RESUMO
Thermoplastic starch (TPS) has emerged as an essential alternative to produce environmentally friendly packaging; however, retrogradation is a disadvantage that affects its shelf life. This study analyzed the co-plasticizing effect of isosorbide on the mechanical, thermal, physicochemical, and microstructural properties and the retrogradation of films obtained by blown film extrusion from thermoplasticized starch with mixtures of glycerol and isosorbide in different ratios (3:0, 2:1, 1:2, and 0:3, respectively). The results showed that the higher concentration of isosorbide significantly increased the tensile strength; however, it reduced the elongation. Retrogradation modeled using the Avrami equation showed that the presence of isosorbide reduced the retrogradation rate (k) and modified the recrystallization mechanism (n). The relative crystallinity in the plasticized TPS films was reduced to 89%, and the adsorption significantly decreased. Isosorbide was very important in reducing the retrogradation of TPS. The best performance was obtained with the 2:1 ratio of glycerol/isosorbide due to the synergistic effect between the plasticizers. The results would allow tuning the properties of TPS films by combining glycerol/isosorbide in different ratios, which enables the design of materials tailored to potential application requirements.

INTRODUCCIÓN: la papa es el tubérculo más importante producido a nivel mundial como producto alimenticio. Una de las formas ancestrales de conservación de la papa en los países andinos es la obtención de un producto llamado chuño, obtenido a partir de las denominadas papas amargas. Existen pocos datos respecto a la composición química y nutricional del chuño y sobre los cambios producidos en el almidón durante su elaboración en el proceso de congelado-secado en condiciones específicas de temperatura y exposición a rayos ultravioleta. OBJETIVO: el objetivo del trabajo fue realizar una revisión bibliográfica respecto a cambios producidos en la relación de amilosa y amilopectina, la composición de almidón aislado de papa y la modificación de las características de este almidón en el proceso de elaboración de chuño. METODOLOGÍA: La revisión bibliográfica se ha realizado con la recopilación de tres fuentes referenciales de estudios realizados sobre el chuño y su proceso de elaboración, artículos sobre la estructura del almidón de papa y otros tubérculos del mismo género, artículos de otros productos alimenticios del Altiplano boliviano y peruano, y finalmente la influencia de los cambios de la estructura del almidón en el incremento de la formación de almidón retrogradado. RESULTADOS: la revisión bibliográfica realizada, señala que el proceso de elaboración de chuño eleva el porcentaje de amilosa en el contenido total de almidón, lo cual está relacionado a procesos de exposición a radiación UV y a cambios de temperaturas muy drásticos, que van entre -13,5 ºC y 16 ºC. Este proceso llevaría a la activación de enzimas, como amilasas, para la catálisis de reacciones de ruptura de enlaces como principal ruta del proceso; sin embargo, se podrían evaluar otras causas. CONCLUSIONES: el mayor porcentaje de amilosa permitiría la obtención de altos porcentajes de almidón retrogradado.
INTRODUCTION: the potato is the most important tuber produced worldwide as a food product. One of the ancestral ways of preserving pootatoes in the Andean countries is a product called chuño (traditional Andean freeze and sun-dried potato), obtained from the so-called bitter potatoes. There are few data regarding the chemical and nutritional composition of chuño and the changes produced in the starch during its preparation in the freeze-drying process under specific conditions of temperature and exposure to ultraviolet rays. OBJECTIVE: the objective of this article was to do a bibliographic review regarding changes produced in the amylose and amylopectin ratio, the composition of isolated potato starch and the modification of the characteristics of this starch in the process of making chuño. METHODOLOGY: the literature review methodology has the compilation of three reference sources of studies carried out on chuño and its production process, articles about the structure of potato starch and other tubers, research on other food products from the Bolivian and Peruvian of Altiplano and finally the influence of the changes in starch structure in relation to the increasing of retrograde starch formation. RESULTS: the results show that the process of making chuño increases the percentage of amylose in the total starch content, which is related to the processes of exposure to UV radiation and very drastic temperature changes, ranging between -13, 5 ºC and 16 ºC. This process would lead to the activation of enzymes, such as amylases, for the catalysis of bond breaking reactions as the main route of the process; however, other causes could be evaluated. CONCLUSIONS: the higher percentage of amylose would allow the obtaining of high percentages of retrograded starch.

This work aimed to evaluate the physical, chemical and antioxidant properties of Ceiba aesculifolia subsp. parvifolia (CAP) tuber and determinate rheological, thermal, physicochemical and morphological properties of the starch extracted. The CAP tuber weight was 3.66 kg; the edible yield was 82.20%. The tuber presented a high hardness value (249 N). The content of carbohydrates (68.27%), crude fiber (15.61%) and ash (9.27%) from the isolated starch, reported in dry weight, were high. Phenolic compounds and flavonoid content of CAP tuber peel were almost 3-fold higher concerning the pulp. CAP tuber starch exhibited a pseudoplastic behavior and low viscosity at concentrations of 5-15%. Purity percentage and color parameters describe the isolated starch as high purity. Thermal characteristics indicated a higher degree of intermolecular association within the granule. Pasting properties describes starch with greater resistance to heat and shear. CAP tuber starch has X-ray diffraction patterns type A. The starch granules were observed as oval and diameters ranging from 5 to 30 µm. CAP tuber could be a good source of fiber and minerals, while its peel could be used for extracting bioactive compounds. Additionally, the starch separated from this tuber could be employed as a thickening agent in food systems requiring a low viscosity and subjected to high temperatures.

The effects of incorporating polycaprolactone (PCL) in three binary blends with cassava thermoplastic starch (TPS) at TPS/PCL ratios of 60/40, 50/50, and 40/60 were studied. TPS previously obtained by single-screw extrusion was manually mixed with PCL and then transformed by extrusion. The results' analysis focused mainly on monitoring the retrogradation phenomenon in TPS for different storage times at two relative humidities (29% and 54%) and constant temperature (25 °C). With the plasticization of the starch, a predominantly amorphous mass was generated, as evidenced by the scanning electron microscopy (SEM), X-ray diffraction (XRD), and Fourier transform infrared (FTIR) results. The results suggested that two opposite processes coexisted simultaneously: retrogradation, which stiffened the material, and plasticization, which softened it, with the latter mechanism predominating at short times and reversing at longer times. With the incorporation of PCL, immiscible blends were obtained in which TPS was the dispersed phase; the mechanical properties improved with the amount of PCL added. The properties of the binary blends as a function of time showed a trend similar to that observed for TPS alone; this finding indicated that the TPS/PCL interactions were not strong enough to affect the structural changes in the TPS, which continued to occur regardless of the PCL content. Finally, it was found that for the binary blend, the relative humidity during storage was more significant to the retrogradation phenomenon than the amount of PCL.
RESUMO
In this study, the resistant starch (RS) formation, crystallinity, and double helical order of autoclaved (120 °C) normal (ANS) and high amylose (AHS) corn starches retrograded at ~4-26% of water content were investigated. ANS and AHS retrograded at ~25-26% of water content were more crystalline (~35-40%) and formed by more close-packed double helices (R1000/1022 cm-1 = 1.145-1.290). The highest content of RS (38.8%) was found in AHS retrograded at 25.52% of water content meanwhile in ANS, the maximum content of RS was 6.6% at 21.60% of water content despite its structural order was increased with the increase of water content. The recrystallization of amylopectin interfered with the formation of homogeneous crystalline structures of amylose preventing the formation of retrograded RS in ANS, while in AHS, a relationship between structure and RS formation was observed, suggesting that the close-packed double helices and the proportion of homogeneous amylose crystallites increased the resistance to enzymatic digestion.

This work was focused on evaluating the effects of polycarboxylic acid addition and retrogradation phenomenon on tribological performance, thermal, and mechanical properties of both, bioadhesives and sustainable panels. The rheological behavior of adhesives was affected by retrogradation, exhibiting formulations containing CA higher elastic modulus than those with BTCA, regardless of the acid concentration. With regard to tribomechanical properties, panels formulated with CA20 and BTCA80 adhesives presented the lower friction coefficient and wear degree. Thermocompression process induced a crosslinking reaction between wood fibers and starch-based adhesives, leading to more hydrophobic and thermally stable matrices in the presence of BTCA. The selection of the adhesive formulation depends on the moment of its use, since retrogradation limits its performance and that of the derived sustainable panels, being the adhesive CA20 more appropriate in freshly prepared formulations. Meanwhile, when the storage of the adhesive prepared in batch is required, the BTCA80 formulation would be more suitable. Thus, bioinspired materials can provide a valuable insight towards incorporating starch-based adhesives for wood applications.

The modification of the starches extracted from rice beans both with and without hydrothermal treatment was evaluated via scanning electron microscopy (SEM), differential scanning calorimetry (DSC), and Fourier transform infrared (FT-IR) and Raman spectroscopy. SEM indicated that the starch granules of rice beans exhibit wide variation in granule shape, showing the greatest size and modification of the surface when extracted with ethanol. It was found that the extraction solvent had no significant effect on the onset (To) and peak (Tp) temperatures of the starch, whereas hydrothermal treatment of rice beans decreased the To, Tp and ΔH of the starch. The modification of FT-IR spectra showed that hydrothermal treatment of rice beans and the solvent used in the extraction of starch affected starch crystallinity, mainly when ethanol was used. Raman spectroscopy revealed that the smaller changes in the starch bonds were due to the solvent used for starch extraction but that hydrothermal treatment disturbed all bonds in the starch.

The objective of our study was to evaluate paste clarity, retrogradation (syneresis %), thermal characteristics and kinetics of glucose release during in vitro gastro-small intestinal digestion of freshly cooked and refrigerated potato starch. Freshly cooked starch pastes had a paste clarity of 71%, which decreased to 35.4% whereas syneresis (%) increased after 7days of refrigerated storage. The X-ray and thermal characteristics of native, retrograded and microwave reheated starch samples differed significantly from each other. For the freshly cooked starch pastes, â¼88% starch hydrolysis was observed at the end (150min) of digestion under simulated gastro-small intestinal conditions that decreased to â¼70% for the 7day stored pastes. The hydrolysis (%) of refrigerated pastes increased to 86% and 92% after one and two cycles of microwave reheating, respectively. These results contribute to the understanding of starch retrogradation in relation to starch digestion.

Abstract The aggregation of water molecules inside heat-gelatinized rice grain due to retrogradation of the grain was investigated by textural change and scanning electron microscopy (SEM) analysis of cooked grains after storage at 11 °C in a sealed package. Relaxation tests using a disc-type tip showed an increase in hardness (strength) of the cooked grain as the degree of retrogradation increased with increasing storage time, measured by the α-amylase-iodine method. SEM analysis of the vacuum-dried cooked rice grain showed a gradual increase in crevices, which further developed into holes at the center of the granule with increasing storage time. The results suggest that the disruption of hydrogen bonds between water and starch molecules is the first step for the retrogradation of gelatinized rice grain stored in a hermetic environment to avoid drying, resulting in its increased hardness, followed by the aggregation of starch molecules with subsequent water extrusion.

This work is focused on the understanding of the apparent viscosity profile of corn starch, in terms of the physicochemical and morphological changes that take place during the thermal profile of starch-water suspension to its respective gel formation. A mathematical model was used to obtain the experimental operating conditions that satisfy the Froude number. Freeze drying samples are studied in different stages along the pasting profile. Changes in the structural properties of the samples are studied using X-ray diffraction, and the morphological changes are followed using scanning electron microscopy, differential scanning calorimetry was used to analyze the thermal changes in starch. The changes in the pasting profile are associated with structural, thermal,and morphological changes of the system and the analysis of the physicochemical transformation that occur during the pasting profile are explained. The finding in this work does not show evidence of gel retrogradation at the end of the cooling process.

Starches from different potato cultivars were characterized as amylose and phosphorus content, crystallinity, thermal and paste properties. Statistical analysis of amylose content showed difference between starches samples and the cultivars Asterix and BRS Clara showed higher contents than others. Phosphorus content ranged from 633 to 966.7 mg kg(-1). The X-ray diffraction analysis showed that the crystallization of potato starches can be classified as B-type X-ray pattern, presenting crystallinity index ranging from 20.02% to 21.59%. Regarding thermal properties, the onset temperature did not show statistical difference between starch samples, in gelatinization and retrogradation analysis. As expected there was a significant decrease in peak temperature and enthalpy after the retrogradation of starches. For the pasting properties results showed significant difference in all cultivars. Pearson correlation coefficients showed that amylose content was negatively correlated to the onset, peak and final temperature of gelatinization, final temperature of retrogradation and pasting temperature. Phosphorus content was positively correlated to crystallinity index, peak viscosity and breakdown. Starches extracted from potato varieties showed different characteristics which can be useful to food and related industries that make use of potato starch, allowing wide options of use in various sectors of industrial application in Brazil.

Os subprodutos da indústria de frutas possuem alta qualidade nutricional, de forma que sua transformação em ingredientes para aplicação em produtos alimentícios é de grande importância. No presente estudo, foram avaliados os efeitos da substituição total da gordura em pães de forma através da utilização de fibra de casca de laranja (0 a 5%), um subproduto industrial. A adição da fibra de laranja foi combinada ao uso de α-amilase (10 a 50ppm), através de um planejamento experimental fatorial completo 22. Para fins de comparação, foi elaborada uma formulação controle, sem fibras, sem enzimas e com 2% de gordura. A qualidade dos pães foi avaliada através de análises de vida útil (por índice de retrogradação, DSC), volume, cor, atividade de água e análise sensorial. A fibra de laranja, associada ao uso de enzimas, contrapôs os possíveis efeitos negativos causados pela ausência da gordura, para as concentrações de fibra e enzima estudadas, permitindo a obtenção de pães isentos de gordura e com fibras. A presença de 2,5% de fibra de laranja combinada ao uso de 30ppm de α-amilase gerou um pão com volume 23% maior ao alcançado pela amostra controle e com índice de aceitação em torno de 80%.(AU)

The use of citrus fiber was combined with the addition of α -amylase (10 to 50ppm), by using a complete experimental factorial design (22). A formulation containing 2% of fat, without citrus fiber and enzyme was used as control. The breads quality was measured by analyzing shelf life (by Retrogradation Index determination), volume, crumb color, water activity and sensorial parameters. The citrus fiber in association with the addition of α-amylases neutralized the potential negative effects that the removal of fat could cause, considering the ranges of fiber and enzyme studied, allowing to obtain fat-free breads with fibers. The presence of 2.5% of citrus fiber combined with the use of 30ppm of α-amylase increased the volume of breads by 23%, comparing with the control formula, and had an acceptance index of around 80%.(AU)

RESUMO
This study was conducted to evaluate the rheological and physicochemical properties of Solanum lycocarpum starch. The thermogravimetric analysis of S. lycocarpum starch showed a typical three-step weight loss pattern. Microscopy revealed significant changes in the granule morphology after hydrothermal treatment. Samples hydrothermally treated at 50°C for 10 min lost 52% of their crystallinity, which was recovered after storage for 7 days at 4°C. However, samples hydrothermally treated at 65°C were totally amorphous. This treatment was sufficient to completely disrupt the starch granule, as evidenced by the absence of an endothermic peak in the DSC thermogram. The RVA of S. lycocarpum starch revealed 4440.7cP peak viscosity, 2660.5cP breakdown viscosity, 2414.1cP final viscosity, 834.3cP setback viscosity, and a pasting temperature of 49.6°C. The low content of resistant starch (10.25%) and high content of digestible starch (89.78%) in S. lycocarpum suggest that this starch may be a good source for the production of hydrolysates, such as glucose syrup and its derivatives.

Devido aos escassos trabalhos brasileiros sobre a estrutura dos grânulos de amido, o objetivo desta revisão foi demonstrar os avanços atuais na elucidação da arquitetura e da estrutura química desse polímero. Muitas pesquisas sobre a avaliação da relação existente entre a estrutura molecular do amido e seu comportamento em algumas propriedades físico-químicas sugerem que diversas características estruturais, tais como teor de amilose, distribuição de comprimento das cadeias de amilopectina e grau de cristalinidade no grânulo, estejam intimamente relacionadas a eventos associados à gelatinização e retrogradação, como inchamento do grânulo, lixiviação de amilose e/ou amilopectina, perda da estrutura radial (birrefringência), supra-molecular (cristalinidade) e molecular e recristalização. O foco principal desta revisão foi a compilação de estudos a fim de obter melhor entendimento da estrutura e das características dos componentes do amido e sua relação com propriedades físico-químicas, principalmente no que diz respeito à gelatinização e retrogradação, as quais apresentam grande importância nutricional e tecnológica.

O foco principal desta revisão foi a compilação de estudos a fim de obter melhor entendimento da estrutura e das características dos componentes do amido e sua relação com propriedades físico-químicas, principalmente no que diz respeito à gelatinização e retrogradação, as quais apresentam grande importância nutricional e tecnológica.
RESUMO
Due to poor Brazilians work on the structure of starch granules, the purpose of this review was to demonstrate the advances in current understanding of architecture and chemical structure of this polymer. Many studies evaluating the relationship between the molecular structure of starch and its behavior in some physicochemical properties, suggest that several structural features, such as amylose content, amylopectin chain length distribution and the degree of crystallinity in the granule, are closely related to the events associated with gelatinization and retrogradation as starch granule swelling, amylose and/or amylopectin leaching, loss of radial structure (birefringence), supra-molecular (crystallinity) and molecular order, and recrystallization. The main focus of this review was to make a compiler of studies in order to gain better understanding of the granule structure and characteristics of starch components and physicochemical properties (gelatinization and retrogradation) that could play a significant role in improving the quality of different food products.
Devido aos escassos trabalhos brasileiros sobre a estrutura dos grânulos de amido, o objetivo desta revisão foi demonstrar os avanços atuais na elucidação da arquitetura e da estrutura química desse polímero. Muitas pesquisas sobre a avaliação da relação existente entre a estrutura molecular do amido e seu comportamento em algumas propriedades físico-químicas sugerem que diversas características estruturais, tais como teor de amilose, distribuição de comprimento das cadeias de amilopectina e grau de cristalinidade no grânulo, estejam intimamente relacionadas a eventos associados à gelatinização e retrogradação, como inchamento do grânulo, lixiviação de amilose e/ou amilopectina, perda da estrutura radial (birrefringência), supra-molecular (cristalinidade) e molecular e recristalização. RESUMO
Las modificaciones del almidón, que ocurren durante el proceso de elaboración de harina de yuca precocida, se evaluaron utilizando técnicas como calorimetría diferencial de barrido (CDB), difracción de rayos X, comportamiento al empastamiento y capacidad de formación de complejo con yodo. La harina precocida se obtuvo a partir de trozos de parénquima de yuca cocinados en vapor o en agua a ebullición, los cuales fueron posteriormente almacenados a 5 ºC o a -20 ºC por 24 h. La temperatura utilizada durante el periodo de almacenamiento del parénquima cocinado no es un factor significativo en los resulta dos de retrogradación del almidón. La entalpía de fusión y cristalinidad del almidón retrogradado de la harina proveniente del parénquima cocinado en vapor fue ligeramente mayor, comparado con la elaborada a partir de parénquima cocinado en agua a ebullición para el periodo de almacenamiento a 5 ºC. Por otra parte, en el periodo de almacenamiento a -20ºC, el método de cocción no tuvo efecto significativo sobre la entalpía de fusión del almidón retrogradado, la cristalinidad y el índice del valor azul.
Starch modifications during the processing of precooked cassava flour was monitored using techniques as differential scanning calorimetry (DSC), pasting behaviour, wide angle X-ray diffraction and iodine binding capacity. Cassava flour was obtained from parenchyma pieces cooked either in steam or in boiling water and then stored either at 5 ºC or at -20 ºC for 24 h. The temperature during the rest period of the cooked parenchyma was not a significant factor in the starch retrogradation results. For a rest period at 5 ºC, flour from parenchyma cooked in steam presented a slightly higher melting enthalpy of retrograded starch and crystallinity as compared to that from parenchyma cooked in boiling water. Whereas for conditioning period at -20 ºC, the cooking method had no significant effect on the enthalpy of retrogradation, crystallinity and blue value index.
As modificações do amido durante o processo de elaboração de farinha de mandioca precozida, foram avaliadas utilizando as técnicas de calorimetria diferencial de varredura (CDV), difração de raios X, comportamento no empastamento e capacidade de formação de complexo de iodo. A farinha precozida obteve-se de troços do parênquima da mandioca cozidos com vapor o em água em ebulição, os quais foram armazenados depois a 5 ºC ou -20 ºC por 24 h . A temperatura do armazenamento do parênquima cozido no foi um factor significativo nos resulta dos de retrogradação do amido. A entalpia de fusão e cristalinidade do amido retrogradado da farinha proveniente do parênquima cozido no vapor foi levemente maior, do que aquela elaborada do parênquima cozido em água em ebulição e armazenada a 5 ºC. Além disso, o método de cozimento não teve efeito significativo na entalpia de fusão do amido retrogradado, na cristalinidade o no índice de valor azul (IVA).
