Poultry-based foods contribute to human health due to their high nutrient value. Previously, it was shown that short-chain fatty acids (SCFAs) produced by in vitro intestinal fermentation of a molasses and oligofructose mixture (M-O) stimulated iron and calcium transport through the colonic epithelium of laying hens. However, the real impact of including M-O mixture in the diet on the mineral content of poultry products had not yet been demonstrated. In this study, Hy-Line W-36 leghorn hens were assigned into two groups that either received a conventional diet or a diet supplemented with cane molasse and oligofructose, over a period of 42 days. The weight of the animals and their eggs, blood parameters and intestinal epithelium integrity were determined. Intestinal bacteria, their fermentation products, and the mineral content of eggs, bones and muscles were also assessed. The experimental diet proved to be safe, favored the proliferation of SCFA producing bacteria in the intestines, led to higher concentration of acids (mainly SCFA) in the digesta, and induced the elongation of microvilli at the apical tip of enterocytes. Mineral content of eggs and meat were improved after four weeks of feeding with the experimental diet compared to the conventional one. Higher iron content was observed in the edible portion of eggs and leg muscle, and higher calcium content was observed in the egg edible portion and shell in hens fed the supplemented diet. This feeding strategy could be useful to improve the mineral content of poultry products and therefore human nutrition, while diversifying molasses applications.

The roots and tubers of the Asteraceae family are known as a source of various oligosaccharides, and chicory roots and Jerusalem artichoke have stood out for its commercial viability. However burdock root (Arctium lappa L.), which is adapted to temperate climate, moist, and sandy soil, is still unknown as health food in the western world. This review showed the potential of burdock roots as a source of prebiotic fibers, chlorogenic acids, cinnarine, lignans, and quercetin. The extraction methods of burdock functional compounds are made with water, temperature and time variations only. Biological assays showed antioxidant activity, anti-inflammatory, and hypolipidemic properties, and gastric mucosal defense mechanisms, among others. Therefore, the use of burdock roots as functional food should be encouraged in countries that have imported products derived from other roots of the same family for health benefits.

BACKGROUND: A viable possibility for the best use of bioactive compounds present in camu-camu, fruit native to the Amazonian rainforest, is the preparation of microcapsules using different biopolymers by the spray-drying technique, which would increase the possibilities for innovation in the food industry, as well as facilitate the application in different food matrices. In this context, the chemical, physicochemical, and morphological properties and stability of camu-camu extract (peel and pulp) spray-dried using maltodextrin, inulin, and oligofructose as encapsulating agents were investigated, as well as lyophilized camu-camu extract (CEL). Different relative humidities (22%, 51%, and 75%) and temperatures (25 °C and 45 °C) were evaluated. RESULTS: The moisture, water activity, and solubility values varied from 18.4 to 107.9 g water per kilogram dry powder, 0.06 to 0.27, and 950.80 to 920.28 g microparticles per kilogram of water respectively. Retention of the bioactive compounds varied in the ranges 5.5-7.1 g per kilogram ascorbic acid fresh weight and 7.2-9.0 g per kilogram anthocyanins fresh weight. The increase in temperature and relative humidity during storage provided a significant decrease in the stability of the bioactive compounds for all treatments. However, the CEL presented higher water adsorption kinetics and degradation under all storage conditions, indicating the importance of the use of encapsulating agents. CONCLUSION: In general, the prebiotic biopolymers used as encapsulating agents in the microencapsulation of extracts of camu-camu by spray-drying presented satisfactory results, suggesting that this technique is an effective strategy to increase the stability of bioactive compounds contained in fruits and vegetables. © 2020 Society of Chemical Industry.

The effects of full-fat goat's milk and/or inulin and/or oligofructose, as carrier agents, were investigated to improve the survival rates of Bifidobacterium BB-12, and the physical properties of the microcapsules under storage conditions. On the day of their manufacture, the microcapsules were evaluated for morphology, particle size, and distribution of fat and bifidobacteria. The viability of the bifidobacteria, moisture and fat content, water activity, solubility, bulk and tapped density, flowability, cohesiveness and color properties were evaluated for 120 days at 4 °C and 25 °C. The full-fat goat's milk powder with or without inulin as encapsulating agents showed the highest survival rates of Bifidobacterium BB-12 after spray drying and storage. Considering the bifidobacteria survival, both of these spray-dried powders showed the most desirable physical properties, i.e., lowest water activity and solubility, respectively. Both properties are highlighted for better stability of spray-dried powders, with microcapsules, during storage time. These results are credited to full-fat goat's milk (200 g L-1) and the presence of inulin (100 g L-1), besides the fat content showing a high correlation with the solubility values. The lowest volume occupied by the spray-dried powders was noted when oligofructose was used as the carrier agent. The samples that showed the presence of cracks influenced negatively on the bifidobacteria viability. These cracks were responsible by the greater water escape, resulting in powders with more desirable lower water activity. In relation to the color parameters, lower stability was noted when oligofructose was used, while the best stability was also noted for the powders with full-fat goat's milk and/or inulin. During storage time, the best performance was achieved by the microencapsulation process that used only full-fat goat's milk and/or inulin and storage at 4 °C.

One of the ways to study cattle laminitis is its experimental induction by supplying a large amount of high fermentation carbohydrate. The most effective protocol until now has been the use of oligofructose. The objective of this study was to evaluate clinical and histological aspects of the hoof in experimental induction of ruminal acidosis and laminitis in calves using oligofructose. Six crossbred (Bos taurus x Bos indicus) yearling calves divided into Group I (GI) and Group II (GII) were used. Animals in GI and GII received intraruminal oligofructose in doses of 13 and 17g/kg, respectively. During 28 hours the calves were clinically evaluated and 30 hours after induction, samples were taken from coronary and abaxial wall of the hoof for histologic evaluation. Were noticed signs of ruminal and metabolic acidosis like rumen distension with fluid, diarrhea, ruminal pH reduction and, at blood gas analysis, pH and bicarbonate below reference range. Lameness was not observed however, some animals had a slower gait and apathy, possibly due to metabolic acidosis, though. Histologically, typical lesions of laminitis like circulatory changes and inflammatory infiltrate in the dermis, irregularities and areas of detachment at basement membrane and morphologic changes in cells from basal epidermis were found. The protocol induced, in the first 30 hours, clinical signs of ruminal and metabolic acidosis and low grade histologic lesions in the digits. Lameness and digit pain were not observed, characterizing the prodromic phase of the disease.(AU)


Uma das formas de se estudar a laminite bovina é sua indução experimental por meio do fornecimento de grande quantidade de carboidrato de alta fermentação. O protocolo mais eficaz até o momento foi o uso de oligofrutose. Objetivou-se avaliar aspectos clínicos e histológicos dos dígitos de bovinos na indução experimental de acidose ruminal e laminite usando oligofrutose. Utilizaram-se seis bezerros mestiços (Bos taurus x Bos indicus) de um ano, divididos em Grupo I (GI) e Grupo II (GII). Os animais em GI e GII receberam oligofrutose por via intrarruminal nas doses de 13 e 17g/kg respectivamente. Os bovinos foram avaliados clinicamente por 28 horas e fragmentos de coroa e muralha abaxial dos dígitos foram colhidos para histologia 30 horas após a indução. Foram identificados sinais de acidose ruminal e metabólica como distensão ruminal com líquido, diarreia e baixo pH ruminal. Os resultados de hemogasometria indicaram baixos pH e nível plasmático de bicarbonato. Os animais não apresentaram claudicação, entretanto, observaram-se apatia e marcha mais lenta, atribuídas à acidose metabólica. Histologicamente foram observadas lesões indicativas de laminite como alterações circulatórias e infiltrado inflamatório na derme, irregularidades e áreas de destacamento da membrana basal e alterações morfológicas de células da epiderme basal. O protocolo induziu, nas primeiras 30 horas, sinais de acidose ruminal e metabólica e lesões histológicas de baixa intensidade nos dígitos. Não foi observada claudicação ou sensibilidade nos dígitos, caracterizando a fase prodrômica da enfermidade.(AU)

The aim of this study was to include prebiotic biopolymers as wall material in microparticles of lime essential oil. Whey protein isolate (WPI), inulin (IN), and oligofructose (OL) biopolymers were used in the following combinations: WPI, WPI/IN (4:1), and WPI/OL (4:1). The emulsion droplets in the presence of inulin and oligofructose showed larger sizes on reconstitution. There was no significant difference in solubility of the particles, but the wettability was improved on addition of the polysaccharides. The size of the oligofructose chains favored the adsorption of water. Prebiotic biopolymers reduced thermal and chemical stability of the encapsulated oil. Microparticles produced with WPI showed a higher bioactive compound release rate, mainly due to its structural properties, that enabled rapid diffusion of oil through the pores. The use of prebiotic biopolymers can be a good option to add value to encapsulated products, thus promoting health benefits.

UNLABELLED: The aim of this research was to develop a prebiotic beverage from a hydrosoluble extract of broken cashew nut kernels and passion fruit juice using response surface methodology in order to optimize acceptance of its sensory attributes. A 2(2) central composite rotatable design was used, which produced 9 formulations, which were then evaluated using different concentrations of hydrosoluble cashew nut kernel, passion fruit juice, oligofructose, and 3% sugar. The use of response surface methodology to interpret the sensory data made it possible to obtain a formulation with satisfactory acceptance which met the criteria of bifidogenic action and use of hydrosoluble cashew nut kernels by using 14% oligofructose and 33% passion fruit juice. PRACTICAL APPLICATION: As a result of this study, it was possible to obtain a new functional prebiotic product, which combined the nutritional and functional properties of cashew nut kernels and oligofructose with the sensory properties of passion fruit juice in a beverage with satisfactory sensory acceptance. This new product emerges as a new alternative for the industrial processing of broken cashew nut kernels, which have very low market value, enabling this sector to increase its profits.

The effect of the addition of inulin-type fructans of different degrees of polymerization (DP) on the physicochemical and microbiological characteristics and storage stability (4C for 28 days) of nonfat probiotic yoghurt was investigated. The yoghurts were prepared using traditional lactic culture (Streptococcus thermophilus and Lactobacillus delbrueckii ssp. bulgaricus) and Lactobacillus paracasei ssp. paracasei as probiotic. The formulations contained inulin- type fructans of DP: low (P95 oligofructose, DP 5), medium (ST inulin, DP 10) or high (HP inulin, DP 23) in a concentration of 2g 100g of milk-1, meeting the current Brazilian legislation and, thus their claim of functional properties could be utilized; and were compared to a Normal formulation (without inulin-type fructans addition). The addition of inulin-type fructans with different DP did not alter the L*, a* and b* color parameters, the syneresis and the viability of the probiotic culture in yoghurts. Yoghurts with inulin-type fructans of low DP were more acidic (lower pH values and higher values of acidity). The high DP inulin caused a reduction in the firmness of yoghurt. The products contained Lactobacillus paracasei ssp. paracasei at concentrations higher than that recommended to consider them as probiotic foods throughout the storage period. Investigou-se o efeito da adição de frutanos tipo inulina de diferentes graus de polimerização (DP) nas características físico-químicas e microbiológicas e na estabilidade ao armazenamento (4oC por 28 dias) de iogurtes probióticos desnatados. Os iogurtes foram preparados usando cultura lática tradicional (Streptococcus thermophilus e Lactobacillus delbrueckii ssp. bulgaricus) e Lactobacillus paracasei ssp. paracasei como probiótico. As formulações continham frutanos tipo inulina de DP: baixo (oligofrutose P95, DP 5), médio (inulina ST, DP 10) ou alto (inulina HP, DP 23), em uma concentração de 2g 100g de leite-1, de modo a atender a legislação brasileira vigente e assim, utilizar sua alegação de propriedade funcional; e foram comparadas a uma formulação Normal (sem adição de frutanos tipo inulina). A adição de frutanos tipo inulina com diferente DP não alterou os parâmetros L*, a* e b* de cor, a sinérese e a viabilidade da cultura probiótica dos iogurtes. A controlled acid thermal hydrolysis process of fructans from agave (Agave tequilana Weber var. azul) was designed to produce a mixture of functional prebiotic fructooligosaccharides and sweetening power. Despite its highly branched structure, first-order kinetic behaviour with respect to substrate concentration was found with an activation energy of 95kJ/mol, similar to the value found for other linear fructans such as chicory inulin. Fructose equivalent (FE) an analogous parameter to dextrose equivalent (DE) used in the starch industry was introduced to characterise fructan hydrolysis; maximum oligosaccharide production was observed when fructose equivalent (FE) reached 27-48 with a structural profile analysed by high-performance anion-exchange chromatography HPAEC-PAD. After hydrolysis, glucose and fructose may be eliminated through a biological purification step involving the addition of Pichia pastoris cells, which selectively consume these sugars but are unable to metabolise fructooligosaccharides.

In the present clinical study, the effect of oligofructose-enriched inulin was studied on bone metabolism in girls from 9 to 12 years old, with low habitual calcium intakes, who attended public schools. Two calcium-enriched formulations, supplemented with oligofructose-enriched inulin (test drink) or without (standard drink) were made. Sixty pre-pubertal girls were randomized into a double-blind and crossover design, divided into three groups and received one daily portion of either the standard drink (group 1) or test drink (group 2) during 11 weeks, followed by a three-week washout period. Group control did not receive any supplementation. Biochemical evaluations of serum calcium, intact parathyroid hormone - iPTH - and bone alkaline phosphatase - BAP - were performed at baseline and after 4, 8 and 11 weeks of each intervention period. In group 1, a significant increase in serum calcium and BAP and a reduction of iPTH were observed after consumption of the test drink.


No presente ensaio clínico, o efeito de oligofrutose enriquecida com inulina foi estudado no metabolismo ósseo de meninas de 9 a 12 anos com baixa ingestão habitual de cálcio, matriculadas em escolas públicas. Duas formulações foram suplementadas ou não (bebida padrão) com oligofrutose enriquecida com inulina (bebida teste). Sessenta meninas pré-púberes foram aleatorizadas em estudo duplo cego crossover e divididas em três grupos e receberam uma porção diária da bebida padrão (grupo 1) ou teste (grupo 2) durante 11 semanas, seguidos por um período de intervalo de três semanas. O grupo controle não recebeu nenhuma suplementação. As avaliações bioquímicas de cálcio sérico, paratormônio intacto - PTHi e fosfatase alcalina fração óssea - FAO foram executadas ao início e após 4, 8 e 11 semanas de cada período de intervenção. No grupo 1, um aumento significante no cálcio sérico e FAO e uma redução no PTHi foram observadas após o consumo da bebida teste.
