RESUMO
O estudo avaliou a influência de sistemas de cultivo e de métodos de preparo na atividade antioxidante e no teor de fenólicos de folhas e talos da couve manteiga (Brassica Oleracea L. var. acephala). Amostras de couve cultivadas pelo sistema convencional e orgânico foram pesadas, higienizadas e os talos separados das folhas. Foram submetidas aos modos de preparo cru (couve in natura); calor seco (refogada) e calor úmido (imersa em água fervente). Avaliou-se à atividade antioxidante e os compostos fenólicos pelo método espectrofotométrico. A verificação de compostos fenólicos e compostos com atividade antioxidante foi realizada por Cromatografia em Camada Delgada (CCD). O sistema de cultivo orgânico e o preparo em calor seco foram os tratamentos que obtiveram os maiores percentuais de antioxidantes e teores de compostos fenólicos, principalmente, em folhas de couve. A atividade antioxidante variou de 38 a 87% nas folhas e de 13 a 56% nos talos de couve. Quanto aos compostos fenólicos os teores médios estiveram entre 173 e 244 mg EAG/100g nas folhas e 86 e 180 mg EAG/100g nos talos. As análises por CCD revelaram que todos os extratos de folhas e talos de couve apresentaram compostos fenólicos bem como componentes com ação antioxidante, mas nem todos com correlação. Conclui-se que a combinação de sistema de cultivo orgânico e cocção em calor seco pode ser eficiente para preservação e ou aumento do teor de compostos fenólicos e da atividade antioxidante em talos e, principalmente, em folhas de couve (AU).
ABSTRACT
The study evaluated the influence of cropping systems and methods of preparation on the antioxidant activity and phenolic content in kale leaf and stalks (Brassica Oleracea L. var. acephala). Kale samples cultivated in organic and conventional systems were analyzed. The vegetable was weighed, cleaned and stems were separated from leaves. After separation, the samples were submitted to the following modes of preparation raw (fresh kale); dry heat (braised kale) and moist heat (kale immersed in boiling water). Each treatment consisted of three (3) repetitions. The samples were subjected to analysis of antioxidant activity and phenolic compounds spectrophotometrically. Identification of phenolic compounds and components with antioxidant activity was performed using Thin-Layer Chromatography (TLC). The organic cropping system and the preparation using dry heat were the treatments that had the highest percentage of antioxidants and levels of phenolics compounds in leaf and kale stalks. Antioxidant activity varied from 38 and 87% in leaves and 13 and 56% in stalks. As for the phenolic compounds, average levels were between 173 and 244 mg GAE / 100g in leaves and between 86 and 180 mg GAE / 100g in stalks. Analysis by TLC revealed that all extracts of leaf and kale stalks presented phenolic compounds as well as components with antioxidant activity, but not all correlated. It was concluded that the organic cropping system and cooking using dry heat could be effective in preserving and or increasing the content of phenolics and antioxidant activity in leaf and kale stalks (AU).
