This study elucidated the effect of age and diet on carcass characteristics and meat quality parameters of Rambouillet ewes. Forty ewes (n = 20 yearling ewes and n = 20 cull ewes) were fed with alfalfa hay (AH) or a 100 % concentrate diet (CD). Treatments were: a) 10 cull ewes were fed only with AH, b) 10 yearling ewes were fed only with AH, c) 10 cull ewes were fed with CD, d) 10 yearling ewes were fed with CD. Productive performance, carcass and meat quality were analyzed. Animals had ten days for adaptation and 35 days were used to collect data. Dry matter intake was greater (P < 0.05) for CD. Feed conversion rates were not affected by treatments. The pH at 45 min and 24 h, carcass length, leg length, leg width, thorax width, and thorax perimeter were not affected by treatments. Hot carcass weight was heavier (P < 0.05) in cull ewes, cold carcass weight was increased (P < 0.05) with CD. Carcass yield (CY) was heavier in CD (P < 0.05). Cull ewes had greater (P < 0.05) lean CIELAB L*, a*, b*, c*, and h* values compared to yearling ewes. The color changes increased with age at five days (P < 0.05), but a decrease (P < 0.05) with diet was observed at ten days. Cathepsins B, B + L, and Lowry protein content were not affected by treatments. In conclusion, feeding cull ewes with concentrate diets may enhance body weight gain and carcass yield compared to a diet based on 100 % alfalfa hay.

This study investigated the skeletal muscle proteome of crossbred bulls and steers with the aim of explaining the differences in carcass and meat quality traits. Therefore, 640 post-weaning Angus-Nellore calves were fed a high-energy diet for a period of 180 days. In the feedlot trial, comparisons of steers (n = 320) and bulls (n = 320) showed lower (P < 0.01) average daily gain (1.38 vs. 1.60 ± 0.05 kg/d), final body weight (547.4 vs. 585.1 ± 9.3 kg), which resulted in lower hot carcass weight (298.4 vs. 333.7 ± 7.7 kg) and ribeye area (68.6 vs. 81.0 ± 2.56 cm2). Steers had higher (P < 0.01) carcass fatness, meat color parameters (L*, a*, b*, chroma (C*), hue (h°)) and lower ultimate pH. Moreover, lower (P < 0.01) Warner-Bratzler shear force (WBSF) were observed in steers compared to bulls (WBSF = 3.68 vs. 4.97 ± 0.08 kg; and 3.19 vs. 4.08 ± 0.08 kg). The proteomic approach using two-dimensional electrophoresis, mass spectrometry and bioinformatics procedures revealed several differentially expressed proteins between steers and bulls (P < 0.05). Interconnected pathways and substantial changes were revealed in biological processes, molecular functions, and cellular components between the post-mortem muscle proteomes of the compared animals. Steers had increased (P < 0.05) abundance of proteins related to energy metabolism (CKM, ALDOA, and GAPDH), and bulls had greater abundance of proteins associated with catabolic (glycolysis) processes (PGM1); oxidative stress (HSP60, HSPA8 and GSTP1); and muscle structure and contraction (TNNI2 and TNNT3). The better carcass (fatness and marbling degree) and meat quality traits (tenderness and color parameters) of steers were associated with higher abundance of key proteins of energy metabolism and lower abundance of enzymes related to catabolic processes, oxidative stress, and proteins of muscle contraction SIGNIFICANCE: Sexual condition of cattle is known to be an important factor affecting animal performances and growth as well as the carcass and meat quality traits. The investigation of skeletal muscle proteome help a better understanding of the origin of the differences in quality traits between bulls and steers. The inferior meat quality of bulls was found to be due to the greater expression of proteins associated with primary and catabolic processes, oxidative stress, and muscle contraction. Steers had greater expression of proteins, from which several are known biomarkers of beef quality (mainly tenderness).

ABSTRACT: The study evaluated the effect of sex and slaughter weight on carcass traits and non-carcass components of 1,489 horses (739 geldings and 750 females, classified into eight groups according to their weight). Data were analyzed under a completely randomized design. Geldings had a higher (P < 0.05) hot carcass yield (HCY) and cold carcass yield (CCY) than females; however, fat yellowness values (b*) were greater (P < 0.05) in females. Slaughter weight (SW) affected the carcass characteristics. Hot carcass weight (HCW), cold carcass weight (CCW), HCY, and CCY increased (P < 0.05) in accordance with slaughter weight, while cool loss percentage (CL%) was lower (P < 0.05) in horses weighing more than 300 kg. In addition, the non-carcass components decreased (P < 0.05) as the weight of the horses increased. In conclusion, sex and body weight are factors to consider in the production of equine meat since they affect carcass characteristics and non-carcass components.


RESUMO: O estudo teve como objetivo avaliar o efeito do sexo e do peso ao abate sobre as características de carcaça e componentes não-carcaça de 1.489 cavalos (739 machos castrados e 750 fêmeas, classificados em oito grupos de acordo com o peso). Os dados foram analisados em um desenho inteiramente casualizado. Os semeadores apresentaram maior rendimento de carcaça quente (HCY) e fria (CCY) do que as fêmeas, porém o amarelecimento da gordura (b*) foi maior nas fêmeas. O peso ao abate (SW) afetou as características de carcaça. HCW, CCW, HCY e CCY aumentaram de acordo com o peso de abate, enquanto CL% foi menor em equinos com peso superior a 300 kg. Além disso, os componentes não-carcaça diminuíram com o aumento do peso dos cavalos. Em conclusão, sexo e peso corporal são fatores a serem considerados na produção de carne equina, uma vez que afetam as características da carcaça e seus componentes.

Twenty-four male Nellore steers (445 ± 31 kg initial body weight) were used to evaluate the effects of different doses of phenolic compounds from a propolis-based product (PBP) on growth performance, carcass traits, and meat fatty acid (FA) profile. The total mixed ration consisted of 470 g kg-1 corn silage and 530 g kg-1 concentrate (dry matter [DM] basis), which were randomly assigned to one of three treatments: control (CON, without phenolic compounds from the propolis extract), PBP1 (225 mg of phenolic compounds g-1 of propolis dry extract), and PBP2 (300 mg of phenolic compounds g-1 of propolis dry extract). The animals were fed in a feedlot for 84 days and presented an average final body weight (FBW) of 542 kg. Dietary addition of phenolic compounds had no overall effect on growth performance. Mean values for dry matter intake, average daily gain and feed conversion ratio were 9.99 kg d-1, 1.14 kg d-1 and 8.82 kg DM kg gain-1, respectively. Hot carcass weight and hot carcass yield had average values of 308 kg and 56.8%, respectively. In addition, carcass traits did not change after PBPs were added to the diet, except for the ribeye area, which was higher for PBP2 (21.5 cm2 100 kg-1) than for PBP1 (18.6 cm2 100 kg-1). Dietary addition of PBPs maintained redness better than the controls after 9 days in the refrigerator; no major changes were observed in the meat FA profile after the addition of PBPs to the diet. These results suggest that phenolic compounds present in propolis (300 mg g-1) have positive effects on meat color and improve the sensory quality of meat.(AU)


Foram utilizados vinte e quatro novilhos da raça Nelore (445 ± 31 kg de peso corporal inicial) para avaliar o efeito de diferentes doses de compostos fenólicos obtidos a partir de produto a base de própolis (PBP) sobre o desempenho produtivo, características de carcaça e perfil de ácidos graxos (AG). A ração total foi constituída em 470 g kg-1 de silagem de milho e 530 g kg-1 de concentrado (com base na matéria seca) e os animais foram distribuídos nos seguintes tratamentos: controle (CON, sem compostos fenólicos do extrato seco de própolis), PBP1 (225 de compostos fenólicos g-1 de extrato seco de própolis) e PBP2 (300 mg de compostos fenólicos g-1 de extrato seco de própolis). Os animais foram alimentados em confinamento por 84 dias e apresentaram peso corporal final médio de 542 kg. A adição dos compostos fenólicos da própolis na ração não influenciou o desempenho produtivo. Os valores médios para consumo de matéria seca, ganho médio diário e conversão alimentar foram 9,99 kg d-1, 1,14 kg d-1 e 8,82 kg MS kg ganho-1, respectivamente. O peso de carcaça quente e o rendimento de carcaça quente apresentaram valores médios de 308 kg e 56,8%; respectivamente. Além disso, as características da carcaça não foram alteradas após a adição dos PBPs à dieta, exceto para a área de olho de lombo, que foi maior para o tratamento PBP2 (21,5 cm2 100 kg-1) quando comparada ao PBP1 (18,6 cm2 100 kg-1). A adição dos PBPs manteve a carne mais vermelha do que o CON após 9 dias na geladeira; não foram observadas grandes alterações no perfil de AG da carne após a adição dos PBPs à dieta. Os resultados sugerem que os compostos fenólicos presentes na própolis (300 mg g-1) têm efeitos positivos na coloração da carne, melhorando sua qualidade sensorial.(AU)

This aim of this study was to evaluate the effect of high-frequency focused ultrasound (HFFU) on quality traits of bovine Triceps brachii. Four treatments (0, 10, 20, and 30 min) of HFFU (2 MHz and 1.5 W/cm2) were applied to bovine T. brachii muscle. Immediately after treatment, evaluations of color, pH, drip loss, water holding capacity, and shear force in meat were undertaken. The application of HFFU slightly decreased (p < 0.05) the redness of meat. In addition, a significant (p < 0.05) decrease in the shear force of meat was observed after the application of HFFU at 30 min. No effect (p > 0.05) was observed on other color parameters, drip loss, and water holding capacity of meat. Overall, HFFU improved beef tenderness without negative impacts on color, pH, drip loss, and water holding capacity of meat. HFFU offers the option of tenderizing specific muscles or anatomical regions of the beef carcass. These findings provide new insights into the potential application of ultrasound in meat processing.

Abstract Background: pH, subcutaneous fat thickness (SFT), and color are fundamental variables to define the organoleptic characteristics of meat. However, multivariate relationships of those traits remain unexplored in bovine meat. Objective: To investigate the multivariate relationships among pH, subcutaneous fat thickness, and color parameters in bovine meat using canonical correlation analysis. Methods: A dataset containing 173 individual records of pH, SFT, and color parameters (a*: intensity of red color, b*: intensity of yellow color, and L*: lightness) from five Brazilian beef cut types (Breed: Nellore; cuts: acém, contrafilé, fraldinha, patinho and picanha) was constructed. Multivariate relationships between color variables (a*, b*, and L*) and chemical variables (pH and SFT) were explored using the CANCORR procedure of SAS. Results: Two canonical correlations between U (a*, b*, and L*; color variables) and V (pH and SFT; chemical variables) variates were significant (p<0.01). First and second canonical correlations were 0.463 and 0.282, respectively. Canonical weights for variates were for U1: a* = 0.707, b* = 0.406, and L* = -0.039; U2: a* = 0.364, b* = -0.898, and L* = 1.234; V1: pH = -0.376 and SFT = 0.935; V2: pH = 0.927 and STF = 0.356. Conclusion: Subcutaneous fat thickness significantly affected intensity of red and yellow colors, whereas pH significantly affected lightness. The results of this study may be useful for a better understanding of the role of muscle metabolism and its implications on the organoleptic characteristics of bovine meat.


Resumen Antecedentes: El pH, espesor de la grasa subcutánea (SFT) y color, son variables importantes que definen las características organolépticas de la carne de rumiantes. Sin embargo, su relación multivariada en carne bovina permanece inexplorada hasta ahora. Objetivo: Investigar la relación multivariada entre el pH, SFT y parámetros de color en carne bovina mediante el análisis de correlación canónica. Métodos: Se construyó una base de datos con 173 registros individuales de pH, SFT y parámetros de color (a*: intensidad de color rojo, b*: intensidad de color amarillo y L*: luminosidad) de cinco tipos de cortes de carne bovina brasileña (Raza: Nellore; cortes: acém, contrafilé, fraldinha, patinho y picanha). La relación multivariada entre las variables de color (a*, b* y L*) y las variables químicas (pH y SFT) se exploró usando el procedimiento CANCORR de SAS. Resultados: Dos correlaciones canónicas entre las variables U (compuesta por a*, b* y L*; variables de color) y V (compuesta por pH y SFT; variables químicas) fueron significativas (p<0,01). La primera y la segunda correlación canónica fueron 0,463 y 0,282, respectivamente. Los pesos canónicos para las variables canónicas fueron para U1: a* = 0,707, b* = 0,406 y L* = -0,039; U2: a* = 0,364, b* = -0,898 y L* = 1,234; V1: pH = -0,376 y SFT = 0,935; V2: pH = 0,927 y SFT = 0,356. Conclusión: El espesor de grasa subcutánea afectó significativamente la intensidad de los colores rojo y amarillo, mientras que el pH afectó significativamente la luminosidad. Los resultados de este estudio pueden ser útiles para comprender el papel del metabolismo muscular y sus implicaciones en las características organolépticas de la carne bovina.

Objetivo: Investigar a relação multivariada entre o pH, SFT e os parâmetros de cor em carne bovina, utilizando a análise de correlação canônica. Métodos: Foi construído um banco de dados contendo 173 registros individuais de pH, SFT e parâmetros de cor (a*: intensidade de cor vermelha, b*: intensidade de cor amarela y L*: luminosidade) de cinco tipos de cortes de carne bovina brasileira (Raça: Nellore; cortes: acém, contrafilé, fraldinha, patinho e picanha). A relação multivariada entre variáveis de cor (a *, b * e L*) e variáveis químicas (pH e SFT) foi explorada usando o procedimento CANCORR do SAS. Resultados: Duas correlações canônicas entre as variáveis U (composta de a *, b * e L *, variáveis de cor) e V (composta de pH e SFT, variáveis químicas) foram significativas (p<0,01). A primeira e segunda correlação canônica foram 0,463 e 0,282, respectivamente. Principal component analysis (PCA) and the non-hierarchical clustering analysis (K-means) were used to characterize the most important variables from carcass and meat quality traits of crossbred cattle. Additionally, partial least square (PLS) regression analysis was applied between the carcass measurements and meat quality traits on the classes defined by the cluster analysis. Ninety-seven non-castrated F1 Angus-Nellore bulls feedlot finished were used. After slaughter, hot carcass weight, carcass yield, cold carcass weight, carcass weight losses, pH, and backfat thickness (BFT) were measured. Subsequently, samples of the longissimus thoracis were collected to analyze shear force (SF), cooking loss (CL), meat color (L*, chroma, and hue), intramuscular fat, protein, collagen, moisture, and ashes. Principal component 1 (PC1) was correlated with colorimetric variables, while PC2 was correlated with carcass weights. Afterwards, three clusters (k = 3) were formed and projected in the gradient defined by PC1 and PC2 and allowed distinguishing groups with divergent values for collagen, protein, moisture, CL, SF, and BFT. Animals from high chroma group presented meat with more attractive colors and tenderness (SF = 1.97 to 4.84 kg). Subsequently, the PLS regression on the three chroma groups revealed a good fitness and the coefficients are used to predict the chroma variable from the explanatory variables, which may have practical importance in attempts to predict meat color from carcass and meat quality traits. Thus, PCA, K-means, and PLS regression confirmed the relationship between meat color and tenderness.

Abstract Background: Rehydration of grains, such as corn and sorghum, is used to increase nutrient absorption. However, the effect of this practice on meat quality is poorly understood. Objective: To evaluate the effects of type of grain and processing on the meat quality of Nellore steers in a feedlot. Methods: Twenty-four non-castrated Nellore steers (270 ± 53 kg initial body weight) were distributed in a completely randomized 2×2 factorial design, with six replicates. The first factor was cereal type (corn or sorghum), and the second was the grain processing (dry or rehydrated and ensiled). The diets were composed of 30% corn silage and 70% concentrate. Sixty days before the beginning of the experiment, corn and sorghum grains were rehydrated and ensiled. The animals were slaughtered after 140 days of confinement. Meat quality analyses were determined in samples of fresh and aged meat (7 days) from the Longissimus lumborum muscle. Results: no difference between treatments was observed for carcass pH and L* (lightness), a* (redness), and b* (yellowness) values, shear force, thawing and cooking losses, and chemical composition of meat (p>0.05). The b* (yellowness) value of subcutaneous fat was higher in steers fed corn, regardless of grain processing (p=0.03). Sarcomere length was higher in aged meat of steers fed sorghum, regardless of processing method (p=0.01). Conclusions: the grain processing method does not affect beef quality; however, grain type can affect subcutaneous fat color and sarcomere length of aged beef.


Resumen Antecedentes: La rehidratación de granos, tales como maíz y sorgo, se usa para aprovechar mejor sus nutrientes. Sin embargo, es poco conocido el efecto de esta práctica sobre la calidad de la carne. Objetivo: Evaluar los efectos del tipo de cereal y su procesamiento sobre la calidad de carne de toretes Nelore en confinamiento. Métodos: Veinticuatro novillos Nelore enteros con un peso promedio inicial de 270 ± 53 kg, se distribuyeron en un diseño factorial 2×2 completamente aleatorizado (n=6). El primer factor fue el tipo de cereal (maíz o sorgo) y el segundo fue su procesamiento (seco o rehidratado y ensilado). Las dietas estuvieron compuestas por 28,44% de ensilaje de maíz y 71,56% de concentrado. Sesenta días antes de iniciar el experimento, los granos de maíz y sorgo se rehidrataron y ensilaron. Los animales se sacrificaron después de 140 días de confinamiento. La calidad de la carne se determinó en muestras de carne fresca y madurada (7 días) obtenidas del músculo Longissimus lumborum. Resultados: No hubo diferencias entre tratamientos para el pH de las canales, ni para los valores de color (L* "luminosidad", a* "intensidad de rojo" y b* "intensidad de amarillo"), fuerza de corte, composición química, o pérdidas de agua por descongelamiento o cocción (p>0,05). El valor de b* de la grasa subcutánea fue mayor en los novillos alimentados con maíz, independientemente del tipo de procesamiento (p=0,03). La longitud de sarcómero fue más alto en la carne madurada de novillos alimentados con sorgo, sin importar el método de procesamiento (p=0,01). Conclusiones: El método de procesamiento del grano no afecta la calidad de la carne; sin embargo, el tipo de cereal afecta el color de la grasa subcutánea y la longitud del sarcómero de la carne madurada.

Contudo, o efeito dessa prática na qualidade da carne é pouco compreendido. Objetivo: Avaliar os efeitos do tipo de grão de cereais e seu processamento sobre a qualidade da carne de bovinos confinados. Métodos: Vinte e quatro bovinos Nelore não castrados, com peso corporal médio inicial de 270 ± 53 kg foram distribuídos em delineamento inteiramente casualizado, fatorial 2×2, com seis repetições. O primeiro fator foi o tipo de grão de cereal no concentrado (milho ou sorgo), e o segundo foi o processamento destes grãos (seco ou reidratado e ensilado). As dietas foram compostas por 28,44% de silagem de milho e 71,56% de concentrado. Sessenta dias antes do início do experimento, os grãos de milho e sorgo foram reidratados e ensilados. Os animais foram abatidos após 140 dias de confinamento. As análises de qualidade da carne foram determinadas em amostras não maturadas e maturadas (7 dias) obtidas do músculo Longissimus lumborum. Resultados: Não houve diferenças significativas (p>0,05) entre os tratamentos para pH da carcaça e L* (luminosidade), a* (intensidade de vermelho), b* (intensidade de amarelo), força de cisalhamento, perdas por descongelamento, perdas por cocção, perdas totais e composição química da carne. O valor de b* da gordura subcutânea foi maior (p=0,03) em bovinos alimentados com dietas contendo grãos de milho, independentemente do tipo de processamento. O comprimento de sarcômero foi maior na carne maturada de novilhos alimentados com sorgo, independente do método de processamento (p=0,01). Conclusões: O método de processamento dos grãos não afetou a qualidade da carne bovina, no entanto, a cor da gordura subcutânea e o comprimento de sarcômero da carne maturada foram afetados pelo tipo de grão.

BACKGROUND: This study evaluated the acceptability (by sensorial and visual analyses) of meat from 40 Nellore heifers (finished in feedlots for 73 days) fed with different diets supplemented with essential oils (EOs) and an active principle blend. The five diets tested were: CON - a diet without essential oil and active principle blend (eugenol, thymol, and vanillin); ROS - a diet supplemented with rosemary EO; BLE - supplemented with a blend; BCL - a diet with clove EO+ blend; and BRC - a diet with rosemary, clove EOs + blend. The acceptability of diet and aging time was evaluated by consumers. RESULTS: Diet affected consumer acceptability and visual analysis (meat color). The diets with EO and the blend showed better sensory acceptance by the consumers; meat aged for 7 days received higher scores than meat aged for 1 day. Meat from heifers that received both EOs + blend (BCL, BRC) obtained the highest scores in the visual evaluation. CONCLUSION: The use of natural compounds in ruminant diets improves the sensory characteristics of meat without damaging visual acceptability and may be an alternative to the conventional additive market. © 2020 Society of Chemical Industry.

The growing demand of consumers for synthetic chemical-free foods has increased the search for natural preservatives such as bacteriocins and bacteriocin-like inhibitory substances (BLIS) to give them adequate microbiological safety, sensory characteristics, and shelf life. In this study, the antimicrobial activity of BLIS produced by Pediococcus pentosaceus ATCC 43200 was compared with that of nisin. Lactobacillus sakei ATCC 15521, Listeria seeligeri NCTC 11289, Enterococcus En2052 and En2865, and Listeria monocytogenes CECT 934 and NADC 2045 exhibited larger inhibition halos in BLIS-treated than in Nisaplin-treated samples, unlike Listeria innocua NCTC 11288. In artificially contaminated ready-to-eat pork ham, BLIS was effective in inhibiting the growth of L. seeligeri NCTC 11289 for 6 days (counts from 1.74 to 0.00 log CFU/g) and ensured lower weight loss (2.7%) and lipid peroxidation (0.63 mg MDA/kg) of samples compared with the control (3.0%; 1.25 mg MDA/kg). At the same time, coloration of ham samples in terms of luminosity, redness, and yellowness as well as discoloration throughout cold storage was not influenced by BLIS or Nisaplin taken as a control. These results suggest the potential use of P. pentosaceus BLIS as a biopreservative in meat and other food processing industries.

The objective of this study was to evaluate the effects of 2 Mexican oregano essential oils (MOO), from Poliomintha longiflora Gray (PLG) and Lippia berlandieri Schauer (LBS), in drinking water (DWt) on the performance, slaughter variables, and meat quality of broilers over a 40 D period of growth. A total of 180 non-sexed Ross-308 broilers (1-day-old) were randomly assigned to 3 treatments with 6 replications each (10 birds per replicate): CON = DWt control (without MOO); PLG = DWt + 400 mg/L of PLG; and LBS = DWt + 400 mg/L of LBS. The CON, PLG, and LBS broilers body weights were similar (P > 0.05) at all times. Feed intake (FI) was different by treatment (P < 0.05) at 7 and 28 D, and water intake (WI) was different (P < 0.05) at day 28. The CON treatment was highest (P < 0.05) at 28 D for FI and WI, whereas LBS was lowest (P < 0.05). Weight gain (WG) for CON, PLG, and LBS broilers was similar (P > 0.05), although WG for CON was slightly higher. In CON broilers, slaughter weight was highest (P < 0.05), but thigh yield was lowest (P < 0.05). The CON and PLG treatments were lower (P < 0.05) in thigh and leg cooking losses. The PLG treatment presented the highest values (P < 0.05) for breast-meat redness, saturation index, shear force, odor, taste, and overall sensory acceptability. The LBS was higher (P < 0.05) for breast-meat shear force, cohesiveness and resilience, but lower (P < 0.05) for sensory attributes. Mexican oregano essential oils at 400 mg/L can serve as natural alternative additives in DWt to improve broiler production and meat quality.

Os tratamentos foram quatro níveis de substituição (0, 33, 66 e 100%) do milho moído pelo bagaço de laranja na matéria seca. Os animais foram abatidos quando atingiram 32.5 kg de peso vivo. O ganho de peso médio diário (188 g por dia), o ganho de peso total (16 kg) e o peso ao abate (32,5 kg) foram semelhantes entre os tratamentos. A área de olho de lombo e a espessura de gordura subcutânea diminuíram linearmente em função dos níveis de inclusão do bagaço de laranja na dieta. As características de desempenho e de carcaça não foram alteradas pela substituição parcial ou total do milho por bagaço de laranja. Entretanto, a substituição total do milho por bagaço de laranja reduziu em 32% a AOL e em 35% a espessura de gordura subcutânea.(AU)

Thirty-two whole males of Texel breed were used, with a mean initial weight of 16 ± 2.5 kg. The animals were distributed in a completely randomized design in four experimental treatments, with eight replicates each. The treatments were four levels of orange pulp (0, 33, 66 and 100%) replacing corn on dry matter. The animals were slaughtered when they reached 32.5 kg of live weight. Average daily weight gain (188 g per day), total weight gain (16 kg) and slaughter weight (32.5 kg) were similar among treatments. The loin eye area and subcutaneous fat thickness decreased linearly as a function of the orange pulp inclusion levels in the diet. The performance and carcass characteristics were not altered by the partial or total replacement of the corn with orange pulp. However, the total replacement of corn with orange pulp reduced loin eye area by 32% and subcutaneous fat thickness by 35%.(AU)

A positive quadratic effect was observed for the following nutritional quality indices: 9 desaturase 16, elongase, at herogenicity, and thrombogenicity. Cassava wastewater changesthe physicochemical characteristics and fatty acid composition of lamb meat. Furtherstudies should be carried outto more accurately determine the fatty acid composition of cassava wastewater to better understand its effectson animal nutrition.(AU)


Este estudo teve como objetivo avaliar a inclusão de manipueira (0,0; 0,5; 1,0 ou 1,5 L animal-1 dia-1) na dieta de cordeiros terminados em confinamento sobre as características físico-químicas e composição de ácidos graxos da carne. Foram utilizados 32 cordeiros não castrados, com idade média de 167 dias e peso médio de 24,76kg, distribuídos em um delineamento experimental inteiramente casualizado, divididos em quatro grupos com oito animais por grupo para cada tratamento. Os valores de cor foram medidos no músculo longissimus dorsi usando um colorímetro portátil. Para determinar as perdas de cozimento, amostras de carne foram cortadas e pesadas. Os pedaços individuais foram cozidos em um forno elétrico até uma temperatura interna definida (72°C). A composição de ésteres metílicos de ácidos graxos foi medida por cromatografia gasosa. A inclusão de manipueira diminui as perdas por cocção, força de cisalhamento e intensidade de amarelo linearmente, enquanto o teor de gordura da carne aumenta linearmente. A quantidade dos ácidos graxos mirístico, esteárico, linoleico e os ácidos graxos totais foram alteradas. Também foram observados os efeitos da manipueira nas quantidades de ácidos graxos saturados, ácidos gordos poli-insaturados, ácidos graxos desejáveis e proporção de n-6: n-3. Observou-se efeito quadrático positivo para os índices de qualidade nutricional: Δ9 dessaturase 16, elongase, aterogenicidade e trombogenicidade. Em conclusão, a manipueira alterou as características físico-químicas e composição de ácidos graxos da carne de cordeiro. No entanto, outros estudos devem ser realizados para determinar a composição da manipueira de ácidos graxos para elucidar o uso que na alimentação animal.(AU)

Our objective was to evaluate leg tissue composition and physico-chemical quality parameters of sheep meat fed with increasing levels of annatto coproduct. 32 male uncastrated animals without a defined breed were randomized in four treatments (0, 100, 200 and 300 g kg-1 of annatto coproduct in the DM diet). After 78 days of confinement, the animals were slaughtered and body components were recorded. Reconstituted leg weight, total muscle weight, biceps weight and semitendinosus weight showed a negative linear behavior (P 0.05) with the inclusion of the annatto coproduct in the diet. No effects of the inclusion of annatto coproduct (P > 0.05) were found for leg tissue composition (%), muscle:bone ratio, relative fat or leg muscle. Meat physico-chemical parameters (color, shear force, water retention capacity and cooking losses) were not affected by the inclusion of the annatto coproduct in the diet. The annatto coproduct can be included in up to 300 g kg-1 of dietary dry matter without negative effects to the leg tissue composition (%) and physical parameters of confined sheep meat.(AU)


Objetivou-se avaliar a composição tecidual da perna e os parâmetros físico-químicos de qualidade da carne de ovinos alimentados com níveis crescentes do subproduto do urucum (SU). Foram utilizados 32 animais machos, não castrados, sem padrão racial definido, casualizados em quatro tratamentos (0, 100, 200 e 300 g kg-1 do subproduto do urucum na MS da dieta). Após 78 de confinamento, os animais foram abatidos e tiveram os componentes corporais registrados. O peso da perna reconstituída, peso total de músculos, peso do bíceps e peso do semitendinoso apresentaram comportamento linear negativo (P 0,05) com a inclusão do SU na dieta. Os parâmetros físico-químicos da carne (cor, força de cisalhamento, capacidade de retenção de água e perdas por cocção) não foram influenciados pela inclusão do SU na dieta. O subproduto do urucum pode ser incluído em até 300 g kg-1 da matéria seca da dieta sem efeitos negativos sobre a composição tecidual da perna (%) e parâmetros físicos da carne de ovinos confinados.(AU)

The aim of the present research was to evaluate the influence of organic and non-organic production systems on color stability and lipid oxidation of broiler meat Pectoralis major (PM) stored under refrigeration (4°C) for 9 days. PM samples from organic (ORG) and non-organic (NORG) production systems were compared based on physicochemical analyses (instrumental color, myoglobin concentration, metmyoglobin reducing activity (MRA), pH, and lipid oxidation) performed in 4 different trials (n = 4). In general, NORG broilers demonstrated higher (P < 0.05) b* and lipid oxidation values than ORG, whereas ORG samples exhibited increased (P < 0.05) MRA, ratio of reflectance at 630 per 580 nanometers (R 630/580), and a* values. The lower color stability observed in NORG samples can be partly due to lipid oxidation. Therefore, the production system can affect color and lipid stability of broiler breast meat during storage.
