This study aimed to investigate the effects of meat biofortified with antioxidants and canola oil on the health of older adults through blood parameters. Eighty institutionalized older persons were divided into four groups who received the following treatments: C-control meat with 46 µg/kg of meat with selenium, 3.80 g/kg of meat with vitamin E and 0.78 g/100 g of meat with conjugated linoleic acid (CLA); A-antioxidant meat with 422 µg/kg of meat with selenium, 7.65 g/kg of meat with vitamin E and 0.85 g/100 g of meat with CLA; O-oil meat with 57 µg/kg of meat with selenium, 3.98 g/kg of meat with vitamin E and 1.27 g/100 g of meat with CLA; OA-oil and antioxidant meat with 367 µg/kg of meat with selenium, 7.78 g/kg of meat with vitamin E and 1.08 g/100 g of meat with CLA. Blood samples were collected at 0, 45 and 90 days after the start of meat intake. Older adults who consumed ANT (A and AO) meat had higher concentrations of selenium (p = 0.039), vitamin E and HDL (higher concentrations of high-density lipoprotein, p = 0.048) in their blood. This study demonstrates that the consumption of Se- and vitamin E-biofortified meat increases the concentration of these metabolites in blood from older adults.

The consumption of vegetable oils is common in our daily diet. Rapeseed oil (canola oil) is the third most consumed edible oil in the world, followed by palm and soybean oils in terms of production. Rapeseed oil has a low proportion of saturated fatty acids, while it is rich in unsaturated fatty acids, as well as in healthy compounds such as phenols, tocopherols, phytosterols, carotenoids, and fat-soluble vitamins. However, processing technologies affect the content and functional activities of bioactive compounds in the oil. Aim: To assess any potential effect of hot or cold pressing and a refining process on the nutritional value and the profile of several bioactive compounds in canola oils produced in Chile. Methods: Canola oils were characterized regarding their fatty acid profile, phytosterol and tocopherol composition, total phenol content, and antioxidant activity, according to the mode of extraction (cold or hot pressed) and before and after bWeing subjected to a refining process. Results: Fatty acid profiles were not significantly different in any of the analyzed canola oils. Refining but not temperature extraction led to a sharp decrease of phytosterols and tocopherols. Hot pressing significantly increased the amount of total phenols (3.1 times) and the antioxidant activity measured by ORAC (3.1 times) and DPPH (8.3 times) compared to the cold extraction. However, phenolic concentration and antioxidant capacity decreased after refining. Conclusions: Refining processes should be adjusted to reduce the loss of bioactive compounds in the oil.


El consumo de aceites vegetales es habitual en nuestra dieta diaria. El aceite de colza (aceite de canola) es el tercer aceite comestible más consumido en el mundo, seguido por los aceites de palma y soja en términos de producción. El aceite de colza tiene una baja proporción de ácidos grasos saturados, mientras que es rico en ácidos grasos insaturados, así como en compuestos liposolubles saludables como fenoles, tocoferoles, fitoesteroles, carotenoides y vitaminas. Sin embargo, las tecnologías de procesamiento afectan el contenido y las actividades funcionales de los compuestos bioactivos en el aceite. Objetivo: Evaluar cualquier efecto potencial del prensado en caliente o en frío y un proceso de refinación sobre el valor nutricional y el perfil de varios compuestos bioactivos en los aceites de canola producidos en Chile. Métodos: Los aceites de canola se caracterizaron en cuanto a su perfil de ácidos grasos, composición de fitoesteroles y tocoferoles, contenido de fenoles totales y actividad antioxidante, según el modo de extracción (prensado en frío o en caliente) y antes y después de ser sometidos a un proceso de refinación. Resultados: Los perfiles de ácidos grasos no fueron significativamente diferentes en ninguno de los aceites de canola analizados. La refinación, pero no la extracción en caliente, condujo a una fuerte disminución de los fitoesteroles y tocoferoles. El prensado en caliente aumentó significativamente la cantidad de fenoles totales (3,1 veces) y la actividad antioxidante medida por ORAC (3,1 veces) y DPPH (8,3 veces) en comparación con la extracción en frío. Sin embargo, la concentración de fenoles y la capacidad antioxidante disminuyeron después del refinado. Conclusión: Los procesos de refinación deben ajustarse para reducir la pérdida de compuestos bioactivos en el aceite.

This study developed chicken nuggets with emulsions with different percentages of canola oil (CO) to replace the chicken skin and evaluating the quality of the final product and the effect of frying. The experiment was set up in a 5x5 factorial scheme with the replacement of skin with different percentages of CO (0, 25, 50, 75, and 100%) and storage periods (0, 45, 90, 135,and 180 days), and parameters such as pH and oxidation were evaluated. It was considered a 5x2 factorial scheme (replacement of skin with CO and different sample conditions (raw and fried in CO)) for the analyses of the centesimal composition, fatty acid profile, atherogenic (AI), and thrombogenic (IT) indices. The sensory analysis evaluated the chicken nuggets at time zero. The pH values ranged from 6.62 to 6.86, as an effect of frying, there was an increase in lipid content with increasing levels of substitution (T0-raw: 5.36% and fried: 12.11%; T100-raw: 7.93% and fried: 15.43%) and a decrease in moisture content in relation to the raw sample. There was a decrease in AI (T0%-raw vs. T100%-fried, 0.39 vs. 0.10) and IT (T0%-raw vs. T100%-fried, 0.61 vs. 0.18) with CO addition and frying, and lipid oxidation increased with storage. The ω6/ω3 ratio decreased and the PUFA/SFA increased with the replacement of chicken skin with CO, but there was no difference in the sensory analysis. Even though chicken nuggets are prone to lipid oxidation, it is possible to improve their nutritional value either by adding CO to the meat mixture or by frying them.


Objetivou-se neste estudo desenvolver nuggets de frango com emulsões contendo diferentes percentagens de óleo de canola em substituição a pele de frango e avaliar a qualidade do produto final bem como os efeitos da fritura. O experimento foi desenvolvido em esquema fatorial 5x5 (substituição da pele por óleo de canola (0, 25, 50, 75, 100%) e tempo de armazenamento (0, 45, 90, 135, 180 dias)) avaliando parâmetros como pH e oxidação. Considerou-se fatorial 5x2 (substituição da pele por óleo de canola e condições da amostra (cru e frito em óleo de canola)) para as análises da composição centesimal, perfil de ácidos graxos e índices aterogênico (IA) e trombogênico (IT). Para a análise sensorial avaliou-se os nuggets de frango produzidos apenas no tempo zero. Houve efeito da fritura com aumento no teor de lipídios (T0%-cru:5,36% e frito:12,11%; T100%-cru:7,93% e frito: 15,43%), redução no teor de umidade em relação a amostra crua e aumento no teor de lipídios com aumento dos níveis de substituição. Com a adição de óleo de canola e fritura houve redução de IA (T0%, cru, IA:0,39; T100%, frito, IA:0,10) e IT (T0%, cru, IT:0,61; T100%, frito, IT:0,18) e com o tempo de armazenamento aumentou-se a oxidação lipídica. A proporção ω6/ ω3 diminuiu e a AGP/AGS aumentou com a substituição da pele de frango por óleo de canola e não houve diferença na análise sensorial. Apesar da propensão à oxidação lipídica, é possível melhorar nutricionalmente os nuggets de frango, tanto pela adição de óleo de canola à massa quanto pelo processo de fritura.

A coarse canola oil-in-water (O/W) emulsion (dispersed mass fraction 0.1) was prepared by adding oil to whey protein hydrolysate (WPH)-citric pectin (CP) soluble complex (1% total biopolymer weight; WPH to CP mass ratio 6:1; pH 4.25) aqueous phase using a high shear homogenizer (4000 rpm, 2 min). The coarse O/W emulsion was further homogenized to obtain emulsions (Ex) with different mean droplet sizes (4000, 3000, 120 and 60 nm). A full-fat yogurt (YC; 26 ± 0.3 g milk fat L-1) was prepared from reconstituted whole milk powder (WMP, 3% milk fat) and skim milk powder (SMP, 0.01% milk fat). Reduced-milk fat yogurt (YEx 13 ± 0.3 g milk fat L-1) variations were prepared from WMP + SMP + Ex, where Ex substituted 50% of the milk-fat contained in YC. The viscosity and viscoelastic moduli were lower for YEx than for YC; the effect was more pronounced for E60 and E120. Aroma was non-significantly different between YC and YEx. A multivariate analysis showed that YEx overall acceptability was linked to taste and after taste attributes and to the viscosity perceived in mouth. The loss modulus showed anti-correlation directionality with the overall acceptance. The smaller mean droplet sized YEx exhibited the highest overall acceptability. Fats play multiple roles in determining the desirable characteristics of foods. However, there are health concerns about saturated and trans fats. Bigels have been proposed as a novel fat replacer in foods. This research evaluated the role of the type of hydrogel in the development of bigels to be used as fat replacers in cookies. Bigels were made with beeswax/canola oil oleogel and sodium alginate and carboxymethylcellulose hydrogels. The results showed that the peroxide value and binding capacity of bigels were affected by the type of hydrogel used. However, their fatty acid profile, p-anisidine value, oxidative stability, and texture remained unchanged. Using bigels as fat replacers, cookies were obtained with a hardness similar to those with original shortening, showing the potential of bigels for use in foods.

BACKGROUND: The potential waste canola oil-degrading ability of the cold-adapted Antarctic bacterial strain Rhodococcus sp. AQ5-07 was evaluated. Globally, increasing waste from food industries generates serious anthropogenic environmental risks that can threaten terrestrial and aquatic organisms and communities. The removal of oils such as canola oil from the environment and wastewater using biological approaches is desirable as the thermal process of oil degradation is expensive and ineffective. RESULTS: Rhodococcus sp. AQ5-07 was found to have high canola oil-degrading ability. Physico-cultural conditions influencing its activity were studied using one-factor-at-a-time (OFAT) and statistical optimisation approaches. Considerable degradation (78.60%) of 3% oil was achieved by this bacterium when incubated with 1.0 g/L ammonium sulphate, 0.3 g/L yeast extract, pH 7.5 and 10% inoculum at 10°C over a 72-h incubation period. Optimisation of the medium conditions using response surface methodology (RSM) resulted in a 9.01% increase in oil degradation (87.61%) when supplemented with 3.5% canola oil, 1.05 g/L ammonium sulphate, 0.28g/L yeast extract, pH 7.5 and 10% inoculum at 12.5°C over the same incubation period. The bacterium was able to tolerate an oil concentration of up to 4.0%, after which decreased bacterial growth and oil degradation were observed. CONCLUSIONS: These features make this strain worthy of examination for practical bioremediation of lipid-rich contaminated sites. This is the first report of any waste catering oil degradation by bacteria originating from Antarctica.

We aimed to evaluate the inclusion of three sources of vegetable oil in the diet of lactating goats on production in 120 days of lactation and the effect of these sources and lactation stage on fortnightly composition and fatty acid profile of goat milk at 20, 50, 80, and 110 days of lactation. A completely randomized design was adopted and 32 Anglo Nubian goats were used, distributed in four treatments: control diet and diets with inclusion of 30 g/kg of dry matter of diet of canola, sunflower, or soybean oil. The dairy production was 182.75 kg, and there was no difference for treatments. Among the constituents, only urea nitrogen was influenced by treatment and presented lower content for control treatment. Day of lactation had an effect on lactose. Defatted dry extract and somatic cell count had a quadratic effect with minimum values around 100 and 33 days of lactation, respectively. The content of urea nitrogen, also with a quadratic effect, was higher at 93 days of lactation. For protein, there was an interaction between treatments and period and, at the end of lactation, its content was increased. The inclusion of vegetable oils promoted reduction in total saturated fatty acids (SFA) and increased the total content of monounsaturated fatty acids (MUFA) and conjugated linoleic acid. The proportions MUFA:SFA and PUFA:SFA, the atherogenicity and thrombogenicity indexes, and the relation hypocholesterolemic fatty acids:hypercholesterolemic fatty acids improved with oil addition in animal diets. The addition of vegetable oil to diets for lactating goats improve the fatty acid profile with no impairment on milk production and composition, and the milk from early stages of lactation has better nutritional quality of the lipid fraction.(AU)

Biodiesel synthesis was carried out via heterogeneous catalysis of canola oil with nanoparticles of a mixed oxide based on rare earths. The catalyst synthesis (NdAlO3) was carried out based on the method proposed by Pechini for the synthesis of nanoparticles. Thermogravimetric analysis-differential thermal analysis (TGA-DTA) analysis was performed on the nanoparticle precursor gel in order to establish the optimum conditions for its calcination, with these being of 800 °C over 24 h. A pure NdAlO3 compound with an approximate size of 100 nm was obtained. The products of the transesterification reaction were analyzed using gas chromatography, FTIR, and NMR. The optimum reaction conditions were determined, namely, the temperature effect, reaction time, methanol:oil mass ratio, and recyclability of the catalyst. These studies showed the following optimal conditions: 200 °C, 5 h, methanol:oil mass ratio of 6:1, and a constant decrease in the catalytic activity of the catalyst was observed for up to six reuses, which later remained constant at around a 50% conversion rate. The maximum biodiesel yield obtained with the optimum conditions was around 75%. Analysis of the reaction products showed that the residual oil showed a chemical composition different from that of the source oil, and that both the biodiesel and glycerol obtained were of high purity.

Rhamnolipids are glycolipid biosurfactants that are primarily produced by Pseudomonas aeruginosa that have gained a great deal of interest for their numerous industrial applications and environmentally friendly properties. In this study, we explored the potential of waste canola oil as a low-cost and environmentally friendly substrate for the production of rhamnolipids by P. aeruginosa. Four different 23 full factorial designs were used to assess the effect of three independent factors on rhamnolipid production, including carbon source (canola oil and waste canola oil), nitrogen source [(NH4)2SO4 and NaNO3] and production time (7 and 14 days). The highest observed yield was 3585.31 ± 66.24 mg/L when P. aeruginosa was cultured for 14 days with 3% v/v waste canola oil and 4 g/L of NaNO3. The nitrogen source proved to be a crucial factor, as the use of NaNO3 rather than (NH4)2SO4 led to a 30-fold increase in production yield. The observed yield when waste canola oil was used was similar to, and even slightly higher than, that obtained using canola oil. Our results showed that waste canola oil has great potential for use as a carbon source for rhamnolipid production by P. aeruginosa, thus paving the way for the development of a low-cost, efficient, and environmentally friendly bioprocess for the production of rhamnolipids.

The use of organogels in food and pharmaceutical sciences has several technical problems related with restricted diffusion of the drugs and lack of a proper gelator molecule. These features are important into the new product design. An alternative to improve technological properties in organogels is the use of emulsions. However, there is a lack of knowledge about the behavior on bioaccessibility and permeability of bioactives loaded into organogel-based emulsions. The objective of the present experimental work was to study the physical properties of organogel-based emulsions made with vegetable oil loaded with three different bioactives (betulin, curcumin and quercetin) and the influence on their bioaccessibility. Organogels were made of canola or coconut oils and myverol as gelator (10% w/w). Water-in-oil emulsions (at 5, 10 and 12.5 wt% of water content) were prepared by mixing the melted proper organogel and water (80 °C) under high shear conditions (20,000 rpm). Micrographs, rheological tests (amplitude, frequency, temperature sweeps and creep-compliance measurements), DSC and particle size analysis were performed to samples. In vitro digestion (oral, gastric and intestinal phase), lipolysis assays, bioaccessibility and permeability tests by cell culture of Caco-2 were made. Organogels of coconut oil have shown poor emulsification properties.

BACKGROUND: Novel oils high in monounsaturated fatty acids (MUFAs) and low in saturated fatty acids (SFAs) are an alternative to partially hydrogenated oils high in trans-unsaturated fatty acids. There is widespread use of high-MUFA oils across the food industry; however, limited knowledge of their cardiovascular impact exists. OBJECTIVES: We investigated the effects of diets containing canola oil, high-oleic acid canola oil (HOCO), and a control oil blend (diet formulated to emulate a Western fat profile) on lipids, lipoproteins, and apolipoproteins (apos), as secondary outcomes of the trial. METHODS: In a multi-center, double-blind, randomized, 3-period crossover, controlled feeding trial, men (n = 44) and women (n = 75) with a mean age of 44 y, mean body mass index (BMI; in kg/m2) of 31.7, and an increased waist circumference plus ≥1 metabolic syndrome criteria consumed prepared, weight-maintenance diets containing canola oil [17.5% MUFAs, 9.2% polyunsaturated fatty acids (PUFAs), 6.6% SFAs], HOCO (19.1% MUFAs, 7.0% PUFAs, 6.4% SFAs), or control oil (10.5% MUFAs, 10.0% PUFAs, 12.3% SFAs) for 6 wk with ≥4-wk washouts. Fasting serum lipids were assessed at baseline and 6 wk. Diet effects were examined using a repeated measures mixed model. RESULTS: Compared with the control, canola and HOCO diets resulted in lower endpoint total cholesterol (TC; -4.2% and -3.4%; P < 0.0001), LDL cholesterol (-6.6% and -5.6%; P < 0.0001), apoB (-3.7% and -3.4%; P = 0.002), and non-HDL cholesterol (-4.5% and -4.0%; P = 0.001), with no differences between canola diets. The TC:HDL cholesterol and apoB:apoA1 ratios were lower after the HOCO diet than after the control diet (-3.7% and -3.4%, respectively). There were no diet effects on triglyceride, HDL cholesterol, or apoA1 concentrations. CONCLUSIONS: HOCO, with increased MUFAs at the expense of decreased PUFAs, elicited beneficial effects on lipids and lipoproteins comparable to conventional canola oil and consistent with reduced cardiovascular disease risk in adults with central adiposity. SUMMARY: In order to evaluate the effect on sexual behavior and spermatic parameters of white New Zealand rabbits, at the onset of puberty, they were fed a standard diet supplemented with canola oil (obesogenic). Two groups were formed; one of which received daily 180 g of a standard commercial diet supplemented with 13 ml of canola oil during 12 weeks, while the second group (control) were fed daily 180 g of only the standard commercial diet. Starting at 20-weeks of age, seminal volume, en masse and individual sperm motility, and sperm concentration per mm3 were measured from each individual, as well as the behaviors olfactory exploration, chinning, and first and second attempt at mounting were assessed. No significant differences were found between groups in terms of seminal volume, and en masse and individual sperm motility count and percentage (P>0.05). In relation to sexual behavior, the group fed with supplemental canola oil showed reduced the response time to females in the sexual behaviors of chinning, olfactory exploration, and first and second attempt at mounting when compared to the control group (P<0.01). The data indicate that the addition of canola oil to a standard rabbit diet at the start of puberty and continued for 12 weeks increases the body mass index and reduces the response time in sexual behaviors such as olfactory exploration, chinning, and second attempt at mounting when interacting with female stimulus. Nevertheless, the seminal parameters did not show any modification. Other studies are needed to show the benefits or disadvantages of the addition of varying inclusion percentages of other vegetable oils, to evaluate their effects on reproductive efficiency in breeder male rabbits.


RESUMEN: Con el propósito de evaluar en conejos Nueva Zelanda blanca de granja el efecto de una dieta estándar suplementada con aceite de canola (obesogénica) sobre el comportamiento sexual y los parámetros espermáticos al inicio de la pubertad, se formaron dos grupos. Un grupo recibió una dieta consistente de 180 g al día de una dieta estándar comercial adicionada con 13 ml de aceite de canola durante 12 semanas y al otro grupo (testigo) se le suministró 180 g por día de la misma dieta estándar sin aceite de canola. A partir de las 20 semanas de edad en cada individuo se midió el volumen seminal, la motilidad espermática en masa e individual, la concentración espermática por mm3 y se evaluaron la conducta de: exploración olfatoria, frotamiento del mentón (Chinning), primer intento de monta y segundo intento de monta. En las variables volumen seminal, conteo y porcentaje de motilidad espermática en masa e individual no hubo diferencia significativa entre ambos grupos (P>0,05). Con respecto al comportamiento sexual, el grupo suplementado con aceite vegetal presentó menor tiempo de respuesta a la hembra estímulo en las conductas de frotamiento del mentón, exploración olfatoria y segundo intento de monta con respecto al grupo testigo (P<0,01). Los datos obtenidos indican que la adición de aceite de canola a la dieta estándar de conejos al inicio de la pubertad durante 12 semanas aumenta el índice de masa corporal de los individuos y disminuye el tiempo de respuesta en las conductas de exploración olfatoria, de frotamiento del mentón y de segundo intento de monta al interaccionar con la hembra estímulo. Sin embargo, no modificó los parámetros seminales evaluados. Es necesario realizar otros estudios con el fin de evaluar en conejos sementales el beneficio o desventaja sobre su eficiencia reproductiva al utilizar diferentes porcentajes de inclusión en la dieta de otros aceites vegetales.

RESUMO

Many heterologous transformation studies have been carried out using the Cupriavidus necator PHB-4 strain to investigate the expression characteristics of various polyhydroxyalkanoate (PHA) synthase enzymes. In this study, we generated a recombinant C. necator PHB-4 strain by transforming a plasmid (pMRC03) harbouring the synthetic phaC2 gene of Pseudomonas putida CA-3. Under conditions favourable for expression of the phaC2 P.putCA-3 gene, canola oil was used as carbon source for the synthesis of PHAs. The expressed synthase polymerised monomers of 3-hydroxybutyrate (3-HB), 3-hydroxyvalerate (3-HV) and 3-hydroxyhexanoate (3-HHx) in the recombinant C. necator PHB-4 (pMRC03) strain. We then co-expressed the phaC2P.putCA-3 gene with the native phaC1C.ne gene in wild type Cupriavidus necator H16 (C. necator H16 (pMRC03)). This co-expression produced a PHA blend of 3-HB, 3-HV, 3-HHx and 3-hydroxyoctanoate (3-HO) monomers in the presence of canola oil. Gas chromatography analysis revealed the presence of 94mol% 3-HB, 1mol% 3-HV, 4mol% 3-HHx and 1mol% 3-HO in a tetra-polymer. Thus, we confirmed that a synthetic phaC2 gene encoding the synthase enzyme is functionally active with substrates ranging from short to medium chain length PHAs.

A adição de óleos na dieta de frangos de corte proporciona muitas vantagens, visto que, dependendo do perfil de ácidos graxos, pode melhorar o desempenho e atuar como estimulante do sistema imune. Assim, este estudo teve como objetivo avaliar as características produtivas, o rendimento de carcaça, os cortes e a resposta imune humoral de frangos de corte alimentados com diferentes fontes de óleos e vitamina E. Foram utilizados 312 pintainhos de corte machos da linhagem Cobb com um dia de idade, distribuídos em delineamento inteiramente ao acaso, com oito repetições compostas de 13 aves por parcela experimental. Os tratamentos experimentais consistiram em óleo de soja, óleo de canola e óleo de canola mais adição de vitamina E. As variáveis analisadas foram ganho de peso, consumo de ração, conversão alimentar, rendimento de carcaça, cortes comerciais e resposta imune humoral. Os resultados obtidos mostram que houve diferença significativa no desempenho somente na fase pré-inicial, quando as aves que receberam o tratamento com óleo de canola e vitamina E apresentaram piores ganhos de peso. Não foram observadas diferenças significativas para as outras variáveis analisadas. Conclui-se que a utilização de diferentes fontes lipídicas associadas ou não à vitamina E não afeta as características produtivas de carcaça, cortes e resposta imune humoral em frangos de corte em relação ao uso de óleo de soja.(AU)


Oil inclusion in poultry diets provides many advantages and according to the fatty acid profile it is possible to achieve performance improvement as well as immune system stimulation. Thus, the study aimed to evaluate productive performance, carcass and cuts yields and also the humoral immune response of broilers consuming diets formulated with different oil sources and vitamin E. A total of 312 one-day old male Cobb was distributed, in a completely randomized design, in three treatments with eight replications of 13 birds. The experimental treatments were the diets that had different oil source as follows: soybean oil, canola oil and canola oils with vitamin E. The analyzed parameters were weight gain, feed intake, feed conversion ratio, carcass and cut yields and humoral immune response. For the treatment with canola oil and vitamin E a reduction on weight gain during the pre-starter stage was observed. For the other evaluated parameters, no significant differences were observed. In conclusion, the use of canola oil or canola oil with added vitamin E does not affect the productive performance, carcass and cut yields and humoral immune response in broiler chicken in relation soybean oil use.(AU)

This study aimed to evaluate the response of piava (Leporinus obtusidens) after the use of vegetable oils in the diet, under performance, nutrient deposition and activity of digestive enzymes. Over 35 days five treatments were tested, with the inclusion of 3% of corn oil, soy, canola, linseed, and a control treatment without the inclusion of oil. Fish with an average initial weight of 1.78±0.07 g were randomly assigned in a water recirculation system consisting of 15 tanks, with suitable water quality parameters throughout the trial period. At the end of biometrics experiment data was collected. The experimental design was completely randomized, with five treatments and three replicates; the data was submitted to normality test and analysis of variance. The averages, when significant, were compared by Tukey test (p < 0.05). Fish fed diets containing canola oil showed higher weight and length and protein deposition when compared to the control treatment. Higher chymotrypsin activity was observed in the fish fed the diet containing soya oil and lower with linseed oil. It is concluded that the use of oils in the diet is essential for best performance of the fish, and canola oil as indicated by optimizing the deposition of body protein for animals.(AU)


Objetivou-se avaliar a resposta de piavas (Leporinus obtusidens) após a utilização de óleos vegetais nas dietas, sobre o desempenho, deposição nutricional e atividade de enzimas digestivas. Durante 35 dias foram testadas cinco dietas, com a inclusão de 3% dos óleos de milho, soja, canola, linhaça e um tratamento controle sem inclusão de óleo. Peixes com peso inicial médio de 1,78±0,07 g foram distribuídos ao acaso em um sistema de recirculação de água composto por 15 tanques, com parâmetros de qualidade de água adequados durante todo período experimental. Ao final do experimento realizou-se biometria para coleta de dados. O delineamento experimental foi inteiramente casualizado, com cinco tratamentos e três repetições, os dados obtidos foram submetidos a teste de normalidade e análise de variância. As médias obtidas, quando significativas, foram comparadas pelo teste de Tukey (p < 0,05). Os peixes alimentados com dietas contendo óleo de canola apresentaram maior peso e comprimento total e deposição de proteína, quando comparados ao tratamento controle. Maior atividade de quimotripsina foi observada nos peixes alimentados com a dieta contendo óleo de soja e menor com óleo de linhaça. Conclui-se que o uso de óleos na dieta é indispensável para melhor desempenho dos peixes, sendo o óleo de canola o mais indicado por otimizar a deposição de proteína corporal pelos animais.(AU)

The effects of partial or total substitution of soybean oil (SO) with canola oil (CO) supplemented or not with organic selenium (SeO) in the diet of quails (Coturnix coturnix coturnix) on external egg quality, yolk cholesterol and fatty acid profile were studied. A total of 252 quails were fed throughout three 28- day periods with six treatments: Control, (SO); SO + 0.3 ppm SeO; canola Oil (CO); CO + 0.3 ppm SeO; SO (50%) + CO (50%); SO (50%) + CO (50%) + 0.3 ppm SeO. A completely randomized design was used and treatment means were compared by orthogonal contrasts and Duncans multiple range test with ? = 0.05. A significant, 4% increase in oleic acid levels in egg yolk was observed with canola oil supplementation, relative to the control and soybean oil treatments. SeO supplementation did not change the yolk fatty acid profile. Neither canola oil nor SeO supplementation affected yolk cholesterol. Egg weight was higher in birds fed CO supplemented with SeO compared with CO alone, but did not differ significantly from that of other treatments. In conclusion, the substitution of SO with CO in the quails diet changes the fatty acid profile of the yolk, and increases the concentration of oleic acid while decreasing that of linoleic acid without affecting other egg quality traits. Birds fed diets containing CO supplemented with 0.3 ppm SeO also show increased egg weight.(AU)


Foram estudados os efeitos da substituição parcial ou total do óleo de soja (SO) por óleo de canola (CO), suplementado ou não com selênio orgânico (SeO) na dieta de codornas (Coturnix coturnix coturnix) sobre o perfil de ácidos graxos, o colesterol na gema e a qualidade externa dos ovos. Um total de 252 codornas foram alimentadas durante três períodos de 28 dias cada, utilizando seis tratamentos: Controle (SO); SO + 0,3ppm SeO; Óleo de canola (CO); CO + 0,3ppm SeO; ½ SO + ½ CO; ½ SO + ½ CO + 0,3ppm SeO. O delineamento foi inteiramente casualizado e as médias dos tratamentos foram comparadas por contrastes ortogonais e teste de Duncan a 5%. Observou-se um aumento significativo de 4% nos níveis de ácido oleico na gema dos ovos com a suplementação de óleo de canola, em  comparação com os demais tratamentos. A suplementação de SeO não alterou o perfil de ácidos graxos da gema. Nem o óleo de canola nem a suplementação de SeO afetaram o colesterol da gema. O peso do ovo foi maior nas aves alimentadas com CO suplementado com 0,3ppm SeO comparado com CO não suplementado, mas não diferindo dos demais tratamentos. Conclui-se do experimento que a substituição de SO por CO na dieta das codornas muda o perfil de ácidos graxos na gema, aumenta a concentração de ácido oleico e diminui o ácido linoleico, sem afetar outras características de qualidade do ovo.(AU)

The objective of this study was to evaluate the influence of the supplementation of vegetable oils rich in polyunsaturated fatty acids to the diet of Leghorn layers on yolk color and on yolk lipid oxidation of eggs stored at room temperature for 10 days. Sixty eggs laid by commercial white layers (Lohmann LSL) fed diets supplemented with different vegetable oils were used. Hens were fed one of the following treatment diets: conventional diet with no oil inclusion (T1); T1 diet with 2.5% linseed oil inclusion (T2); T1 diet with 2.5% canola oil (T3); T1 diet with 2.5% soybean oil (T4); T1 with 5.0% linseed oil (T5); T1 diet with 5.0% canola oil (T6); T1 diet with 5.0% soybean oil (T7); T1 diet with 2.5% linseed oil + 2.5% soybean oil (T8); T1 diet with 2.5% canola oil + 2.5% soybean oil (T9); and T1 diet with 2.5% linseed oil + 2.5% canola oil (T10). Eggs were evaluated as to yolk lipid peroxidation (TBARS values) and yolk color, as determined by colorimetry and subjective sensorial analysis. Data were submitted to analysis of variance and means were compared by the test of Tukey at 5% significance level. It was concluded that the inclusion of vegetable oils in commercial white layer diets does not significantly change egg yolk pigmentation, as colorimetrically evaluated. However, when subjectively assessed, the yolks of the eggs laid by hens fed diets supplemented with vegetable oils tend to be paler. The yolks of the eggs laid by layers fed diets containing sources of polyunsaturated fatty acids presented high lipid oxidation, particularly when compared with those derived from layers fed the diet with no oil supplementation.
