We address the hypothesis that at early and late lactation milk presents low ethanol stability due to high acidity and ionic calcium values. Our aim was to evaluate the functional traits of milk (milk ethanol stability: MES, acidity and ionic calcium: iCa) according to lactation stage in different genetic groups. Raw milk samples were collected from Jersey (n = 271), Holstein (n = 248) and Jersey × Holstein crossbred cows (n = 82), raised on five commercial farms located in the state of Paraná, Brazil. Milk composition, somatic cell count (SCC), milk urea nitrogen (MUN), MES, pH, acidity and iCa were determined. Days in milk (DIM) were categorized into four classes: 1-60, 61-150, 151-305 and over 305 DIM. Data were submitted to analysis of variance. Fixed and random effects were incorporated into the model, in a repeated measures in time arrangement using the mixed models methodology. Significant interactions between DIM class and genetic groups were detected. The comparison between each combination of genetic group and DIM class showed that at the beginning of lactation, Holsteins produced milk with higher MES than Jersey and crossbreds. At 105-305 DIM Holstein milk presented higher MES than Jersey, while beyond 305 DIM Holstein milk showed higher MES than crossbred cows. At the beginning of lactation acidity was higher in Holstein milk and crossbreds compared with Jersey, while acidity was lower in Holstein milk compared with Jersey and crossbreds in the other lactation stages. Ionic calcium was highest after lactation peak for Holstein, but did not vary between lactation stages for Jersey and crossbreds. Functional characteristics of bovine raw milk such as MES, iCa and acidity varied between lactation stages in a distinct manner according to genetic groups. Early and end lactation stages are challenging in terms of low stability, especially for Jersey and crossbreds.

This research paper analyzes the stability of raw cow milk in the alcohol test and seeks to understand to know the factors that influence milk stability and the occurrence of unstable non-acid milk. Milk samples were collected from the cooling tanks of rural farmers in the state of Paraná twice in summer and twice in winter. The farms were classified according to the production system: pasture with supplementation and feedlot. The following variables were analyzed: stability in the alcohol test, titratable acidity, ionized calcium concentration (iCa), chemical composition of milk, somatic cell count and standard plate count. The results showed that milk stability was greater in winter vs. summer, when the milk contained higher iCa, and in the feedlot vs. pasture system. The Pearson Correlation between variables (ethanol stability, milk composition, iCa, cooling tank temperature, milk volume, number of milking, number of cows milked, fat/protein ratio, distance and travel time) were analyzed. Stability was negatively correlated with iCa concentration and positively with lactose content. Logistic regression of the risk of unstable non-acid milk at 72% alcohol (UNAM72) showed that only iCa and lactose were determinants, while evaluation of the same risk at 78% alcohol revealed iCa, titratable acidity, lactose and milk urea nitrogen as risk factors. Under the dairy farming conditions of Paraná state, the frequency of UNAM72 was low (12.16%) and was higher in summer and in pasture systems with supplementation. In conclusion, in dairy herds bred with high technological level, with adequate nutritional and health management, the frequency of UNAM is low and is related to nutritional management abnd, perhaps, heat stress, factors that alter iCa and lactose levels.

This research communication was designed to evaluate the effects of different levels of diet restriction on the composition and ethanol stability (MES) of raw bovine milk. This research was carried out using three electronic databases: Scopus, Pubmed and Web of Science. The main inclusion criteria were: (i) original research, (ii) use of alcohol (ethanol) test as a method to assess milk stability, (iii) measure different levels of feed restriction and (iv) allow access to the raw data of articles. Of the nine publications that addressed the subject filtered by the systematic review, seven fitted the selection criteria and were selected to perform the meta-analysis. Feed restriction (reduction of 20, 30, 40 and 50% of the dietary dry matter offered) decreased (P < 0.01) milk yield (-18%), ethanol stability (-5%), acidity (-4%), protein (-3%) and lactose (-2%) concentrations, but did not affect the values of pH, density, fat and total solids concentrations, nor somatic cell count. The correlation between milk yield and MES was low but positive and numerically higher in the control group compared with the restriction group. The milk of cows fed the control diet presented greater ethanol stability (76.5%) compared with milk of cows fed the restrictive diet (72.8%). This decrease by up to 4 percentage units due to restriction levels ranging from 20 to 50% of diet intake may cause limitations in milk processing at the dairy industry, increasing milk rejection.

Em rotas de coleta, agruparam-se:a)Bocaiúva; Brasília de Minas, Coração de Jesus e São João da Lagoa; b) Capitão Enéas e Janaúba; Francisco Sá; c) Icaraí de Minas e São Francisco; d)Juramento e Glaucilândia; e) Montes Claros; f) Pedras de Maria da Cruz, Japonvar, Lontra e São João da Ponte;e g) Ubaí. Foram avaliados frequências das classes de leite, teste do álcool, acidez titulável, densidade e crioscopiapor mês, estação do ano e rota. Com testes de qui-quadrado e análises de variância, verificou-se influência de mês, estação do ano e rota em acidez titulável, densidade e crioscopia. Análises de correspondência múltipla descreveram a associação de classes de leite e mês ou rotas e de teste do álcool, acidez titulável, densidade e crioscopia em relação às estações do ano.Por regressão logística, calculou-se probabilidade de ocorrência de LINA por grupos de meses e de rotas. Houve maior porcentagem de amostras dentro da normalidade. Resultados normais, LINA, amostras alcalinas e ácidas foram, respectivamente, 79,46%; 12,93%; 4,14% e 3,48% de 10.271 resultados. Positividade ao teste do álcool (n=10.561) foi mais frequente no final do inverno. LINA associou-se à transição da seca para chuva, com maior chance de ocorrência em setembro e janeiro. As rotas de Brasília de Minas, Icaraí de Minas e Ubaí apresentaram maiores desconformidades e probabilidades para ocorrência de LINA.(AU)

Normal, UNAM, alkaline and acid milk results were respectively 79.46, 12.93, 4.14 and 3.48% of 10,271 results. Alcohol test positivity (n=10,561) was more frequent in late winter. UNAM was associated with the transition from drought to rainy season, most likely to occur in September and January. The Brasília de Minas, Icaraí de Minas and Ubaí routes presented higher nonconformities and probabilities for UNAM occurrence.(AU)

O objetivo do presente estudo foi caracterizar as propriedades leiteiras da região do Vale do Braço do Norte, sul de Santa Catarina, Brasil, quanto à qualidade do leite e ao perfil em infraestrutura, manejo e alimentação dos animais. Foram coletadas informações de 50 propriedades leiteiras, obtidas por meio da aplicação de um questionário estruturado, abrangendo questões socioeconômicas dos produtores, manejo do rebanho, estrutura da propriedade, caracterização dos animais, alimentação das vacas além de manejo e higiene da ordenha. As amostras de leite foram submetidas a análises de composição, contagem bacteriana total, contagem de células somáticas e estabilidade do leite ao teste do álcool. Os dados foram analisados pela análise fatorial, discriminante, canônica, e de agrupamento. As propriedades têm como principal característica a agricultura familiar, com área média de 30 hectares; destes, 15,1 são destinados à pecuária leiteira, com média de 23,1 vacas ordenhadas. Na análise fatorial, o primeiro fator representa as relações entre as práticas de higiene na ordenha e de controle/prevenção de mastite, o segundo fator compreende a infraestrutura da fazenda com o nível de produção e o terceiro fator demonstra a relação entre a suplementação concentrada, a produção e a estabilidade do leite ao teste do álcool. A análise de agrupamento formou três grupos, sendo dois compostos por produtores com maior nível tecnológico e outro constituído por pequenos produtores com menor infraestrutura e nível de tecnologia. As propriedades que apresentam infraestrutura mais adequada para a produção, maior adoção das práticas recomendadas de manejo de ordenha e critérios de alimentação mais adequados produzem leite com melhor qualidade.(AU)
The aim of this study was to characterize the dairy farms of the Vale do Braço do Norte region, south of Santa Catarina State, Brazil, regarding milk quality and profile of the farms for infrastructure, management and nutrition of the animals. Information about 50 dairy farms was obtained through a survey regarding socio-economic conditions of the farmers, farm structure, characterization of animals, cow feeding and also milking management and hygiene. The milk samples were analyzed for total bacterial count, somatic cell count and stability of milk to ethanol. The data were analyzed in factorial, discriminant, canonical and cluster analysis. The main characteristic of farms is family farming with an average area of 30 hectares, of which 15.1 are destined for dairy farming, where an average of 23.1 cows are milked. On the factor analysis, the first factor represents the relation between hygiene practices during milking and control / prevention of mastitis, the second factor comprises the infrastructure of the farm with the level of production and the third factor shows the ratio of concentrate supplementation, production and stability of the milk to the ethanol test. The cluster analysis formed three groups, two composed of producers with higher technological level and another by small producers with lower infrastructure and level of technology. The dairy farms that have more adequate infrastructure for production, greater adoption of practices recommended for milking management and more appropriate criteria for cow feeding produce better quality milk.(AU)

Data from five experiments with dairy cows where feed was restricted to 0, 40, and 50% of the ad libitum amount, with 259 observations, were subjected to multivariate analyses to determine the effects of severity and duration of feed restriction on production, physical-chemical characteristics, ethanol stability, and somatic cell score of milk. A negative relationship was seen between the severity and duration of feed restriction with milk production, lactose content, titratable acidity, and milk stability to the ethanol test. The milk stability to the ethanol test, protein content, milk yield, and somatic cells score were the most important attributes retained by the discriminant analysis. Milk stability to the ethanol test, live weight, days in restriction, and pH were the most important characteristics explaining the variance within the different levels of feed restriction. Milk production and ethanol stability were significantly lower in both levels of feed restriction compared with the group fed ad libitum. When feed restriction was followed by refeeding, the difference observed in ethanol stability was the first discriminant variable, followed by the difference in unstable milk frequency and titratable acidity. Increments in the severity and duration of feed restriction negatively affect milk production and milk ethanol stability.
