This study evaluated the effects of the dietary inclusion of an enzyme blend and a direct-fed microbials in broiler diets on litter production and quality. In total, 900 Cobb 500(r) broiler chicks were distributed according to a completely randomized design into 4 treatments and 9 replicates of 25 birds each. Broilers were reared from 1 to 42 days of age. The treatments consisted of the following diets: NC: negative control; DFM: NC + 500 ppm of direct-fed microbials product (DFM), containing Bacillus subtilis and Bacillus licheniformis; ENZ: diet formulated with an enzyme blend (20 ppm phytase, 200 ppm protease and 200 ppm of xylanase); DFM+E: ENZ + DFM. Birds and litter were weighed at the start and end of the rearing period, for litter production and waste ratio (Rw) determination. Litter samples were analyzed for dry matter (DM) content, total and thermotolerant coliform counts, nutrient composition (nitrogen (N), phosphorous (P) and potassium (K)), and fiber fraction (neutral detergent fiber (NDF), acid detergent fiber (ADF) and lignin). The dietary inclusion of the evaluated additivesdid not influence litter production or Rw; however, ADF (%), NDF (kg and kg/kg DM litter), and total and thermotolerant coliform counts were reduced, and N content increased in the litter. The diets containing enzymes (ENZ and DFM+E) reduced litter P content. The addition of exogenous enzymes and their combination with a DFM based on Bacillus spp .Did not affect waste production, and reduced litter microbial load, and the contents of P and insoluble fiber in the litter.(AU)

Este estudo objetivou avaliar a qualidade microbiológica da água de várias localidades em que são produzidas ostras Crassostrea sp. no estuário de Cananéia, tanto como nos bivalves, por meio dos valores de coliformes baseados na Técnica dos Tubos Múltiplos. Foram realizadas coletas de água em dez localidades durante os anos de 2005 a 2011. A análise da água apresentou média geométrica de coliformes termotolerantes de 24,67 NMP 100 mL-1 e, nos tecidos das ostras, de 15,53 NMP g-1. Verificou-se uma diferença significativa entre as localidades analisadas quanto à densidade de coliformes totais e termotolerantes na água. Analisaram-se as variações das contagens bacterianas em relação à sazonalidade, verificando-se que o outono apresentou a maior média de coliformes nas ostras, sendo os maiores dados coletados em abril. Houve correlação positiva entre coliformes na água e na ostra.
This study sought to evaluate the microbiological quality of water from the various locations where specimens of the oysters Crassostrea sp. were harvested in Cananéia estuary, as well as of the bivalve itself, through values of coliforms based on the Multiple Tube Technique. During the period from 2005 to 2011, samples of water were collected at ten points. The water analysis presented a geometric mean of thermotolerant coliforms of 24.67 MPN 100 mL-1 and, in the soft tissues of the oysters, of 15.53 MPN g-1. There was a significant difference between the locations analyzed as to the density of total and thermotolerant coliforms in water. After analysis of the variations of bacterial counting with regard to seasonal mean, autumn presented the highest mean numbers of coliforms in oysters, and most data were collected in April. There was a positive correlation between the coliforms found in water and those in the oyster.

O objetivo deste trabalho foi determinar o número de coliformes totais, termotolerantes, Staphylococcus coagulase positivo e a presença de bactéria do gênero Salmonella no músculo, no tecido superficial, no trato gastrintestinal de peixes e na água de cultivo de pesque-pagues situados na microbacia do Córrego Rico, SP. Não foi detectado Staphylococcus coagulase positivo em nenhuma amostra de água e peixe. O número mais provável (NMP) de coliformes totais no peixe variou de 2,0 x 10 a >1,1 x 104 NMP.100 mL-1, na água de cultivo variou de 4,2 x 104 a > 2,4 x 105 NMP.100 mL-1. A contagem de coliformes termotolerantes no peixe variou de < 3 a 5,1 x 103 NMP.g-1, na água de cultivo variou de 3,8 x 102 a 2,0 x 104 NMP.100 mL-1. Não houve diferença estatística (P > 0,05) entre as populações de micro-organismos pesquisados na água, pele e trato gastrintestinal, o que reflete uma relação entre a presença dos micro-organismos na água e nesses dois locais analisados. Foi isolada Salmonella sp. em uma amostra de músculo e em duas amostras de trato gastrintestinal. O pescado pode ser veículo de contaminação cruzada, tendo como fonte dos micro-organismos a pele e o trato gastrintestinal para sua própria musculatura. Portanto, o monitoramento da qualidade da água é de suma importância para garantir a produção de peixes com boa qualidade.

The count of thermotolerant coliforms in fish ranged from < 3 to 5.1 x 103 NMP.g-1, while in pond water it ranged from 3.8 x 102 to 2.0 x 104 NMP.100 mL-1. There was no statistical difference (P > 0.05) among the studied populations of microorganisms in pond water, surface tissue and gastrointestinal tract, which reflects a relationship between the presence of microorganisms in the water and in the two tissues analyzed. Salmonella sp. was isolated in one sample of muscle and in two samples of gastrointestinal tract. The fish can be a vehicle for cross contamination, having the gastrointestinal tract and the surface tissue as a source of microorganisms for its muscles. Therefore, monitoring the water quality is important to ensure the production of fish with good quality.
