistance to seven antibiotics. Amplification of a number of antibiotic resistance genes showed that blaTEM (100%) correlated well with resistance to Ampicilin and Cephalosporin, whereas aadB (87%) correlated well with resistance to Aminoglycosides. It is concluded that Salmonella isolated from raw chicken meat marketed at Ibague showed MDR by both phenotypic and genotypic methods and they may represent an important threat to human health. Additional studies are needed to establish the relationship between antibiotic resistance in Salmonella from poultry products and clinical isolates.(AU)

RESUMO

Fluoroquinolones are antimicrobial agents frequently used in poultry production and in human medicine. The use of such substances must comply with safety criteria, including withdrawal periods, doses, and treatment duration, as their misuse and abuse may cause bacterial resistance and the presence of residues in edible tissues. Consequently, the consumption of animal products with fluoroquinolone residues may result in the transmission of resistant bacteria. In addition, if residues are beyond the acceptable levels, fluoroquinolone active metabolites are harmful to human health. This article presents a review on the use of antimicrobials of the fluoroquinolone class in poultry production, focusing on the development of bacterial resistance to these drugs and the presence of their residues in poultry products.(AU)

RESUMO

Foram coletadas 100 amostras de conteúdo fecal de aves de corte, 100 de produtos de frango (coxa, sobrecoxa, asa, dorso, carne moída e fígado) e 100 de fezes de humanos, e analisadas para pesquisa de Campylobacter. Realizou-se a determinação da espécie e da presença dos genes cdt, responsáveis pela codificação da toxina citoletal distensiva (CDT), através da técnica da PCR. A bactéria foi isolada de 61% das amostras de fezes de frango, 20% de produtos de frango e 3% de fezes de humanos. A maioria dos isolados foi determinada como C. jejuni . Destes, 93,5% apresentaram os genes para a toxina CDT. Apesar de a ocorrência de Campylobacter em fezes de humanos ter sido baixa, a prevalência em frangos de corte e produtos de frango foi elevada, fato que, aliado à presença dos genes cdt na maioria dos isolados, representa risco potencial para os consumidores. Esses resultados são indicativos da necessidade de medidas preventivas no sistema de produção e de boas práticas de fabricação na indústria, de forma a minimizar a contaminação dos produtos e diminuir o risco para os consumidores.(AU)


A hundred chicken fecal samples, a hundred samples of retail poultry products and a hundred samples of human feces were collected and tested for the presence of Campylobacter. The species identification and the analysis for the presence of cdt genes, responsible for encoding the cytolethal distending toxin, were performed by PCR. Campylobacter was found in 61% of the chicken fecal samples, in 20% of the poultry products and in 3% of the human feces. Most isolates were identified as C. jejuni. In 93.5% of these isolates, the cdt genes have been detected. Despite the occurrence of Campylobacter in feces of humans has been low, the prevalence in broilers and poultry products was high, which, combined with the presence of cdt genes in most isolates, represents a potential risk to consumers. These results suggest there is a need for preventive measures in the production system and good manufacturing practices in the industry so as to minimize contamination of products and reduce the risk to consumers.(AU)

The objective of this research was to isolate and to verify the sensitivity to antimicrobial agents of strains of Salmonella sp. isolated from poultry products in the state of Ceara, Brazil. A total number of 114 samples was collected from 63 broiler carcasses derived from two processing plants and two supermarkets, and 51 excreta samples were collected in broiler farms located in the state of Ceara, which used three live production stages. Each excreta sample consisted of a fresh excreta pool from 100 birds. Samples were submitted to microbiological analyses, and the isolated Salmonella strains were tested for antimicrobial sensitivity. No Salmonella was isolated from excreta samples, while broiler carcass samples showed a high contamination rate of11.8%. Three serotypes were identified: Salmonella enterica serovar Enteritidis, 50%; Salmonella enterica serovar Panama 33%, and Salmonella enterica serovar Newport, 17%. As to the susceptibility tests to antimicrobial agents, 100% of the isolated Salmonella strains showed resistance to Ampicillin and Tetracycline, and sensitivity to Gentamycin, Netilmycin, Carbenicillin, Chloramphenicol.

RESUMO

Chiken loaves were prepared with light and dark meat from broiler and deboned breasts and legs. The meat was cut, cured, ground, smoked and pasteurized (until 71°C). The yield was greater for the loaf prepared with light meat, which was also ranked first in sensory analysis. The light and the dark meat loaves had the following chemical compositions: moisture 70.6 - 71.0%; protein 22.0 - 20.2%; moisture/protein ratio 3.2 - 3.5; fat 4.0 - 4.5%; sodium chloride 2.4 - 2.5%; sodium nitrite 51.5 - 69.0 ppm; pH 6.1 - 6.25, respectively.


O presente trabalho teve como objetivo específico a obtenção de fiambres com as carnes branca (do peito) e escura (das coxas e pernas) de frango, separadamente. Os cortes foram desossados manualmente e às carnes, após limpeza e corte, foram adicionados ingredientes não cárneos e aditivos, sendo elas moídas após 12 h. O processamento térmico foi realizado em defumador até a temperatura interna de 71°C. Foram obtidos fiambres curados e defumados com boa qualidade sensorial, adequado nível de proteína e baixo conteúdo calórico, do tipo semi-conserva. O rendimento foi maior na elaboração do fiambre de carne branca, o qual foi preferido na avaliação sensorial, em relação ao produto de carne escura.

RESUMO

Chiken loaves were prepared with light and dark meat from broiler and deboned breasts and legs. The meat was cut, cured, ground, smoked and pasteurized (until 71°C). The yield was greater for the loaf prepared with light meat, which was also ranked first in sensory analysis. The light and the dark meat loaves had the following chemical compositions: moisture 70.6 - 71.0%; protein 22.0 - 20.2%; moisture/protein ratio 3.2 - 3.5; fat 4.0 - 4.5%; sodium chloride 2.4 - 2.5%; sodium nitrite 51.5 - 69.0 ppm; pH 6.1 - 6.25, respectively.


O presente trabalho teve como objetivo específico a obtenção de fiambres com as carnes branca (do peito) e escura (das coxas e pernas) de frango, separadamente. Os cortes foram desossados manualmente e às carnes, após limpeza e corte, foram adicionados ingredientes não cárneos e aditivos, sendo elas moídas após 12 h.
